A Christmas message from your Mayor

C

hristmas and New Year is a time we all look forward to on our beautiful Sunshine Coast. For many of us, there’s the chance to catch up and celebrate with family and friends while everyone in our tourism sector prepares to host the tens of thousands of visitors we welcome from around Queensland, interstate and overseas. Each year, the Sunshine Coast Council is proud to support a wide range of Christmas and New Year events which reflect the lifestyle, cultural values and diversity of our Coast community. This year there is extra special significance as the memorable festivities commemorating our 50th Anniversary of the Naming of the Sunshine Coast culminate in an extravaganza. Our anniversary year has been a wonderful success, showing how we have progressed as a region, and I’m sure you will enjoy the big finale we have planned. There’s a packed program of family-friendly events and activities across our region. Once again, council has partnered with My Weekly Preview to bring all the event information to you in this special liftout. There are many highlights to look forward to, including: • Community Christmas trees and lighting in 20 locations – try to see them all; • Community carols and Christmas-themed events along the coast and into the hinterland; • The spectacular, family-friendly New Year’s Eve celebrations at Mooloolaba, Coolum and Caloundra. To our residents, I encourage you to share the spirit of the season by catching up with your neighbours, making new friends and being a great ambassador for our visitors. If you’re holidaying here, you’ve made a fantastic choice! Thanks for being a part of our Christmas and New Year celebrations. This year there are 20 locations with council decorated trees adding Christmas cheer to our local communities. All council decorated trees use LED lighting to align with council’s commitment to sustainability. The majority of trees will be illuminated from December 1 with some local communities hosting events to officially turn on the lights as part of the festivities. The lights should be shining in all trees by December 10.

Mooloolaba Rotary Club’s Annual Senior Christmas Party, 11.30am-2pm Lake Kawana Community Centre, Bokarina mooloolabarotary.org Senior citizens and people with disabilities will be treated to a VIP Christmas celebration. Guests are picked up from their homes and taken to the centre to enjoy a day of entertainment, a light lunch and gifts.

DECEMBER 2–21 Santa arrives in Downtown Caloundra, 10am-2pm Bulcock Street, Caloundra downtowncaloundra/Christmas On December 2, Santa will arrive in a motorcade procession (from 10.30am) via the beachfront and feeder streets into Bulcock Street, supported by Downunder Beachfest classic cars plus other branded community cars and bikes. Welcome Santa to his workshop at 11 Bulcock Street, The Strand, with face painting, balloon twisting, free photos with Santa and much more. COOKING UP THE CHRISTMAS SPIRIT We have some great recipes that are sure to dress up your dining table these holidays.

THE MARKETPLACE SWEET AND SAVOURY GLAZED HAM Short on oven space this Christmas? Customers who purchase their ham from IGA Marketplace Wises Road can get it glazed and baked in store for an additional $20. And you can collect it any day including Christmas Day!

Ingredients • 1 leg ham (7-9kg) • 1 ½ cup cherry jam or preserve • ½ cup maple syrup • 1 tsp Dijon mustard • 1 lemon, juiced • ¼ cup Grand Marnier Handful of cloves

Method 1. Preheat the oven to 180°C. 2. Remove entire rind from ham, leaving inner layer of fat intact. 3. Score ham fat in a diamond pattern and place a clove on the corner of each diamond. 4. Place ham on a wire rack in a roasting pan. 5. Combine jam or preserve, maple syrup, mustard, lemon juice and

Grand Marnier in a saucepan. Heat over medium heat until it comes to a boil. Brush one-third of the glaze over the ham. Bake for 30 minutes, then baste with another one-third of the glaze. Bake a further 20 to 30 minutes depending on size of ham. 6. Use the remaining glaze for serving. Ham may be served hot or chilled. Recipe courtesy of IGA Marketplace Wises Road.

FESTIVE FOOD SCALLOPS WRAPPED IN PANCETTA WITH TOMATO AND SALSA VERDE Method – salsa verde Mix the parsley, dill, basil, garlic and the zest and juice of the oranges, lime and one of the lemons together in a bowl. Season with salt and cracked pepper, add the olive oil and set aside.

Ingredients • 24 thin slices of pancetta • 12 sea scallops • 4 tomatoes, blanched, peeled, seeded and diced • Juice of 1 lemon • 1 ½ tbs olive oil • Baby salad leaves, to serve Salsa verde ingredients • 3 tbs fresh flat-leaf parsley, coarsely chopped

• 3 tbs dill, coarsely chopped, • 3 tbs basil, coarsely chopped • 2 garlic cloves, peeled and crushed • Zest and juice of 2 oranges • Zest and juice of 1 lime • Juice of 1 lemon • Salt and ground pepper to taste • Generous 3/8 cup extra virgin olive oil • 50g chopped capers

Method – scallops 1. Preheat oven to 180°C. Trim the pancetta to one centimetre in width and 10 centimetres in length then place two strips of pancetta across each other flat on a baking tray to make a cross. 2. Place a scallop large side down in the centre of the cross and wrap the pancetta around the scallop. Continue this process until all scallops are used.

3. Heat a large non-stick frying pan. Place the scallops flat side down for 30 seconds until they begin to change colour. Transfer the pan to the oven for one minute, then turn the scallops over and return the pan to the oven to cook for a further one minute. Remove the pan from oven. 4. Place the diced tomatoes, juice of one lemon and the olive oil in a small pan and warm gently. 5. To serve, place the warmed tomato mixture in the centre of the plate. Place the scallops on top and lay a few baby salad leaves over the centre of the scallops. Drizzle a little of the dressing used to warm the tomatoes over the leaves and spoon the salsa verde around the plate. Recipe courtesy of Fresh Meats Wises Road.

BARBECUE PRAWNS WITH MANGO AND AVOCADO SALAD Ingredients • 400g cooked tiger prawns • 2 mangoes, cut into cubes • 2 avocados, cut into cubes • 2 limes • 1/3 cup finely chopped coriander leaves • 1 long red chilli, seeds removed and finely chopped • 1 tbs honey • 1 tbs avocado oil or extra virgin olive oil • 1 butter lettuce, leaves separated • Micro herbs to serve

Method 1. Peel, devein and roughly chop half the prawns. Place in a bowl with mango and avocado. 2. Grate the zest of half a lime, then juice both limes. Put aside one wedge for serving. 3. Place the lime zest, juice, coriander, chilli, honey and oil in a bowl. Whisk to combine and season well. 4. Pour over prawn mixture and toss to combine. 5. Divide lettuce among plates, fill with the salad and serve with the remaining prawns, lime and micro herbs. Recipe courtesy of Caloundra Seafood Market.

Nothing says Christmas like prawns. The question on most people’s lips is how many to buy? If prawns are not the main item being served for Christmas lunch or dinner, then 250g per person is a good guideline to follow. When it comes to buying seafood for the holidays, there are a few important things to keep in mind. For starters, you need to know how to buy the right products. Only select seafood that looks shiny and moist; prawns should have a glossy appearance and oysters should look plump. Secondly, learn how to correctly store seafood. It’s summer, which means hot days and balmy nights. Domestic fridges run at around 4°C, but at this time of year – with the fridge overstocked with food – they usually operate at a warmer temperature, which is not good for storing seafood. The best way to store large quantities of seafood is to keep it in an esky between two layers of ice. Always store cooked and raw seafood in separate bags. TIP – Sprinkle a handful of salt over an iceblock to harden the ice.

Ingredients • 400g Australian barramundi fillets • 1 tbs smoked paprika • 2 tbs flour • Salt and pepper • Butter for cooking • 12 small tortillas • 100g carrot, shredded • 100g red cabbage, shredded • 40g red onion finely sliced • 30g lettuce mix For the salsa • 100g tomatoes, finely chopped • 10g coriander, chopped • 1 tbs extra virgin olive oil For the aioli • 100g quality mayonnaise • Juice of half a lime • 2 garlic cloves, crushed

Method 1. For the aioli, combine the ingredients and season with a little salt. 2. For the salsa, combine the ingredients and set aside for at least half an hour for the flavour to develop. 3. Lightly toast the tortillas in a hot, dry pan for a few seconds each side and set aside. Combine the paprika and flour with a little salt and pepper. 4. Heat butter in the pan, dust the fish in the paprika flour and pan fry for two to three minutes each side until done. 5. Using a fork, break up the fish into chunks and spoon along each of the tortillas. Top with the tomato salsa, aioli and finish with the salad. HOW TO FRENCH A LAMB RACK

Steve of Fresh Meats Wises Road shares a simple and delicious way of preparing an unforgettable ham.

Preparing your lamb rack shouldn’t be a daunting task. Shane of Fresh Meats Wises Road shares his tips on how to enjoy the process and learn something new along the way.

Ingredients • Whole leg ham (8-10 kg) • ½ cup orange juice • ½ cup raw sugar • 5ml bourbon • Cloves Method 1. Preheat oven to 160°C. 2. Cut the rind below the hock and peel off the rind. 3. With the tip of your knife, lightly score the fat to make small squares 4. Centre a clove in each square and place ham in baking tray. 5. In a saucepan, add bourbon, orange juice and raw sugar. Simmer until sugar dissolves. 6. With a pastry brush, generously apply glaze evenly across the fat. 7. Bake at 160°C for three-and-a-half hours, rebrushing with glaze every half an hour. 8. Remove cloves before carving.

Step 1: Selection Your lamb rack should look full and plump with plenty of meat to fat and bone ratio. The fat should be a nice white to slightly cream colour. The rack will usually span between seven and eight ribs. Step 2: Scoring Place the rack fat side up with ribs running horizontally. Start at the top of your rack and cut down across the ribs in one long continuous line to the bottom. Keep your knife as close to the bone as possible and begin peeling the meat back off the bone using a sharp knife. Step 3: Trimming Carefully work your way from one end of the rack to the other, with the rib bones facing up. Keeping the edge of your blade against the bone at all times, carefully cut the intercostal meat from between the ribs, leaving only the bones exposed. Once all the meat has been cut out, gently scrape each bone to remove any residue.

FESTIVE FOOD HERB CRUSTED LAMB RACK WITH CONFIT POTATO & CHIMICHURRI Ingredients • 50g Dijon mustard • ½ cup chopped parsley • ½ cup chopped dill • 6 washed potatoes • 1 litre olive oil • 4 cloves garlic • 1 bunch thyme • 1 Frenched rack of lamb • Salt and pepper to season Chimichurri ingredients • 1 cup firmly packed chopped flat parsley • 1 cup firmly packed chopped coriander • 1 garlic clove peeled & crushed • 125ml olive oil • 1 ½ tbs red wine vinegar • Dried chilli flakes • Salt and pepper to season

Method - chimichurri Combine parsley, coriander, garlic, oil, vinegar and chilli flakes in a bowl. Season with salt and pepper. Mix and set aside. Method - confit potatoes Slice potatoes two centimetres thick and place in ovenproof tray with the oil, whole garlic cloves and thyme and bake in 180°C for 30-35 minutes until tender. Method - lamb rack Brush the mustard over the lamb rack using a pastry brush. Then roll in dill and parsley. Sear in a hot pan herb side down. Place in oven on 180°C and cook for 18 minutes. Allow to rest. Carve rack into two even pieces, place on top of cooked potato and drizzle with chimichurri.
