STARTER: Gammon & Cauliflower Cheese Grills
RECIPE
Preparation Time: 5 minutes Cooking Time: 25 minutes Serves: 4 Ingredients 4 small raw gammon steaks 1 large cauliflower 100ml half-fat crème fraîche 85g cheddar cheese, grated 1 tbsp wholegrain mustard Method 1. Heat the grill to high. Snip the sides of the gammon steaks with kitchen scissors so they don't curl up too much when they cook. 2. Put the gammon onto a baking tray, then grill on one side for about 10 mins until the fat is crisp. 3. Put the water, lemon juice and some salt into a saucepan. 4. Meanwhile, cook the cauliflower in boiling water for 5 mins until tender. 5. Drain and tip into a bowl with the mustard, crème fraîche and two-thirds of the cheese and give it all a good mix. 6. When the gammon is crisp, flip it over and cook on the other side for about 10 mins. 7. Spoon the cauliflower mix over the gammon, sprinkle with cheese, then grill for 5 mins until bubbling and golden.

RECIPE
Preparation Time: 10 minutes Cooking Time: 45 minutes Serves: 6-8 Ingredients 6-8 skinless boneless chicken breasts, (about 1kg/2lb 4oz in total) 2 tbsp clear honey grated zest of 2 lemons and the juice of 1 2 tbsp olive oil 1 curly lettuce , such as Batavia or Webb's 1. Preheat the oven to 190C/gas 5/fan 170 and arrange the chicken in a shallow ovenproof dish. 2. Mix together the honey, lemon zest and juice, oil, salt and pepper, then pour over the chicken breasts and turn them around until well coated. 3. Roast the chicken breasts for 40-45 minutes, turning them halfway through the cooking time, and basting occasionally, until they are golden brown and shiny and the marinade has almost evaporated. 4. Leave to cool, then wrap in foil and chill until ready to eat. (The chicken may now be frozen for up to 1 month. Defrost before serving.) 5. When ready to eat, spread the lettuce over a large platter, tearing up any large leaves. Slice the chicken breasts, keeping them together, then arrange over the lettuce.

Method 1. Heat the oven to 180C/fan 160C/gas 4. Butter and base-line a 20cm-square baking tin with baking parchment. 2. Gently melt chocolate and unsalted butter together in a bowl over hot water until smooth then cool a little. 3. Whisk 6 whole eggs, 2 yolks and caster sugar together until pale. Fold the melted chocolate mix into the eggs. 4. Sieve cocoa powder with plain flour then fold everything together until evenly mixed. 5. Pour into the prepared tin and bake for 20 minutes until slightly risen at the edges. Allow to cool completely in the tin. 6. Cut into 12 and indulge - you should have a thin crisp crust and a rich, gooey centre.
