Simple Open-Faced Sandwich
5
Gals, want an incredibly healthy lunch (or energy-packed snack!) idea that you will love? Then make this little number that I’ve been eating this month. It will be your new favorite. Ingredients 1 some
Avocado Crusty Bread
I simply slice up a half of a small avocado (I buy the organic avocados at Trader Joe’s--they’re cheap and always good!), then layer it (thinly sliced) on top of a thin slice of good crusty bread. I sprinkle a little kosher salt on top, and it’s good to go. This little snack is so incredibly satisfying--and healthy! Don’t feel bad about the fat in avocados--it’s the kind of fat that does your body good. Enjoy!

Apple Sandwiches with Granola & Peanut Butter last page
6
Kids will love to help you make this healthy snack since it’s fun to spread the nut butter and sprinkle the chocolate chips. No corer in the kitchen drawer? Slice the apples into rounds first then use a small cookie cutter to remove the core from the center of each slice. Wrap sandwiches tightly and tuck them into lunchboxes, if you like. Ingredients 2 3 tablespoons 3 tablespoons
Apples Peanut Butter Granola
If you won’t be eating these tasty treats right away, start by brushing the apples slices with lemon juice to keep them from turning brown. Spread one side of half of the apple slices with peanut or almond butter then sprinkle with chocolate chips and granola. Top with remaining apple slices, pressing down gently to make the sandwiches. Transfer to napkins or plates and serve.

I usually do my workouts in my building’s gym, but since I’m in the suburbs, the commute to the gym was a bit longer so I didn’t think going sans-snack was a good idea. Cucumber Organic egg Ezekiel bread
Peel and slice the cucumber, arrange nicely on a plate. Toast one or two slices of ezekiel bread, as desired. Put a small amount of oil in a frypan, heat it up and fry the eggs as soon as it gets hot enough. Scramble the eggs and make sure to take them from the stove before they get too dry. Banana and Organic Peanut Butter
9
I love Organic Crunchy Peanut butter, it is so delicious. A great way to eat it is with a banana. I also love to eat apple and peanut butter. It feels you up quickly because it has good fat in it, but don’t over do it. Bananas are full of potassium and they boost your energy level. One table full table spoon of peanut butter is good serving, anything more and it’s too much. Ingredients 1 tablespoon 1
Peanut Butter Banana
Cut the Banana in bite-sized slices, add Peanut Butter on top and enjoy!

Low Fat Low Sugar Cottage Cheese last page
12
This snack is the best before bed. Low Fat cottage cheese contains casein, it’s the type of protein that is digested slowly into the blood stream, fueling muscle growth over night. Too much dairy is not good for you, but a serving of low fat, low sugar cottage cheese before bed is perfect. Ingredients as desired
Low Fat Cottage Cheese
When shopping for cottage cheese, always look at the ingredients list. It should not contain more than 3g of sugar per serving, and it should also only have a few ingredients that you can pronounce and you should know what they are. If cottage cheese contains ingredients, that you don’t understand, don’t buy it.

Elana’s Kale Chips
15
I love salt and vinegar flavoured crisps with a passion but haven’t indulged for years and to be honest – I miss them – a lot. I did try Inspiral Café’s dehydrated kale from Planet Organic but at $3.65 for a small tub it wasn’t ever going to make for an everyday snack nor feed my rabid addiction. So imagine my delight when my clever friend Laura sent me this recipe for lemon kale chips on elana’s pantry website. Elana cooks her kale for about 1015 minutes in a super hot oven. I’ve adapted her recipe for my dehydrator and I can tell you that either way – they’re addictive and very, very, very healthy. Ingredients 1 1
Kale Lemon
Into a nice big bowl, throw in the kale leaves, oil and juice and sprinkle the salt before mixing together ensuring all leaves are coated. Place the kale in the dehydrator for 24 hours at 40 C to ensure all the lovely and many nutrients and enzymes remain intact. Remember that heating above 40 C denatures the enzymes and is deemed ‘cooking’. If you are not blessed with an excalibur deluxe 9 tray as I am – just pop them on a baking tray in the oven and leave overnight on low heat… And serve.

Berry and Greens Smoothie last page

This is a perfect starter smoothie for those wanting to venture into green smoothie land. The berries and banana mask the mild taste of baby spinach but you still get all the goodness of the greens. This smoothie is also a great take along drink as you won’t get all the “what are you drinking???” questions that green smoothies bring. :) Ingredients 130 g 1 120 ml 1 handful
Frozen raspberries Banana Water Baby spinach leaves
Add ingredients to blender and enjoy! Use additional water if you prefer a thinner smoothie.

Graze Organic Cotton Snack
18
I love the Graze Organic bags because not only is the fabric natural cotton without any plastic lining, but it’s also organic. The bags come in several different sizes to fit sandwiches and snacks. While they may not be as leak-proof as plastic-lined baggies, I believe they are healthier. Ingredients as desired

Cape Cod Potato Chips last page
19
Known to many Massachusetts natives as an elementary lunch box staple, this Hyannis-based company had its humble beginnings in a tiny store front in 1980. The famous potato chips are still made and kettle-cooked in small batches, often right in front of the passing eyes of some 250,000 yearly factory tourists. Ingredients 250 g 1 litre
Organic potatoes Vegetable oil
Cut the potatoes into 1cm slices. Place the chips into a colander and rinse under cold running water. Heat the oil to 120째C in a deep-fat fryer or large, deep saucepan. Blanch the chips a few handfuls at a time in the fat for a couple of minutes. Do not brown them. Once they seem drier and slightly cooked remove from the fat and drain. Keep covered and at room temperature until needed. Reheat the fat to 200째C and cook the chips until golden and crisp about 5 - 8 minutes. Serve immediately.
