Baklavas

“

Preheat the oven to 325 and butter a 9x13 baking dish.

Mix together the walnuts (5 cups), sugar (1/2 cup), and cinnamon (1.5 teaspoons) in a medium sized bowl.

Unroll the phyllo dough and, using a sharp knife, cut the stack down to the size of the baking dish (You can place the dish on top of the phyllo to trace it. You should be able to get two baking dish size cuts out of the stack, with a few scraps.)

Place one piece of phyllo on the bottom of the baking dish. Using a pastry brush, brush melted butter on top of it. Layer another piece of phyllo and repeat until you have 6 layers.Spread 1 cup of the walnut mixture on top of phyllo layers in baking dish.

Layer 6 more layers of phyllo on the walnut mixture, and repeat until you have no mixture left, ending with the rest of the phyllo dough (the top layer may have more than 6 layers).

Baklavas

“

Spread the rest of the butter evenly on top of the last layer of phyllo.

Using a sharp knife, cut the top layers of phyllo into small squares, diamonds, or triangles.

Stick a whole clove in the center of each piece.

Bake for 45-55 minutes, or until golden brown.

While the baklava is baking, place the jar of honey on top of the oven. This will thin it out and make it easier to pour. When baklava is done, pour entire jar of honey on top of baklava.

Allow to cool completely, then finish cutting the baklava through to the bottom.

The history of souvlaki As in other parts of the world, the practice of cooking food on spits or skewers has an ancient history in Greek culture. Excavations in Santorini, Greece, unearthed sets of stone cooking supports used before the 17th century BC. In the supports there are pairs of indentations that were likely used for holding skewers. The line of holes in the base allowed the coals to be supplied with oxygen. Mycenaean Greeks used portable trays as grills. These trays were rectangular ceramic pans that sat underneath skewers of meat. It is not clear whether these trays would have been placed directly over a fire or if the pans would have held hot coals like a portable barbecue pit. [ Homer in Iliad (1.465) mentions pieces of meat roasted on spits (ὀβελός). This is also mentioned in the works of Aristophanes] Xenophon,Aristotle, and others. In Classical Greece, a small spit or skewer was known as ὀβελίσκος (obeliskos), and Aristophanes mentions such skewers being used to roast thrushes

Modern-day souvlaki was described in the mid-19th century by a French traveler in the Boeotia region, but was not widely distributed in Greece until after World War II. Souvlaki skewers served as fast food started to be sold widely in the 1960s, after being introduced by vendors from Boeotia. The first known use of the word souvlaki in English was 1942. The issue of whether modern-day souvlaki skewers came to Greece via Turkish cuisine, and should be considered a Greek styling of shish kebab, or is a contemporary revival of Greek tradition dating as far back as 17th century BC Minoan civilization, is a topic of sometimes heated debate, at least between Greeks and Turks.

Greek Salad Outside Greece, "Greek salad" may be a lettuce salad with Greek-inspired ingredients, even though the original dish is distinguished by the absence of lettuce. Meanwhile, the variant without lettuce may be called horiatiki, "country salad", "peasant salad", or "village salad". Lettuce, tomatoes, feta and olives are the most standard elements in an American-style Greek salad, but cucumbers, peperoncini (pickled hot peppers), bell peppers, onions, radishes, dolmades, and anchovies/sardines are common. In Detroit, for example, Greek salad includes beets, and in the Tampa Bay Area, it often includes potato salad. Dressings containing various herbs and seasonings are frequently used in the U.S. This style of Greek salad is rarely encountered in Greece. Various other salads have also been called "Greek" in the English language in the last century, including some with no apparent connection to Greek cuisine. A 1925 Australian newspaper described a Greek salad of boiled squash dressed with sour milk a 1934 American newspaper described a mayonnaise-dressed lettuce salad with shredded cabbage and carrots.
