Chef Parsons’ Icewine
Marshmallows
3/4 cup Vidal Icewine
3 envelopes of unfl avoured gelatin
3/4 cup water
2 cups granulated sugar
2/3 cup corn syrup
1/4 tsp salt
1 tbsp vanilla extract icing sugar for dusting
Place Icewine in a small saucepan over medium heat and simmer until reduced to 4 tsp, watching closely to prevent scorching, set aside to cool. Pour ½ cup water into a mixer bowl and sprinkle with gelatin. Let stand for 10 minutes to soften. In another saucepan, combine remaining water, sugar, and corn syrup. Once this mixture boils, let boil for 1 minute before stirring in gelatin and salt. Pour the gelatin mixture into a mixer bowl and beat with a whisk on high speed for 8 minutes. Add vanilla and reduced Icewine and continue to whisk for 2 more minutes. Transfer your mixture into a 9” square pan lined with oiled plastic wrap. Use an oiled spatula to spread evenly. Allow to set for several hours in a cool area. When fi rm, remove from pan and cut into squares. Toss each square in icing sugar to coat.

Winemaker’s notes: A classic blend of 49% Merlot, 41% Cabernet Sauvignon, and 10% Cabernet Franc, all harvested from the vineyards within the Niagara Peninsula. The individual wines were aged for 12 months in 60% French and 40% American oak barrels before the fi nal assemblage was created. 30% of the barrels were new oak. A full malolactic fermentation was completed in barrel to soften the mouthfeel.
Flavour profile: Deep purple garnet in colour, with a warm aromatic bouquet of ripe black cherry, black currant, spice box, cedar chest, toasty oak, and vanilla notes. On the palate, fl avours of juicy black currant and black cherry are complemented by notes of spice, vanilla, and toasty oak. Lovely notes of black tea, black currant, Chai spice, oak, and vanilla linger on the dry finish.
Best served: Serve at a cool room temperature of 17 to 18°C. Drink now to 2028. Serve with two-year-old aged Canadian cheddar; grilled medium-rare cuts of beef; rack of lamb; wild game meats; rich bean or mushroom stews; and sautéed mushrooms.

Winemaker’s notes: This small lot Icewine is harvested from naturally frozen Vidal grapes from Niagara Peninsula vineyards at minus 10°C. The grapes are pressed frozen, releasing the pure extract from each grape. The juice is cool fermented to retain freshness and bright fruit fl avours. 15% of the wine is fermented in oak barrels to build texture and complexity.
Flavour profile: This Vidal Icewine is bright yellow gold in colour with a classic bouquet of peach, baked apricot, mango and tangerine. The elegant mouthfeel is perfectly balanced between sweetness and acidity. Flavours of juicy peach, ripe mango and tangy marmalade explode on the palate, followed by notes of tropical fruit that linger on the long fi nish.
Best served: Serve chilled at 8 to 10°C in small white wine glasses, 1 to 2 oz per person. Enjoy now through 2028. Enjoy before a meal, chilled with your favourite vodka and a couple of frozen grapes for an amazing Icewine Martini.
