Select Friday Evenings $125++ for Wine Club members The evening will begin with a cocktail reception in our Club Lounge followed by a structured whisky tasting in the distillery. The highlight of the evening will be a fourcourse menu, prepared by Chef Maurice Desharnais, in our underground barrel cellar to complement our whisky portfolio. WINEMAKER’S NOTEBOOK The first sign of budbreak is always an exciting time for winemakers. It signifies the start of a new growing season, which will eventually become a new vintage. Baco Noir is one of the first varieties that starts to bud in Niagara, closely followed by Chardonnay. Once the buds start to break, it gives us an idea of the potential crop load that the vines will be potentially producing and will give us an idea of how we will need to care for those vines during the growing season. wine & cheese pairings with

Winemaker’s notes: A classic Bordeaux blend of Cabernet Sauvignon, Cabernet Franc and Merlot, all harvested from the vineyards within the Niagara Peninsula. The individual wines were aged for 12 months in 60% French and 40% American oak barrels before the final assemblage was created. A full malolactic fermentation was completed in barrel. Flavour profile: Garnet in colour with a warm bouquet of black cherry, dark plum, black currant, sweet spice, and oak. Flavours of ripe red and black fruits are complimented by notes of spice and oak. Notes of black tea, vanilla bean and cocoa powder linger on the finish. Best served: Serve at a cool room temperature of 17 to 18°C. Drink now to 2027. Enjoy with grilled medium-rare cuts of beef; rack of lamb; roasted root vegetables with rosemary and sauteed mushrooms.

Winemaker’s notes: A diverse blend of Pinot Noir, Gamay Noir, Pinot Grigio, Syrah, Cabernet Franc, Cabernet Sauvignon, and Pinot Meunier, all harvested from our long-standing growers within the Niagara Peninsula. The red varietals were given four hours of skin contact, then gently pressed, and cool fermented in stainless steel. The Pinot Grigio was gently pressed and cool fermented in stainless steel. The wines were then blended and aged for a short period of time to enhance the fresh fruit aromas and flavours. Flavour profile: Coral copper pink in colour with a fresh aroma of ripe peach, melon, strawberry, and Rainier cherry. The mouthfeel is smooth, refreshing, light, dry and fruity. On the palate you’ll find flavours of red berries, crab apple, melon, and rhubarb. Refreshing flavours of red berries, pink grapefruit, and crab apple linger on the finish. Best served: Serve chilled at 10 to 12ºC. Drink while young and fresh paired with Margherita pizza; Greek salad; baked salmon; gazpacho; shellfish; or turkey with cranberry sauce.
