I am so excited to present our first holiday edition of Mountain Town Magazine. I can’t imagine any place more beautiful to spend time in than our festively decorated towns.

We open the magazine with an article on Evergreen, Colorado written by local resident Caren Austin. Her Joie de vivre for this picturesque mountain community will have you jumping in the car to go, shop, eat, drink, and be merry.

We follow up her article with some of the improvements happening at our local ski areas. It’s not only the resorts that make our town a great place to call home, it’s the unique, local businesses that have been built, too. Check out some of the fantastic Mountain Made products and read about our entrepreneurs and some of the cool family businesses that thrive here.

What is a holiday without scrumptious Food and Beverages to indulge in? Our Great Eats and Apres feature is back highlighting our mountain town’s new eateries, award-winning chefs and establishments, restaurants with staying power, a honey of a sweet story, and a whole lot more

Four Season Outdoor Fantasyland

When I was asked to write a feature story on Evergreen, CO for Mountain Town Magazine, I considered it an honor to write about the most beautiful place I’ve ever seen, and a bonus is that I live here in this little slice of heaven. Just 19 miles from Denver, and sitting at 7220 ft, with higher altitudes in different areas, Evergreen, CO is a mountain town that is easily accessible for a get away from the big city life, and a magical place to call home.

A bit of history on Evergreen. Settled in 1859 and named for the beautiful Evergreen trees that surround the town, Evergreen’s buildings have stories to tell. For instance, The Little Bear Saloon’s original core building was once an Episcopal church, and moved to its Main Street location in the 1890’s. For the last 40 years The Little Bear has become the place to go enjoy a libation and awesome live music. Before it was named The Little Bear in the 1960’s, it was called the Red Ram, and hosted greats like Count Basie and Duke Ellington. The Red Ram sign still sits on Little Bear’s roof today.

During the late 19th century, people from Denver loved coming to Evergreen to get away from it all, and some of them even built summer homes in Evergreen. The dam was built in 1928, creating Evergreen Lake which gave tourists and residents a place to enjoy summer and winter activities. Even today, Evergreen Lake is a hugely popular place for activities year-round. There is so much history in Evergreen, you can visit www.evergreenchamber.org to learn more.

The open space in Evergreen is abundant. Some of my favorite hiking spots are Elk Meadow, Alderfer Three Sisters, and Maxwell Falls. A perfect day can consist of a hike at one of these places followed by a fabulous lunch at one of many great restaurants around town.

The wildlife in Evergreen is ever-present, and why many professional photographers are constantly waiting for that perfect shot of elk, deer, birds, fox, or maybe even a bear! An “Elk Jam” might be your excuse for being late to work, but that’s how we roll here in Evergreen. It’s a place to always have your camera or phone ready for an incredible shot, just don’t get too close to our wildlife, remember, they were here first, and need their space.

Evergreen Lake is the perfect place to go ice skating, ice fishing, or pick up a game of hockey in the Winter. Fun fact, the lake is the largest Zamboni maintained frozen lake in the World! It is a fantastic Winter activity in Evergreen, and so fun for paddleboarding in the summer. The 1-mile walking trail around the lake is beautiful in any season, and a definite camera worthy activity.

Big news here in Evergreen… We are so lucky to have a movie being made right here. Think Romcom meets the holidays and get ready for Mocha and Mistletoe! Filming this December in Evergreen, the movie will feature all things holiday in our town. Who knows you might even be asked to be an extra!

Since the holidays are about food and family, let’s dig into some of my favorite places to dine in Evergreen. For breakfast, hit Java Groove in downtown for great coffee and brunch eats. If it is wine you are craving, there is no better than Creekside Cellars. You must try their charcuterie board. It is something that you will definitely want to take a picture of because it is that beautiful. The wine here is made on the premises and has won many awards. Willow Creek is a quaint, upscale restaurant situated right on Lake Evergreen. The views are spectacular, and so is the food. My favorite thing to order is the Sausage Rigatoni. Local ingredients are used whenever possible, and some are even grown on premise. Another great hang out for lunch, dinner, and listening to fabulous live bands, is Cactus Jacks. Cactus Jacks is an institution in Evergreen, and the owners are the nicest people you will ever meet. Their patio in the summer is next level, and it is a cozy place to hang out in the Winter. The Woodcellar Bar & Grill is the place I go where “everybody knows you name”. It’s a local’s hangout but they always welcome new faces. Their nachos are some of the best I have ever had. Evergreen Cooking School and Market is my go-to for steaks, seafood and chef prepared take home goodies for dinner.

If you are visiting Evergreen, you must stay at Highland Haven Creekside Inn. t’s a magical place that sits right on the creek. You can enjoy a glass of wine while sitting on the Adirondack chairs overlooking the creek in the warmer months, and in Winter, you can just relax by the outdoor firepit or cozy up to the fireplace in your room. The rooms are gorgeous, and their breakfasts are legendary. The inn is walking distance to all the shops and restaurants downtown. Plan ahead as they fill up fast.

Shopping for the holidays is easy in Evergreen. I love Marmalade Jewelry, Sisters & Company, and Black Fox Provisions for all my holiday needs. Nothing says the holidays more than the Christmas tree at Mountain Home.(as seen in the Table of Contents) .The store is exquisite, and the tree inside is jaw dropping. You can purchase the ornaments off the tree to take home. It is truly a one stop shop for gift buying.

There are so many events year-round in Evergreen, but holiday season is extra special. The annual Evergreen Holiday Walk takes place December 6th and is a huge Winter wonderland event. Meet Santa, shop the local shops, sip some hot chocolate or cider, and take in all the beautiful Evergreen holiday spirit. On January 1st, you can take the Polar Plunge at the Evergreen Lake. Smile for the camera for ultimate bragging rights while helping nonprofit, Active4All. Your entry helps scholarships and the capital needs of the Evergreen Park and Recreation District.

Whether it is skating on the lake in the Winter, leaf peeping in the Fall, paddleboarding in the Summer, or watching all the wildflowers bloom in the Spring, Evergreen is an outdoor fantasyland 365 days of the year. Evergreen is a town full of the nicest people always helping their neighbors, and a beautiful town to call home. If you live here, you know exactly what I mean. myself pulling out my phone to constantly take photos. Sometimes I feel like a tourist here, but Evergreen is just that beautiful. This holiday season, I am grateful, lucky, and most of all, happy that I get to live in such a beautiful place. One thing that you can always count on in Evergreen, we will always leave the light on for you.

WINTER PARK UNLOCKED

Since its founding in 1940, Winter Park Resort has been growing and evolving. More recently, the resort and the Town of Winter Park have collaborated on responsible development and continually evaluating how best to integrate their long-term plans.

Winter Park Resort recently submitted a Preliminary Development Plan (PDP) to the Town of Winter Park to redevelop its base area, marking an additional early step in the resort’s future development process.

The CEO of Winter Park Resort, Sky Foulkes, recently unveiled details about the resort’s expansion plans. It is exciting news for mountain town enthusiasts, and the resort is now actively promoting the project and sharing this information with the public.

This significant expansion will unfold over the next decade, with a total investment exceeding $2 billion.

At the heart of the plan is developing distinct neighborhoods to preserve Winter Park’s unique and authentic character with green spaces integrated throughout and transforming previously disturbed land back into natural environments. To highlight Winter Park’s natural environment they plan to preserve the Fraser River, improve access, and transform the river into a focal point of the resort. In addition, this plan will significantly enhance the guest’s arrival experience and expand options for lodging, dining, and shopping throughout the base.

Some of the initiatives include:

Expanding Vasquez Ridge Terrain (this will make Winter Park the 3rd largest major ski resort in Colorado).

A new Gondola that will connect the resort to downtown Winter Park, effectively making the town of Winter Park ski-in/ski-out (and the first leg of the gondola on the resort side is planned for summer 2025).

A ski trail to downtown Winter Park (usable for hiking and biking in the summer).

A brand new, 10,000 sq ft ski school located on-mountain in Discovery Park.

A new restaurant on Vasquez Ridge and improving/upgrading current on-mountain dining options.

Additional snow making equipment for Winter Park and new (for the first time) snow making equipment for Mary Jane.

New and improved mountain passenger rail service connecting Winter Park to Denver, Arvada, Steamboat, and Craig.

Looking to the future, the resort anticipates growing its experience and offerings while honoring the region’s heritage and the needs of the community, employees, and guests.

TECH STARTUPS IN OUR MOUNTAIN TOWNS

The Summit Economic Partnership (SEP) has officially launched the 2024 Fall High Country Tech Growth Challenge, Summit County’s first tech accelerator program. In partnership with Yampa Valley Entrepreneurship Center and Startup Colorado, This sixweek initiative supports tech-enabled businesses looking to scale by providing mentorship, financial resources, and building investor connections.

Each week, participants will engage in interactive sessions covering crucial topics such as Colorado’s funding ecosystem, financial forecasting, legal structures, and pitch training. The accelerator will conclude with a Demo Day on December 6 in Steamboat Springs, CO, where entrepreneurs will present to regional investors and industry experts for feedback and support.

Seven promising businesses from Summit County have been selected to participate, each with established customers, revenue streams, and a clear path to expansion. The chosen businesses come from various sectors, showing significant potential for national or

international growth and the ability to bring broader economic benefits to Summit County:

Public House: A streamlined online application management system designed to simplify affordable housing application processes

TubeSift: An AI-enabled software platform that helps advertisers target their audiences more effectively on YouTube.

Backcountry Beauties: A community-driven app and platform that empowers women to connect and explore the outdoors together.

TreadShare: A ride-sharing platform focused on outdoor enthusiasts seeking sustainable travel options.

StayLoci: A rental platform offering additional tools for hosts to increase opportunities for longer stays.

PHRED Solutions Inc: A software company developing solutions to optimize manufacturing processes and logistics

MONARCH MOUNTAIN EXPANSION

Monarch Mountain is celebrating 85 Years of Independence this season and after more than a decade of planning, Monarch Mountain is excited to announce that they received official approval from the United States Forest Service to begin the expansion of their special use permit boundary into the No Name Basin.

Monarch Mountain’s teams spent the summer building an access road, extending powerlines, and clearing trails in the expansion area. The development will add 377 acres of primarily intermediate to advanced skiable terrain on the west side of the Continental Divide in the 2025-26 ski season. This terrain is currently used by Monarch Cat Skiing operations and will offer access to traditionally cleared trails and gladed terrain for primarily intermediate to advanced skiers.

The approval comes after three years of review from both the San Isabel and Gunnison National Forests. After analysis, consulted organizations found no significant impact with special consideration given to sensitive cultural resources and wetlands in the area.

The Friends of the CAIC (Colorado Avalanche Information Center) is a 501(c)3 nonprofit organization that was created to support the CAIC, while contributing to avalanche awareness and education throughout Colorado. Over the past 15 years, the organization has funded avalanche awareness curriculums, developed avalanche safety videos and signage, createdoutreach for new and existing users, built new web and mobile applications, and supported the CAIC’s forecast operations.

Colorado leads the nation in avalanche accidents and deaths. In fact, they are the most deadly weather-related natural hazard in the state on an annual basis, averaging about 6 deaths per year and many more non fatal injuries from involvements.

How

to stay safe (and not be a jerk) when driving

in winter

As anyone who has ever been stuck on Interstate 70 can attest, driving in winter can be dicey in the Colorado Rockies. Follow these protocols and precepts to make your winter driving experience not only less harrowing, but less likely to injure or upset others on the road.

The first tenet of safe winter driving? Don’t drive. If it’s a full-on blizzard or a bad storm is imminent, stay off the roads. Save that trip to the grocery store or to the ski shop until the weather improves. Also consider other means of transportation if available – shuttle, bus or walking.

If you must drive, give yourself extra time to get to your destination. Make sure your car is winter road-worthy. If it’s a rental, insist on an all-wheel or four-wheel-drive vehicle with snow-rated tires. It is illegal to drive on I-70 in winter without Mud and Snow-rated tires, and it’s mind-blowing that rental companies get away with renting inappropriate vehi-

cles in winter. Also, make sure you have a full tank of gas when you set out for longer journeys. Check that windshield wiper fluid is full, your brakes work properly and your tires are at the correct cold weather pressure. Also, if your car is covered in snow, clear it off before hitting the road.

Drive cautiously. Slow your speed significantly when roads are snow or icepacked. Don’t use cruise control or look at your phone while driving. Give vehicles in front of you plenty of extra space. Even the world’s best snow tires don’t have great traction on snow and ice. Don’t accelerate too quickly, especially up hills. Take curves slowly and pay attention ahead for obstacles, slowdowns, traffic lights and stop signs. If you start sliding, don’t hit the brakes; instead steadily turn the steering wheel in the same direction as the slide to straighten out.

Respect snowplows and police escorts. Stay well behind them and give plenty of space when it’s time to pass.

Take a deep breath. Winter driving doesn’t have to mean white knuckles.

The Colorado Historic Opera Houses Circuit has expanded its first-ever touring performances in mountain communities, adding a new program addressing adolescent mental health. In partnership with Central City Opera (CCO), the Circuit will present CHIAROSCURO: Light in Darkness, an opera designed to address mental health and suicide prevention among adolescents.

The Tabor Opera House in Leadville, Colo., will host CHIAROSCURO: Light in Darkness on Tuesday, Oct. 15, 2024, at 1 p.m. for Lake County High School students.

In a creative partnership, the Wheeler Opera House in Aspen will present Frida Kahlo and the Bravest Girl in the World in schools throughout the Roaring Fork Valley Oct. 22-24, 2024. This outreach is taking place while the Wheeler’s main stage is closed for a theatrical rigging replacement.

In the winter you can be sure he’s out skinning and skiing the backcountry. In the summer he’s happiest ripping lip with a fly rod in hand.

Both are passionate about what they do and where they live. PT has been serving his community as a former Salida Mayor and is now serving in his elected role as Chaffee County Commissioner. He is also a Board Member of the American Craft Spirits Association and a past President of the Colorado Distillers Guild.

Lee stepped into PT’s Chaco’s and is currently the President of the Colorado Distillers Guild.

As if you didn’t notice, there’s a lot of River speak in this article, which feels appropriate, since that is where the idea of Wood’s High Mountain Distillery was hatched, on the River.

PT is a Grand Canyon rafting veteran. He has floated down that section of the Colorado River 18 to 20 times. On every

trip, cases of whiskey are consumed by him and his Compadres. And with every bottle consumed, you would hear PT exclaim, “I could make that”.

In 2008, his words became action and then reality, after a lot of research and business planning. It was the discovery of an old German Pot Still, affectionately named Ashley, that became available for sale in Kentucky. The Wood’s brothers were not even sure she worked but bought her, brought her home, and plugged her in. It is now one of the oldest stills in commercial operation in the world. “Ashley”, is an antique German pot still built in the 1880’s. This 144-year-old Still was initially used to distill all their products and is still in use today to distill their selections of gins.

PT discovered a 100-year-old building in Salida that housed an old auto body shop two blocks from the Arkansas River to set up their base camp. They bought it and then got to work. In November 2012, they opened a Tasting Room in the front of the structure which now offers an ever-changing menu of tasty cocktails.

A FAMILY FURNITURE BUSINESS WITH HEART

When you build your company around family values and commitment to community, people take note. iFurnish owners Tony and Kelly Pestello grew up in small town Minnesota and decided to relocate to Summit County in 2005, bringing their love of the furniture business and hometown ideals with them.

In fact, the Pestellos are proud to field frequent calls and emails from customers complimenting their delivery team. “To get four and five calls a week praising them is really special. That makes us feel good. We have a bunch of people that care. They care about each other, their co-workers and the customer,” Kelly says.

As part of its successful growth model, iFurnish offers complimentary design services, working with contractors, property managers and realtors along the way. One-bedroom condo or eight-bedroom luxury home, lead designer Courtney Sheldon will visit a property and apply her expert design eye.

“It’s our employees and our commitment to our communities that matter most,” Tony says. “Kelly and I believe in supporting all of these communities, we encourage our employees to give back and we volunteer with and give back to the Summit Foundation, Community Care Clinic, Summit Chamber of Commerce, FIRC, Smart Bellies, youth sports and others.”

That extra care—providing guidance when a 20-something employee is stepping into their career and adapting to living in the mountains for the first time—is what sets a family business apart from a corporate organization. iFurnish has also received the Summit Foundation’s philanthropic recognition award for its community contributions.

The MICHELIN GUIDE has come to Colorado and we couldn’t be prouder. Michelin published its first North American Guide in 2005 for New York. Today the Michelin Guides cover the Food and Beverage industry in Washington D.C., Chicago, California, Miami/ Orlando/Tampa – Florida, Colorado, Toronto, and Vancouver. Colorado is one of the sixth in the United States to have obtained that honor.

The MICHELIN Guide was crafted at the turn of the 20th century in France for travelers to discover exceptional restaurants during their travels. Since then it has become one of the most recognized and prestigious resources for restauranteurs and diners alike. Once a printed magazine the Guide is now found online to reach a wider audience.

Michelin’s methodology for determining their awards is based on five criteria, to ensure each destination’s selection equity: 1. quality products 2. the harmony of flavors 3. the mastery of cooking techniques 4. the voice and personality of the chef as reflected in the cuisine 5. consistency between each visit and throughout the menu. Each restaurant is inspected by anonymous MICHELIN representatives several times a year.

This high-end Colorado-ingredient dining concept shines from the resort’s new mid-mountain Aerie lodge.

The smoke was still rising from Copper Mountain’s 50th birthday candles when the humble Colorado ski resort launched into its largest single improvement project in more than a decade. Crowning the developments is the striking 25,000-square-foot glass and pine lodge, The Aerie. Situated at the top of the American Eagle lift, the food hall opened in November 2023 and houses two stories of casual and upscale dining that includes the polished 115-seat Forage & Feast, coffeehouse space and 270degree views of the Gore and Tenmile mountain ranges.

We sat down with executive chef Brian Duncan to see what’s cooking at Forage & Feast:

Mountain Town: Describe the Forage & Feast concept for those who have never been.

Chef Duncan: The Aerie is meant to be an alpine nest. Forage & Feast showcases what we can do within the confines of Colorado using what’s available from foraging in the summer and fall and then feasting all winter.

Mountain Town: Who are some of your favorite purveyors to forage from?

Chef Duncan: We work with Colorado farms to source produce and proteins. Uncle Johns in Summit County makes runs to 20 different farms in Delta and Palisade and beyond to bring back what’s in season. We get Olathe sweet corn, Palisade peaches, heirloom tomatoes, and random things, which I enjoy the most, like pluots and purple plums and apricots, when they’re in season.

Mountain Town: What did skiers and boarders love to eat last season?

Chef Duncan: An approachable menu favorite was our Italian dip sandwich. It’s made with bread from our bakeshop, Gold Canyon-sourced Colorado beef that’s braised in house and topped with a fresh veggie giardinara that we pickle in house. It’s a great winter comfort dish.

Our duck confit poutine knocked it out of the park. We use the drippings to make a duck gravy incorporating cranberries and garlic cheese curds from Wisconsin.

Mountain Town: That sounds delicious. How about this ski season? What are you looking forward to preparing?

Chef Duncan: We really got our footing mid-season last year and started doing a rotating handmade pasta. It became one of the biggest hits of the season. We serve a classic roasted butternut squash puree with chive and ricotta-stuffed tortellini with toasted hazelnuts in a sage brown butter sauce. It’s served as an app for a shared, comforting, lunch break warmup.

Mountain Town: And for those craving something lighter?

Chef Duncan: Some people want a nice light, easy eating salad and a glass of chardonnay. Our Caesar was popular with roasted cauliflower and grilled broccolini folded into the romaine to make the salad more substantial.

Mountain Town: What’s The Aerie vibe?

Chef Duncan: It’s a tucked-away cabin vibe that’s glowing and comforting. You enter the space and see the grandeur of the chandeliers and fireplace and you’re rewarded with the incredible view of the Tenmile Range or Gore Range. Nothing beats sitting outside on a sunny bluebird afternoon enjoying the comfy seating and fireplaces.

Mountain Town: How do you want guests to feel while dining here?

Chef Duncan: I want them to feel like they’re in a position where they’re being taken care of. They’re receiving hospitality like they’d receive at a high-end restaurant in a city. They’re walking into a mountain lodge and getting metropolitan-style food and service.

SWEET BASIL VAIL

The nearly half-decade-old, Michelin lauded restaurant knows how to stay fresh

There are long-standing restaurants that generations of families have frequented for decades, sometimes just for the sake of nostalgia. In the case of Sweet Basil, opened in Vail in 1977, it’s not only a classic but still unquestionably one of the most outstanding eateries in Colorado, as confirmed by its recent placement on Michelin Guide’s rather short list of recommended restaurants.

“Never assume you have it figured out. Always try to find one little thing that makes it better and keep working at it,” says Sweet Basil owner Matt Morgan.

Morgan gleaned this wisdom from Sweet Basil founder Kevin Clair throughout their decades of working together. Morgan started as a bus boy in 1987 and worked up to server, bartender, manager and co-owner until Clair retired in 2017, when he gained full ownership.

“We’re grateful for our success,” Morgan says. “Good is not good enough. It’s got to be great. We challenge each other to

that and ultimately come up with the best version of every drink and dish. It’s a collaborative process.”

In addition to making Michelin’s list of Recommended Restaurants in Colorado, Sweet Basil’s Jesenia Sanabria and beverage team won Michelin’s Exceptional Cocktail Award.

Indeed, one gets their first glimpse of the restaurant’s mind-blowing creativity with its ever-changing cocktail list. For example, the Carats & Clarity blends Barr Hill Tom Cat Gin (a company that strives to protect honeybees) with Cynar Amaro (an obscure Italian elixir with a blend of herbs and plants including artichoke) carrots, lemon and maple. The combination is remarkable refreshing and lip-smackingly delicious.

The food menu, while maintaining a handful of signature items (the Caesar Salad, Shrimp & Calamari, Toffee Pudding Cake, etc.), is equally as explorative, with a constant but varied selection of raw seafood and salads with seasonally fresh ingredients on the appetizer list. Newer signature items, like the spaceship-shaped (and sized) whipped feta appetizer (also

excellent for a savory dessert) change with the seasons. The preparation, seasonings and accoutrements of entrees – steak, chicken, seafood and game – also vary depending on latest chef inspirations. These are often prompted by annual staff trips Morgan finances, encouraging his team to eat and drink their way through destinations like Napa Valley, New Orleans and Chicago.

Michelin dubs Sweet Basil’s cuisine as “fusion,” but head chef Paul Anders, who started at Sweet Basil in 2005, prefers the term “unrestrained.”

“It’s globally eclectic, American cooking,” Anders says. “We dip into that melting pot. I went to Italy and was cooking Italian for a few months. Several of our team went to Mexico this summer. The octopus taco on our lunch menu is inspired by that trip. We like to share these impressions from afar and make them as authentic as possible. We taste, experiment and critique. Each item goes through a whole panel of taste buds.”

A History of Hospitality

The restaurant’s history is woven into the very fabric of Winter Park. Over the decades, it has evolved alongside the town. Through all of the changes, one thing has remained constant - Charles ‘Deno’ Kutrumbos dedication to make every person who walks through the restaurant door feel at home.

Deno’s has deep roots in both hospitality and skiing culture. The story of this restaurant began when Deno crossed paths with Bob Singley, freestyle skiing pioneer and Olympic athlete, at the University of Tampa Ski Club. His journey into the restaurant business began shortly after Deno relocated from Florida to Winter Park in the early 1970s.

With the nudge of Singley, Deno moved to Winter Park to fill an open position as the kitchen manager at the Swiss Haus. Deno gently encouraged his future wife, Betsy, to join him in the mountain town. She agreed and worked as a waitress at the restaurant. The couple settled in Winter Park, where they raised their two sons, Nick and Teddy.

By 1976, Deno seized the opportunity to purchase the restaurant, renaming it Deno’s Swiss Haus and Couchman Tavern. The restaurant underwent a handful of name changes before landing on the renowned Deno’s Mountain Bistro.

In the late 1980s, Deno developed a keen interest in wine. As old world wine slowly gained notoriety in ski culture,

wine-markers made their way to the ski slopes along US-40. Deno began building new relationships with the winery owners who visited the area. He often invited them to stay in his condominium above the restaurant, and in return, he visited their vineyards.

Today, Deno’s wine collection boasts signed bottles from vineyard owners worldwide, reflecting those enduring relationships. His efforts helped grow Deno’s wine collection into one of the largest in the region, featuring over 400 labels, including a notable vertical collection of various wines, such as an extensive variety of Opus One vintages.

Generations of Hospitality

Both Deno and his family grew up in the restaurant world. Deno grew up above his parent’s small Greek diner, The Little Campus, in Asbury Park, New Jersey. His son, Nick, fondly remembers spending his childhood at Deno’s, alongside his brother Teddy, surrounded by local families and employees’ children.

Reflecting on his earliest memories at Deno’s, Nick recalls, “When I was 3 or 4 years old, I’d crawl under the tables collecting quarters to play pinball in [what was then] the gameroom.” As soon as he was old enough to work, Nick did just about every job in the restaurant - from washing dishes to bussing tables. In high school, “I was on the ski team [at Winter Park] and the bus would drop me off right across the street,” he added.

After graduating from college, Nick returned to Winter Park in the early 2000s. With Deno retiring to Florida, Nick naturally took over the family business. By 2007, Deno was nominated by his peers and inducted into the Colorado Restaurant Hall of Fame, honoring his contributions to the industry.

“Hospitality was in his blood,” Nick said about his father’s warm, outgoing nature that made guests feel at home. “That’s

what people remember and what they come back for. Our success is rooted in those values.”

A Restaurant Rooted in Community

The family’s commitment to their staff and community has been central to their success. Nick, current Mayor of Winter Park, leverages his position to drive meaningful change in the community. He’s actively involved in addressing important local issues, such as mental health and workforce housing.

“If you take care of Deno’s, Deno’s will take care of you,” said General Manager, Brian Knightlinger. “Deno’s has been such a good place for my personal growth… the support I’ve received from Nick and the entire Kutrumbos family… the trust that’s placed in the [staff] gives you that environment to grow.” The restaurant industry, which thrives on connection and service, is uniquely positioned to foster a supportive environment for both employees and residents. Deno’s lasting commitment to treating staff like family continues to strengthen Deno’s bond within the Winter Park community.

Defined by its old bones, the restaurant maintains its commitment to provide excellent service and consistent food at a great value. “We want people to walk in and feel comfortable,” Nick said. “Whatever is going on in your world, you go in, sit at the bar, and have that same bar stool you sat in 20 years ago, it’s like a time capsule.”

As Winter Park continues to evolve, it’s important to hold onto the quirky, unique charm that makes this mountain town special. Regardless of the changes in this small ski town, stepping into Deno’s should always feel like home—a comforting reminder of community and continuity.

Arapahoe Basin

6th Alley Bar & Grill: A-Basin’s award-winning base area restaurant is the hang spot complete with award-winning food, live music and iconic spicy bacon Bloody Marys. Find your seat on the two-story deck or bellied up at the lively bar where locals will regale you with East Wall stories. Local bands jam out on weekends and winter supper club nights offer themed chef-hosted dinners worth nabbing a ticket to.

Aspen

Ajax Tavern: This après ski legend sits at the base of Aspen Mountain next to the Silver Queen Gondola, making for a smooth transition from slopes to social hour. Slide into a welcoming red booth or soak up afternoon rays on the spacious patio. The people-watching is just as savory as Ajax’s Wagyu double cheeseburger and to-die-for truffle fries.

J-Bar: Laid back enough to bring the kids, but posh enough to feel that Aspen dazzle while sipping vintage-inspired martinis, J-Bar is a longstanding social hub not to miss. The 19th century bar is cloaked in Old West charm, inviting in ski bums and socialites to nosh oysters, beer-battered onion rings and chile-glazed sticky pork ribs.

Breckenridge

Robbie’s Tavern: The only locally owned restaurant situated on Breckenridge Ski Resort, this slopeside bistro is housed within the Grand Colorado on Peak 8. The best seats overlook the last runs of the day from a regal perch on Robbie’s second-story deck. Prop yourself up near the gas fire feature and order a famous Robbie’s mountain margarita.

Briar Rose: In town, look for this iconic pink steakhouse and head to the loungey saloon for martinis, wine and the most impressive roundup of taxidermy in Breck. The former mining boarding house is known for its shareable small plate apps and strong cocktails. Nibble on shishito peppers and Cajun beef tips over smoked old fashioneds.

Crested Butte

Bonez: Sultry, sexy Bonez serves up a potent happy hour (daily from 3 to 5 p.m.) with deals on house margaritas and tequila shots — both are best tossed back with bowls of queso blanco and stacks of yucca fries with pickled green chilies. Put some elbow grease into the DIY stone mortar and pestle guacamole and pair it with a dangerously delicious Crested Butte ranch water on the rocks.

EATS & APRES A GOLDEN HONEY GATHERING

A few weeks ago, I was celebrating a friend’s birthday in Breckenridge, CO when we all wandered into the Björn’s Colorado Honey store. I bought a couple of jars to take home because I absolutely love anything made in the beautiful state of Colorado. When we got home, we started to taste all of them. This isn’t any ordinary honey; it is special, and I had to find out more.

After speaking with Pontus, the owner of Björn’s Honey and “beekeeper of the hives” (sounds like a Game of Thrones reference), my foodie wheels started spinning and I had an idea. Björn’s Colorado Honey has a store in Golden CO, and I wanted to pair some of Golden’s best bites with their honey for a taste test experiment Golden style. The tasting came together easily, and we all met at The Buffalo Rose in Golden for our honey adventure. But first a little background on this magical company called Björn’s Colorado Honey.

Björn’s Colorado Honey is a small batch honey producer. Owner Pontus grew up in Sweden and learned this incredible art from his grandfather. When he and his wife Lara moved to Colorado, he wanted to follow in the tradition of his grandfather, Bjorn. So, Björn’s honey was soon born in the USA. Their goal was to provide top quality honey produced in the Swedish family tradition, which is often crystalized and whipped to be smooth and spreadable.

Eleven years later, they have hives on organic farms in Weld County, Boulder County, and the Denver area. They also carry bee-based products like skincare which I also purchased and use daily. Their lip balm is something I carry in my purse and cannot live without. The Double Propolis honey is fantastic for seasonal allergies and is one of the best sellers.

We had four tastings to try with Björn’s Colorado Honey. The first was a Burrata Salad from The Buffalo Rose. We paired this with Björn’s delicious honeycomb which is not available all the time at the store, but when it is grab it because it is

like nature’s candy bar. Paired with the creamy burrata, it was an instant match, and we were already hitting it out of the park.

Next up was The Devils on Horseback from The Buffalo Rose paired with Björn’s Traditional Colorado Honey. Nothing could be better than bacon wrapped dates with honey. It was a perfect combination, and they disappeared immediately.

Anthony’s Pizza in Golden was kind enough to participate in the tasting contributing a delicious pepperoni pizza. Anthony’s pizza is one of my favorite pies in the mountains, so I was super excited to pair this with Björn’s Sweet and Spicy Colorado Honey.

This is one of my favorite honeys from Björn’s and when we dipped the pizza crust in the honey it was a flavor explosion

like no other. I have had this honey in salad dressings, on brie cheese and on ice cream. The possibilities are endless.

We had to have dessert, and The Buffalo Rose brought out their famous Churros. We dipped them in the Clover Blossom Colorado Honey for some sweet, crunchy, honey goodness. Churros have become a thing now, so this dessert at The Buffalo Rose was the perfect ending to a perfect Golden day.

All in all, our foodie experiment was a huge success, but I encourage you to experience Björn’s Colorado Honey with your favorite foods and take them up a notch. Whether you are a sweet or a savory eater, you can find a match made in heaven when you try this honey. My pantry is currently filled with a variety of their Colorado bee’s goodness.

It was so special to have this collaboration where local Golden business owners got to meet each other. I just sat back and watched as the ideas that these three businesses crafted and collaborated together.

Friends were made, honey was poured, and rest as they say was Golden honey history.

The Town of Silverthorne has been going through a robust revitalization which has now taken shape as a basecamp for adventure in Colorado’s Rocky Mountains. A New Frisco Wine Bar Focuses on Global Vintages and Community Connection

Longtime entrepreneurs sharing a deep love of cooking and entertaining, Debbi and Eric Anderson bought a Frisco home in 2013, officially swapping their Denver address for a full-time Summit County zip code in 2022.

Burnt out with her 30-year CPA and public accounting career, Debbi was ready to shift into hospitality. The Andersons toyed with ideas for a bed and breakfast in Montrose and a coffee shop in Idaho Springs and, when the space on Fourth Avenue opened up, they jumped on the chance to build out their dream wine bar.

The Andersons opened Vine Street Social in Frisco in December of 2023, naming the charming corner spot as an ode to their old neighborhood — near Wash Park and north City Park on, you guessed it, Vine Street — and the legendary dinner parties they’d host.

A Miami interior design team dressed the Frisco restaurant and bar in smooth marble and tan leather in what Debbi calls a French bistro meets West Elm

aesthetic. The mindfully curated wine list circles the globe, but isn’t stuffy or unapproachable.

“We’re not trying to be super nerdy about it,” Debbi says. “We are in that sweet spot where newbies will find something on the wine list they resonate with and also super dedicated wine fans will find something they like.”

An evening menu is tailored to all tastes with an already popular bleu cheese and green onion dip, a fig and prosciutto flatbread, a homemade mushroom tapenade and assorted charcuterie.

This winter, look for wine pairing dinner events, wine education nights and a light summer lunch menu of fresh wraps, paninis and salads to be enjoyed on the wine bar’s west-facing patio. Non-wine-drinkers will enjoy a rotating Colorado beer list and full cocktail menu.

Blackhawk, Colorado is a beautiful town to live in or visit in Colorado. The town is home to the magnificent Monarch Chophouse, in the Monarch Casino Resort Spa. This stunning restaurant is one of my favorite places to dine in around Colorado, and after you go there, it’s guaranteed to be high on your list of favorites as well.

Nestled in the Monarch Casino Resort Spa, The Chophouse more than delivers on ambiance, food quality, and exceptional service. The Chophouse is the perfect restaurant for a special occasion, family get together, or just a dinner out in one of the most scenic places in Colorado. This restaurant is so special, and attention to every detail is their top priority.

The menu consists of aged steaks, wagyu beef, delicious seafood, and many other options. In my opinion, the star of the show here is the Steak Diane, and the Lobster Crab Cake. The Lobster Crab Cake was full of melt in your mouth lobster topped with an Herb Salad and a lemon aioli.

The Steak Diane is prepared tableside, so get ready for a show! The mushroom demi-glace that goes on top is flambéed with cognac, heavy cream, and butter, and it is beyond divine. This dish alone will keep me coming back to The Monarch Chophouse.

There are plenty of sides to go with your meal, and a huge wine and cocktail list to accompany. Save room for the Valrhona Chocolate Cake for dessert. Served warm, this dessert topped with chocolate sorbet will satisfy your sweet tooth and is a perfect finale to a wonderful meal.

Whether you are a guest at The Monarch Casino Resort Spa, or just coming to the hotel for dinner, don’t miss The Monarch Chophouse. A standing ovation is in order, because this restaurant truly exudes greatness. Reservations are highly recommended. They are open 7 nights a week for dinner service. What a gem in Blackhawk CO. Rootstalk

Rootstalk is a modern American restaurant founded on the idea of connection and coming home. Chef Matt Vawter was born and raised in Summit County and spent the formative years of his culinary career in Keystone and Breckenridge. After spending a period of time away from Breckenridge, Chef Matt returned to his hometown determined to open a restaurant of his own and help grow the culinary landscape in Summit County. Chef Matt made a large step towards that goal when he won the 2024 James Beard Award for Best Chef Mountain.

From old dormant roots, Rootstalk was opened in December of 2020 in a historic home on North Main Street in Breckenridge. The name Rootstalk refers to rhizomes that are all connected via a complex underground root system. The name was inspired by the large stands of Aspen trees surrounding the community of Breckenridge. Rootstalk explores the notion of connection through the cuisine, hospitality, and beverage programs. Crested Butte, Colorado is a special town with a long history and close-knit community, and what would a quirky town be without a local ice cream shop? Look no further than Tin Cup CB, right off the main strip with hundreds of rotating, homemade flavors.

Owners Matthew and Lydia Price opened their first restaurant on Elk Avenue in 2019. Their mission was to create quality food in a grab-and-go style. They originally sold pasties; meat pies made popular by Cornish tin miners. The name “Tin Cup CB” comes from those miners and the mining ghost town.

The Prices wanted to bring historic food back into the valley, but they encountered obstacles such as staffing a kitchen, lack of experience, and burnout. Before they could figure out their snags, COVID shut the town down.

Around the same time, their friend, Kendall Tanslersky, reached out about needing a short-term solution to keep her ice cream company in business. So, the Prices built out a little corner of their restaurant for Third Bowl Homemade Ice Cream as a temporary solution.

In April of 2022, the Prices opted out of their lease and made the big move to open a mountain location, selling ice cream, desserts, and cheap booze. With the demand and success at the new mountain location, the Prices realized they needed to bring ice cream back down into town.

Hopefully you have sampled the high-quality products, and maybe even met the owners Matthew and Lydia Price. With their fun glasses and passion for the business, they serve up ice cream at both of their locations throughout the busy seasons.

The Golden Mill

A vibrant food hall opened in 2021 at 1012 Ford Street in Golden, Colorado. The company revitalized an old historic flour mill and feed store building along Clear Creek into a hip gathering spot offering 5 Restaurants and a Tap Bar. Eat evergreen dining Willow Creek

The holiday season is all about time with family, and of course, food. There is a very special place in Evergreen CO that has been a favorite of mine since I moved here. Willow Creek is a contemporary American restaurant with a local twist. Opened in 2009, Willow Creek has incredible views of Evergreen Lake and the surrounding mountains. It is a beautiful, cozy, and quaint upscale dining experience without being pretentious. Owners Curtis and Kristopher Lincoln make sure to purchase from responsible growers, making sure to use local and sustainable ingredients when possible. The menu changes seasonally, and in speaking with Kristopher, she believes that “the food should follow the season”, so I was very excited to get to try their new fall menu at this stunning restaurant.

We started our dinner with the Butternut Squash Arancini. This was served over a pumpkin puree and topped with a Calabrian chili gastrique. If you like sweet and spicy, this is the appetizer for you. The pumpkin puree was a 5-star pairing with the chili sauce. It was perfection on a plate. For the main course we had the Maple Glazed Pork Chop served over a poblano and apple cassoulet. This dish screamed upscale comfort food. It was hearty, filling, and the pork chop was cooked perfectly and tender. I could have made a meal of the apple poblano cassoulet, it’s really something special. My husband ordered the most popular dish at Willow Creek, the Sausage rigatoni. This is a staple on the menu and there’s a reason, topped with fresh ricotta and microgreens, this pasta dish is one of the best I’ve had,

and I find myself constantly craving it. For dessert, we ordered a baked apple stuffed with butter, brown sugar, and pecans, with a delicious praline on the bottom. This Fall dessert was a perfect sweater weather ending to our meal. Seasonal cocktails are always on the menu as well as an extensive wine list.

Willow Creek has a market attached to the restaurant for gift shopping, take and bake entrees, and maybe a cheese or sauce that you liked while dining there. You can take home their homemade bread, and they even sell the starter for it if you want to make your own. They are open for lunch Wednesday- Sunday, and brunch on the weekends. Dinner is served 5-8pm Wednesday- Sunday. They always have Christmas Eve dinner, a take and bake for Thanksgiving, and a New Year’s Day brunch, but book early as they fill up quickly!

As I am writing this, I am craving that Sausage Rigatoni right now. I have said it one hundred times, but it really holds true for Willow Creek: When a lot of love goes into your food, it pours out tenfold onto the plate. Vinny’s Euro American Cuisine

With a name like Vinny’s, one would probably think Italian. Is it an Italian restaurant? No. Are their Italian-inspired dishes available? Yes. Vinny began his career before he knew what the word career meant as he assisted his Sicilian grandparents with family meals at home.

Chef Vincent Monarca, an East coast transplant who arrived shortly after graduating in 1992 from the Johnson & Wales University Culinary Program, discovered Frisco and called it home. He worked for several well-known restaurants in the area. He was the Chef for a local organic market before he opened the doors to his own restaurant, Vinny’s Euro American Restaurant in Frisco.

Vinny’s Euro American Restaurant recently moved and is located on the second floor of the Frisco Centre, above the Next Page Bookstore. The floor-toceiling windows offer panoramic views of Frisco, Mountain Royal, and Peak One. An elevator to the restaurant and stairs are available for customers. The new restaurant location is the perfect spot for a romantic evening for two and accommodates large groups, including Weddings, and Rehearsals, and company outings.

Chef Vincent emphasizes creating a menu based on the availability of seasonal ingredients, natural hormone-free meats,

wild-caught seafood, fresh organic pasta, and the freshest, local, Non-GMO vegetables he can procure. He incorporates his passion into each dish the restaurant prepares and is proud to serve food that does not require a microwave or pre-made processed foods. You will not find styrofoam or plastic boxes for foods you want to take out. Chef Monarca believes that these efforts make the food he serves tastier and healthier for our bodies, the economy, and the planet. Vegans, vegetarians, and carnivores will find something extraordinary for their evening out.

Expect a warm welcome when you arrive, as the restaurant operates like a large family with many staff in place since the restaurant launched. The restaurant has a main dining room, a full dinner menu, and a cozy bistro bar offering small plates, appetizers, and heartier selections. They are well-versed in preparing the menu items and offering the best wines to complement each dish. The small plate selection is a great way to experience a part of the dining room offerings.

Vinny’s dinner menu is extensive, offering classically prepared dishes such as Duck Leg Confit with a white bean cassoulet, Colorado Lamb Shank with Cabernet Demi-Glace, and Aspen Ridge Boneless Beef Short Ribs with a Cabernet Demi

Glace – to which I would like to note, his Demi Glace is liquid gold. Another favorite entrée is the Roasted Prosciutto Wrapped Basil Rubbed Pork Tenderloin. Fish and Steak du jour options are available daily. Pasta is prepared in the kitchen with all organic ingredients. Every selection is delicious. Try the Linguine and Clams, Bolognese Ragu, or Sausage Rigatoni.

There is the Beyond Meat Vegan Sausage, Peppers & Onions, Salad Selections, and more for Vegans and Vegetarians. The Eggplant Tower with Portobello, Roasted Peppers, Provolone, and Marinara is one to try, and their mushroom strudel is a flaky delight. Gluten-free options are also available.

After dinner, I highly recommend their ever-changing dessert selections too. I had the Tiramisu, and it knocked my socks off (it is one of my favorites).

Locals have voted Vinny’s Best Restaurant for many years. If you are heading to Frisco, stop in, it is a local favorite.

Wapiti the Forest King

A grand new sculpture titled “Royal Elk/ Wapiti the Forest King” now graces the entrance of The Westin Riverfront Resort & Spa Avon, and it is WOWING guests arriving at the property.

Vail Valley metal sculptor Nicholas LoFaro of LoFaro METALARTS LTD. has also been a member of The Westin Riverfront team for more than three years. His impressive new piece was installed this past summer and is made of reclaimed steel parts.

“The elk is a magnificent symbol of the Rocky Mountains and to me, it is royalty to our land,” said LoFaro. “Animal life dominates my sculpture work. For this piece, I wanted to build a full-sized bull elk with full detail and steel plating, something that is equally fierce and beautiful.”

Standing over 10 feet tall and weighing more than 400 pounds, “Royal Elk/Wapiti the Forest King” is now welcoming guests on The Westin Riverfront’s circular driveway.

LoFaro used a wide variety of reclaimed steel to create the majestic sculptureincluding saws, horseshoes, wrenches, cutlery, chainsaw blades, tines and knives. No detail was overlooked, including marble eyes glowing from an internal bulb within the skull, bringing the animal to life.

“I obsessively collect used, refused, and abandoned steel. I will often carry metal parts out of the woods from derelict machines or pick up discarded or broken metal on the side of the road,” said LoFaro. “I buy things like motorcycle parts and old tools online and love to visit old farmhouses, garage sales and flea markets.”

The installation of such a major art piece made of reclaimed steel is a natural fit for The Westin Riverfront, which is proud to be an environmental lodging leader as Colorado’s first Silver LEED certified hotel.

LoFaro has served as a Lead Bartender at The Westin Riverfront’s Lobby Bar for more than three years, crafting new recipes and classic cocktails for resort guests and Vail Valley locals, including his famous Homemade Mule.

“I love to make drinking vinegars called ‘shrubs.’ I make both alcoholic and non-alcoholic versions of the Mule with handjuiced ginger with honey, lemon and apple cider vinegar,” said LoFaro. LoFaro’s creativity is beyond imagination. A lifetime of drawing, writing, and painting, led to his craft as a Sculpture artist with welding and metalsmithing expertise. Looking to the future, Gove hints that “Hygge Lodge, a boutique hotel, may be on the horizon.” For now, though, becoming parents has been one of their greatest joys, alongside nurturing new ideas for Hygge Life. Shares Personal Experience to Shed Light on a Stigmafied Healthcare Issue

Looking in from the outside, living in our mountain towns seems like perpetual pristine powder days, wildflowers, and camaraderie. There is a darker side that lurks in our communities and a new film, Feel It All, chronicles one man’s experience with suicidal depression and his personal mission to shred the stigma of mental health and suicide.

Professional skier Drew Petersen has come forward and is sharing his journey, through film, from the depths of suicidal depression to finding purpose, strength, and resilience by setting a goal to run the Leadville Trail 100 ultramarathon and now launching this film. By blending the experience of skiing the highest 14,000-foot peaks in Colorado that surround the Leadville 100 course with the emotional, immersive story arc of running one of the most iconic 100-mile ultramarathons on the planet, the film shows how, within the struggle of living with mental illness lies an opportunity to access an infinite, inexhaustible well of strength to achieve our limitless potential. Petersen’s film aims to create powerful cultural change around mental health awareness and suicide prevention — something the adrenaline culture and sport machismo shunned in the past.

At the end of May 2024, Summit County local Drew Petersen, Building Hope, Arapahoe Basin, and Summit High School presented the world premiere of “Feel It All”, followed by a discussion about mental health in the mountains. A wellness fair marked the opening of the event both before and after the film.

Drew’s honest testimony deeply moved us. Watching Petersen stand up and share this story takes a lot of courage and grit. Suicide has affected almost all of us living in these high-energy communities. Mental Health care in our mountain towns is slowly becoming an acceptable, open topic that people can freely converse about without shame or harm to each of us. Drew is raising the curtain and shining a brighter light on what has been a taboo and very emotional subject. The film Feel It All is intended to convey that message.

Wintertime is spectacular in our Colorado Mountain towns, but there is a magical place to travel to outside of this great state that has some of the best skiing, snowboarding, and winter sports around. Welcome to Taos Ski Valley. I have had a love affair with Taos Ski Valley since traveling there this summer, and realizing how majestic it is with lots of summertime activities, so I wanted to tell you about how amazing Winter 2024-2025 is going to be.

Taos Ski Valley began as a small hill with one run and one lift in the 1950’s and is now a world class ski resort. The bonus is that Taos Ski Valley is more cost friendly than most ski resorts, less crowded, and you guessed it, shorter lift lines. I can tell Taos Ski Valley is about as intimate as you can get, but still gives you that big mountain experience.

Getting to Taos Ski Valley is easier than you think. JSX Jet Service from Rocky Mountain Airport will get you there from Colorado in under an hour, and you are whisked away to a winter wonderland. I stayed at the lovely Blake Hotel, but there are many other options for lodging once you get there.

Taos Ski Valley delivers that pure mountain experience including world class skiing and has such a quaint feel to it. The mountain is large with plenty of terrain for all levels of skiers and snowboarders, however, the Ski Valley is privately owned, which gives it a very different vibe. The Taos Ski Valley is home to one of the most famous ski and ride schools, the Ernie Blake Snowsports Program. This school is where even expert skiers can learn a thing or 2 from the instructors.

You certainly don’t have to be a skier or a boarder to enjoy Taos Ski Valley. From snowshoeing, ice skating, sledding or a new heated tennis court, the possibilities are endless. New this season is weekly programming for skiers and non-skiers which include yoga classes, scavenger hunts, live music, and much more. There is truly something for the whole family here.

The famous Bavarian Restaurant is something you must try après ski and during the day. Their pretzel is out of this world, and a cold beer pairs perfectly with this legendary snack. 192 At The Blake is a fabulous option for dinner. The wood fired pizza is one of the best pizzas I have had, and the handmade pasta is a must try. You won’t be disappointed.

There are some great events coming to the Ski Valley this winter such as The New Years Eve Torchlight Parade and Fireworks, the New Years Eve Snowball and The Martini Tree Bar. A short trip to the town of Taos is always a great time as well with tons of 5-star restaurants, art galleries, and boutiques for great shopping. You truly will never run out of things to do.

Taos Ski Valley should be top of your list when planning your next winter getaway. It is easily accessible, breathtaking and a guaranteed good time. The Ski Valley is giving me those big mountain vibes without all the big mountain fuss. See you up there this winter!
