Add Riesling, Icewine, Vidal Spirit, lemon juice and 1 muddled sliced apple to a shaker. Muddle generously until apple is incorporated into the drink. Add ice and shake until chilled. Strain into highball glass with a few apple slices. Top with a splash of soda and garnish with apple slice.

WINEMAKER’S NOTEBOOK We are winding down after a very busy harvest with most of the cellar crew finally able to get some much-needed rest. We are pressing off our last batches of Cabernet Sauvignon and packing away all the equipment until next fall. In the cellars we are focused on fermentation, oak aging and blending throughout the winter. Soon enough, we’ll be back out in the vineyards to pick grapes for Icewine.

$29.95/750 ML Winemaker’s notes: A classic single varietal wine. 51% of the grapes were harvested from our Clark Farm Vineyard, the rest from long-standing growers for Wayne Gretzky Estates in the Niagara Peninsula. After a two-week maceration, the wines were aged for 11 months in French oak barrels and received full malolactic fermentation. Flavour profile: This ruby red coloured wine has a bouquet of cherry, pomegranate, smoky oak, earth, leather and spice. This Pinot Noir shows wonderful fruit fl avours of cherry and tart red berry, with just a touch of spice. The youthful tannins provide good structure and an extra dry finish along with fl avours of red berry tea, cherry, pomegranate, spice and earth. Best served: Serve at a cool room temperature of 15 to 17°C. Drink now to 2023. Enjoy with portobello mushroom burgers, duck breast, veal parmesan and cheesy eggplant lasagna.

Winemaker’s notes: The Chardonnay grapes were harvested from vineyards within the Niagara Peninsula. The wine was aged for 6 months in both French and American oak before the blend was created. A portion of the wine spent two months in our ‘Red Cask Whisky’ oak. This adds punch and power to the mouth-feel, along with increasing the wines ageability and subtle notes of the ‘Red Cask Whisky’. Flavour profile: Bright straw yellow in colour with a lovely bouquet of spice, oak, vanilla bean, grilled lemon and Bartlett pear. Flavours of tropical fruit, pear and delicate spice present on the palate while ripe tree fruit, spice, oak and vanilla linger on the finish. Best served: Serve at a cool room temperature of 14 to 15°C. Serve with smoked creamy cheeses, chicken in cream sauce over pasta, turkey pot pies or rich lobster dishes.
