Starter: Butter Ball Soup This is a great recipe if you have some stale bread to avoiding throwing it out. The ingredients are: 500gms stale white bread, sliced 1 cube of soft butter 3 eggs 5 cups of chicken broth 2 teaspoons chopped parsley ½ cup of uncooked rice (optional) Salt and white pepper to taste Cooking Instructions Cut off the crusts from the bread and crumble it in a bowl using your hands Add the butter and eggs and mix thoroughly using your hands Knead well until you can make small balls using the mixture Make small balls of about ¾ inches in diameter and drop into the boiling chicken broth Sprinkle the parsley into the soup and add the rice into the broth as well, if you’re using rice Cook until the rice is soft but firm to the bite This soup serves about 4-6 people and should be served hot. If you feel that the butter ball mixture is too much, simply freeze it for use on another day. Tip – Always heat your soup cup or bowl and serve the soup hot unless it’s meant to be a cold soup

Main Course: Spinach Casserole Most adults (especially women) know the value of a good vegetable and they therefore eat spinach without complaining. However, you have to come up with creative ways of making this vegetable to ensure that your children and other family members enjoy it as much as you do. This is a great main course for two reasons – it is delicious and it is very healthy. Additionally, it is very fast and easy to make. The ingredients are: 500gms of chopped spinach –either fresh or frozen 500gms of fresh mushrooms, sliced 1 medium sized onion, chopped ½ cup of celery, chopped 1 can of cream of mushroom soup Cooking Instructions If you have frozen spinach, defrost it and break it apart Sauté the mushrooms with the onions and celery until they are all tender and a golden brown Grease a casserole dish and combine the sautéed ingredients with the spinach and cream of mushroom soup Set your oven at 375 degrees and bake for half an hour This meal serves about 8 people and should be presented hot. Preparation time – 5 minutes Cooking time – 40 minutes

Dessert: Brown Sugar Apple Crisp The secret to a good homemade dessert is reading the preparation and cooking instructions carefully. It is also important to serve the dessert as it should be served. You can add more cinnamon and nutmeg on top of the mixture Set your oven to 350 degrees and bake for 30 minutes Serve this delicious dessert warm with whip cream.
