Dear Reader, the harvest. Studies through the years have shown that certain sites and organs in the body, including the thymus, immune cells and bone marrow, have receptors for neurotransmitters like seJessica Coffey, Publisher rotonin, which could explain why cultivating contentment might boost our natural defenses. Seasoned yogis and meditators often speak of an inner wellspring of joy that can be accessed through a committed practice. Perhaps joy is less of a mood and more of a frequency that is accessible to all of us when we’re willing to align with its bandwidth. Making it a habit to step outside for 10 minutes to witness a sunset or greet the twilight while dinner cooks can be a beautiful way to advance felicity. Taking five-minute joy breaks during the workday to listen to a favorite piece of music with earbuds, read a few pages of an inspiring book or notice the clouds is another easy way to tend to happiness. Filling a “joy jar” with lovely memories written on scraps of colorful paper can prompt a spontaneous smile any time of day. Taking a half-hour drive on a pretty back road instead of scrolling through social media can reset depleted emotional reserves. Today, we can shift our thinking and see contentment as a precious, deserving loved one that needs nourishment like any other. Feeding joy in our lives can pave the daily humdrum road with jewels. In the end, perhaps fostering inner happiness by example is the greatest legacy we can leave behind.

These past few months have been unpredictable and unforgettable on multiple levels. They have been filled with discomfort and change and learning that has shifted so many of us outside of our comfort zones; and more recently, discovering that being uncomfortable is where the learning really begins. We are finally waking up to the work that needs to be done to make our communities … this nation … this world a better place for us all. We need to speak out against injustice. Post, protest, donate, educate yourself, have the difficult conversations … do something. Show up and make a difference. It’s time. No, it’s past time. I hope you’ll join me. And while we are busy doing this important work, we must do all we can to stay healthy and well-rested. We are still in the middle of a pandemic. Self-care has to be a priority. In the pages within this magazine, you will find articles and resources to help you care for your body, mind and spirit. Sometimes it is a matter of finding joy in the small things and taking a few moments each day tending to our own happiness. Marlaina Donato, author of Spiritual Famine in the Age of Plenty: Baby Steps to Bliss, explains this well in her article “Feeding Joy”: Our four-legged friends—from pampered pooch to stray cat—have the inborn ability to seize the moment. No matter what chaotic circumstances may swirl around them, they have a kneejerk response to spring into playful action or curl up in a patch of inviting sunlight. As humans, we tend to postpone the smallest of joys and avoid emotional self-care, opting for that extra glass of wine or spending more than usual to feel better for a brief period of time. Tending to our own happiness begins by seeing joy not as a mood dependent upon circumstances, but as a spiritual discipline like any other. Emotional well-being is a garden we must weed and water daily and in turn, our physical health can’t help but be well-nourished by

Reduce Cognitive Decline with Tai Chi

Research published in the Phytotherapy Research Journal analyzed 13 studies from around the world involving 921 people. The studies showed that eating citrus fruits or their extract can significantly reduce body weight. The research data found that citrus and its extracts reduced body weight by an average of 2.8 pounds per person and almost an inch of waist and hip circumference. It also reduced body mass index among those studied. 14

Well-designed and maintained green spaces in cities such as parks, community gardens and tree-lined streets lower the rate of violent crimes, make communities safer and keep people healthier, concluded Cornell University and University of Virginia researchers that conducted a meta-study of 45 papers studying the links between greenery and crime. In particular, more green spaces, such as community gardens converted from vacant lots, decrease gun violence, six studies found. But poorly designed green space with inadequate maintenance, bad lighting and excessive nearby traffic can help crime take root and spread.

Eat a Plant-Based Diet to Lessen Stroke Risk People that eat a vegetarian diet rich in nuts, vegetables and soy may have a lower risk of stroke than others with diets that include meat and fish, concluded a new study in the journal Neurology. Taiwanese researchers studied two groups of healthy people over age 50 that lived in Buddhist communities in which drinking and smoking were discouraged and vegetarian diets were followed by about a third of residents. Compared to the meat- and fish-eaters, vegetarians consumed less dairy, animal protein and fat, about the same amount of eggs and fruit, and more fiber and plant protein. In the group of 5,050 people studied for six years, vegetarians had a 74 percent lower risk of ischemic stroke, in which blood flow to the brain is blocked, than non-vegetarians. In the group of 8,302 people followed for nine years, vegetarians had a 48 percent lower risk of overall stroke than non-vegetarians, a 60 percent lower risk of ischemic stroke and a 65 percent lower risk of hemorrhagic (bleeding) stroke. “Stroke can also contribute to dementia. If we could reduce the number of strokes by people making changes to their diets, that would have a major impact on overall public health,” says study author Chin-Lon Lin, M.D.

In good news for the 10 to 20 percent of people over age 65 that suffer with mild cognitive impairment, research from China’s Central South University, in Hunan, shows that practicing the gentle ancient martial art of tai chi can significantly improve memory, learning, mental speed and attention, the ability to formulate abstract ideas, mental flexibility and visuospatial perception. The research analyzed data from 10 studies that included 1,061 people with symptoms such as forgetting conversations and names, and having difficulty with complex tasks. “As it emphasizes mental concentration, physical balance, full-body stretching and relaxation, and relaxed breathing, tai chi has a great potential for becoming widely integrated into rehabilitation interventions for various medical and psychological conditions,” write the study’s authors.

A simple strategy– listening to music for 30 minutes a day–can lower post-heart attack anxiety and significantly reduce future cardiac risks, reports a new study from the University of Belgrade School of Medicine, in Serbia, presented at the American College of Cardiology Annual Scientific Session and World Congress of Cardiology. The researchers recruited 350 patients diagnosed with heart attacks and early post-infarction angina at a medical center. Half were randomly assigned to receive standard treatment while half were assigned to regular music sessions in addition to standard treatment. In a follow-up seven years later, the patients with music therapy on average had anxiety scores one-third lower than those on standard treatment and reported lower angina symptoms by about one-quarter. They also had an 18 percent reduction in the rate of heart failure; a 23 percent lower rate of subsequent heart attack; a 20 percent lower rate of needing coronary artery bypass graft surgery; and a 16 percent lower rate of cardiac death.

Mindfulness and Meditation May Promote Longevity

In addition to reducing stress and improving general health, mindfulness and meditation techniques have been linked to longevity, as marked by longer telomere length, a biomarker of human aging. In a new research paper in Scientific Reports, Spanish researchers at the Navarra Institute for Health Research, in Pamplona, reported that aging, which typically shortens telomere length, showed no association with that marker in a group of long-term meditators. They theorized that long-term meditation could be related to epigenetic mechanisms, in particular, gene-specific DNA methylation changes at distinct sub-telomeric regions. Lead author Maite Mendioroz, M.D., Ph.D., suggests that yoga practice and meditation are related to longer telomere length in blood cells, writing, “Leukocyte telomere shortening has been associated with several age-related conditions such as cardiovascular events, including stroke, myocardial infarction and cognitive performance.”

Prolonged fear and anxiety brought on by major stressors such as the COVID-19 pandemic can not only take a toll on a person’s mental health, but may also have a lasting impact on a man’s sperm composition that could affect future offspring, reports a new study in the journal Nature Communications. University of Maryland School of Medicine researchers found that the effects of paternal stress can be transferred to offspring through changes in the extracellular vesicles; small, membrane-bound particles that transport proteins, lipids and nucleic acids between cells and interact with maturing sperm. They are produced in large amounts in the reproductive tract and play an integral role in sperm maturation. “Connecting with our friends and loved ones by high-tech means or through simple phone calls can help us maintain ties during stressful days ahead,” advises Joshua Gordon, M.D., Ph.D., director of the National Institute of Mental Health.

A new Stanford University study published in Landscape Ecology reveals viruses like COVID-19 that jump from animals to people will likely become more common as people continue to transform natural habitats into agricultural land. Researchers found the loss of tropical forests in Uganda put people at greater risk of physical interactions with wild primates and the viruses they carry, with implications for the emergence and spread of infectious animalto-human diseases in other parts of the world. People have converted nearly half of the world’s land into agriculture. Tropical forests have suffered the most, with some of the highest rates of conversion occurring during the last few decades. Study coauthor Tyler McIntosh says, “At the end of the day, land conservation and the reduction of forest fragmentation is our best bet to reduce human [to] wild animal interactions.”

Australian Wildfires Linked to Climate Change Australia’s devastating wildfires during 2019 and 2020 were at least 30 percent more likely to occur because of humancaused climate change, report researchers in a new study published in the online journal Natural Hazards and Earth System Sciences. An intense heat wave was the primary factor in raising the fire risk, says climate scientist Geert Jan van Oldenborgh, with the Royal Netherlands Meteorological Institute. The study linked to climate change the extremity of that heat wave, which is 10 times more likely now than it was in 1900. Van Oldenborgh notes that climate simulations tend to underestimate the severity of such heat waves. “We put the lower boundary at 30 percent, but it could well be much, much more,” he says. The year 2019 was Australia’s hottest and driest since modern recordkeeping began in the country in 1910.

Refocusing Our Energy DURING THE FULL MOON COVID-19 has brought struggle and stress, and many are grappling with residual hardships due to the complete upset of our daily routines. In the midst of the stress this type of change brings, it is good to remember to pause, take some deep breaths and focus on the things we have to be grateful for. The full moon is an excellent signal for slowing down and creating space to reconnect to ourselves, our family and our friends. Traditionally, the moon has been associated with emotions, intuition and the cycle of death and rebirth. It commands the tides, charts the passage of time and has strong ties to human behavior. The full moon provides energy by means of its soothing light that can be used for self-care. It is a time of harvest; a time to reap what we have sown since the new moon. Creating a mindfulness ceremony during the full moon is one way to connect with nature and release that which no longer serves us. It is a great way to focus our energy and plan for what lies ahead for the next 28-day cycle. Here’s an easy ceremony to do in the comfort of home: Create a quiet space and include anything that feels special or powerful—crystals, candles, flowers, incense, etc. Find a comfortable seat, take some cleansing breaths and invite the energy of the divine—be it God, Goddess, Spirit, Earth, Mother 20

Nature or simply the energy that connects us all. Take the time to focus on an intention. This can be anything you would like to illuminate, or bring light to, during the full moon. Set this intention mentally and write it down—naming the intention helps give it life and meaning. Release anything you no longer need. Much like creating an intention, old energy, thoughts or feelings can be released at this time and replaced with new intentions and the energy of the full moon. Think about the things no longer serving you and imagine letting them go while you are filled with the moon’s light of strength and renewal. If it feels right, take a bath. This helps to cleanse away the old and is a great way to relax and prepare for the new. Epsom salts and essential oils can be nice additions. The most important thing to remember is that there are no rules. The practice of mindfulness and healing belong to each of us, so do what feels right and remember to look up at the moon and be grateful for her shining light. Ever since the 2018 Farm Bill became law, hemp-based CBD oil has become readily available at many stores. People are trying it for a variety of reasons, including supporting restful sleep, pain relief and mood. With CBD increasing in popularity, it can be overwhelming to figure out which product to try.

SUBLINGUAL OILS Sublingual oils are placed under the tongue. They are one of the more common hemp-based CBD products and a great option for people that have a harder time swallowing capsules. Taken sublingually, the oil gets into the bloodstream faster than oral capsules and gummies. The dosage of sublingual oil is easy to increase or decrease since it comes in dropper or spray form and has a lower risk for drug interactions than oral CBD. Sublingual oils are not for everyone; the earthy taste can be a strong deterrent for some. Fortunately, it comes in different flavors such as lemon, orange, mint and chocolate.

CREAMS, SALVES & GELS Topical formulations are those applied directly to the skin, such as creams, salves and roll-on/gel products. Topical formulations provide targeted, fast relief and are most helpful in supporting pain reduction. They have a very low risk of side effects and a very low risk of interactions with other medications. Some find that adding a topical product along with a whole-body formulation (like sublingual oils or oral capsules and gummies) can provide added benefits. A cream is best when looking for a smooth moisturizing product without an oily feeling. Roll-on products provide easy application, are not oily or moisturizing and typically offer heating or cooling options. Salves are similar to ointments and leave the skin with an oily feel that can be an added benefit in colder months. Salves generally have other active ingredients such as menthol and some salves absorb more slowly than creams.

ORAL: CAPSULES AND GUMMIES Like sublingual oils, oral products are taken to obtain relief from conditions that affect the entire body or for an ailment topical formulations cannot help. Many find the capsules and gummies to be more convenient than sublingual oils and they come in a variety of flavors. Be sure to keep gummies out of the reach of children; they resemble candy and may be tempting for them to consume. CBD capsule and gummy products may take longer to take effect than sublingual oil, and oral CBD products have an increased potential for drug interactions. Both capsules and gummies should be kept at room temperature and away from direct sunlight.

INHALABLES The inhalable form of CBD comes in either oil or dried hemp plants to be smoked or vaped. There are liquid formulations of CBD oil that are specifically designed for use in vaporizers or “vapes/ecigarettes”; it is not recommended that sublingual oil be used to vape or inhale. An advantage of an inhalable is that there is a quick effect; more of the product can be absorbed since it is taken directly into the lungs. Inhalables should be used with caution due to the possible risk for lung damage, especially for those with asthma or other lung-related illnesses. Potential issues with vaping include the contaminants present in the liquid, variable quality of the product and concern with certain vaping devices. There are many forms of hemp-based CBD products available and each has its own advantages and disadvantages. As with any medication, talk with your doctor and pharmacist before using any CBD products. Hemp-based CBD products are not approved or regulated by the FDA, so it is important to be extra diligent in choosing a high-quality product from a reliable source. No matter where you buy your CBD, ask questions and read the labels carefully. Transformative Staycations Finding Respite and Adventure Close to Home

Staycations—sticking close to home for new travel experiences— was a growing trend even before the COVID-19 pandemic turned it into a practical necessity for many of us. Staycations reduce costs, minimize travel time and also lower our carbon footprint by eliminating international travel. Happily, they don’t reduce the pure pleasure of finding new adventures, exploring untrammeled nature, seeing the familiar with fresh eyes and meeting people from all walks of life. All of that is close at hand, and especially when compared to foreign jaunts, the price is right. A good place to start is by checking out state and regional parks, often overlooked gems offering scenic miles of trails for hiking, biking, birding, fishing, picnicking and other activities. “Whether mountains, prairies, rivers, forests in the country or heart of the city, there is always a state park waiting to welcome you, no matter what kind of recreation you enjoy,” says Jason Clay, spokesperson with Colorado Parks and Wildlife. In Colorado parks, people can, for example, river raft in the Arkansas Headwaters Recreation Area; boat, fish and hammock camp in Jackson Lake State Park; and rock climb in Eldorado Canyon. Parks can be discovered and trail maps downloaded by visiting TrailLink.com, run by the Rails-to-Trails Conservancy. It provides searches for nearby trails using parameters such as distance, types of activity and wheelchair accessibility. Its smartphone TrailLink app is free to download and $30 per year for unlimited customized use. State, local and regional parks across the country offer rich

MAKING A QUICK GETAWAY Weekend forays into natural and rustic settings can be ideal escape valves for people needing a simple, quick change of venue. The option of glamping—or glamorous camping—offers surprisingly luxurious stays outdoors in tents, pods and domes; check out Glamping.com. Getaway.House offers woodsy outposts in 10 locations equipped with “tiny house” cabins around the country designed for quick escapes from cities. “If you were at your desk in need of an escape, you could cut out early and be there by 6 p.m.,” says Vice President of Marketing Rachel Mansfield. “I did a getaway at a point in my life where I wanted some time alone, away from commitments, to figure out what my next chapter in life was going to be,” says Paige Conner Totaro, of Alexandria, Virginia, the founder of Unquote Travel, a web-based tour agency focusing on small group, off-the-beaten-track adventures. “You can change your environment without going very far, and that in turn can change the way you think about things. LOCAL ATTRACTION Local-led excursions are another way to see our home turf through a new lens. Airbnb Experiences, offered virtually everywhere that Airbnb lists lodging, are one-of-a-kind tours and classes designed and hosted by locals with unique expertise. Experiences run the gamut from neighborhood tours on foot or bikes with athletes to museum tours led by local artists or art historians. Many include a hands-on learning component, like how to make mosaics in a community art space or cook a local delicacy from a family recipe. Similar tours and experiences can be found on TripAdvisor’s Things To Do listings. WithLocals.com, whose mission is “to break down the barriers between travelers and locals worldwide,” also offers foodie fun and off-beat adventures. Kelly Kniewel stumbled onto tour guiding after experiencing burnout in her previous career in the beverage industry. An Airbnb Experiences host, Kniewel now leads small group tours of Chicago, introducing locals and visitors alike to many of its little-known facets. “I’ve fallen in love with my city all over again doing these tours,” says Kniewel, a self-proclaimed history geek. She loves to take guests inside Art Deco and Beaux Arts buildings they may have passed before without realizing the gorgeous art and architecture that exists inside, such as the library-turnedcultural center, Chicago Cultural Center, boasting two impressive glass domes, one designed by Tiffany Glass. Another favorite excursion is taking guests on a water taxi tour. “It’s a cheap and unique way to see Chicago. The water, both the Chicago River and

Lake Michigan, is so much a part of who we are as a city.” During the limitations imposed during the COVID-19 period, Airbnb and other websites began offering experiences online, allowing people from all over the world to connect and make pastries with a Swedish baker, draw with a Mexican cartoonist, learn about apartheid from a South African or experience a day in the life of an American Olympic bobsledder.

TR AVELING THE WORLD WITHOUT LEAVING HOME Hosting travelers can bring new meaning to a staycation, offering a rich opportunity for cross-cultural exchange without any exchange of currency. The popular CouchSurfing.com connects travelers with locals offering free use of a couch, air mattress or spare bedroom. Available in more than 200,000 cities worldwide, it has 14 million members and sponsors local language exchanges, dance classes, hikes and dinners, so there are opportunities to make new friends and have new experiences even without offering a place to sleep. (During COVID-19 restrictions, these activities were moved online.) Similar organizations that offer opportunities for local hosting (including low- or no-cost lodging) include Servas.org, established in 1949, which stresses world peace and cultural exchange, and pre-interviews potential guests and hosts to ensure safety; GlobalFreeloaders.com, a free registry for hosts and guests that do their own online screening and matching; and EvergreenClub.com, in which hosts provide a bed-and-breakfast homestay for travelers over age 50 for $20 a night. An exciting option for homeowners is HomeExchange.com, a $150-a-year service that allows people in far-flung places to switch homes, either directly or through a staggered point system so they can truly live like locals. John Fackenthal, of Rockville, Maryland, has hosted more than 100 couchsurfers from 29 countries, and loved every experience. “I had a big apartment in the heart of Washington, D.C., when I first started hosting, but lived alone and felt a little isolated. I wanted to bring back the youth hostel feel from travels in my younger days, where you’d hang out with fellow travelers and go hiking, share a meal or play cards,” he says. A web developer, he recalls such memorable guests as a carpenter in his 60s from the Pacific Northwest that helped him

The farm is open for paid guests, as well as to the volunteers known as “Wwoofers” that come through Worldwide Opportunities on Organic Farms to help raise goji berries, fruits, vegetables and free-range chickens. All cabins date from the early 1900s, including an old dairy barn converted into a duplex and five sheep herder cabins. The farm is surrounded by a national forest, so many guests visit to enjoy hiking, biking, fishing, rafting and ballooning. “Families with children love to come and pick berries, collect eggs and pet the animals. We have rescue alpacas, sheep, goats, chickens and turkeys,” says vom Dorp. While the world may still be at the mercy of unfortunate circumstances this summer, travel is ultimately a state of mind. Equitable Access to Parks and Greenspaces is a Priority by Justin Doyle

The past few months have been trying, and our physical, mental and emotional health have been put to the test; spending time outdoors is a natural comfort that has helped many cope with the uncertainty. Our public parks and lands provide us with venues in which to exercise our bodies, connect with nature and relax our minds as refuges from the COVID-19 pandemic. All residents need optimum access to parks and green spaces to thrive. Access to parks and public lands was limited due to closures and restrictions implemented at the onset of the pandemic, but most parks and public lands have now reopened and the James River Association continues to encourage Virginians to enjoy the outdoors responsibly during this period of social distancing. With fewer options for enjoyment, people are flocking to parks for relaxation and recreation. If the pandemic has made anything clearer, it’s how much we value our green spaces. The city of Richmond, with assistance from the James River Association and others, has joined the Biophilic Cities Network, a global community of cities that recognize the important connection between humans and the natural world. Biophilic cities integrate nature into the built environment for the benefit of humans and wildlife, restore and protect nature and ultimately create opportunities for people to enjoy and connect with nature.

After joining the Biophilic Cities Network, Mayor Levar Stoney convened a “Green Team� of public servants and nonprofit leaders to begin working toward the goal of ensuring that, through a lens of social and racial equity, all residents reside within a 10-minute walk of a park or green space. The Green Team has developed policy recommendations to help expand access to parks and greenscapes in the city, and has identified and prioritized cityowned parcels of land as candidates to become parks and green spaces in areas of the city where access is lacking. Visitation to parks will likely remain high through the summer and fall months, and parks will continue to be places where residents seek respite as the pandemic wears on. The James River Association hopes the Green Team will serve as a model and inspire other localities to invest resources in the creation of places where every citizen, regardless of where they live, can connect with nature and have access to enjoy parks and green spaces. Nothing defines the summer season quite like firing up the grill or escaping with a picnic basket to a favorite hideaway. From luscious fruits to gorgeous greens, enjoying a meal outdoors inspires us to eat what is in season and invites us to sip the moment. Most of all, it gives us special time with loved ones or with ourselves. Ashley English, of Candler, North Carolina, author of A Year of Picnics: Recipes for Dining Well in the Great Outdoors, sees picnics as a delicious excuse to eat healthy and in sync with the seasons. “No matter what time of year you’re picnicking, there’s always going to be something ripe and in season to showcase. We all know that foods eaten at their peak time of ripeness simply taste better, so use your summertime picnic as an opportunity to bite into a ripe watermelon or your autumn picnic as the ideal time to bake an apple crisp.”

the praises of picnicking not only in woodlands and on beaches, but on rooftops. Being open to different times of the day welcomes a shift in mood. “I’m particularly fond of breakfast picnics. They’re an excellent way to clear your head and get motivated, as they’re an activity fully engaging all of the senses. Twilight picnics are another favorite. As the sun begins to set, the light is less harsh and the mood outdoors becomes decidedly quieter. I find picnics during this time of day to be especially relaxing,” says English. Simple tasks like washing salad greens or whipping up a quick hummus dip the night before a picnic can save considerable time. Traditional picnic baskets are not required, and English recommends vintage suitcases, wooden crates or a backpack, especially if the picnic destination involves an uphill trek. She also emphasizes simplicity: “While a lavish spread with myriad options is quite fun, a simple picnic can be equally enjoyable. A grazing board to-go is quite easy. Pack up a medley of fruits, veggies,

charcuterie or cheeses, crackers, spreads and pickles and a little something sweet, and you’ve got all you need to create a memorable meal outdoors.” Robyn Lindars, of Fort Myers, Florida, author The Healthy Electric Smoker Cookbook: 100 Recipes with All-Natural Ingredients and Fewer Carbs, says, “I love grilled veggies paired with goat cheese and fresh herbs on French or Italian bread. You can add capicola or just stick to veggies for tasty sandwiches that do well in a cooler.”

GREAT GRILLING Grilling “adds a ton of flavor to food without needing to add additional fat or calories. Cooking over fire is also the oldest method of cooking,” says Lindars. Happily, the health risks associated with barbequing meat over hot coals can be reduced by using flavorful marinades or opting to go vegan. Reducing temperature decreases carcinogenic compounds associated with grilling meats and can be best accomplished by waiting until charcoal turns to embers or turning the gas grill down a notch or two. Grilling further from the flame on an elevated rack is also a good option. Citrusy or balsamic vinegar-based marinades naturally minimize toxic potential by reducing the formation of unhealthy compounds, studies show. “You are what you eat and what you eat was eating. Opt for the highest-quality protein possible—grass-fed beef, organic, humanely raised protein,” suggests Lindars. “Make your own marinades and rubs to avoid ingredients like soybean oil and corn syrup. You can easily make your own with simple ingredients like olive oil, fresh herbs, vinegars, sea salt and spices. Fresh rosemary, lemon zest, juice, sea salt, pepper and garlic with a splash of olive oil makes for an amazing marinade, and can even be paired with grass-fed butter to put on chicken. A basic rub of smoked paprika, sea salt, fresh ground pepper and dash of garlic powder is great on just about anything.” Marlaina Donato is the author of several books and a recording artist. Fire-Roasted Gazpacho 3 lb small-to medium-size tomatoes, possibly a mixture of San Marzano and Campari tomatoes (The smaller tomatoes will get more exposure to the grill) 2 large cucumbers 1 poblano pepper 1 head of garlic 8 oz mini-bell peppers 2 tsp white wine vinegar 1 cup water (or more) Dash olive oil 1 Tbsp sea salt (preferably bourbon barrel smoked sea salt) 1 Tbsp black pepper (preferably bourbon barrel smoked pepper) 1 tsp sugar 1 large bunch basil 1 ripe avocado, diced Preheat a charcoal grill for medium direct heat—about 350° F. (Gas works, but will not produce as much smokiness as charcoal.) Prepare the veggies to go on the grill: wash everything and slice the cucumbers into thin lengthwise pieces; put the garlic cloves onto skewers. Grill the tomatoes, cucumbers, peppers, garlic and poblano pepper until char marks form on all sides. Remove the veggies and place in a big pot. Add water. With an immersion blender, mix everything together until uniform in consistency.

Add the olive oil, vinegar, salt and pepper to taste; more water for a thinner consistency; and the basil at the end with one last blend with the immersion blender. New Twists on Old Favorites Brew up delicious and colorful herbal teas for gourmet lemonades. Try hibiscus, lemongrass, lavender or fresh ginger tea, adding fresh organic lemon juice and a sweetener of choice. In a blender, whip up unsweetened plant-based milk (almond, coconut or cashew) with a ripe banana, a small handful of dates and a splash of vanilla extract, and pour into popsicle molds. Combine peanut, almond, sunflower or soy butter with cocoa or carob powder, a tablespoon of plant-based hazelnut creamer and a pinch of salt. Roll into balls and then add sesame, chia seeds, cinnamon, coconut sugar or chopped dates.
