*When we hear or read the word “sugar”, most of us think of granular white table sugar. Unlike the simple sugars found in ripe fruit, this kind of sugar should be eaten only in limited quantities. After the refining process, it contains no fibers, proteins, essential fats, vitamins, or minerals. It is purely concentrated sugar. Nothing could better deserve the descriptive term “empty calories,” because calories are all it provides. Although refined sugar can provide energy, too much refined sugar in the diet can lead to tooth decay, obesity, and high levels of triglycerides. When “empty calories” make up a substantial part of the diet, the result is a nutritional imbalance that weakens the body’s defense and repair systems, making us susceptible to diseases from infection to cancer.

NAKED HEALTH

VITAMIN D FACT & EYE CANDY SHEET

Stop smoking.

Exercise. Vigorous exercise linked to higher vitamin D levels, lower heart disease risk. Research from the Harvard School of Public Health (HSPH) suggests some new reasons why that's so— most notably, that it boosts vitamin D.

16

Naked Food Magazine

Active smoking or exposure to environmental tobacco smoke is associated with reduced levels of vitamin D3 in the blood stream. Smoking also lowers estrogen levels in both men and women. Estrogen is important because it helps the bones to hold calcium and other minerals that make bones strong.

Tanning beds? A tanning doesn't provide you with the vitamin D that you need, nor is it safer than tanning outdoors. It is the UVB (the sun burning rays), not UVA, which helps the body produce vitamin D, so you are increasing your risk of skin cancer without receiving any benefit!

Go outdoors.

Take it in. There are few naturally occurring food sources of vitamin D. If you do not get regular sun exposure, a supplement or supplemented food is likely needed.

Ten minutes of sunshine on your arms provide 10,000 IUs of vitamin D, compared with 100 IUs of vitamin D from a fortified beverage. While the upper limit of vitamin D consumption considered safe is set at 4,000 IUs, there is no toxic level of vitamin D that can be received from sunlight.

Get your protein from plants. Animal protein (fish, poultry, red meat, eggs, and dairy products) tends to leach calcium from the bones and encourages its passage into the urine. Choose plant proteins such as in beans, grains, and vegetables.

Kids of all ages love hot dogs—the epitome of American food. Keep these carrot dogs on hand so your kids can have them whenever they want a quick meal.

6 large carrots, peeled and trimmed to fit your hot dog buns

2 cups filtered water

While the carrots are cooking, whisk together the water, tamari, red wine vinegar, garlic,

INGREDIENTS For the Mango-Ginger Dipping Sauce: •

1 ripened mango (any type)

Starting from the bottom of the nori sheet, add the broccoli rice and gently flatten down on the sheet. Make sure 3/4 of the sheet is covered. 5. Fill the bottom of the spread with a long strip of veggies and avocado. Roll upward from the bottom of the sheet (the edge that has filling on it) tightly, and seal the end with a bit of water if necessary. Repeat the process for the remaining sheet. Cut rolls into even bite-sized pieces and enjoy with the dipping sauce and some tamari on the side. *Chef’s Note: If you are not a big fan of broccoli, use a mixture of broccoli and zucchini.

REVIEWS BY DENISE DESERIO

How Not to Die Author: Michael Greger, MD Flatiron Books; December 8, 2015 RATING (1 to 5): 5 AAAAA WHAT IS NEW: How Not to Die is one of the most comprehensive and meticulously well-documented books on the benefits of a whole food, plant-based diet. WHAT IS AUTHENTIC: If you are already familiar with a plantbased diet, you’ve likely already heard of Dr. Michael Greger, the internationally-known vocal advocate of a whole food, plant-based diet and founder of nutritionfacts.org. If you haven’t heard of him, never fear: Dr. Greger’s writing style is quite enjoyable, informative, and well-researched. In fact, the last 100+ pages of the book are devoted to citing the sources of his information. WHAT IS KIND: How Not to Die includes Dr. Greger’s “Daily Dozen”: those foods we need to eat every day to prevent (and even reverse) disease. Dr. Greger not only explains the research behind a plant-based diet, but gives you the blueprint and tools for you to be successful adopting this lifestyle change. WHAT IS ENLIGHTENED: The first half of How Not to Die deals with individual diseases and how they are affected by diet. From heart disease and various cancers to infections and even suicidal depression, the research compiled here shows how diet can affect a broad spectrum of human ailments. The second half of the book is the “tool box”: the lists of vegetables, fruits, nuts, seeds, herbs, and spices that can enable you to live a longer, healthier life. Included are tips from Dr. Greger, including his personal favorites from each category and his recommendations on how much of each to consume. IS THIS BOOK FOR YOU? How Not to Die is an empowering book, giving readers the information and tools to take responsibility for their own health and the health of their family. IS IT NAKED FOOD BOOK CLUB RECOMMENDED? Yes

Eat More Produce: 50+ Ways to Say Goodbye to Lupus Author: Eva Norman CreateSpace, December 13, 2015 RATING (1 to 5): 4 AAAA WHAT IS NEW: Eat More Produce: 50+ Ways to Say Goodbye to Lupus, is one of the few cookbooks available devoted specifically to people suffering from Systemic lupus erythematosus, an autoimmune disease in which the body’s immune system attacks healthy tissue. The recipes contained therein are all made with fresh produce: detoxifying and anti-inflammatory. WHAT IS AUTHENTIC: Eva Norman is a former biomedical engineer who suffered for years from lupus, fibromyalgia, and chronic fatigue. As she changed her diet, she was delighted to find her symptoms abating and had her “a-ha moment”: “It’s the FOOD!” With that in mind, the author was eager to spread the word about this way of eating, with an eye toward getting large institutions to change the way they feed their clients. Norman’s company, works with retirement home chains and large, all-in-one vacation companies to produce better meals. WHAT IS KIND: The recipes in Eat More Produce are arranged by season. Since all recipes utilize fresh produce, this makes it easier to select recipes with produce that’s in season at that particular time of year. WHAT IS ENLIGHTENED: All recipes are plant-based, but what’s more, they’re all raw as well. This makes for impeccably fresh food with a minimum of prep time. From “Spinach Corn Salad” to “Nana Waffles” (flourless banana “waffles” made in a COLD waffle iron), there is certainly something for every taste and mood. IS THIS BOOK FOR YOU? Whether you suffer the symptoms of lupus or are simply looking to lose weight and/or detox your body, Eat More Produce has some great ideas to get you started. IS IT NAKED FOOD BOOK CLUB RECOMMENDED? % Naked SUmmer tips T he Right Tea... Tea can definitely be healthful, but you must know which kinds are good. The bummer: Research has found that many of the conventional tea brands contain high levels of toxic substances such as fluoride and pesticides. The Canadian Broadcasting Corporation conducted an investigation into several popular international tea companies and found that several popular brands contain dangerously high levels of contaminants: King Cole (contained the banned chemical monocrotophos), Uncle Lee’s Legends of China (more than 20 types of pesticides including endosulfan, which causes nervous system damage), No Name (10 pesticide types). One hundred percent of Teavana tea and ninety-one percent of Celestial Seasonings tea tested had pesticide residues exceeding the U.S. limits. The good news: When choosing tea, make sure you opt for a brand that offers you organic and non-GMO ingredients.
