Over the last year, Taste the Local Difference® (TLD) has added a lot of new territory. For the first time ever we are including all of northern Michigan’s food & farming community— both the Upper and Lower Peninsulas. That’s why we’ve nearly doubled the size of this publication, the 13th edition of our annual Guide to Local Food. We’re using our decade-plus of experience in local food marketing to serve communities in 37 counties. Growth beyond our former 10-county service area began last year, with Washtenaw County, in southeast Michigan. So, in 2016, TLD is publishing not one, but two editions of the Guide to Local Food. The second version will debut in southeast Michigan this July. Beyond growing our service area, TLD is making a renewed commitment to our mission of “helping food businesses and the communities we serve realize the economic value of local food, while ensuring that fresh, healthy, local food is available to all consumers.” We know our health, and the health of our communities, is directly connected to the food we eat. That is why we strongly believe that everyone should have access to fresh, healthy, local food. Access is about affordability, it’s about awareness, and it’s about education. We hope you’ll use this guide as a resource to find local food throughout northern Michigan, and share it with friends and family. We promise to do our part: read on and you’ll learn more about initiatives we’re supporting in our area to bring more good food to more and more people.

Goodwill Farm to Freezer

Winter in Northern Michigan presents a formidable challenge when it comes to sourcing local produce. While season extension systems and storage crops provide great options, the depths of winter still result in limited local produce availability. Exciting as these systems are, additional local produce choices are always a welcome joy in the winter months. Thankfully, here in northern Michigan we’re blessed with the Goodwill Farm to Freezer program. Goodwill’s Farm to Freezer purchases fruits and vegetables ro local ar er and a ree e e o o r co ni can have access to summer produce all year long. Farm to Freezer products — including everything from cherries, peaches, and blueberries to asparagus, carrots, and romanesco — are available to retail consumers in more than 25 grocery stores. And it doesn’t end there! Larger packages are also available for restaurants and institutions. In fact, the whole operation began with the hope of bringing more local produce into school cafeterias and that’s just what they’re doing. Students throughout the region are getting e ci ed a o local ra errie l e errie ca li o er and carrot medleys. For the farmers, Farm to Freezer creates an new outlet for their products, allowing more to be grown and sold than would normally be consumed by customers during the summer months. In 2015, the program purchased 120,000 pounds of fruits and vegetables from farms throughout the region, and in 2016 they expect to purchase an incredible 180,000 pounds. Farm to Freez-

er has also begun production of an organic line of local fruits and vegetables to reach another consumer and producer audience. Not only is Farm to Freezer creating a much-needed outlet for local produce, but they’re also helping an underserved population get back on their feet in the process. The folks who work in the Farm to Freezer kitchen preparing and freezing the produce are gaining new skills and developing workforce experience that a o er i e e di c l o nd. e e icall ad ro le starting anew after various unfortunate circumstances, but Farm to Freezer gives them a second chance. The transitional work experience program includes an intensive one-week training, followed by 90 days of paid work experience in the kitchen. This understanding and supportive environment i e ac l a an eo le need o regain eir con dence and learn valuable work skills to change their lives for the better. Every purchase of Farm to Freezer products — for the home kitchen, a small restaurant, or an entire school district — is a in in in i a ion ar er are ene ing gaining a larger market for their crops, local people in need of a second chance are gaining valuable skills to reenter the workforce, and consumers are given an additional way to support our local economy. o ne i e o nd o r el in e ree er ai le con ider choosing a Farm to Freezer product. Oleson’s A Community Retailer written by: Tricia Phelps

Many people in northwest Lower Michigan hold the Oleson family name in high-regard. For some, it’s about the gifts the Oleson Family Foundation makes to local organizations; for others, it’s the region’s five Oleson’s Food Stores. But either way, it’s clear that the Oleson family cares deeply about strengthening our community. Gerald and Frances Oleson opened a small grocery store on Front Street in Traverse City in June 1926, and lived in the apartment directly above it. With community support the business grew into a larger location just down the street and later expanded to Petoskey, Charlevoix, and Manistee, with the involvement of their sons. Thirty-six years after opening their first location, in 1962, the couple founded the Oleson Family Foundation with the goal of continually performing good works in northwest Lower Michigan. Today, Gerald and Frances’ grandchildren and greatgrandchildren continue to manage the operation of Oleson’s Food Stores. And their family’s founding legacy is still deeply rooted in the business. “I take incredible pride in our name and guard its reputation to the fullest extent,” said co-owner Brad Oleson “My family history brought us to where we are. I take a lot of pride in that, and I back it up 100 percent.” The Oleson’s relationship with the local community is an important way they differentiate themselves from their larger competitors. As a regional grocer, they’ve

built important one-on-one connections with both their customers and local food producers. “We try to bring in as much local as we can,” said Oleson, “and to bring in niche items or unique products people are asking for.” With local products in their stores, the Olesons use Taste the Local Difference® branding to differentiate local food on the shelves and in the produce coolers. Fresh, local produce and proteins are an Oleson’s specialty and the company has become well-known for ensuring these items are regularly available. Larger national retailers may sometimes be able to offer lower prices, but people are realizing that price isn’t always the most important factor in food purchasing decisions. Educated consumers are comparing price with quality and community—when a product is cheaper, but the money spent on it leaves the local community, they’re considering the real cost of that product instead. Businesses owned and operated by local people often contribute much more to the vibrancy and well-being of the community as a whole. Spending your dollars at local stores with local products is a crucial way to show your support. “We give our customers the service and the selection they’re looking for,” said Oleson “And we believe in our people. Our employees are the ones that have built this company and without them we would not be here.”

The Local Agriculture behind our Libations

Michigan now has more than two hundred craft breweries in operation, which means the statewide demand for hops is huge. How huge? Just two Michigan companies, Bells Brewery and Founder’s Brewing Company, will collectively purchase three million pounds of hops to brew the two million barrels they’re expecting to produce in 2018. Last year, it's estimated that Michigan-grown hops totaled less than 500,000 pounds, far below the demand of even one largescale craft brewery. Brewers are eager to use locally grown hops, but they need the reliable consistency, quality and quantity to make it work. Two northern Michigan businesses, Empire Hops Farm and MI Local Hops, are working together to meet these needs and build the industry through collective resource sharing, high-quality standards and opportunities for farmers to scale up their production. Dan and Alex Weisen of Empire Hops Farm have built a strong reputation in hop farm management and trellis construction over the last nine years. What initially felt like a frustrating experiment, has become a valuable contribution in this growing industry – thanks in part, to the help and expertise of Joe Brulotte, a third generation hop farmer out of Washington State’s Yakima Valley. “It was a steep learning curve,” said Weisen, “and initially we weren’t having much luck.” “But, Joe taught us the nuances and pieces we were missing. e il off a e a g ea ed a e ing or ar ing in this climate and now we’re having great success.” Today Empire Hops Farm manages over 400 acres of hops throughout northern Michigan, and continues to construct new yards every summer. With all their experience, the Weisens try to be very realistic about the business of hop farming when people approach them about investing in or growing their own.

The 30,000-sq-ft stripping and drying facility that is now under construction in Williamsburg, MI. MI Local plans to duplicate the same type of facility on the west side of Traverse City as well. “We saw the opportunity to bring people together to share common resources,” said Jason Warren, CEO of MI Local Hops “We’ll share equipment, storage, and purchasing power on chemicals, fertilizers, inputs, etc.” arren i a genera ion nor e ic igan c err ar er and spent years as the CFO and director of quality at Shoreline Fruit. With that in mind, he’s taking steps to improve hop quality by working directly with growers and positioning the processing facility itself ahead of food safety regulations that he expects will impact the industry a few years from now. Both Empire Hops Farm and MI Local Hops are contributing to a thriving new industry; one that they believe has room to grow and a clear path to get there. By sharing knowledge and resources, developing opportunities for scale, and implementing high level quality control standards, these two companies are ensuring that the growth of northern Michigan’s hop industry has only just begun.

Feeding our Neighbors

In 2014, families in need made 528,767 visits to 70 pantries and meal sites throughout Antrim, Benzie, Grand Traverse, Kalkaska, Leelanau, and Wexford counties. The need to connect everyone in our community to healthy, local food is clear and compelling—though not always as easy as it should be. Taste the Local Difference (TLD), in partnership with Food Rescue Northwest Michigan, hopes to bridge the communication gaps between local farmers, pantries, meal sites, and consumers with the launch of a new food pantry resource site: OnePantry.org. The site lists the hours of operation, addresses, and donation requests of pantries and meal sites throughout Michigan, providing a direct line of communication between farmers or retailers that may have excess products they’d like to donate, and pantries who would like to offer more whole, healthful, local foods to their clients. In Traverse City, the Father Fred Foundation—our largest food pantry in the

region—is leading the way in increasing the amount of healthful, local food available to their clients. “The food pantry at the Father Fred Foundation is committed to providing food assistance to any person residing in the fivecounty Traverse City area who reaches out and expresses need,” said Les Hagaman, Father Fred’s Operations Director. With each visit to the pantry, guests to Father Fred receive three days of food for all members of their household, and families are welcome to visit twice a month. Food at Father Fred is carefully selected to provide a diet as balanced and nutritious as possible. Guests are offered choices within each food group and multiple sources of protein and fresh produce. The goal is to intervene in the cycle of poverty by improving the dietary habits of all Father Fred’s guests, particularly children. “We see daily the devastating effects of poor diet and its undeniable link to poverty and how these habits and consequences

are passed onto the next generation,” Hagaman said. “We believe that if we can successfully intervene in this cycle and educate our guests about the benefits of local food sourcing and fresh produce in their diets, we can improve lives.” Father Fred is working to increase the financial resources to purchase fresh produce staples—locally sourced when possible—such as broccoli, beans, carrots, potatoes, onions, apples, and grapes. The Foundation is also committed to education and offers recipes and cooking demonstrations by Foundation volunteers and MSU Extension nutritionists. “This dual commitment of improved food selection and education is central in our endeavor to pivot the American diet toward healthy, fresh, single ingredient foods, and away from highly processed foods high in sugar, high fructose corn syrup, sodium and artificial ingredients,” Hagaman said.

If the buzz from this winter’s Farms, Food & Health Conference in Traverse City is any indication, we don’t get healthy by popping vitamins. Think local farm fields, woods and orchards instead. Farmers markets. Simply prepared meals, rich in variety and color. And forgotten food traditions that actually add up to health, without our knowing it. Keynote speaker and physician Daphne Miller, the nationally acclaimed author of Jungle Effect and Farmacology, brought that message to the sold-out conference. It drew 220 participants from such a wide diversity of professions that Miller said it “blew her away.” Physicians, nurses and registered dietitians rubbed shoulders with farmers and school teachers, anti-poverty advocates, employee wellness o cials and hospital and school food service directors. “These conversations will reverse the epidemic of chronic disease,” Miller said. Indeed, connecting health and wellness to locally grown foods is gaining momentum here. Bluestem Farm in East Jordan distributes food to families through the Health Department of Northwest Michigan. Munson Medical Center is starting a fruit and vegetable prescription program that partners with the Grand Traverse Commons farmers market. Employers are working with Providence Farm in Central Lake to make weekly worksite deliveries a part of employee wellness benefits. Pat Friedli, medical director of Munson’s Healthy Weight Center, recalled a slide he saw at Farms, Food & Health that said: “We are fed by the Food Industry, which pays no attention to health, and are treated by the Health Industry, which pays no attention to food.” “Brilliant,” Dr. Friedli said. “It rings so true in our everyday health care world. It is too easy to rely on medications to fix a health issue rather than emphasize the real, whole and organic foods which nourish our body to repair itself.” As an example of how old food traditions turn out to be health giving, Miller said corn tortillas have a glycemic index of 62 and beans of 22. Put together they level out to a healthy 35. Cherry salsa, anyone?

A Hub of Food Activity written by: Bill Palladino

Early most Monday mornings there’s a delightful aroma emanating from Suite 108 at the Grand Traverse Food Innovation Hub. It tells us that Courtney Lorenz is busy in the kitchen brewing up something special. Her business, Cultured Ferments, occupies two small rooms inside this building at 1610 Barlow in Traverse City. In one of the rooms sits nine 60-gallon plastic fermenting tanks, each holding a waxy substance that completely covers the contents. Her “babies” Lorenz calls them. These are "scobies," and each makes up a symbiotic colony of bacteria and yeast that turns a simple mixture of water, tea and sugar into a delicious and nourishing effervescent drink known as kombucha. Until moving into the food innovation hub, Cultured Ferments could only sell their kombucha under “cottage food” regulations that restricted sales to farmers markets. In the seven months since moving into the hub, Lorenz has grown her business substantially. “I’ve expanded from 15 gallons to 540 gallons of production capacity,” she says This facility is the first food infrastructure pro ect of the Grand Traverse Foodshed Alliance (GTFA). With nine suites available for rent ranging in size from 380 to 1600 square feet, the food innovation hub provides below market rent to qualifying food businesses, along with access to a menu of support services. The “white-boxed” suites are already prepped for the strict requirements of the food industry. Currently, other tenants occupying suites or pending build-out include; As You Dish, Fab Fresh Foods, the Michigan Hop Alliance, WhiskTC, the Big Dipper Dough Company, ai in, ale Mary, and The edheads. All these tenants share a desire to grow and expand their local foodbased businesses but have met obstacles along the way that the food innovation hub is designed to mitigate. The entire facility and its philosophy are designed to accelerate the growth of local food businesses and make lasting impacts on the regional economy, and there are more like it popping up all over Michigan. ack in Suite 10 , after Courtney Lorenz finishes bottling a batch of kombucha, she can often be found relaxing with a cup of tea or catching up on email in the lounge area of the food innovation hub.
