The Whisky Bar Patio will be offering tableside service of our wine, beer and craft cocktails along with a delicious winter menu created by Chef Maurice Desharnais. Food and drink must remain at the table. Drinks are not permitted on the rink. Refunds will be given if the rink is closed due to weather.

WINEMAKER’S NOTEBOOK As an Aussie, you’d think I would hate the cold, but I love the excitement of Icewine season. My first harvest at -8 Celsius was beyond exhilarating. Now, after more than 30 Icewine harvests, it always feels like the start of a big race that you’ve been preparing for all season. We base our picking decisions on the flavour development in the berries. In most vintages, we like to pick between -10°C and -12°C when the berries are fully frozen. Pressing is done immediately when berries are still frozen so only the pure extract is released – one tiny drop from each berry!

Add the first 5 shakes of bitters to your rocks glass and swirl around to coat the glass. Holding your cinnamon stick on one end, light the other end with a BBQ lighter until it starts to blacken. Place the smoking cinnamon stick on a cutting board or plate and flip your rocks glass over top to smoke. Add the whisky, maple syrup and remaining 10-shakes of bitters to a mixing glass or mason jar full of ice. Stir until chilled. Flip over your smoked rocks glass and add a scoop of ice. Strain in your cocktail, garnish with an orange wheel. Sip & enjoy!

$39.95/375 ML Whisky maker’s notes: Whisky made the Canadian way – locally sourced grains are individually distilled, matured and blended, then finished in red wine casks from our Wayne Gretzky winery. This process ‘polishes’ the whisky, adding rich oak, vanilla and spice notes, and balancing all the elements to produce a refined and smooth whisky. Our Ontario climate has an infl uence on barrel ageing; high annual temperature fl uctuations in a non-temperature-controlled environment drives the whisky deep into the oak during warmer periods and draws it out during cooler periods. The location of the barrel within the rickhouse infl uences how it ages, depending on temperature, air fl ow and height within the room. This gives our distiller near infinite options when blending, to create the taste profile selected by Wayne himself. Flavour profile: Bright straw gold in colour with a ruby red hue. At first swirl of the glass, look for top notes of toasty new oak, almond nuttiness, caramel and vanilla. Underlying notes appear, suggesting nutmeg and stone fruit. After adding a touch of water, notes of sweet spice and dark raisin develop. The mouthfeel is smooth, round and robust, with a touch of woody tannins for structure, along with deep notes of toasted nuts and allspice. The finish is long and lingering with a delicately sweet, smooth texture and fl avours of nut and allspice. Best served: Neat, on the rocks, as the base of your favourite cocktail or mixed into a classic Fashioned or Manhattan.
