From the Editor’s Desk... It has been quite a whirlwind month for us at Mum’s Mail! For those of you who don’t know, Victoria and Andrew Arthur have sold Mum’s Mail and we now have new owners – Novus Print!
Our team remains largely the same, but we have two new faces. We welcome Meghan Dewet as our new accounts/booking clerk and Mechelle Gindra as our admin manager. Our two wonderful sales reps, Bev and Anisha, and our designer, Wendy Offer, are still with us and it’s business as usual! So expect to see lots of fun and informative issues coming your way!
After working with Victoria and Andrew for three years, we are very sad to say goodbye, but we wish them all the best as they head back to the U.K. We will also miss their darling little dog, Nunu, as she was also part of the family at the Mum’s Mail HQ! I have now stepped into the editor’s role, and I look forward to taking Mum’s Mail into a bright future!

Meet the Cover StarS
Our handsome cover stars this month are Noah, Joseph and Caleb Jordaan. They live in Pietermaritzburg with their parents, Dustin and Megan Jordaan. Dustin is the owner of D & D Maintenance and Construction and Megan is an administrator at St John’s D.S.G. Noah is seven (almost eight), Joseph is six and Caleb is four. According to their mom, all three boys have very similar interests. They are crazy about motorbikes, rugby, cricket and swimming - mostly all sports! “They do all ride motorbikes and can ride for hours on the weekends! They enjoy being
outdoors and very seldom will be found playing inside. Making car/bike tracks in the sandpit at home is one of the things they enjoy doing at home,” says Megan. As a family they enjoy watching a good animated movie together. “We love watching them grow and learn new things daily. They complete our lives and we are so blessed to have the opportunity to be parents, especially to these three precious boys,” say their parents.
Advice to new parents: “Take each day as it comes, no parent is perfect and there will be days that you don’t get this parenting thing right. Make sure your children know how much they are loved by you, tell them daily,” concludes Megan. By Sarah Mackintosh.
A Country Break at Brahman Hills with granny for the weekend and off we went! We stayed in a self-catering cottage at Springholm, a short drive from the main hotel. It is the most beautiful setting, with abundant bird life and glorious peace and quiet! Our cottage was right on the dam and the view was spectacular, especially at sunset.
We were treated to a luxurious 90 minute spa treatment at My husband and I were recently Brahman Hills Spa - we were invited to experience a weekend so spoilt and the therapists are amazing. We had a delicious dinner at Brahman Hills Café on the first night and on the Saturday night we were invited to dine at 89 4
on Copper. We had the Chef’s Selection Menu – a superb three-course meal. The intimate atmosphere lent itself to a romantic date night, which we so seldom get to enjoy! Before leaving on the Sunday, we were treated to a lovely Sunday carvery lunch at The Stables. It was a great way to end off a fantastic weekend!

Healthy Dinner Recipes
Honey Garlic Glazed Salmon
In a large skillet over mediumhigh heat, heat two tablespoons oil. When oil is hot but not smoking, add salmon skin-side up and season with salt and pepper. Cook salmon until deeply golden, about 6 minutes, then flip over and add remaining tablespoon of oil. Add garlic to the skillet and cook until fragrant for 1 minute. Add the honey mixture and sliced lemons and cook until sauce is reduced by about 1/3. Baste salmon with the sauce. Garnish with sliced lemon and parsley to serve.
Ingredients • 1/3 cup honey • 1/4 cup soy sauce • 2 tbsp. lemon juice • 1 tsp. red pepper flakes • 3 tbsp. extra-virgin olive oil, divided • 4 x 6-oz. salmon fillets, patted dry with a paper towel • Kosher salt • Freshly ground black pepper • 3 cloves garlic, minced • 1 lemon, sliced into rounds • Freshly chopped parsley, for garnish Directions In a medium bowl, whisk together honey, soy sauce, lemon juice and red pepper flakes. www.mumsmail.com
Garlicky Greek Chicken
• Juice of 1 lemon • 3 cloves garlic, minced • 1 tsp. dried oregano • 500g chicken thighs • kosher salt • Freshly ground black pepper • 250g asparagus, ends removed • 1 zucchini, sliced into half moons • 1 lemon, sliced Directions In a large bowl, combine 2 tablespoons olive oil, lemon juice, garlic, and oregano. Whisk until combined then add chicken thighs and toss to coat. Cover bowl with plastic wrap and let marinate in the refrigerator for at least 15 minutes and up to 2 hours. When you’re ready to cook the chicken, preheat oven to 220°C. In a large ovenproof skillet over medium-high heat, heat remaining tablespoon olive oil. Season both sides of marinated chicken with salt and pepper, then add chicken skin-side down and pour in the remaining marinade. Sear until the skin becomes golden and crispy, about 10 minutes. Flip chicken and add asparagus, zucchini and lemons to the skillet.
