By Emily Friedel DURING THE Atlantic salmon spawning season, workers gather between fish ponds by the pristine waters of the Rubicon River to milk roe from up to 1000 fish each day.

The fish are milked carefully by hand after being anaesthetised naturally with clove oil – having sedated fish makes the process less stressful for everyone involved – then returned to the water. Murrindindi Guide – SPRING 2017 – 13


The harvested roe is cleaned and packed on site, and the end product, Yarra Valley Atlantic Salmon Caviar, finds its way to plates in top restaurants from Marysville and the Yarra Valley to Hong Kong and the Maldives. The gentle hand milking, which takes place over a few weeks in May every year, is a far cry from the methods used when Mark Fox, now General Manager, started casual work at the fish farm in 1997. Back then, it was predominantly a trout farm but had recently branched out to Atlantic salmon meat production with some dabbling in caviar. “They would get the fish and stick a needle into the top end of its belly, then hit a pedal and blow compressed air into it. The fish would blow up, and the eggs would

squirt out. They would stick the same needle in a hundred or more fish, which caused bacterial infections where they were putting the needle in. There were a lot of sick fish afterwards and a lot of dead fish. They were also using a lot of nasty chemicals back then to deal with infections,” Mark says. It wasn’t just the milking process that changed when Mark and business partner, Nick Gorman, took over the reins ten years ago and shifted focus to caviar production. Mark and Nick, both armed with aquaculture degrees, felt a very fish-friendly and environmentally-friendly approach was the way forward. So they ditched the chemicals, opted for low stocking densities in their ponds, and adopted

practices that Mark says are akin to those used in Tasmanian hatchery farms, but more ‘low tech’. “Our aim is to not have too many fish at the farm, so we’re not pumping them full of food constantly; we’re just giving them what they need. Once we’ve got stocks to a certain number we’re just going to hold it there, and holding at that level means that the water going back out [into the Rubicon River] remains unpolluted,” Nick says. “If you can do it from a sustainable point of view it’s easier because you don’t have to manage disease and disease treatment. We don’t use any chemicals, any antibiotics, any treatments whatsoever; everything’s natural. Having low stocking densities also means you

get really good egg returns off the fish. If you try to be greedy and put too many fish in the ponds they stress, and when they stress they don’t produce as many eggs – some don’t produce eggs at all,” Mark says. Mark and Nick’s approach also means adapting rapidly to whatever Mother Nature throws at them to make sure their fish are comfortable and content. “If we have a really hot summer, we just reel back our feeding so that we’ve got even lower stocks because the main limiting factor is oxygen. A hot, dry summer means you’ll have less water, and the water’s warmer so has less oxygen. The best way to keep the fish happy is to keep the oxygen levels high, which means less fish in the ponds,” Mark says.

Only a decade ago, the fish farm was floundering after a series of ownership changes, and breathing life back into it has been difficult at times. “We had more debt than what the farm was worth, so for the last ten years we’ve just been getting the stocks back up, getting the production back up. We had a couple of hiccups along the way, the bushfires was one of them – that wiped out half our brood stock – and the ten-year drought, which sort of led into the bushfires, was another. So the first few years of rebuilding weren’t that easy,” Mark says. Despite the effort Mark and Nick put into developing a high-quality, ‘clean’ caviar, another significant hurdle was convincing people to buy it, especially when they decided to try producing the more unusual rainbow and

brook trout varieties. “We’ve been fiddling with brook trout caviar for a couple of years, and the fish are easy to grow, but we couldn’t sell the caviar for the life of us because it was a different colour – it’s yellow – and it just wasn’t what people liked and expected. And then rainbow trout’s the same; we always struggled to sell rainbow trout caviar because it’s seen as a ‘poor man’s fish’, so even though the caviar looks and tastes very similar to Atlantic salmon caviar – maybe a little bit earthier in flavour – people wouldn’t buy it. But it’s all people’s perception and not anything to do with the flavour,” Mark says. To tackle issues of public perception and all things marketing, Nick, who first set foot on the farm around 17 years ago as a work experience student, is now Yarra Valley Caviar’s National Business Development Manager.

“When you’re trying to sell ten or 12 ton of fish eggs, it’s not exactly easy – especially when they’re in tiny little jars. A big part of my job is spreading the word, drumming up some PR, and talking to as many chefs as I can and explaining to them why we’re a bit different to everyone else,” Nick says. “We also bring chefs to the farm during harvest so they can come and have a go at milking a fish, just so they can have that whole handson experience, and we find that really helps to get them using the product. We’re very open with how everything’s done, so they can see the whole process.” And it seems that Nick’s efforts are paying off. “We harvested 14 tonne of caviar this year, and we’re selling everything that we harvest,” Mark says. As for the rainbow and brook trout caviar, as soon as the influencers of the

culinary world recognised their value, demand fast outweighed supply. When Matt Moran, renowned chef and restaurateur, paid a visit to the farm to film for an episode of the awardwinning television series Paddock to Plate, he wasn’t shy about embracing the brook trout caviar others had shunned, declaring he’d take the lot. “We did actually sell him all of our brook trout caviar one year, which was great because we couldn’t sell it to anyone else, and then we used his name to help sell it to other chefs,” Mark says. “We literally sell out of it within three months now,” Nick says. Similarly, when the rainbow trout caviar graced the menus of celebrity chef Heston Blumenthal as well as those of Brae restaurant in Victoria (the 44th best restaurant in the world, according the this year’s Murrindindi Guide – SPRING 2017 – 15


World’s 50 Best list) and made an appearance on the television show Master Chef, people’s perceptions changed quickly and sales skyrocketed. On top of the approval of worldfamous chefs, Yarra Valley Caviar has won numerous awards. For the last ten years, their products have been finalists in the fiercely competitive Delicious Produce Awards. In 2015, their salmon caviar won the ‘From the Sea’ category overall, and this year it added to their list of state title victories. While it may have felt like they were swimming upstream when Mark and Nick began the process of rebuilding Yarra Valley Caviar, the steady flow of awards and celebrity chef endorsements will no doubt make the journey ahead much smoother. Perhaps in time, they’ll even be able to lay back, relax, and let someone else do all the work – just like their sleepy salmon at milking time. Method

When asked how he best likes to serve up caviar, Yarra Valley Caviar’s Mark Fox responded:

Place the flour, salt and yeast into a bowl and mix. Place the milk in a small saucepan and heat over a very low heat. When it is lukewarm, whisk in the sour cream and add this to the flour mix along with the egg yolk. Whisk this until smooth, and add more milk if the mixture is too thick. Cover and let rest for 30 minutes. Whisk the egg white until soft peaks have formed. Fold eggwhite into the batter.

“It’s really nice just on some blinis with some crème fraîche or sour cream. It’s 3 per cent salt, so it goes nicely with lots of seafood dishes because it looks pretty, and it’s a different way to add some seasoning. It’s also really nice on eggs, on scrambled eggs, it’s a nice breakfast thing – it’s a bit decadent.” Inspired by Mark’s comments, we decided to try one of the recipes on the Yarra Valley Caviar website (www. yarravalleycaviar.com.au) at Murrindindi Guide HQ, with some minor alterations. Ingredients 100g jar of Yarra Valley Rainbow Trout Caviar or Yarra Valley Atlantic Salmon Caviar (we used about half a jar). Blinis • 1 cup of plain flour • ½ teaspoon of dry yeast • ¾ cup milk • 1 tablespoon of sour cream • 1 teaspoon of sea salt • 1 egg, separated

Heat a non-stick pan; add a very small amount of olive oil. Drop in small amounts of the blini batter (about the size of a 20 cent piece) and cook on both sides until lightly golden in colour. Allow to cool and serve at room temperature. This will yield approx. 50 blinis Serve the Yarra Valley Caviar with the blinis and a mixture of sour cream, chopped chervil and chives. Place a spoon of the herbed sour cream on a blini and top with Yarra Valley Caviar. Variation: add a slice of hard-boiled egg to a blini with herbed sour cream and top with caviar. For this variation we tried the Yarra Valley Rainbow Trout Caviar – absolutely divine!

A handmade knife like this will outlive the maker, Mick says. By Emily Friedel BEING A KEEN cook, Mick Marshall appreciates a good kitchen knife and always wanted to try his hand at making them. But it wasn’t until about five years ago when he was working in Western Australia as an explosives chemist in the mining industry that he gave it a go – it was easy in the big industrial town of Kalgoorlie to find all the equipment he needed and finally get started. With a hammer, an anvil, and a little homemade gas furnace, Mick began to turn hunks of metal into blades. He used online resources to teach himself everything from the most basic knifemaking techniques to the complicated layering and folding involved in making Damascus steel. 20 – Murrindindi Guide – SPRING 2017

“There are so many highend knife makers that put instructional videos up online, and there’s a great community of Australian knife makers that are more than willing to offer advice and give tips and tricks– they help me out a lot,” Mick says. Picking up a blade with a distinctive banding pattern punctuated by regular dots, he explains the work that went into making it. “This one is a raindrop Damascus pattern, so there are two types of steel and 250 layers – it takes about 10 to 15 hours before you even get a billet of steel ready to forge a knife out of. Once you get your billet, you drill some holes part way through it and then put it back in the forge and hammer it back out, so the holes come up to the surface, and then when

you grind it away, you’re left with all these dots.” Mick also makes wooden handles for his knives using bits and pieces of wood he has picked up in his travels, including some York gum he found in Kalgoorlie – “I had to fight the termites for it,” he says with a chuckle. Stabilising the timber to make it waterproof is another part of the knife-making magic that happens in his tiny backyard workshop in Alexandra. “You have to bake the timber to get all of the moisture out, and once it’s all completely dry, you put it in a vacuum chamber and fill it up with a thermoset resin, which sets at 90 degrees. So you leave the timber in the vacuum chamber for a couple of weeks, and it sucks all of the air out of the pores of

the timber. Then when you release the vacuum, all of the resin goes into the pores of the timber. Then when you bake it, the resin sets, so the timber won’t absorb water anymore.” Over the last five years, Mick has been sharpening his skills along with his knives. He recently became a probationary member of the Australian Knife Makers Guild, which aims to promote and preserve Australian handcrafted knives and accepts members based on their proficiency. “You submit three knives and they get assessed, and then you get assessed again in 12 months at a higher standard.” The effort and skill required to make good custom knives – Mick’s take anywhere from eight to 30 hours to


complete – are reflected in their quality. “Better cutting edge retention is one of the biggest things you’re going to get if you get a custom knife. A lot of the cheaper commercial knives you get are not hardened at all; they’re soft steel with high amounts of chromium usually, which gives them some wear resistance. Whereas these custom knives are heated up to about 800 degrees and then quenched [cooled rapidly] in oil or water, and that makes them really hard,” he says. “When people want to know how long a handmade knife will last, I tell them they’ll outlast me, so they’ll probably be coming back to my son for replacement, not me. Buying custom made knives, they’re probably going to last a hundred years.” This year, to further put his skills to the test, Mick will enter a knife in the Sydney Knife Show competition – a Japanese chef’s knife, or gyuto, with an interesting backstory.

“This one will be my entry into the best chef’s knife, it’s got a core steel of 52100 [a type of high carbon] steel, and it’s got wrought iron sides. The wrought iron I found when I was out gold prospecting around Kalgoorlie, so that’s probably been sitting out in the desert for about 100 years – a blacksmith would have made that in his little furnace around Kalgoorlie out of local iron ore and whatnot.” Five years after setting up a little forge in Western Australia’s goldfields, and first putting hammer to steel, Mick’s knife making has come a long way, both figuratively and literally now that he’s living back in Alexandra. By Emily Friedel THE PARENT-CHILD Mother Goose sessions at Alexandra & District Health are filled with song, laughter, squeals of delight, fresh fruit snacks, and the odd bit of chaos, which is to be expected in a room full of kids under three years. Caregivers sit in a circle with their children and sing together, often performing accompanying hand movements, following the lead of Jody Collins who runs the sessions. While there’s no doubt all of the little ones who attend the weekly sessions would agree it’s a lot of fun – and the caregivers too – the Mother Goose Program is about more than just singing nursery rhymes and having a good time. It’s about strengthening the parent-child relationship and developing the foundation for literacy later in life. Jody is a speech pathologist, and it was through her professional network that she first learned about the program and its benefits. “Lots of speech pathologists were running Mother Goose as a health promotion program because it’s about that connection between parent and child, but it’s also a really good language facilitator, so it’s great from a language development perspective,” Jody says.

“I love running Mother Goose, it’s just a really nice time of my week. I love seeing the development of the kids – from babies a few months old through to three years old they can change enormously – and how they become more comfortable in the group and become more social.” The program is also a way to assist the (sometimes frazzled) caregivers of young children to help deal with the stressful side of child-rearing, improve both verbal and non-verbal communication with their children, and develop the skills to create positive family patterns during the crucial early years. “I really like seeing the opportunity for the parents to get together. One of the reasons I wanted to run Mother Goose here was to create a friendly, safe place for parents to bring their kids to spend time with them where there wasn’t any pressure to do anything,” Jody says. Mother Goose is an evidence-based program, and its outcomes have 28 – Murrindindi Guide – SPRING 2017

been researched by several different groups of academics. Among other things, studies have found that children participating in the program showed greater improvement in language skills, particularly expressive communication, than those who didn’t. Research also suggests that the program has a longlasting positive effect on the parent-child relationship, with one study finding that during a ten-week Mother Goose Program, parents learned skills that influenced their interactions with their child six months after the conclusion of the program. The Parent-Child Mother Goose Program was started in 1984 by two Canadians: a social worker and a psychologist, both of whom had had success using oral storytelling and rhymes with those in their care. The program began as a pilot for children identified as ‘at risk’ by a child protection agency, but the potential to benefit families with a range of needs was recognised, and the program began to spread through communities in Canada. In 2003, the

program hopped across the pond to Australia and has been growing ever since. Jody started the local Mother Goose Program in 2011 when Alexandra & District Health was looking to run more health promotion activities after the 2009 bushfires. “I hoped that Mother Goose would be a place where some parents would come, even if there were no other programs they felt comfortable doing in the area. I just wanted it to be a really casual, comfortable place for parents to feel like they could do something with their kids,” Jody says.

The Mother Goose Program also gives parents an opportunity to tap into Jody’s expertise as a health professional in an informal setting. “I hope that people would also see that it’s a way they can access me or get advice in a casual way as opposed to having to make an appointment.” The Parent-Child Mother Goose sessions at Alexandra & District Health run on Mondays from 10.30 am – 11.30 am during school terms, and if you’d like to go, all you have to do is turn up with your child, sit down, relax, and follow Jody’s lead. Baw Baw daisy along the Taggerty River. LAKE MOUNTAIN was hit by the 2009 wildfires and most of the plateau was severely burnt. Unlike nearby towns where the human tragedy was high, the plateau experienced a natural phenomenon and the regeneration has been a wonder to watch. From a blackened

landscape to regrowth of all descriptions, Lake Mountain is well on the way to recovering. The first signs of life were the ferns, which showed green shoots within weeks of the fire, but the real delight was the first spring as the snow melted and a carpet of tiny seedlings appeared. First the

which is only found on Lake Mountain making it quite special. As October arrives a progression of hovea, bushpeas, mints, trigger plants, billy buttons begins… a constantly changing spread of colour, as well as a variety of orchids throughout the summer. One of the best places to see the display is the Echo Flat heathlands and alpine bogs, which are easily accessed along Echo Flat ski trail which leaves from the resort. In less than a kilometre you will arrive at the open heathland with the Upper Taggerty River meandering through it. As you come closer to the river and into the wetter areas the flora changes markedly, with the

callistemon along the river banks being one of the more spectacular when it is in flower. For walkers, as well as the ski trails and the walk to Keppel’s Hut, the mountain now also has a day walk from the resort over the Summit, Snowy Hill, Mt.Arnold and all the way to the entry station on the Marysville Road. A distance of 12 kilometres takes you from the subalpine environment, to alpine ash forest and pockets of rainforest, both of which survived the fires. The trail was built as a shared path for mountain bikes and walkers and is working well. It connects a number of pre-existing tracks, and the Strategic Firebreak constructed after 2009 to

protect Melbourne’s water catchments in case of future fires. A detailed topological map can be downloaded from the Lake Mountain website or hard copies are available at the resort or from the email address below. The unusual regenerating landscape at Lake Mountain is the result of the way the two eucalypts which dominate at this altitude regenerate, these are the alpine ash and snow gum. The alpine ash needs a fire to regenerate, the parent tree being killed by the fire, but the seedling regrowth is prolific and currently the battle for survival is on. Thousands of crowded seedlings are now over five metres high in places yet

only 30 centimetres apart! Likewise, the snow gums have many new seedlings as well as the basal regrowth from the lignotubers. Both regenerating forests are left with thousands of silver trunks above the abundant regrowth, a haunting yet beautiful landscape. This year the mountain will be hosting a Wildflower Festival from December 9 to 17 as well as offering guided walks each week during the wildflower season on 20 and 27 November, 4, 11 and 18 December. Yea Rotary Garden Expo IF YOU ARE a gardener or interested in plants and flowers, what better way to spend a spring weekend than strolling around the beautiful grounds of the Yea Racecourse and Golf Club, taking in the many stalls and exhibits on display at this year’s Yea Rotary Garden Expo on 23 and 24 September from 10am to 4pm? This year there will be businesses exhibiting everything from rare trees, plants and bulbs through to garden tools, ornaments, equipment to compost, and soil. Many nurseries will be represented and there will be a huge variety of plants for sale. Rotary will again be presenting a pre-loved garden book stall and will also host a crèche where visitors can leave their purchases in safe hands until they are ready to leave. A feature of the expo will be a varied program of

speakers who will give their presentations over the twoday period. These include Maria McCarter of Sunset Valley Chicks who breeds a large variety of pure bred poultry. After her talk Maria will auction a pair of her best chickens. Other guest speakers include Julie Weatherhead, author of Australian Native Food Harvest, Anthony Hosemans, a grower of medicinal herbs, Graham Sargeant who is a rose specialist, Steve Joblin, a knowledgeable beekeeper, and Peter Madden who is currently head gardener at the historic Delatite Station. A number of food and drink vendors will cater for this event and visitors will be able to enjoy fine coffee, Indian food, and gourmet take-away, or a sit-down snack prepared by members of the Yea Wetlands and presented in the golf club rooms. They engaged a local landscape designer and their brief was to create a garden that complemented the bold architecture of the house, gave the house some intimacy but kept open the beautiful views of the mountains.

Held each year in late October, the Open Gardens Weekend celebrates the countryside at its most beautiful. Expect to see gorgeous spring blossoms and foliage, exotics and natives. Experience remarkable views, pristine air and a warm country greeting at each open venue. Opening for the first time are two contrasting gardens, both less than 30 minutes’ drive from Alexandra. In the southern part of Murrindindi Shire, Marysville is home to rich red mountain soil, a gentle climate and lush growth. Lina and Neil Cornell purchased their large town block in Marysville two years after the 2009 fires. Following the design and

The garden relates to the house through a series of ‘layers’. The house is the first layer, followed by an infinity pool that overflows to a pond that sits on the elevated ‘great lawn’. This leads down to a lower layer of garden beds and a walkway below. It is a very steep block but the layering has disguised this well. The boldest part of the garden is the front section, which is totally covered with a rubble rock and interplanted with ‘Whitespire’ birches and tufts of Poa (tussock grass) and liriope. Jenny and Peter Fisher’s garden in Yarck will also be open in October for the Alexandra & District Open Gardens. This is an unashamedly bold garden design that sits comfortably with the striking house. Another feature of this garden is the use of natural materials to ensure the house design flows. Local landscape contractors, Itec, created an impressive, chunky vertical timber fence that wraps around a small coffee nook linked to the lower lawn by a rough mudstone staircase that uses non-uniformity to create a bold effect. A small feature to look out for in this garden is the clever disguise of a simple concrete retaining wall that provides a strong boundary to the lawn that it retains. The Cornells’ property also features a hidden vegetable garden with raised beds and 38 – Murrindindi Guide – SPRING 2017

espaliered fruit trees that provide an abundance of seasonal vegetables. The garden is evolving every year; it is still in its infancy but with great potential to develop into a very pleasurable space. This is a beautifully presented property. Keen gardeners Jenny and Peter Fisher in Yarck are constantly working to develop their two-acre country property. Jenny describes how their garden has been a work in progress for the past 5 years since they purchased the property in 2012. “We could see the garden had good bones that we could work with and adapt to our own tastes and lifestyle. We like the idea of different areas or rooms and

have varying views from every window in the house, our favourite being at the rear of the house under the large Robinia Moptop surrounded by the Ligustrum hedges.” Striving to keep improving, the Fishers added a vegie patch and chicken coop and just last year – after competing with the parrots and cockies for their plums, apricots and apples – they constructed an impressive orchard cover.

The rose garden has been improved and extended with their own favourite varieties and with many roses planted throughout the garden, the last count totalled 105.

Established crepe myrtles are a feature and they have planted several types of maples around the yard to enjoy the lovely Autumn colour that is achievable in the cooler climate around Yarck.

Jenny describes how their raised garden bed evolved from an existing barren long pile of soil (deposited during excavations for the water tanks) into what they call the “heap garden”. This is planted out with westringia, grevilleas and callistemon and anything else that is tough enough to survive without a lot of attention.

Yea & District Open Gardens The annual Yea & District Open Gardens organised by the Rotary Club of Yea will be held over the weekend of November 11 and 12, 2017. Ten exceptional gardens will be open and all except two

will be open to the public for the first time. ‘Glenburn Station’ and ‘Boggy Creek Station’, almost opposite each other in Break O’Day Road, are stunning large country gardens, set in the midst of magnificent showplace country properties and will provide a complete lifestyle experience to visitors. Both gardens are completely different and visitors will enjoy and marvel at the beautiful gardens and stunning views. Webb Ware’s Road, a pretty winding country lane, will lead to two other country gardens, both more informal with many beautiful features.

The crammed borders and magnificent tree collection will delight at ‘Yirraba’ and at the Milroy garden a mature cypress lined drive leads into a pretty garden with some outstanding feature specimens. Three other large country gardens will complete your round trip through the rich farmlands and stunning vistas of the Murrindindi and Yea River Valleys. Five town gardens offer everything from abundant displays of roses, perennials and flowering shrubbery to potted colour and specialist plant collections. A visit to the train-themed garden in Range Road offers

something unique and is full of history. The Yea Garden Club will also hold their annual plant sale on this weekend and will have hundreds of pots at bargain prices. The plant sale can be found at ‘Abutilon’ in Webster Street, Yea, in another beautiful garden setting. Tickets can be purchased at the Yea Information Centre or at each garden gate and are $5 per garden or $35 for a composite ticket to all gardens. THE WATERS of the Eildon Pondage and Lake Eildon are home to the Eildon Big Fish Challenge on Saturday 21 and Sunday 22 October. The challenge will feature a competition to land the biggest fish with sections devoted to male, female and junior entries and a prize for the biggest fish caught in each section. Sponsored and organised by the local Alexandra Events committee, spokesperson Andrew Embling says the Eildon Pondage and lake are a signature destination of the Murrindindi Shire. The waters are regularly stocked with large fish from the nearby Snobs Creek facility and there are always reports of the big ones being landed. Each fishing competition entry and every fish caught gives you a chance in the motorboat major draw, first prize being a Savage boat, Mercury outboard and trailer supplied by Eildon Outboard Service.

HAVE YOU heard the advice given by many nutritionists to ‘eat a rainbow’ of fruits and vegetables for good health? Well, with a few Purple Congo potato plants in the veggie patch, you’ll have the indigo part of the rainbow covered, which means a good dose of the antioxidant anthocyanin. On top of its health benefits, the Purple Congo is a versatile spud with a mild flavour. The striking colour makes it perfect for any cook who likes their meals to look as fantastic as they taste. Baked, boiled briefly then mashed, or fried as chips, the Purple Congo retains its colour and texture well, adding pizazz to any dinner plate. The Purple Congo potato is an excellent 48 – Murrindindi Guide – SPRING 2017

choice for the vegetable garden as well as the kitchen. It’s prolific and easy going, so even if you don’t have the greenest of thumbs, you shouldn’t have too much trouble getting this purple beauty to grow. For a bumper backyard crop of Purple Congos, plant seed potatoes late spring or early summer (when there’s no chance of frost) about 10-15cm deep in rich, well-draining soil. Potatoes love composted manure – pelletised chook manure works a treat – and potash. Regular application of a seaweed-based fertiliser will keep them happy as they grow. They also like soil to be kept moist, but not soggy, and a thick layer of mulch will help keep moisture in. If you want to

get the most out of your potato plants, hill soil up around the stem as they grow to give them more room for tubers. Even if you don’t have a veggie patch, don’t despair. You can grow your Purple Congos in containers such as grow bags, big pots, or even old (clean) bins with drainage holes. Some people grow them in straw, with fertiliser added, covering the new growth with straw as soon as it breaks through, repeating that a few times and then letting the plants mature – this is known as the ‘nodig’ method. However you choose to grow it, the Purple Congo really is a superb spud and will make a tasty, healthy and colourful addition to your root vegetable repertoire.

By Tania Smith SPRING HAS sprung! Throw open the doors and get outside. Okay, you might still need a coat some days, but the worst is over, so it’s time to explore the outdoors. But where to go? One park in Murrindindi that has something for everyone is Cathedral Range State Park, near Taggerty. Just over an hour from the eastern suburbs of Melbourne and half an hour from Lake Eildon, Cathedral Range is an ideal spot for a day trip or a longer camping getaway. Walking If walking or hiking is your thing, then you can take your pick within the park. There are gentle familyfriendly walks along the base of the Range, or you can head up the Range for a more challenging walk and rewarding views. There is a wide range of short and long walks – from 45 minutes to full-day hikes – and many trails interconnect. The difficulty of the walks varies from gentle to very challenging. All trails are marked with information signage at the start of the walk, however track markers along some routes are limited so hikers are advised to carry a map and know which trail they are on. (An upgrade of signage and track markers is planned on the Range soon to improve safety further.) Rockclimbing

Long known as a Mecca for climbers, Cathedral Range attracts climbers from across Australia. Cathedral is often


used as a training ground for climbers preparing to scale higher peaks, including Everest. It offers many climbing options, but a word of warning: it is suitable only for experienced climbers due to the difficulty of the climbing.

Camping

The Farmyard is a small hike-in only camp with no facilities. No camp fires are permitted, portable gas stoves only. No bookings are required, and camping is free.

There are three camping areas within the park, each providing a different experience. Neds Gully Camping Area is a family-friendly walk-in campground near Little River, about 50 metres from the carpark and toilets. There are 20 campsites suitable for tents. Campfires are permitted in designated fire pits only. Advance bookings and payment are required. Cooks Mill is a shady campground among tall trees on the banks of Little River. There are 50 campsites available which are all suitable for tents. There are also sites suitable for camper trailers, campervans, small

Don’t underestimate Cathedral! Cathedral Range is a special place that has lots to offer everyone, but it should not be underestimated. Over the years we’ve lost count of how many walkers have been rescued by emergency services while walking on the Range. There are a few key things you should take note of if you are planning to walk, hike or rock climb at Cathedral Range:

• Walking many of these tracks involves climbing steep rock faces and traversing rock steps, uneven and slippery track surfaces • Before setting out on your walk let someone know where you are going, your expected time of return and vehicle details • Wear sturdy shoes and suitable practical clothing – the weather can change quickly • Take plenty of water with you • Bring a torch, just in case you get stuck on the Range after dark • Always make sure you carry a phone and basic first aid kit, even on short walks • Allow plenty of time – don’t head up the Range for a walk in the late afternoon

Wells Cave Track is very exposed, can be windy and the track passes through a very narrow cave so we suggest you don’t walk it if you are carrying a large backpack. On that note, don’t be put off. If you’d love a day in the bush or a camping trip, then there’s so much at Cathedral Range State Park that you will enjoy. So, what are you waiting for?

By Jane O’Connor ONE OF Victoria’s most contemporary and exciting sculpture trails has opened in the spectacular Toolangi State Forest. Construction of the trail has involved 14 of the state’s leading sculptors living and working in the forest for a fortnight to source their materials, then create and install the new artworks. The initiative breathes new life into a project carried out in 1996 when nine

artists from Australia and the Asia-Pacific region were invited to do the same. Some of those early works were designed to be reclaimed by the forest, and only three remain standing today, while others are still in the process of decay. Toolangi’s Sharon Plummer began the process of reviving the sculpture trail after the Black Saturday bushfires severely affected her community and its residents. Three art professionals – Maudie


Palmer AO, Associate Professor Rob Haysom and Sculptor, Savaad Felich – were invited to select the artists who would work among the remnants of the previous trail, using natural materials sourced in the area. The resultant artworks were completed in time for the Christmas and New Year holidays late last year and proved instantly popular with visitors. Even as a work in progress, the trail attracted many spectators and family groups. The program began with the artists-inresidence touring the stunning walks that abound in the area – such as the Wirra Willa Rainforest – to engage with the ecology of the mountain ash and remnant rainforests. Without the distractions of day-today life, they could interact and seek inspiration from one another. Some of the artworks required major logistical planning, including felling dead trees and clearing sites with a front end loader. The organisers and artists worked closely with Parks Victoria, the Department of Environment, Land, Water and Planning and the Indigenous Taungurung elders. For instance, Scott Selkirk’s work ‘Will’ required not only his family pitching in, but also an arborist and crane operator to fell the two dead trees that would form his work. In the last stages of construction, an arch was created by the artist with the assistance of a front end loader to manoeuvre each block of wood into place. Scott’s finished piece depicts a dead tree, segmented and bolted in place, and asks ‘How far can it bend before it breaks?’ Carmel Wallace’s art explores the idea of place, environmental awareness, and ethics. Her work ‘Bare Bones of Toolangi Forest’, with fallen branches painted white and suspended high in the living trees, brings reflection on a forest’s life cycle and its fragile nature. Gay Chatfield made woven forms, which can be found along the trail, using an invasive tree species – sycamore maple. These woven forms are reminiscent of the ‘play dens’ children would build in the forest. Gay’s ‘A Place to Dream’


is calling for visitors to crawl inside and look out at the forest. There is a pathway that takes the walkers between these ‘dens’ and the trail. Visitors will also come across Ali Griffin’s sculpture rising from the forest floor. This undulating shape, ‘Precious’, is made from burnt logs. But, at the level of the forest floor, the underside is covered with gold leaf. It is her statement on how we view what is worthless and what is priceless. A strong, round shape made from branches and twigs is Brigit Heller’s tribute to the remnants of the 1996 sculptures. One of the significant works that remains from that time is Japanese artist Mika Ebata’s ‘Forest Wind’. This inspired Brigit’s ‘Syzygy’, which not only repeats the circular form but also uses charred branches from her property and the local area to connect the different communities who have been affected by bushfire. Prominent sculptor Mike Nicholls has carved two large totems, ‘Bunjil and Wah’, which tower over all who travel through the town. The totems were fashioned from the large logs that once formed part of a local bridge. When visitors reach the end of the trail, they will find an unfinished piece of community weaving. Anyone visiting the trail is free to pick up natural materials and add to the ‘tapestry’. All of the pieces can be touched and interacted with and are designed to appeal to people from all walks of life. These works too will eventually blend back into the forest. By Emily Friedel EARLIER THIS year, a group of teenagers left their marks along the northern wall of the Alexandra RSL. Students from Alexandra Secondary College and other young people painted a mural depicting scenes from conflicts that Alexandra residents were involved in, spanning the period from the Boer War to more contemporary warfare. Putting brushes to bricks and weatherboards was the last step in a lengthy artistic process. Students worked with Russell Danby, a mural artist on Alexandra’s More Murals Committee, and members of the RSL over a period of many months to carefully select the scenes they would include in the panoramic artwork and make sure it was accurate down to the fine details. “The first thing we did was the meet and greet, so some of the kids from Alex Secondary College met with local RSL members. It was quite a tricky because it was going to be on the outside wall, which has windows and doorways to work around, so we had to figure out how to juggle all of the bits to make a storyline that would fit within those vacant wall areas.” The RSL mural project was initiated by Alexandra’s More Murals and, in partnership with Alexandra RSL, Alexandra Secondary College and Murrindindi Shire Council, they secured a State Government grant through the Department of Justice’s Graffiti Prevention Program to fund the project. The project aimed to engage

volunteer students in a creative project that would be both educational and provide an artistic alternative to the practice of ‘tagging’ in public spaces. Along with planning, designing, and painting the mural itself, students also documented the process and produced video clips for social media.

“I think the good thing about this project was that the kids were involved from the get-go, looking through the books and selecting images for the final design. I think they got a lot of enjoyment out of doing the research for the draft,” Russell says.

“I can remember one of the RSL members said the anti-aircraft gun would never have its barrel sticking up so high in the air because it has to recoil when it’s fired, so it had to be more at a 30-degree angle, not 45. I had to repaint that particular part of the mural, and other key areas, because it was very important that it was accurate.”

“There were some kids who consistently came to almost every session, and I think what was important about that was that they all felt very strongly they wanted to get it right. They were very

The mural includes images of the Australian Light Horse; the Alexandra Cadet Corps;

soldiers, airmen and nurses of World War I; the Navy at ANZAC Cove; El Alamein during the Western Desert Campaign; the New Guinea campaign of the Pacific War; and the Vietnam War. There’s even a B-52 Liberator plane in the World War II section to commemorate the late Rex Tate, OAM, a RAF bomber pilot who had been a RSL member and founder of More Murals. Before the painting was even complete, the powerful scenes drew in passersby and became a talking point. “While we were painting the mural, this little family group came out of the park, and there was a guy with his kid, who was probably about 12. The storyboard we were making was there to prompt those sorts of conversations. In other words, it’s not just a painting,” Russell says. The mural also had a positive effect that Russell hadn’t anticipated. “We were working away, and these four big, rough fourwheel-drives with camping gear on the back roared around and pulled up in the carpark opposite us. There were half a dozen blokes in

their late 20s and early 30s, and I thought, ‘Here’s trouble’ because one bloke had his arms folded and was looking quite stern. “But he came up to me and said, ‘You know, you got it right’, and I asked him what he meant. He explained they were veterans from the Afghanistan Campaign and said they can’t talk to people about it because there are still active units over there. He said a lot of them had been traumatised by their tour of duty and it’s been

really tough returning to civilian life. He said they were really happy to see that there is the acknowledgement within the community of what people have gone through – it helps them feel like they are recognised for what they’d done in Afghanistan.” Now the northern wall of Alexandra RSL is covered in an intensively researched, eye-catching mural, which captures the stories of many locals who served in the armed forces. So the next

like a princess”; hence her nickname ‘The Princess’. While she was there, she met her prince charming and they fell in love. Sandra moved to Hong Kong and married her soul mate and began to travel the world. After returning from one of their trips, ‘The Princess’ lost her memory. She was diagnosed with brain cancer, with her prince taking care of her throughout her therapy. Having also had cancer when she was 14 years old, Sandra can relate from both an adult and a child’s perspective; and so after her therapy she decided to write about the funny things that occurred during her treatment in order to make children and their parents laugh, and to raise funds for cancer prevention, research and cure. Sandra is now launching her Adventures of the [Farting] Princess series of books and associated prints, greeting cards and her own designed ‘Mr Snuggles’ (inspired by the stuffed bear that accompanied her to the hospital during her treatment). The funny things she writes about that occurred while she was in the hospital, (like farting), will make readers of The Farting Princess and The Princess and The Pee laugh and laugh. The exhibition opens with drinks and nibbles from 6pm on Friday 8 September and runs until Cup Weekend.
