Mom’s Banana Bread Recipe. Nobody Makes Banana Bread Quite Like Our Mom. Her homemade banana bread was always so moist and tasty and we loved to spread it with thick dollops of butter and eat it with our tea while we were doing our homework. Bananas available the whole year round provide fibre and three natural sugars: sucrose, glucose and fructose and are proven to give us an instant and substantial boosts of energy. In addition bananas are rich in essential for bone development minerals like phosphorous and calcium. Here is “Moms” recipe: Ingredients: 3 overripe bananas, 1 teaspoon baking soda, 1 cup granulated sugar 2 cups all purpose flour, 1 tablespoon milk, 1 teaspoon salt, 8 tablespoons (1 stick) unsalted butter, 2 large eggs, 1 teaspoon ground. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Lightly grease 9×5 inch bread loaf pan. . Take a large bowl and mix the flour, baking soda and salt. Using a separate bowl, cream the sugar and butter until it is light and fluffy. Stir in the eggs in and mashed bananas until well blended. Stir the banana mixture with the flour mixture so that it is moist. Pour mixture into the loaf pan. Bake in preheated oven for 60 to 65 minutes. Let the bread cool in a pan for 10 minutes, then turn out onto a wire rack, let it cool completely before slicing. Always use bananas that are overripe. The riper the bananas are, the better the banana bread tastes. The following is an alternative: Take 1/4 cup shortening, 1/2 cup sugar and 1 egg. Stir in: 1 cup all-bran, 1 1/2 cups mashed bananas and 1 tsp vanilla.

Sift together: 1 1/2 cups flour, 1/2 tsp baking soda, 2 tsp baking powder, 1/2 tsp salt. Stir only until well combined. Spread the mixture in a well greased loaf pan and bake for about 1 hour at 350 degrees. The banana bread will be golden brown. Let cool for about 10 minutes and then tip the loaf pan over to remove from the pan. Cut the banana bread into slices when it has cooled completely. I always sprinkle the tops with cinnamon sugar before I put the loaves in the oven. Well that’s all for now, I’m off to bake some banana bread.
