Quick tomato and basil tart

RECIPE

Ingredients 1 sheet ready-rolled puff pastry 1 jar ready-made pesto 5 ripe plum tomatoes, thinly sliced sea salt flakes and freshly ground black pepper 1 bag herb salad 4 tbsp extra virgin olive oil 2 tsp lemon juice small buch fresh basil, leaves only, torn Method 1. Preheat the oven to 180C/350F/Gas 4. 2. Place the puff pastry on a non-stick baking sheet. Prick all over with a fork, leaving a 1inc/2cm border around the edge. 3. Spread the jar of pesto over the pastry base, being careful not to cover the border. Then lie the tomatoes on top of the pesto, overlapping slightly. Season generously with sea salt and freshly ground black pepper. 4. Bake in the oven for 15-20 minutes or until the pastry border is crisp and golden and the tomatoes are soft. 5. Dress the salad with two tbsp of olive oil and the lemon juice, season generously with salt and freshly ground black pepper and mix well. 6. To serve, cut into the tart into slices. Place the salad in the centre of each serving plate and place a slice of tart on top. Finish with a drizzle of olive oil.

Landlords and Tenants - LET’S……. Start a relationship Since The Lettings Agency started 18 months ago, and being the only lettings agent in Cosham High Street, they are pleased to welcome a new member of staff to the team. Heidi joins with an Estate Agency and Lettings background and has lived locally for 30 years, providing a wealth of knowledge and experience. Since starting at The Lettings Agency, Heidi has managed to make contact with various companies who have employees looking to relocate to Portsmouth. She added “ I have a particular client who is looking for furnished properties for their employees to move into, the nearer the Naval Base the better! Another client I have made contact with has a list of properties available and we have to find the tenants to take them. It’s been a very enjoyable and productive few months for me.” Since the beginning of 2009 The Letting Agency has received a high number of enquiries from both Landlords and Tenants wanting a professional and honest service and as such are seeing the number of managed properties grow on a week by week basis. Heidi also commented, “We all know that in today’s economic climate everyone is tightening their belts. RECIPE

Lemon Chicken Ingredients For the chicken 150ml/5½fl oz chicken stock 2 lemons, zest and juice 1 tbsp dry sherry 1 garlic clove, left whole 4 x 150g/5½oz chicken breasts, skin removed For the lemon sauce 250ml/9fl oz chicken stock 4 tbsp caster sugar 4 lemons, zest and juice 1 tbsp cornflour, mixed to a paste with a little water salt and freshly ground black pepper 75g/2¾oz butter To serve 200g/7oz ready-made egg-fried rice 4 spring onions, trimmed, finely chopped

RECIPE

Method 1. For the chicken, mix together the chicken stock, lemon zest and juice, sherry and garlic clove in a large casserole. Bring to the boil, then reduce the heat until the mixture is just simmering. 2. Add the chicken breasts and cover the casserole with a lid. Cook for 20-25 minutes, or until cooked through. Set aside to cool slightly. 3. For the lemon sauce, bring the chicken stock, sugar and lemon zest and juice to the boil in a pan, then continue to cook for 4-5 minutes. 4. Whisk in the cornflour paste until the mixture is smooth. Season, to taste, with salt and freshly ground black pepper. 5. Heat the butter in a frying pan over a medium heat. Add the cooled chicken breasts and fry for 2-3 minutes on each side, or until golden-brown on both sides. 6. To serve, place one chicken breast onto each of four serving plates. Pour over the lemon sauce. Spoon a portion of egg-fried rice alongside. Sprinkle over a little spring onion.

Rhubarb crumble Ingredients zest and juice of 1 orange juice of 1 lemon 2.5cm/1in piece fresh root ginger, peeled and grated 1kg/2lb forced rhubarb, cut into 4cm /1½in pieces 175g/6oz caster sugar

Topping 25g/1oz powdered milk 25g/1oz ground almonds 25g/1oz rolled oats 250g/8oz plain flour 250g/8oz soft dark brown sugar 1 tsp cinnamon 2.5ml/½ tsp salt 175g/6oz unsalted butter, cut in cubes

Method 1. Preheat the oven to 180C/350F/Gas 4. 2. Mix together the caster sugar, ginger, juice, zest and 2 tbsp of water. 3. Pour the mixture over the rhubarb. 3. To make the crisp topping, in a food processor blend together the dry topping ingredients on a pulse action. Add the butter and continue to pulse until the mixture resembles a crumble. Scatter over the top of the rhubarb mix, bake in the oven for 45 minutes to 1 hour or until the top is golden. 4. Serve hot or cold with clotted cream.
