The Secret to Making the Perfect Christmas Cake

The key to a delicious Christmas cake is to make it a good few months before Christmas! The longer you leave the cake after it is baked the better the taste.

To begin, place 500g raisins, 600g sultanas, 150g cherries and 125g peel in a bowl and pour in brandy. Cover with a lid, leave to soak for at least 3 days and stir daily. Grease and line a 23cm deep round tin with a double layer of brown paper. Preheat the oven to 140ᵒC or 120ᵒC thermo-fan.

Bake in the centre of the preheated oven for 4 to 4½ hours or until the cake feels firm to the touch and is a rich golden brown. (Check after two hours, and, if the cake is a perfect colour, cover with foil). A skewer inserted into the centre of the cake should come out clean. Leave the cake to cool in the tin. When cool, pierce the cake at intervals with a fine skewer and feed with a little extra brandy. Wrap the cool cake in a double layer of brown paper and again in foil and store in a cool place. Continue to feed at intervals with more brandy. Decorate with almond and plastic icing.

Children must tell an adult (and the adult MUST answer and acknowledge the child) before entering a pool. • NO child should be allowed on the pool surround at any time unless they are actually about to enter the pool. NO running and jumping into the pool! • Children should only swim in a recognised swimming costume. This would assist parents – if you see your child in a costume, be aware that they are going swimming! • NO eating or drinking in a pool. • NO swimming in a storm. • NO ROUGH PLAY! Don’t hold onto another in the pool unless they are attempting to save them. Every swimmer should be aware of their limitations in the water.
