Spirited Nights: Our Great Canadian Whisky Dining Experience

Join us as we explore the exciting world of Riesling. With Riesling vineyards dating as far back as 1980, we are incredibly proud of our Riesling portfolio. Taste our new Effervescent Riesling and four of our Small Lot Rieslings paired with cheeses to compliment.

Join us for an elevated seated Showcase wine tasting in our beautiful Vineyard Pavilion. You’ll select three wines from our portfolio to sample, customized to your palate. We also have food pairings available to enjoy at an additional cost.

Friday Evenings in March $110++ for Wine Club members The evening will begin with a cocktail reception in our Club Lounge followed by a structured whisky tasting in the distillery. The highlight of the evening will be a fourcourse menu, prepared by Chef Maurice Desharnais, in our underground barrel cellar to complement our whisky portfolio. Finish off the evening with a night cap around the fire in our great Canadian backyard.

Wayne Gretzky Estates Muscat Spirited Wine

$29.95 375 ml

Muscat grapes were harvested and underwent a cool fermentation, the juice was then double distilled in a copper pot still and aged for 2 months in a stainless-steel tank. The result is a clear spirit with notes of tropical fruit, star anise, apricot, almond, and banana. Can be enjoyed neat, on the rocks, mixed with soda water or as a vodka substitute in cocktails.

WINEMAKER’S NOTEBOOK Can you sum up malolactic fermentation? When do you use this process? Malolactic fermentation, often referred to as ‘Malo’, is a secondary fermentation process which converts malic acid to lactic acid. The conversion of naturally occurring malic acid into a softer lactic acid will happen naturally in most varietals and is very commonly employed in red varietals and some Chardonnay styles. save the date

Wayne Gretzky Estates Signature Series Shiraz Cabernet 2020 $29.95/750 ml

Medium-bodied and fruit-forward

ALCOHOL:

Winemaker’s notes: A trendy blend of 58% Shiraz, 41% Cabernet Sauvignon and 1% Viognier all harvested from the vineyards of the Niagara Peninsula. Each varietal received barrel malolactic fermentation and nine months of oak aging before the wines were blended. The final assemblage was then put back into barrel for a further three months before bottling. Flavour profile: Bright garnet in colour with a rich bouquet of black cherry, black currant, Chai spice, cedar chest, smoky oak, cocoa powder, and vanilla. Flavours of juicy black fruits, sweet spice and oak present on the palate while notes of black tea, cocoa powder, and ripe black fruits linger on the finish. Best served: Serve at a cool room temperature of 16 to 18°C. Serve with aged gouda or cheddar; grilled steak with red wine reduction; rack of lamb; and shepherd’s pie. Drink now to 2024.

Winemaker’s notes: Harvested from vineyards within the Niagara Peninsula, the Pinot Grigio grapes receive a gentle pressing followed by a cool fermentation. The wine aged in stainless steel tanks to enhance the pure fruit characteristics. Flavour profile: Clear and bright with a fresh aroma of apple, pear, and melon. Lovely fruit flavours of melon, pear, and tropical fruit glide across the palate, followed by notes of citrus, green apple, and pineapple lingering through on the finish. Best served: Serve chilled at 10 to 12ºC to enhance the refreshing acidity of this wine; or serve slightly warmer at 13 to 15ºC to allow for rich fruit development and a softer mouthfeel. Drink while young and fresh paired with shrimp skewers; roasted chicken; grilled pork chops; and light seafood pasta dishes.
