*When we hear or read the word “sugar”, most of us think of granular white table sugar. Unlike the simple sugars found in ripe fruit, this kind of sugar should be eaten only in limited quantities. After the refining process, it contains no fibers, proteins, essential fats, vitamins, or minerals. It is purely concentrated sugar. Nothing could better deserve the descriptive term “empty calories,” because calories are all it provides. Although refined sugar can provide energy, too much refined sugar in the diet can lead to tooth decay, obesity, and high levels of triglycerides. When “empty calories” make up a substantial part of the diet, the result is a nutritional imbalance that weakens the body’s defense and repair systems, making us susceptible to diseases from infection to cancer.

Exercise. Vigorous exercise linked to higher vitamin D levels, lower heart disease risk. Research from the Harvard School of Public Health (HSPH) suggests some new reasons why that's so— most notably, that it boosts vitamin D.

Active smoking or exposure to environmental tobacco smoke is associated with reduced levels of vitamin D3 in the blood stream. Smoking also lowers estrogen levels in both men and women. Estrogen is important because it helps the bones to hold calcium and other minerals that make bones strong.
Tanning beds? A tanning doesn't provide you with the vitamin D that you need, nor is it safer than tanning outdoors. It is the UVB (the sun burning rays), not UVA, which helps the body produce vitamin D, so you are increasing your risk of skin cancer without receiving any benefit!
Go outdoors.
Take it in. There are few naturally occurring food sources of vitamin D. If you do not get regular sun exposure, a supplement or supplemented food is likely needed.
Ten minutes of sunshine on your arms provide 10,000 IUs of vitamin D, compared with 100 IUs of vitamin D from a fortified beverage. While the upper limit of vitamin D consumption considered safe is set at 4,000 IUs, there is no toxic level of vitamin D that can be received from sunlight.
Get your protein from plants. Animal protein (fish, poultry, red meat, eggs, and dairy products) tends to leach calcium from the bones and encourages its passage into the urine. Choose plant proteins such as in beans, grains, and vegetables.

Kids of all ages love hot dogs—the epitome of American food. Keep these carrot dogs on hand so your kids can have them whenever they want a quick meal.
INGREDIENTS •
6 large carrots, peeled and trimmed to fit your hot dog buns

2 cups filtered water

1/4 cup tamari
•
1 Tbsp. red wine vinegar

4 garlic cloves, minced
•
1 tsp. granulated onion

1 tsp. mustard powder

1 tsp. ground coriander

1/2 tsp. ground mace

1/2 tsp. smoked paprika

1/4 tsp. black pepper

6 hot dog buns, toasted if desired
METHOD 1. Bring a 2-quart pot of water to a boil over medium-high heat. Add the carrots and bring the water back to a boil. Reduce the heat to medium and let the carrots cook until they are tender, 8 to 10 minutes. Drain the carrots and rinse them under cool water to stop the cooking. 2. While the carrots are cooking, whisk together the water, tamari, red wine vinegar, garlic,

INGREDIENTS For the Mango-Ginger Dipping Sauce: •
1 ripened mango (any type)

½ inch piece organic ginger, peeled
•
½ cup filtered water
For the Rolls: •
1 cup chopped broccoli (or ½ cup zucchini + ½ cup broccoli*)

2 whole organic carrots, shredded
•
1 whole avocado, sliced, divided
•
Juice of one lemon
•
1 Tbsp. tamari
•
½ whole organic pepper, julienned
•
1 stalk organic celery, julienned

2 nori sheets
METHOD For the dipping sauce: Blend all ingredients together and set aside. For the Rolls: 1. In a food processor, add the chopped broccoli or broccoli/zucchini and pulse until minced and a rice-like texture is obtained. 2. In a medium-sized bowl, mash ½ of the avocado with a fork and sprinkle with the juice of half a lemon. Add the tamari and mix well. Gradually add the broccoli, combine with the mashed avocado, and set aside. 3.

Fill the bottom of the spread with a long strip of veggies and avocado. Roll upward from the bottom of the sheet (the edge that has filling on it) tightly, and seal the end with a bit of water if necessary. Repeat the process for the remaining sheet. Cut rolls into even bite-sized pieces and enjoy with the dipping sauce and some tamari on the side. *Chef’s Note: If you are not a big fan of broccoli, use a mixture of broccoli and zucchini.

Pour the one cup of filtered water into a medium size pot and add the millet and quinoa. Bring to a boil, then lower heat to medium-low and simmer for about 15 minutes or until quinoa tails appear. 2. In a saucepan, add the other cup of filtered water and the chopped onion. Sauté for about 8 minutes or until onions are fragrant. Add the corn, beans, tamari, turmeric, ground pepper, and paprika. Add the cooked quinoa and millet and combine well.
