Remembering Walter Gretzky 1938 - 2021 We are deeply saddened by the loss of Walter Gretzky, father, friend and ambassador at Wayne Gretzky Estates.

APRIL 2021

A loving father figure, inspiring coach, avid hockey player and a man of profound humility, Walter leaves a great legacy behind him. From early mornings spent coaching his children and the neighbourhood kids at the “Wally Coliseum,” his backyard rink; to building benches and chairs made of recycled hockey sticks for the Canadian National Institute for the Blind; to inventing hockey drills that were remarkably ahead of their time in Canada, Walter’s love for and contributions to the great game leave an indelible mark on his family and the hockey community at large. Off the ice, Walter was a driver of change within Canada, dedicating much of his life to championing local and national charities, including the Canadian National Institute for the Blind, the Ontario Lung Association, and Canada’s Heart and Stroke Foundation. A testament to his dedication and generous spirit, he was awarded the Honour of Canada in 2007 for his charitable work and his contributions to minor hockey programs across Canada. To Canada’s Hockey Dad, a true Great One, and the man who inspired a nation, we raise our glass to you one final time. Our thoughts are with Wayne, Kim, Keith, Glen and Brent, and we thank them for allowing Walter to be our dad too.

You will be dearly missed but will live in our hearts forever

WINEMAKER’S NOTEBOOK The first sign of budbreak is always an exciting time for us. Typically, this happens during the first week of May. Baco Noir and Chardonnay are the first varietals to wake up, followed by Pinot Noir and Pinot Gris. A good and even bud break brings a smile to our team, but can be a little worrying if it’s too early and they’re exposed before the last chance of frost (before the May long weekend). Early bud break gives us the best chance to fully ripen our reds.

Distiller’s notes: Our winemaker, Craig McDonald, working closely with some of our long-standing growers, selected the finest Muscat grapes harvested from Niagara Peninsula vineyards during the fall of 2017. The juice underwent a slow cool fermentation to enhance and retain varietal expression, then it was presented to our distilling team to distill the dry Muscat wine. The fresh and fruity Muscat wine was double distilled in a copper pot still to bring forth a clean, aromatic spirit. The spirit was then aged for 2 months in a stainless-steel tank to soften the mouth-feel and enhance aromatics. Pure, naturally limestone filtered, UNESCO-protected Niagara Escarpment water was added to achieve 40% ABV and the perfect balance of aromatics and fl avours. The spirit was then bottled, ready to be enjoyed. Flavour profile: A clear and pure coloured spirit with aromas of tropical fruit, star anise, apricot, almond and a touch of banana. The mouth-feel is round and full in texture, with notes of fl oral, pine resin and nut. The finish is long and lingering with a hint of sweetness and fl avours of earth, tree fruit and pine. Best served: Neat or on the rocks or mix with soda water and a hint of orange. This can also be used as a vodka substitution in martinis and other cocktails.

Fill a tall glass with ice. Slice a lemon and squeeze in 3-4 slices. Add all ingredients and stir until chilled. Sip & enjoy! Tonic has been a bitter component in cocktails for a century, if not longer. Originally tonics were used for medicinal purposes but have since been adopted for flavour and creativity. Though we are not claiming this cocktail to cure you of anything, it will certainly help in chasing away a case of the Mondays. The floral elements of our Honey Lavender Syrup and the tropical notes of our Muscat Spirit, with an added splash of refreshing grapefruit, creates a botanical blast of a cocktail that you can keep on sipping.
