ORTUGAL’S MOST PFAMOUS GRAPES

No other country has a range of indigenous grape varieties to match Portugal’s. This huge palette of different grapes was introduced to Portugal over a long and exciting history of wine-making, traced by archaeologists back to the Bronze Age. Tartessians, Phoenicians, and Romans all left their wine-making mark here. Centuries of isolation then prevented further exchange with other wine producing countries such as Spain and France. So Portuguese growers concentrated on the fine flavors to be found in their own grape varieties.

HITE GRAPE VARIETIES

A

‌ varinho l ‌This northern grape is one of

Portugal’s finest and most characterful. It was one of the first Portuguese grape varieties to be bottled as a single variety. Its full-bodied, subtly fragrant white wines are easy to recognize. Their complex but delicate aromas are reminiscent of peach, lemon, passion fruit, lychee, orange zest, jasmine, orange blossom and lemon balm. The wines are delicious young, but they can also age well, often for ten years or more. Alvarinho grows mostly along the River Minho, right up in the north of the Vinho Verde region—the northern Vinho Verde sub-regions of Monção and Melgaço are its famous heartlands. Compared to other Vinho Verde, it makes richer wines, higher in alcohol. Alvarinho vines are vigorous, and care is needed to restrain their exuberant vegetation, yet grape yield is low, the bunches small, and the grapes very pippy.

in most of Portugal’s wine regions. In Vinho Verde country, it goes by the name of Pedernã. It makes vibrant wines with lively, refreshing acidity, often with a mineral quality,

along with gentle flavours reminiscent of apple, lime and lemon. Arinto-based wines can keep well but are also delicious young. Because it keeps its acidity even in hot climates, Arinto is often added to other loweracid white grapes to improve blends—especially in the hot Alentejo and Ribatejo. It makes some of its greatest wines in the small DOC region of Bucelas, just north of Lisbon, where it must account for at least 75 per cent of blends (along with Sercial and Rabo de Ovelha). Its good acidity also makes it a great ingredient for sparkling wines. Arinto’s mediumsized bunches are tightly packed with small grapes.

ncruzado ‌

For the moment, this grape is restricted very much to the DOC Dão, but watch this space. It is one of Portugal’s absolutely top white grape varieties. The best examples have delicate aromas of roses and violets, light citrus notes, a touch of resin and, in certain conditions, intense mineral notes. Amongst its virtues is the ability to maintain almost perfect balance between sugar and acidity, making serious, rich, structured wines with extraordinary aging potential. It is used both as a single variety and as a star ingredient in many Dão blends. The Encruzado vine yields well, presenting no major problems in the vineyard.

a tendency to oxidize, Síria/Roupeiro is a wine to drink young. In its youth it is exuberantly aromatic, citrus and floral, with hints of each melon and bay. It does better in the cool uplands of the Beiras than in the heat of the Ribatejo and Alentejo, and is particularly successful in the Pinhel region in the northern sector of the Beira Interior. The Síria gives high yields, and both bunches and grapes are small.

This land-locked grape grows in a long north-south strip over by the border with Spain. It has various alternative regional names. Síria is the name used in the Beiras, but it is best known by its southern Alentejo name, Roupeir—this is the most-planted white grape in the Alentejo. Because it has

Nacional

Few would dispute that the Touriga Nacional is Portugal’s finest red grape variety, deserving a place right up at the top of the world league of grapes, along with the likes of Pinot Noir, Cabernet Sauvignon and Nebbiolo. Though Northern in origin, it has spread right across the country—you will find it down south in the Algarve and the Alentejo, out west in the Ribatejo/Tejo and Setúbal regions, successfully competing with the local Baga grape in Bairrada, and way out mid-Atlantic in the Azores. Touriga Nacional is a thick-skinned grape, and those skins are rich in color and tannins, giving excellent structure and aging capacity. It also has wonderful, intense flavors, at the same time floral and fruity—ripe blackcurrants, raspberries—with complex hints also of herbs and licorice. Yields are never high.

The Dão and Douro regions both claim to be the origin of this fine grape, and the rest of the winemaking world is beginning to wake up to its quality.

Roriz / Aragonês

This is one of the rare grape varieties to be prized on both sides of the border. Tempranillo to the Spanish, the Portuguese call it by two different names depending on the region: Aragonês and Tinta Roriz (the latter name is used only in the Dão and Douro regions). In recent years it has spread rapidly throughout the Dão, Ribatejo/ Tejo and Lisboa regions. It can make rich, lively red wines that combine elegance and robustness, copious berry fruit and spicy flavor. It’s an early variety (that’s what “Tempranillo” means in Spanish). The vines are very

vigorous and productive and adapt well to different climates and soils, although it prefers hot, dry climates on sandy or clay-limestone soils.

Rich in color, with good acidity and rarely an excess of alcohol, Trincadeira (as it’s known in the Alentejo) or Tinta Amarela (if you are speaking to a Douro producer) makes wines of serious quality when ripe, but it does not always achieve ripeness. Properly ripened, it has vibrant raspberry fruit tempered by herby, peppery, spicy, floral complexity, and it can age well. Under-ripe, it tastes herbaceous. It is a difficult vine to grow, producing exuberant amounts of foliage and needing constant trimming to prevent those vegetal flavors. Yields are generally high, but unreliable. It is very sensitive to rot and other vineyard diseases. For this reason, it does better in hot, dry places, and is therefore particularly at home in the Alentejo and Tejo areas: these are the regions where it really shines, but it is grown throughout Portugal.

It tends to be blended with other varieties, typically Touriga Nacional and Touriga Franca, and also with Trincadeira and Alicante Bouschet in the Alentejo.

Franca

This is one of the structural pillars of red Douro blends, and also one of the five officially recommended grapes for port. It’s the most widely planted grape in the Douro, currently accounting for around a fifth of total vineyard area, and it is now planted right across the northern half of Portugal. The Touriga Franca makes richly-colored, dense yet elegant wines with copious blackberry fruit and floral notes (roses, rock roses, wild flowers...) and firm but velvety tannins that contribute to the aging potential of blends—it is often blended with Tinta Roriz and Touriga Nacional. Apart from the quality of its wines, it is popular in the vineyard for its resistance to pests and diseases and its reliably good crops of healthy grapes.

Bouschet

‌ A colouring grape, perhaps the most Portuguese amongst foreign grapes, Alicante Bouschet produces intense, deeply coloured wines. It wasn’t born here but one may find it in Alentejo sometimes in over 100-years old vines.

Commonly mixed with other grapes, Alicante adds volume, structure and resistance to stand the test of time.

Rich in color with firm ripe tannins, alcohol and acidity. This grape also displays aromas of berry fruit, in particular blackberries, strawberries, and black currants.

Situated in Alentejo, this palace-like 18th century house is a landmark, not only for its beauty but also for its history and the top-quality wine produced there. Wine has been produced in this estate for more than 150 years, but it’s at the start of the new millennium that Júlio Bastos embraced this new project: Dona Maria Wines. The ancient estate winery has been restored, keeping the 19th century marble “lagares” where selected grapes are vinified using the traditional foot treading method, and where the famous Alicante Bouschet is produced.

A‌L‌RENTEJO EGION This huge, sun-drenched area, covering much of the southern half of Portugal, has in recent years become an important source of bold, ripe and fruity red wines. It is no wonder that Alentejo attained its first sub-regions in 1989. Portugal’s entry into the EU brought long-overdue investment into vineyards and cellars. Modern technology, specifically temperature control, made it possible to make good quality white wines as well as rich reds. The Alentejo region has some wonderful old vines that produce a lower yield (but higher quality) of characterful wines.

Quinta do Gradil is considered one of the oldest properties in the municipality of Cadaval. With historical references that date back to the end of the fifteenth century, Quinta do Gradil prides itself on its eighteenth century palace, a major landmark of the region. The history of the property is enriched by names such as the Marquis of Pombal, who acquired it in the eighteenth century and began cultivating the property’s vines. The property was kept by his successors until the 20th century. The finest terroir of the Lisbon wine region and the experience of the past, together with the most advanced technology, are reflected in the wines. Quinta do Gradil is located on the western foothills of the Serra de Montejunto, in the transition area between the humid winds from the Atlantic and the permanent winds from the West, in a region known for its dry summers.

L‌I‌RSBON EGION Fresh sea breezes keep the windmills turning in this charming, hilly coastal region to the west and north of Lisbon. They also keep the vineyards cool, especially on the seaward side. The Lisbon region (which was known as Estremadura until the 2008 vintage) has more DOC’s than any other wine region of Portugal; a total of nine, of which one is for aguardente (brandy) rather than wine. There are a growing number of private wine estates. Many excellent wines are also sold as Vinho Regional Lisbon.

This wine is produced in my winery in Sar Joao da Pesqueira, from a selection of grapes from the best vineyards in the Upper Douro. Castello d’Alba was the first wine I launched— in 2000—and I have always wanted it to reflect my experiences and my vision of a new Douro, putting together cutting edge winemaking with native grape varieties, creating its own modern and innovative style. Castello d’Alba emerges from the new wave that has transformed our region forever—at least as we knew it. Today, it is one of Douro’s leading brands, and is featured in the best restaurants and hotels. This wild and beautiful part of northern Portugal offers extraordinarily good conditions for wine grapes on the steeply shelved slopes of the River Douro, hill after hill stretching off to the horizon with narrow roads winding around their contours. Here, the vine terraces bask in the sun that provides ideal climatic conditions, heating the pure schist and granite soil that is typical within this region. Life is not so easy forDouro DouroRegion winegrowers though; the vine roots are forced down between layers of rock seeking out the limited water, while schist absorbs and then radiates heat. For centuries, Douro growers have been supplying an eager world with Port. Now wine experts the world over recognize that the Douro region also offers ideal conditions for making unfortified wines of the highest quality, both red and white. Producers here are crafting stunning and highly distinctive wines that rank amongst Portugal’s most intense and complex.

We made a great effort that all the prefermentation operations were carried out with great accuracy to preserve the intrinsic quality of the wine. Part of the wine is fermented in used French oak and remains there after a short racking on fine lees with regular stirring “battonage” to the making of the final blend with the wine in stainless steel tanks. Aging 6 months in French & American oak barrels Tasting Notes Complex aroma with a mineral character balanced with tropical and citrus fruits, white wild flowers, as well as discreet and evocative toasty hints of oak. Full and creamy on the palate, with body, freshness and a very long finish. Perfect with baked fish, soft cheeses, spicy and aromatic dishes such as shrimp curry.

Fermentation is done in stainless steel vats of small capacity, with temperatures around 28ÂşC. Controlled and smooth maceration ensures elegant and aromatic wines. With an altitude ranging between 125m and 250m, vineyards planted vertically, double Guyot system and simple Royat, with an average yield of 4.5 tons per hectare. Grapes are 100% hand picked to tanks with an average capacity of 800Kg. The grapes are crushed and destemmed; cold maceration for 48 hours and then alcoholic fermentation for 15 days followed by malolactic fermentation that occurs under controlled temperature at 18ยบC for 15 days. Aging 18 months in second and third use French and American oak barrels Tasting Notes At the Quinta da Cassa estate, the overripe batches of grapes are harvested for Porto wine, while the remaining batches are selected to produce this extremely concentrated wine. In 2011 I returned to the same winery where in 1987 I worked my first harvest, a small winery located in the village of Vermiosa, between the cold and in the highest vineyards in Portugal. I rehabilitated the property, because I believed that this region's winemaking heritage is one of the most hidden treasures of Portuguese wines: old vines of native grape varieties perfectly adapted to the rugged climate caused by the high altitude, along with the soil, where many veins of quartz run through the schist and granite. Through Beyra wines, I seek the Beira Interior's identity: wines of great complexity resulting from the combination of aromatic intensity, minerality and freshness.

INTERIOR BEIRA REGION The climate is seriously continental, hot and dry in summer, but with very cold, long winters. In the summer and autumn heat, alcohol levels can shoot up before tannins are fully ripened, but with care and skill, good, balanced wines can be made. Ripening is easier in the southern sub-region, Cova da Beira, whose exclusive local white grape, Fonte Cal, can make rich, honeyed wines with steely acidity. Other white varieties include Arinto, Malvasia Fina, Rabo de Ovelha and Síria. The main red varieties are Bastardo, Marufo, Rufete, Tinta Roriz and Touriga Nacional. Many vines are old—a plus for quality, meaning small yields and potentially greater concentration in the grapes.

The first fermentation takes place on fine lees with regular stirring “battonage.” Aging After the second fermentation in the bottle (Classic method) the wines age at Beyra’s winery for 18 months with manual Remouage followed by the “degorgement glacee.” With final maturation in bottle for 3 months after degorgement glacee. Tasting Notes Fine and persistent bubbles, has a very fresh aroma—citrus and mineral—with dried fruit hints. In the mouth you feel creaminess in combination with a vibrant acidity from the Síria grape variety. It’s excellent as an aperitif and goes well with desserts too.

At the end of 1993, when leaving Quinta do Noval, it was my ambition to contribute to the development of independent producers in the Douro, thus not only contributing to the establishment of a new and strong wave of innovation in the region, but also complementing, and at the same time diminishing, the Region's dependence on one single type of wine: Port. The richness of the Douro Region and its promotion can be developed into new fields using the different characteristics that make it unique in the world—its geography, soil and microclimate; the numerous different high quality native grape varieties; the different style of wines those grapes can produce from all styles of Porto and other fortified wines (Muscatels) to white and red still wines; all the different properties (Quintas) and their ancient history all serve to accentuate and enhance the uniqueness of the region. Following these guidelines, I started to develop different wines and Ports produced exclusively from grapes grown in different Quintas. It was very natural to start looking at having my own vineyards. Quinta Vale D. Maria was acquired in 1996.

It filled the mouth and felt simply solid. Some aging won’t hurt. It still has room to improve in the cellar and complexity only comes with time. There were 15,531 bottles produced. Tinta Francisca, Touriga Franca, Sousão, Rufete and Touriga Nacional in a parcel of 4.5 hectares Vinification Quinta Vale D. Maria “Vinha da Francisca” grapes are foot trodden and fully fermented in lagares for 7–10 days at temperatures ranging from 22–27°C. The resulting wines are then racked into new Allier French oak 225-liter casks from various coopers, namely from François Frères and Taransaud, where they go through malolactic fermentation. The final choice of casks and the blending happened in June. Since 1996, our first harvest at Quinta Vale D. Maria, we identified the unique characteristics of each parcel of vineyard. Each and every one has a story to tell. In 2004, the year of our daughter Francisca’s 18th birthday, we planted Vinha da Francisca (Francisca’s Vineyard) with several different grape varieties amongst which is Tinta Francisca.

The grapes used for CV—Curriculum Vitae come from plots in our vineyards in the river Torto which have been chosen after many years of experiencing their incredible high quality results. Predominantly north facing, these very old vineyards, with more than 80 years, produce grapes with great freshness and concentration, normally averaging 14.5° Baumé. Aging New (75%) and one-year-old (25%) French oak casks, for about 21 months. Maria White Porto is a blend of wines produced with many different grape varieties from vineyards of around 15–80 years of age. These vineyards are planted as a field blend, with varieties such as Rabigato, Codega de Larinho, Arinto, Gouveio, etc… Grapes are foot-trodden in traditional granite fermenting tanks, or lagars. Brandy is added to the fermenting lagar to stop fermentation and raise the alcohol level. The wine is racked into old oak pipes or barrels and left to age for an average of three years. The young fruit of the White Porto is therefore maintained, but a mellowness is also captured. With notes of apricots, lilac and violets this White Porto is quite complex.

Nuno Cancela de Abreu was born into a family with over 130 years of farming tradition, in a property located in the wine region of Dão. Nuno is representative of the 4th generation of the Cancela de Abreu family. Despite his |high academic background, the influence of his family was the key element in pursuing a career in winemaking. It was in the harvest of 2010 that he decided to dedicate all his experience in viticulture and winemaking exclusively to the Boas Quintas project in order to develop it in a sustainable way. In 1991, a new vineyard was planted and the brands "Quinta da fonte do Ouro" and "Quinta da Giesta" were born. Nuno is always striving for initiatives that will allow him to create high quality wines with distinctive character and personality.

D‌RÃOEGION Dão is situated in the Região Demarcada do Dão with the Dão-Lafõessub region of the Centro, Portugal. It is one of the oldest established wine regions in Portugal. Dão wine is produced in a mountainous region with a temperate climate, in the area of the Rio Mondego and Dão rivers in the north central region of Portugal. The region became a Denominação de Origem Controlada (DOC) appellation in 1990. The Dão region is the origin of the Touriga Nacional vine that is the principal component of Porto wine

Vineyard Fonte do Ouro Grape Varieties Encruzado Arinto Vinification Skin contact in the press aromatically enriches the wine. After pressing, the clear juice ferments at 14ºC during 30–40 days in stainless tanks, very slowly to keep all the aromas in the wine. We make batonage twice a week in the barrels to give more volume and complexity to the wine. In January we fine and filter, then bottle the wines.

The freshness on the palate is complemented by smooth and elegant tannins, which are typical of the Dão wines. Very smooth, pleasant and persistent. Goes well with red meat and oven roasts.

ORTO AND DOURO PREGION

The family name comes from the small city of Moelln in northern Germany, deriving from the word “Burgomestre,” meaning head of the municipality.

This wild and beautiful part of northern Portugal offers extraordinarily good conditions for wine grapes on the steeply shelved slopes of the River Douro, hill after hill stretching off to the horizon with narrow roads winding around their contours. Here, the vine terraces bask in the sun that provides ideal climatic conditions, heating the pure schist and granite soil that is typical within this region. Life is not so easy for Douro winegrowers though; the vine roots are forced down between layers of rock seeking out the limited water, while schist absorbs and then radiates heat. For centuries, Douro growers have been supplying an eager world with Port. Now wine experts the world over recognize that the Douro region also offers ideal conditions for making unfortified wines of the highest quality, both red and white. Producers here are crafting stunning and highly distinctive wines that rank amongst Portugal’s most intense and complex.

At the end of the 18th century, the company was dissolved and Henry Burmester Jr. established a new port wine company alongside his two sons, Frederick and Edward—H. Burmester & Sons. In 2005, the Sogevinus–Fine Wines Group acquired the Burmester Company, continuing the tradition of producing Porto wines of excellence.
