Join Chef Jason Parsons and his culinary team for an Exclusive Pairing Experience on select Saturday evenings throughout the year. Each month we will be hosting a uniquely themed 5-course dining experience served alongside wines from our Peller Estates portfolio. Our chefs will introduce each course and a wine expert from our team will introduce each pairing.

Indulge your senses with a decadent wine and chocolate experience and discover why wine and chocolate are a match made in heaven. Our wine consultant will guide you through this fun and educational tasting experience of five of our award-winning wines alongside different types of locally produced artisan chocolates from Monk’s Chocolate in Grimsby. What could be better than that?

Get in on the cocktail culture with a 45-minute interactive experience hosted by our best mixologists. Featuring insider tips on how to create the ultimate whisky cocktail, guests will sharpen their bartending skills while learning the basics of preparing garnishes, simple syrups, shaking and muddling. After they are guided through the step-by-step process of creating their own whisky cocktail, guests enjoy their “All Star Creations”.

Wayne Gretzky Estates Signature Series Chardonnay 2020

This Chardonnay is made up of 75% Chardonnay and 25% Chardonnay Musqué, which is an aromatic clone that is described as “Muscat-like”. The wine was barrel fermented and aged sur lie for 12 months in 100% French oak barrels. You’ll find notes of tropical fruit, grilled lemon, yellow apple, melon, spice, and oak that pair well with buttery potato dishes, smoked salmon risotto, chicken pot pies, and turkey with mushroom stuffing.

We’ve been lucky to have had a very warm summer which means the vineyard growth was accelerated this year. Our harvest began a bit earlier, at the end of August. We pick our sparkling varietals first – Chardonnay and Pinot Noir, followed by other early ripening varietals – Pinot Grigio, Sauvignon Blanc, and Riesling. The red varietals will hang on the vines to ripen further into September and early October.

WINEMAKER’S NOTEBOOK

Butternut Squash, Cranberry and Rosé Risotto by executive chef maurice desharnais, wayne gretzky estates

2 cups 3 tbsp 1 cup 1 clove 1 cup 2 cups 4 cups 1/2 cup 1/2 cup

cubed butternut squash butter diced white onion chopped garlic arborio rice Rosé wine warm chicken stock dried cranberries grated parmesan cheese salt and pepper to taste

Place the squash into a pot of water and bring to a boil. Once soft, remove and mash. Place to the side. In a heavy bottomed pan, add the butter, diced onion and garlic. Cook for a few minutes over medium heat, until the onion becomes soft. Add rice and cook for 2 - 4 minutes until the rice is coated. Add the Rosé wine and simmer, stirring occasionally. Once half the wine has been cooked into the rice, add the squash and cranberries. Mix well. Add one cup of warm chicken stock to the mixture and wait until it has been mostly absorbed by the rice before you add more. Continue adding stock slowly until it is fully absorbed. You should cook the rice about 7 - 10 minutes. When the rice is creamy, add the grated parmesan and season with salt and pepper.

Winemaker’s notes: Harvested from vineyards within the Niagara Peninsula, individual Cabernet Sauvignon lots were aged for 12 months in 65% French and 35% American oak barrels, plus full malolactic fermentation, prior to final assemblage. Flavour profile: Deep purple in colour with a lovely bouquet of black currant, dark plum, ripe blackberry, smoke, charred oak, and spice. These flavours mingle together on the palate with notes of cocoa, vanilla, and black tea. Best served: At a cool room temperature of 17 to 18°C. Drink now to 2029. Decanting is recommended if drinking now through 2023. Enjoy with aged cheddar, grilled medium-rare cuts of red meats, sauteed mushrooms, or 70% dark chocolate.

Winemaker’s notes: The Riesling grapes were harvested from vineyards within the Niagara Peninsula, chosen for their varietal character and pure fruit flavours. After a gentle pressing and cool ferment in stainless steel, the fermentation was stopped at a point of balance to produce a wine with both refreshing acidity and a juicy off-dry finish. Flavour profile: Clear and bright with a clean aroma of citrus, yellow apple, and white peach. On the palate you’ll find flavours of Meyer lemon, tangerine, peach, and pear, while a touch of floral lingers on the finish. This Riesling is a perfect balance of fruity sweetness and refreshing acidity. Best served: Serve with citrus chicken; shrimp skewers; lightly spiced curry dishes; fish and chips; marmalade glazed baked ham; and BBQ pork ribs.
