A customized one-bite snack will be served to complement each wine, whisky & beer. Join us for an immersive & exciting wine & food experience!

Get in on the cocktail culture with a 45-minute interactive experience hosted by our bartenders. Featuring insider tips on how to create the ultimate whisky cocktail, guests will sharpen their bartending skills while learning the basics of preparing garnishes, simple syrups, shaking and muddling. After they are guided through the step-by-step process of creating their own whisky cocktail, guests enjoy their “All Star Creations”.

March 4 & 25, 2022 $110++ for Wine Club members The evening will begin with a cocktail reception in our Club Lounge followed by a structured whisky tasting in the distillery. The highlight of the evening will be a four-course menu, prepared by Chef Maurice Desharnais, in our underground barrel cellar to complement our whisky portfolio. Finish off the evening with a night cap around the fire in our great Canadian backyard.

Wayne Gretzky Estates Rosé 2020

The 2020 Rosé is blend of 65% Pinot Noir, 21.4% Gamay Noir, 10.4% Pinot Grigio and small amounts of Syrah, Cabernet Franc, Cabernet Sauvignon, and Pinot Meunier. The wine has fresh aromas of ripe peach, melon, strawberry, and cherry. Smooth and refreshing, this wine pairs well with appetizers, Greek dishes, turkey with cranberry sauce, and shellfish.

WINEMAKER’S NOTEBOOK We have been out in the vineyard pruning the vines. We do this in the colder months while the vines are dormant. In the cellars, we’ve been focusing on our aromatic wines such as Sauvignon Blanc and Riesling – making sure they’ll be ready for spring patio season! We’ve also been tasting our lighter bodied red wines as they have been aging for several months. It’s always interesting to see how the wines are evolving after spending some time in tanks and barrels.

BOOZY BACON BANANA BREAD by executive chef maurice desharnais, wayne gretzky estates

all-purpose flour baking soda baking powder brown sugar sour cream (or plain yogurt) unsalted butter, softened eggs bananas, over ripe crispy bacon, chopped (can add raisins, nuts, or chocolate) Wayne Gretzky Estates Red Cask Whisky

Preheat the oven to 375°F. Spray two loaf pans with cooking spray and place a piece of parchment paper inside each one across the middle leaving the ends exposed. Sauté the bananas in a nonstick frying pan, carefully add the whisky and cook for a few minutes (if serving to kids, cook the alcohol off). Remove from the heat and set aside. Cream together the brown sugar, butter, eggs, sour cream, and the cooled

banana. Add the bacon and mix well. Sift together the flour, baking soda and baking power. Add to the banana mix and gently combine, try not to over mix. Pour into the loaf pans and place into the oven for 1 hour and 20 minutes. The top of the bread should be golden brown, and a toothpick should come out clean when you test. Leave in the pans to cool for 20 minutes and then remove and cool on a wire rack. Makes two loaves

Winemaker’s notes: A classic blend of 43% Cabernet Sauvignon, 34% Cabernet Franc and 23% Merlot, all harvested from the vineyards within the Niagara Peninsula. The individual wines were aged for 12 months in (60%) French and (40%) American oak barrels, before the final assemblage was created. (30% of the barrels were new oak) A full malolactic fermentation was completed in barrel. Flavour profile: Garnet in colour, with a warm and rich bouquet of black currant, blackberry, sweet spice, cigar box, tobacco leaf and oak. A medium to full-bodied red wine with soft yet drying tannins. Dark fruit flavours (black cherry and black currant) are complemented by notes of spice, cocoa powder and oak. Lovely notes of dark berries, black tea and spice linger on the extra-dry finish. Best served: Serve at a cool room temperature of 17 to 18°C. Drink now to 2024. Serve with two-year-old aged Canadian cheddar; grilled medium-rare cuts of beef; rack of lamb; wild game meats; roasted root vegetables seasoned with rosemary; sautéed mushrooms.

Winemaker’s notes: Cool fermented in stainless steel tanks to enhance the pure fruit characteristics of the Chardonnay grape. French and American oak aging for added complexity. Flavour profile: Clear and bright with a straw yellow hue. The fruit-forward bouquet shows notes of red apple, peach, and Bartlett pear, which is accented by subtle oak and custard. A medium-bodied, smooth Chardonnay with flavours of pear, melon, and tropical fruit. Citrus and apple notes, with a hint of spice and toasty oak, refresh on the finish. Best served: Serve lightly chilled at 12 to 14°C. Drink while young and fresh. Serve with roast chicken; chicken pot pies; poached salmon; smoked salmon risotto; light creamy pasta dishes; smoked trout and cream cheese on a bagel; pan seared scallops; brie and baguette; salmon pinwheels; creamy potato dishes; cream of mushroom soup; creamy butternut squash soup.
