Bianca Medina editor-in-chief Editor’s Letter Hello My Child Mamma’s and Papa’s So here we are April! Before we know it, it will be December! What the!!! Please don’t judge, but it’s come to my attention that my child plays on her device’s way too much! When I was growing up, TV was a luxury and gaming was just starting out! What I remember about my childhood was that playing with toys and music was everything! My first memory of being on a device was apple computer. Goodness - I’m old, and it was a box! I remember being so excited to play the EA sports Game – Summer Olympics, I think it would have been the early 90’s. However, just loading the game, and. then playing, your fingers would go numb after 15 mins so we never spent to much time in front of screens! I know that why we were living through lockdowns and had minimal contact with our loved ones, friends, and extended family, devices were a great way to stay connected, but those days are now long gone! I have started limiting her screen time and it’s been a s%$t show, but I know I will be helping her to get back to being the social, creative, and chatty child I had PTTP (Prior To The Pandemic)! Over the past week, I have banned gaming during the school week as well as limiting the apps she can access. I have been encouraging her to be more creative with arts and crafts, writing stories and playing with toys! I will be allowing my child to use more educational apps to help with her reading, spelling, and math, and by doing this, I also know she will slowly move away from using devices, if it’s like represent more schoolwork! I love tech like most and believe it has a good purpose, but I need to keep her usage in check and let her just be a kid. Kids need to use their imagination, be creative, inventive, and resourceful. Technology is everywhere, and in today’s world, children are exposed to it at a very early age. From education and learning to a major chunk of their recreation, almost everything is facilitated by technology. The amount of time we spend tapping and swiping on screens has been increasing; the Covid-19 pandemic has only resulted in a surge of this usage. Parents all over feel that technology affect’s their children negatively and cumbers their development and health. While these concerns are valid, they aren’t entirely true. Technology has a ton of benefits to offer. Having a scoop of ice cream sounds like a good idea, at the same time having an entire tub, not so good. So,



the key lies with balance and amount you consume. The same goes for technology, find the right balance, and try to harness its benefits. Here are some of the benefits of technology on child development: Encourages Creativity Children are creative, they think outside the box and have huge imaginations. Previously, they only had crayons and pencils at their disposal to visualize those ideas and convey them to the rest. However, now with technology they have much more than just crayons and colouring pens, from computers, tablets, and so on to help them turn their thoughts to reality. Your child is now able to create digital art, or even 3D animations, which can be brought into being using 3D printers. Technology provides the resources necessary to harness the most out of your child’s creativity. Who knows, your

child may on their way to create a prototype to some world changing innovation, all thanks to the freedom offered by technology. Independence and Empowerment From conceiving the idea to turning it into a reality, earlier we had to face a lot of obstacles. The lack of resources, skill and knowledge being the substantial problems. But now with technology, you have everything at your fingertips. Your child comes up with an idea, now they research about it, and finally realize it into a conveyable form. Technology allows your kid to create and go through each of these steps on their own. With the internet, kids have access to a large amount of information online and are enabled to answer their questions on their own. This encourages them to have independent thought trains, which helps build independence, confidence, and new interests.

Develops Problem-Solving Skills When children play video games, they are more concerned about the short term’s goals, which helps improve their problem-solving skills. In such games, they are always trying to figure out their next steps and react quickly to new scenarios thrown their way. This improves their logical reasoning and problem-solving. Games such as PUBG and Fortnite are survival mode games, where the task is to stay alive as long as possible and outlive the opponents. Here they are put into new environments where they are to collect resources, and even build structures to survive. Such games help improve their decision-making and reasoning skills. Socialising Yes, children who spend long hours playing games, binging shows, or swiping away on their smartphones may face difficulty in socialising. But remember the thing about ice cream and dosage, studies suggest that children who spend a limited amount of time using tech may be able to use it as a socialising tool. 10

Video games, social media and even movies are all interests and hobbies that your child may share with others. Some video games even have in-game voice chat, which could help them find friends and peers with similar interests. Increased Visual Attention Many applications require your child to pay close attention to details provided on the screen to complete the task they are assigned. This is more prevalent in the case of RPG or Role-playing games, where your child assumes a character in the game, and moves around as that character. Your child must constantly think of their next move, which requires them to pay attention to any details on the screen. Apart from increased visual attention, technology may also help in improving your child’s hand-eye coordination. When your child follows an object floating around on the screen, and tries to match it with the cursor, as in shooting games or sports games.

As parents, we always try to do our best to secure our children’s’ well-being and success. Today, the whole world revolves around technology, so that means you must teach your children to use tech in a healthy way and help them be responsible and successful digital citizens. While it is true that electronic gadgets do keep your children busy and give you the time to do your work in peace, too much screen time can be detrimental to their health. Setting limits to your kid’s screen time in today’s screen-filled world can seem impossible. During the Covid-19 pandemic, smartphones and virtual screens acted as a lifeline to connect us to our loved ones and as a means of keeping ourselves occupied. From schooling to work, everything went online and our dependence on virtual screen surged. According to Bosco, an online and social activity monitoring app, the pandemic has led to nearly a two-fold increase in children’s screen time. From babies who are nifty at swiping and tapping on screens to keeping your young children safe from cyberbullying and exploitation, here’s what you need to know when it comes to limiting your children’s screen time. Babies (Under 2 Years) Your child’s brain grows the fastest during the first three years of their lives. Interacting with the real world with all their senses would be more beneficial to their lingual, emotional, social, and motor development, than using a virtual screen. Your child could be playing with a cat on the screen, but that wouldn’t come close to interacting with a cat in real life.

Introducing your baby to technology isn’t necessarily a bad idea, but it should only be for a minute percentage of their time, and ideally you should supervise this screen time. Here’s what you need to keep in mind: Keep Screen Time to Bare Minimum Experts suggest limiting screen usage exclusively for video calling their loved ones. This one-on-one interaction would help them develop their lingual skills even though the interaction is virtual. Stay Away from Educational Videos You might think it is a good idea to get your baby to watch educational videos. However, such videos that are usually marketed as aiding brain development have been found to do more harm than good. Studies have linked such videos to sleep problems, developmental issues, and speech delays. Keep Your Devices Safe You don’t want your baby to accidentally delete some critical data from your device or do something worse. So, keep your devices locked and turn on parental controls so that your baby doesn’t make in-app purchases or destroy your tech.

Toddler and Pre-schoolers (2-5 Years) At this age, it might be difficult to keep your child away from electronic devices. Try to squeeze out more tech-free time; play, watch and browse together with your child. A vast majority of parents find that there are benefits to their children’s screen usage. While this is true, it would be a better choice to keep tech usage to a small fraction of their learning and recreational activities. Use Tech to Bond Children, at this age, learn to share, help, and do things that are beneficial to others. Technology can help your child achieve these. Play video games with them and show them how a responsible adult plays and uses tech in a healthy way. Similarly, watching movies or cartoons together can help you bond with your children better. Set Tech-Free Time and Spaces Lay ground rules for tech-free time and spaces, such as no electronic gadgets two hours before bed, or at the dinner table or in the bedroom. Keep TVs and PCs in spaces where you can supervise, even if you are busy with chores. Encourage Other Activities. Persuade your child to get involved in activities that don’t need an electronic screen in front of them, such as board games, sports or reading books.

From mobile phones and web-based entertainment to TV and tabletbased toys, the present children are continually immersed in technology. While youngsters and teenagers really must foster a fitness for technology, all things considered, a lot of technology use can impede their well-being. The adverse consequences run the range from obesity and lifestyle issues to social and behavioural problems. This doesn’t necessarily mean that you must get rid of tech altogether. Rather, you should know about the impacts that technology can have on children and foster methodologies to reduce their screen time.


Childhood Obesity and Technology Kids now tend to spend less time outside doing physical activities, as they are usually stuck to their mobile phone or TV screens. Combine that with an increased affinity for junk food, what we have is a surge in obesity rates among kids. Kids will naturally tend to be more interested in watching movies or shows, playing video games, or casually scrolling through social media. As parents, we really must ensure kids are investing energy outside and stay physically active. If you have time to spare, join your children in outdoor games. You can mess around, playing tag, or get a pair of gloves and a ball to play catch, or toss a Frisbee around. This would also act as bonding time for you and your kids, and at the same time help keep obesity at bay.

Negative Effects of Technology on Children’s Social Development Technology has changed the way we connect with our loved ones. Even as grown-ups, we are more inclined to send a text rather than make a phone call. Likewise, we frequently act differently online platforms than how we would act face to face. Such differences are not restricted to grown-ups. Children that spend a large chunk of their time on social media, have been found to suffer from low self-esteem. On social media platforms, we see highly curated content, this can cause distress especially in young children and teens as they often compare themselves to their peers. Thus, technology use can create social and behavioural issues in youngsters since it reduces the time kids spend interacting in real time. Make it a point to screen your kid’s internet use and know about the kind of sites they are visiting and the games they are playing on the web. Set up parental controls on

PCs, mobile phones, and tablets to prevent any unwanted usage and protect them from potential trouble. Try to place the PC, gaming console, or television in a room where you can supervise your kid’s technology use. Technology and Attention Span Kids today are wired for instant gratification. They have everything at their fingertips. Gone are the days when we used to wait a week for our weekly visit to the cinemas with our family or used to wait hours at a stretch listening to the radio just to listen to that one track. Mobile phones, tablets, and other gizmos, keep distracting us with notifications and sounds, making it difficult for us to focus on the task at hand. A study conducted has shown that ever since the use of technology has surged, the average attention span dropped from 12 to 8 seconds. To combat this, what you can do is restrict tech use when your child has a task at hand. Say your child is doing schoolwork, strictly prohibit smartphone usage. 22

Encourage conversation and engagement at the dinner table. Urge your children to unplug, and take part in activities that don’t include screens, such as outdoor games, reading books, or solving riddles. Final Thoughts If you think your child is already addicted to technology and electronic devices, it might still not be too late to make some positive changes. Try to make time to spend with your kid and have some quality time one-on-one. Try to limit the amount of time your child spends on social media by setting up parental controls, tech-free zones, and time. Plan family nights where all of you put your electronic gadgets away and just spend time together, maybe signing karaoke or playing board games. Most importantly, be a good role model. How many times have you checked your phone when you were supposed to be spending time with your kids? Human beings are the farthest from nature than ever have been till date. Worse, the distance is increasing. Worst, they seldom realise or acknowledge the harm. But was this stretching course taken voluntarily? Well, yes and no. Hi-tech is an asset in innumerable ways, yet we can’t overshadow the dark side of it. From 2020, the world has been going through constant changes. You can no longer see children hurrying to the school building not to get themselves late. Now they are probably circumscribed within the four walls of their house, eyes pointed to the big, luminous screen, doing their online classes, or surfing the internet. The child’s age and cognitive ability, determines the impact of technology on them. For example: a two-year-old child won’t benefit from using a smartphone, but given the conditions, someone older could get digitally learned by technology. How Do Kids Become Antisocial in Real Life? Amidst all the benefits of social media platforms, the ill-effect can make children antisocial. People generally show the best part of their life in those sites, so, when the viewers compare those highlight reels with their behind-the-scenes, they might begin to feel insecure. Those curated content they watch can result in lower self-esteem among some. It’s a step ahead to the creation of superiority and inferiority complexes.



It’s reliable and easier to communicate virtually than to reach out in real life. As the information you show in the media is under your control but in real life, you show the ‘real you’. Most kids heavily engaged in media are out of that practice. But it’s necessary to have real bonding at times. Studies have shown that some social platforms can be one of the many causes of social anxiety. How Does Unmindful Utilisation of Technology Affect Us on The Behavioural Spectrum? Humans have an average attention span of a goldfish’. This headline is podcasting everywhere. Studies of the early 2000s showed that the average attention span of human beings has decreased from 12 seconds to eight seconds. This causes impatience and frustration, leading to absent-mindedness. Too much screen time during the day kills a lot of time, reducing their lifespan. Continuously engaging the brain into processing information is unhealthy. So, it’s recommended to go for nature walks. The obesity rates are increasing significantly in children and adolescents. If they are sitting around, tapping the screen for hours, then their physical movement naturally gets restricted to a certain amount. Thus, they should be encouraged to head outside and communicate with their peers face-to-face, play with them, go for runs, do anything that keeps them away from the screen. The exposure to blue light from the LCD screen before sleep can affect their natural cardiac system, causing inability to sleep. There are apps to reduce the blue rays, such as twilight, but it’s better to keep the screen light away for an hour right before you go to bed. Cyberbullying is hitting the peak at this moment. Bullying in any form can lead to mental distress, anxiety, and depression. It can even lead to suicidal thoughts. So, it’s very much important that they have a safe place to vent out all the pent-up stuff.

Why Is Complete Abstinence Not Fruitful? The previous generation of kids lived in a world without smartphones, laptops, or any hi-tech gadgets inside their home during childhood. But most generation Z kids had it all since birth, so these gadgets seem to be a necessity to them. Therefore, forceful abstinence can make them desperate. It will restrict them from exploring the innovative, fruitful, and productive side of it. Thus, parents need to be empathetic and should encourage understanding conversations with their kids about setting time limits and app restrictions, until they are capable of making their own decisions. Why Is Moderation Important? Children are born innocent. Mostly, they won’t understand the difference between productive and useless surfing. Moreover, the algorithms of social media platforms are designed in such a way that the audiences are bound to get intrigued by it. Naturally, children become the most innocent and accessible prey. When addicted, their brain coordination changes and pleasure hormones, that is dopamine, get secreted during the wrong time. The more they are into it, the worse the addiction gets. It takes genuine efforts to get normal again. So, What’s The Solution? Should Parents Stop Their Kids from Using Technology? Well, that mentality would cause more trouble than the actual problem. Technology is booming, virtuality is everywhere, so kids do need to learn the basics. But too much of anything is unhealthy, be it the fat you consume, or the exercise you do. Thus, we must stick to moderation. Technology is forever to stay and continue to evolve, expand, and reshape the world. So, using that in moderation to capitalise the benefits and lessen the negatives shouldn’t be an issue. It’s high time, we should be mindful of our actions and the results that follow along. Parenting has, is, and will never be an easy task. Parents do often find themselves at their wits ends, trying to discipline their naughty toddlers or trying to deal with teens who want their “freedom and privacy” regardless of the age they live in. But today, parents have a new challenge to deal with, screens. Visualize a child in the 90s, you’d probably be thinking about a child with a toy in one hand. Similarly, if you were to think of a child in today’s world, you’d probably have a picture of a child casually swiping away at a smartphone screen. Let’s face it, we are living in the age of screens. A vast majority of parents say that parenting today is more difficult than it was 20 years ago. It is true, parents today struggle to set limits on the use of technology and screen time. A major reason is the lack of role models. We don’t have any sort of reference or any tried and tested strategies from grandpa to help us. This challenge is new, and we must come up with the solutions. As parents, want to do the best we can for our kids, and so we want to be able to guide them in both the real and virtual world. a family full of love is adding an innocence of a child. But the painful labour’s during childbirth are veiled under that lively smile of the kid. Is there any way that labour can be less scary?

How Are Epidurals Helpful?

Epidurals have been used for a long time to nullify the pains during childbirth. This procedure involves the administration of


an anaesthetic in the lower back (near the spinal nerves) of the female, which further causes blockage of pain during labour. This has been effectively used to make deliveries easier for the mothers and has been widely used because of its results.

Under this procedure, with the help of a long and thin needle, a catheter is placed in the back of the patient or other. The needle is removed, and the catheter is further taped to avoid its dislocation. The anaesthesia or medication for pain is then provided under the guidance of the doctor.

Epidurals result in a drop in blood pressure (hypotension) and if the levels of lowered blood pressure are not monitored, it may affect both the mother and child. Sleep is an indispensable part of our routine, that is essential to a healthy lifestyle. Research suggests that kids who get enough sleep have heightened attention, improved behaviour, and better overall mental and physical health. On the other hand, lack of sleep has been linked to obesity, high blood pressure, depression, and many other lifestyle problems. Kids need at least 9 to 12 hours of sleep each night. Sleep problems may lead to poor quality and inadequate amounts of sleep. Sleep problems are a rather common occurrence in children, especially the young ones. Bedtime fears, insomnia, sleep apnoea, and sleep walking can all prevent your child from having a natural sleep pattern.


About every 1 in 2 children experience some sort of sleep problems, early detection of these can help deal with the negative consequences better. Signs of Sleep Disorders in Children A lack of sleep causes us to have difficulties managing our moods and affects our state of mind and behaviour. The same applies for children. Children in general might take some time to settle into bed, but if it seems like they are finding it extremely difficult, it could be due to a sleep disorder. Common Scenarios That May Indicate a Sleep Problem Include:

Your child may ask you for another story, lullaby, or a trip to the bathroom. Your child can’t sleep for more than 90 minutes at a stretch, even at night. Snoring.

Tips To Improve Your Child’s Sleep Apart from affecting your child’s health, a child who has trouble settling in at night or who keeps waking up in the middle of the night can rob you of your sleep as well. Here are some practical tips you can adapt to help your child sleep better and overcome any sleep disorders they may be facing. Set a Bedtime Choose a regular bedtime and try to stick to it at any cost. Similarly, have a wake-up time in place and do not encourage sleeping in on the weekends or holidays. The timings shouldn’t differ by more than an hour. Relaxing Bedtime Routine A bedtime routine usually comprises two or more activities that get your kid in the frame of mind to go to bed. This could be having a glass of milk, putting on pyjamas, a relaxing shower and a lullaby or reading a story book. What’s important is that these activities are done in the same order every day. The goal is to get your child to slow down into mellow vibes and comfortable to go to bed.

Temperature and Lighting Make sure the temperature in the bedroom is comfortable, not too cold, or hot. Dim the lighting, ideally your child should sleep in a dark room, however if they are scared to sleep in the dark, you can maybe leave a dim light on. Meals and Beverages Large meals close to bedtime should be avoided. A heavy meal close to bedtime, might signal wakefulness to the brain and additionally, leads to the release of insulin, which might shift the circadian rhythm. A general rule of thumb would be to give at least three hours’ time between a meal and bedtime. Do not give your child any food or beverage that contains caffeine close to bedtime. Cut Out Blue Light Stop the television, computer, mobiles, or any other electronic screens at least an hour before bedtime. While using such gadgets close to bedtime, turn on a blue light filter. Studies suggest that the blue light emitted from these screens can delay the onset of sleep. Bottom Line It is common for children to have bedtime terrors, or wet their beds, most usually outgrow these disorders. However, if you feel that your child is really struggling with such sleep disorders do consult a medical practitioner.

Handling Your Finances You don’t need rocket science to know that babies mean a lot of money. Take some time to sit down with your partner and figure out how your baby might affect your finances. Come up with ways in which you can cut down expenses and save a bit more or earn more money. Make a budget that includes the baby’s expenses as well, and don’t forget to save some for the future. Bonding Through Touch Physical touch plays a crucial role in building a bond with your junior. It helps the little one feel safe and secure, while also aiding brain development. Physical touch is also a great way to soothe a crying baby. Pick up the baby and hold them close to your heart until they can hear your heartbeat. Vomiting Don’t try to fight it, the faint smell of slightly cheesy cream is your new scent. Make peace with it. Babies puke, and that’s completely normal, it usually just means that their little tummies are full. But as time goes, you’ll be able to know when your baby is about to vomit, in which case all you have to do is hold your baby at an arm’s length, facing out and let them vomit on to the floor.

Nappy Changes Changing nappies can feel relentless. So, you just took the effort to remove a stinky full diaper, wiped your baby clean and changed the baby into a new diaper, then it happens again. You feel as if your bundle of joy was waiting for you to finish changing the diaper to unload a massive poo. Again, there’s nothing you can do about it, other than accepting reality and keep going. Bye, Bye Sleep It’s time to say goodbye to those good ol’ days when you used to get eight hours of uninterrupted sleep. Yes, your baby is going to be asleep for 12 to 15 hours each day, but unfortunately, they only sleep for an hour or so at a stretch. The best thing you can do is sleep when your baby sleeps. Feeding Your Baby If you aren’t relying on breastfeeding alone to nourish your baby, then you should probably learn how to prepare a bottle of formula before the baby gets home from the hospital. Trust me, you don’t want to wake up your partner at three in the morning and ask them, “Hey Hun, how does this work?”. That said, breastfeeding is the best way to nourish your baby at least.

When you get into a relationship, the butterflies when you see them, the excitement while you wait for a text, the magic in a kiss, everything seems like straight out of a happily-ever-after film. Except that it isn’t, this newness fades away after a while. This passionate love turns into a more compassionate love. You and your partner start to divulge your true selves and form a deep emotional attachment. You start to have a sort of stability and comfort in your life. However, along the way you may also stumble, with life throwing obstacles your way and renewing that passionate love can seem like an arduous task. So here are some tips from experts and real people on how to keep your relationship spicy after marriage: Revive Remember when you bumped into each other at the college library, there on you used to visit the library just to get a glimpse of her? Go back, go to that library, revisit your memories. Maybe you don’t

Did you know I’m a rubbish bin? As well as a broom, vacuum cleaner, servant and any other title you want to throw at me. We all know that life as a parent means we have a fair bit of responsibility for the little people in our lives. But when they reach a certain age of independence (don’t ask me exactly what it is, could be 1, 4 or even 10), there should be a point of recognition where they take some responsibility for themselves, right?! Wrong! Oh, except when they want to be independent and you are the worst parent in the world for not letting them have their own way, that’s just a different league of its own. I know I’m raising mini versions of myself. They have sass and attitude that will keep them going for life. I just don’t need it thrown at me on a daily basis. Or ever really. Just remember we as parents, don’t know anything. We couldn’t possibly understand what it’s like to be a kid, because we never were one apparently. While we grew up in an era long before social media ruled the world and everyone’s lives, we still had the experience of being a kid. The joys of getting out and having fun and then the downside of being told no when we desperately asked for something. Not really sure much has changed in that aspect of growing up. I don’t think the word no will be disappearing from our vocabulary somehow. There’s no denying the world sure is a different place now to when I was a kid. We knew war and poverty existed but it wasn’t thrust into our faces so freely and bullying has taken on a whole new level to what it once was. Don’t even get me started on Covid. When I was my eldest daughter’s age, the biggest sickness getting around (from what I remember) was chicken pox and everyone wanted to be infected to get it over and done with! If only things were that simple now. But if anything, it certainly shows how resilient kids still are and that’s one thing that never seems to change throughout the generations.

Chicken Noodle Soup prep & cook time: 30 mins serves: 4

INSTRUCTIONS

heat oil in a large non-stick saucepan over medium heat. add carrot and celery and cook for 5 minutes. add the stock, garlic and ginger and bring to the boil

Rice With Tofu prep & cook time: 20 mins serves: 3-4

INSTRUCTIONS 1

place the tofu in a small bowl and add the stirfry sauce and soy sauce

toss to coat and set aside until required

spray a wok or large frying pan with oil and heat

add spring onions, capsicum, corn and beans and stirfry for 2-3 minutes or until vegetables are tender but still crisp

add the tofu (with all the sauce) and stirfry for 2-3 minutes or until heated through

serve with the rice, adding more soy sauce to taste

Quick & Easy Split-Pea Chowder

prep time: 75 mins serves: 4-6

INSTRUCTIONS

INGREDIENTS

place the split peas in a large saucepan and cover with plenty of cold water

bring to the boil and simmer for about 40 minutes, until tender

3

drain in a colander and set aside

4

spray a large saucepan with oil

5

add onion, garlic and carrot to the saucepan and cook over medium heat for 5 minutes, stirring occasionally

6

stir through the cooked split peas and vegetable stock, and season with pepper

7

bring to the boil, then reduce heat to low

8

simmer, partially covered, for 15 minutes, adding a little water, if necessary

9

add the sliced hotdogs, if using and simmer over medium heat for 5 minutes

10

garnish with chervil, if desired

serve with a crusty bread roll

Quick & Easy Lamb & Spinach Salad

prep time: 25 mins serves: 4-6

INSTRUCTIONS

INGREDIENTS

cook the potatoes in a large pan of boiling water for 10-15 minutes or until tender, but do not overcook

500g baby potatoes

drain well, cool until just warm and then cut in half

300g trim lamb fillet

meanwhile, spray a nonstick frying pan with oil and heat

spray canola or olive oil 125g english spinach leaves 250g

punnet cherry tomatoes, halved

1 sml

red onion, cut into thin wedges

add the lamb fillet and cook for 5 minutes on each side

transfer to a plate, cover loosely with foil and set aside for 5 minutes, then cut into thin slices

6

toss the spinach leaves, tomatoes, onion and warm potatoes with the lemon juice

7

arrange on serving plates, and top with the sliced lamb

8

season to taste and serve

Lemon Gelati prep & time: 6+ hrs serves: 4-6

INSTRUCTIONS

heat sugar and 2 cups water in a small saucepan over low heat, stirring, for 5 minutes or until sugar dissolves

INGREDIENTS 1 cup caster sugar 1/2 cup lemon juice, strained 2

eggwhites, lightly beaten

bring to the boil and simmer, uncovered, for 10 minutes or until syrupy

3

remove from heat and allow to cool

blueberries and strawberries, to serve (optional)

4

stir in lemon juice

biscotti, to serve (optional)

5

pour mixture into a slice pan and place in freezer until just frozen

6

transfer to a food processor or bowl, add eggwhites and process or beat with an electric mixer until combined

7

return to pan and refreeze until just frozen

8

process or beat mixture again, then refreeze until firm

10

serve with berries and biscotti, if desired

Lemon Delicious prep & cook time: 45 mins serves: 6

INSTRUCTIONS 1

preheat oven to 180°c. lightly grease 6 x 1-cup dishes

beat eggs yolks, zest and sugar in a large bowl with electric mixer until thick and creamy

stir in margarine, milk, juice and sifted flour

4

beat egg whites until soft peaks form. add extra sugar gradually and beat until dissolved between additions

5

fold into lemon mixture in 2 batches

6

pour into dishes. place in baking dish with enough hot water to come halfway up the side of the dish

7

bake for 25–30 minutes or until pudding is just set

8

serve with ice cream
