On the following pages are a list of required ingredients and equipment for each experience. We have a jam-packed day of experiences for you so we recommend picking one or two cocktails to join along with and encourage you to try the rest on your own or when we release the recording of the day. Don’t worry, we’ll also be sharing all recipes with you ahead of time so you can make notes of any tips and tricks our team provides you with!

Join our Trius retail team as they add some bubbles to your day! They’ll walk you through making creative sparkling cocktails for any time of the day. From mimosas to floats, there is guaranteed to be a bubbly cocktail for all palates and occasions.

Sangria Seminar - Peller Retail 1:35 PM to 2:10 PM
Summer is quickly approaching and what pairs better with summer than sangria? The Peller retail team is providing you with some tips for creating their favourite summer wine-based beverage. They will take you step-by-step into a creative sangria you’ll want to savour.

Culinary Demo - Chef Parsons 2:10 PM to 3 PM
Peller Estates’ Executive Chef, Jason Parsons, walks you through making a Potato Crusted Salmon with an Asparagus Endive Salad drizzled in Rosé Mustard Dressing and topped with a poached Hens egg. The Rosé isn’t only for cooking, enjoy a glass while you watch. Chef Parsons will provide you with tips and tricks so you can re-create his recipe at home. It’ll be just like dining at The Winery Restaurant! .

Backyard Brews - Wayne Gretzky Estates 3 PM to 3:35 PM
Enjoy a Wayne Gretzky beer hat-trick as our Brewer and Beer Ambassador, Laura Milukow, shares the best food pairings for each of our beer styles. Once you’ve paired all three beers, she will provide you with a great cocktail recipe to enjoy in your backyard this summer!

Have a Whisky with Tim & Spencer - Wayne Gretzky Estates 3:30 PM to 4:10 PM
Enjoy a whisky tasting as you get to know Tim Wilson, Wayne Gretzky Estates’ Distiller, and our Retail Manager, Spencer Smith, as they discuss all things whisky. They will touch on the distillation scene in Niagara and across Canada, the key distinctions in style and production between Scotch, Rye Whisky and Bourbon and share some of their stories. Come prepared with any burning questions you may have as they want to hear from you!

Spring Into Spring Culinary Essentials - Chef Dodd 4:10 PM to 5 PM
Trius Winery Restaurant’s Executive Chef Frank Dodd will guide you through creating three of his favourite barbecue and patio essentials. He will be mixing up a Chardonnay dressing, Icewine barbecue sauce and sweet verjus-pickled strawberries. Sip on your favourite at-home beverage as you take in Chef Dodd’s tips for creating your very own condiments you will want to enjoy throughout the season.

Winemaker’s Tasting - Emma Garner | Craig McDonald | Emily Aubie 5 PM to 6 PM
Take advantage of this rare opportunity to taste with multiple winemakers from our four estates as they taste some of our newest wines. Pre-order the wines at a 15% off pre-release price of $90 for the kit so you can taste along with the winemakers or listen in to see what wines may be of interest to you. The winemakers have picked a brand new product and some not-yet-released wine.
