YOKOHAMA – JAPAN – 1890s

T

he Bamboo cocktail has achieved a small measure of fame for being the first cocktail to be invented in Japan, but in many ways it’s perhaps the least Japanese drink imaginable. The dry vermouth is French, the sherry Spanish, and its inventor, Louis Eppinger, was a German bartender. A simple blend of two of the most popular products of the time—sherry and vermouth were both wildly popular in the 1890s— and a touch of bitters, the Bamboo is the kind of drink that could have emerged almost anywhere. But it had to emerge somewhere, and it’s no doubt appropriate that that somewhere was Yokohama, the port city that once served as Japan’s gateway to the world. The location of its birth might have been an accident, but it was a fortunate one. While the Bamboo doesn’t taste particularly Japanese, it does possess a simple and functional

elegance akin to the Japanese concept of shibusa: a balance of simplicity and complexity, rusticity and sophistication, economy and quality. Many classic cocktails share this same quality, which might go towards explaining why Japan became the unlikely homeaway-from-home for pre-prohibition bartending techniques and standards during the latter half of the twentieth century. Like many other classics, the recipe’s template is incredibly flexible. If you are feeling adventurous you can mix different types of dry sherries to make a ‘split base’—say a fresh Manzanilla with a touch of nutty Amontillado or Palo Cortado for depth—a nifty trick pioneered by Hidetsugu Ueno in Ginza’s Bar High Five. You can swap out the dry vermouth for a sweet white vermouth for something a little softer and less bracing (skip the simple syrup if you do this). But

perhaps the most effective variation I’ve encountered (from French bartender Jean Lupiou’s 1938 book Cocktails) is to replace the simple syrup with a splash of orange curaçao, which adds an extra hint of citrus and spice to what can be an otherwise forbiddingly austere cocktail.

INGREDIENTS 45 mL/1½ oz light, dry sherry (Manzanilla or Fino) 45 mL/1½ oz dry vermouth one barspoon (5 mL/¹⁄₆ oz) simple syrup or orange curaçao (optional) one dash orange bitters one dash Angostura bitters

METHOD Stir all ingredients with ice in mixing glass until chilled. Strain into a chilled coupe glass, and garnish with a twist of lemon zest.

he Spritz Veneziano—a fizzy, winebased drink that, more often than not, appears lurid red or orange—might seem like the least butch drink in the world, but it comes with a surprisingly military backstory. After Napoleon’s first defeat and exile to Elba in 1814, Europe’s powers met in Paris and re-drew the continent’s borders; as part of this treaty, the Austrian royal house of Habsburg-Lorraine asserted their claim over the Venetian Republic. This claim was not a popular one, to put it mildly, amongst the people of Venice, who soon found themselves occupied by a foreign power – one with a strong army presence, to boot.

INGREDIENTS 60 mL/2 oz aperitivo bitter of your choice (Aperol, Select, Cynar, Campari, Cappelletti, etc.) 90 mL/3 oz chilled Prosecco or other dry sparkling wine 30 mL/1 oz sparkling water

METHOD Build ingredients in tumbler or wine glass. Add ice gently (in order not to dissipate the fizz). Garnish with a slice of orange, and green olives on a skewer. The traditional recipe doesn’t require super-precise pouring—feel free to make this one by feel rather than with jiggers, especially when it comes to the sparkling water. If you are feeling particularly

Venetian lore has it that the occupying Austrian soldiers found the local wines too robust by comparison to the more delicate rieslings and grüner veltliners that they were accustomed to; their ingenious solution was to add a spritz (spray) of water to soften the blow. Other innovations soon followed—as the soda syphon became commonplace towards the end of the nineteenth century (long after the Habsburgs had relinquished their claim on the Veneto), that splash of water was soon more often than not carbonated. But the real innovation came in the 1920s, when Venetian bartenders started to add Italy’s own aperitivo bitters to the mixture. Exactly what kind of aperitivo bitters was the first to be included in the mixture remains contentious. Select, the bitters most associated with Venice itself, claims to be the original, but there are plenty of other contenders: it could also have been Cappelletti Aperitivo Americano, or Campari, both of which were common in the 1920s. But there is no doubt which aperitivo bitters brand dominates the Spritz as we know it today: Aperol, a brand born in Padova, not far from Venice, in 1919. With its lightness—both bitterness-wise and in terms of ABV—it’s a gentle introduction to Italian aperitivi, and the Aperol Spr itz is the perfect showcase. 11
