According to Scott Tips, president and legal counsel for the National Health Federation (NHF), harmonized global standards are enabling overall reduced vitamin and mineral levels in pill and food form. In February, the U.S. Food and Drug Administration (FDA) proposed changes to both the current Nutrition Facts panel on food labels and Supplement Facts panel on dietary supplement labels that prompt concern. “While the food industry, media and general public focus on the proposed format changes, new wording and label design, there’s a danger to our health in the FDA harmonizing our Reference Daily Intake (RDI) of vitamin and mineral levels down to the extremely low levels of the Codex Alimentarius, which our organization has fought against for more than a decade,” advises Tips. Although a few RDIs have been raised, if the proposed rulemaking is adopted, the NHF anticipates that the FDA will work to conform other recommended nutrient values to those of Codex. Support for this projection is based on an October 11, 1995, FDA pronouncement in the Federal Register to harmonize its food laws with those of the rest of the world. The deadline for citizens to submit comments to the FDA ended on June 2, but we can still write to the Division of Dockets Management (HFA-305), Food and Drug Administration, 5360 Fishers Lane, Rm. 1061, Rockville, MD 20852. Mention Docket No. FDA-2012-N-1210 and insist that the FDA cease pushing its harmonization agenda.

id you know that the Phoenix metro area has the highest concentration of grocery stores in the country? Gary Baker, co-owner of Gluten Free Country Store, in Gilbert, shared this factoid with me. It’s wellknown that grocery stores in general have razor-thin profit margins, which is why the market is dominated by large national and multinational companies that focus on growth and acquisition as a means of survival. These chains cast long shadows in which independent stores must find a way to thrive. That makes the success of local favorites like Luci’s Healthy Marketplace, in Phoenix, The Good Apple, in Apache Junction, the Tempe Farmers’ Market, Baker’s establishment and many others all the more important. And it means that if we consumers want more local, independent grocers, we all need to patronize them regularly! Whole Foods Market’s impressive growth as the leader in organic foods over the years – and the growing trend by enlightened consumers demanding these products – has not gone unnoticed by other major players. Today, Safeway offers its O Organics line and Fry’s Food boasts its Simple Truth line. In April, the world’s largest grocer announced it will carry the Wild Oats brand of organic groceries, and do it at a cost of at least 25 percent lower. Walmart’s strong push into organic products creates further competitive pressure on Whole Foods, Sprouts Farmers’ Market and others. Whole Foods is in the process of purchasing the three New Frontiers Natural Marketplace locations in northern Arizona as part of buying out the entire company. The parent company of Albertsons is in the process of acquiring Safeway, with plans to merge the two chains. Sprouts’ initial public offering last year raised monies to no doubt fund expansion plans in Arizona and across the country. “Food Watch” is our July issue focus, and our cover story describes organic farmers across the country bringing inspiration and hope to ensure the American food system is safe and healthy for all of us. As more and more grocers see the value (think profit) in expanding their organic options, these visionary farmers will enjoy strong demand for their produce. This is wonderful news for everybody.

Training Programs Attract Young Farmers There’s little doubt that the nation needs more young farmers, because statistics from the U.S. Department of Agriculture show the average American farmer is 58 years old. Hope lies in farm incubators that equip young agrarians with the technical skills and the business savvy needed to compete in the fierce, burgeoning market for locally grown produce. At Kinsman Farm (KinsmanFarm.net), in Cleveland, the Ohio State University Extension gives wouldbe farmers quarter-acre starter plots and helps them develop business plans. Financial support is available, too. “The city of Cleveland recently received private funds to expand its Gardening for Greenbacks Program,” advises spokesperson Marie Barni. “Our urban farmers can now receive a $5,000 grant to help start their farming microenterprise.” Some city planners have voiced considerable skepticism about whether urban farms are an effective tool for creating jobs and rebuilding economies like Cleveland’s, but advocates point to other farm incubators in North Carolina, Oregon and Rhode Island, as well as in Kansas City, Kansas, Holyoke, Massachusetts, St. Louis, Missouri, and Seattle, Washington. U.S. Organic Standards Under Siege Last September, without any public input, the U.S. Department of Agriculture (USDA), under pressure from corporations, changed the way the National Organic Standards Board (NOSB) decides which non-organic materials are allowed in products labeled as Certified Organic, all but guaranteeing that when the NOSB meets every six months, the non-organic and synthetic materials allowed in organic items will increase. Certain non-organic or synthetic materials can be used in up to 5 percent of a USDA Organic product, and in up to 30 percent of a Made with Organic Ingredients product. Look for the addition of carrageenan, synthetic nutrients such as DHA and ARA, sausage casings made from processed intestines, synthetic methionine, antibiotics and mutagens, among others. Vermont Senator David Zuckerman and Representative Carolyn Partridge spearheaded efforts for Vermont to pass the nation’s first unrestricted mandatory labeling bill for genetically modified organisms (GMO). The state legislature’s collective efforts, lasting more than a decade, led to an unprecedented, game-changing new law signed by Governor Peter Shumlin on April 23. Anticipating the current lawsuit by Monsanto and the Grocery Manufacturers Association, Vermont has set aside $10 million for legal fees. The Organic Manufacturers Association is working to expand funding behind Vermont’s defense because the outcome could affect all 50 states. Unless legally overturned, starting July 1, 2016, products sold in Vermont that contain more than 0.9 percent GMO content contamination will require a statement on the label indicating that genetic engineering was used. Products that contain GMOs and are labeled as such cannot also label their products as “natural”. The bill, however, does not apply to labels for milk, eggs and meat from animals fed GMOs.
Organizations worldwide are working to create a more sustainable and just food system. Food Tank lists 101 organizations to watch in 2014 (Tinyurl.com/FoodTank100). All are vital in creating a better food system. Here are a few examples. Food MythBusters is telling the real story of how food is produced through short films, showing that we can have a food system that is truly affordable, delicious, fair and good for the planet. Heifer International has been helping small farmers around the world practice better animal husbandry and develop more environmentally sustainable sources of food production for 70 years. Oxfam, a confederation of 17 organizations worldwide, helps find lasting solutions to poverty and injustice. Oxfam America’s recent Behind the Brands campaign highlights how favorite consumer brands bring hidden costs to farmers, food security and the environment. Real Food Challenge, started in 2008 mainly among students, aims to shift $1 billion of existing university food budgets from industrial farms and junk foods to community-based, fair, ecologically sound and humane food sources by 2020. Seed Savers Exchange is dedicated to saving and sharing organic, heirloom and non-GMO (genetically modified organism) seeds.

Fortunately, many heroes among us— family farmers, community gardeners, visionaries and activists—are striving to create a safer and healthier environment now that will benefit future generations. tional Year of Family Farmers, Natural Awakenings is spotlighting examples of the current crop of heroes providing inspiration and hope. They are changing America’s landscape and the way we think about the ability of good food to feed the future well. Doug Crabtree and Anna JonesCrabtree, of Vilicus Farms, in Havre, Montana, are reviving crop biodiversity and pollinator habitat on their organic farm in northern Montana. “We strive to farm in a manner that works in concert with nature,” Doug explains. The couple’s actions live up to their farm’s Latin name, which means “steward”. They grow 15 nourishing crops on 1,200 acres, including flax, buckwheat, sunflower, safflower, spelt, oats, barley and lentils, without pesticides, herbicides or synthetic fertilizers. By imitating natural systems, planting diverse crops and avoiding damaging chemical inputs, they are attracting diverse native pollinators, he notes. Their approach to farming helps protect area groundwater, streams, rivers and even oceans for future generations.
Dick and Diana Dyer, of Dyer Family Organic Farm, in Ann Arbor, Michigan, finally realized their lifelong dream to farm in 2009, each at the age of 59. The couple grows more than 40 varieties of garlic on 15 acres; they also grow hops and care for honeybees. In addition, they provide hands-in-the-soil training to a new generation of dietetic interns across the country through their School to Farm program, in association with the Academy of Nutrition and Dietetics. Diana, a registered dietitian, teaches her students to take the, “We are what we eat” adage a step further. She believes, we are what we grow. “Like nearly everyone else, most dietetic students are disconnected from Mother Earth, the source of the food they eat. They don’t learn the vital connections between soil, food and health,” says Diana. During a stay on the Dyer farm, she explains, “The students begin to understand how their food and nutrition recommendations to others can help drive an entire agricultural system that promotes and protects our soil and water, natural resources and public health.” It all aligns with practicing their family farm motto: Shaping our future from the ground up. Recently, the couple decided to take fewer trips away from their children and homestead, and instead bring more people to their 35-acre family farm to learn from the land and develop a refreshed sense of community. From earthy farm dinners and elegant weddings to creative exploration camps for children and adults and an educational internship program, these family farmers are raising a new crop of consumers that value the land, their food and the people producing it. The couple hopes to help people learn how to grow and prepare their own food, plus gain a greater appreciation for organic farming. “The people that come here fall into a farming lifestyle in tune with the sun and moon, the seasons and their inner clock—something valuable that has been lost in modern lifestyles,” notes Lareau, who especially loves sharing the magic of their farm with children. “Kids are shocked when they learn that carrots grow

The Martens switched to organic farming after Klaas experienced partial paralysis due to exposure to pesticides, compounded by concern for the health of their three children. Because the Martens work in alliance with nature, they’ve learned to ask a unique set of questions. For example, when Klaas sees a weed, he doesn’t ask, “What can we spray to kill it?” but, “What was the environment that allowed the weed to grow?”

Anne Mosness, in Bellingham, Washington, began fishing for wild salmon with her father during one
summer after college. The experience ignited a sense of adventure that led her back to Alaska for nearly three decades, as a crew member and then a captain in the Copper River and Bristol Bay fisheries. Why do you believe that the U.S. Department of Agriculture (USDA) and the Food and Drug Administration (FDA) are tainted by special interests, particularly big companies in the pharmaceutical and food industries? The FDA was created to address issues of food and drug contamination and adulteration. Dr. Harvey Wiley, the courageous first leader of its predecessor, the Bureau of Chemistry, expressed his disgust with the unintended consequences in his 1929 book, The History of a Crime Against the Food Law: The Amazing Story of the National Food and Drugs Law Intended to Protect the Health of the People, Perverted to Protect Adulteration of Foods and Drugs. The FDA has been beholden to drug companies for decades. Making the situation worse, a 2012 law loosened conflict of interest restrictions for FDA advisory panels. That has further weakened the agency’s review system and likely allowed more drugs with safety problems to gain marketing approval, according to an analysis
published in the journal Science in 2013. In addition, 40 percent of the FDA’s last budget increase came from user fees on prescription drugs paid by the pharmaceutical giants. The USDA has the potential to do much good, but is bogged down with politics and mandates to push questionable biotechnology.
With regard to the controversy over genetically modified organisms (GMO), are certain companies being given undue influence in national policy making? Yes. A perfect example was the ability of Monsanto to block initiatives requiring labeling of food products that contain GMOs in California and Washington state. Monsanto and the food industry continue to leverage their considerable influence in the U.S. Congress to block such legislation on a national level, despite the massive outcry from consumers demanding to know the identity and origin of the food we eat.
Did the FDA declare war on the natural products industry in
the 1990s? The FDA conducted numerous and illegal raids on health food stores, supplement makers and practitioners. In an infamous barbaric raid on the clinic of integrative physician Dr. Jonathan Wright, in Tahoma, Washington, in 1992, agents and deputized officers converged with guns drawn, terrorizing patients and staff because Wright was giving his patients legal L-tryptophan supplements to help with sleep and mood. It was dubbed the “vitamin B-bust”. A federal grand jury declined to indict Wright on the charges stemming from the raid.
Current European Union and international codex policies maintain that most necessary nutrients can and should be obtained from foods, so they have dramatically limited the availability of many supplements. Do you expect such a policy to become part of U.S. law? These European policies fly in the face of reality and every major food study conducted since World War II. The
super-refined, overly processed Western diet does not and cannot fully supply optimal levels of daily nutrients. The U.S. has made minor efforts to tread this dangerous path and been met with tremendous consumer outrage. Potential related laws and policies would have to make it past an avalanche of public comments.
What is the current status of the fight for health freedom, and what is your prognosis for the future? Substantial threats to our health freedom still exist, but I am optimistic. Three highly credible nonprofit organizations are leading the way: the Alliance for Natural Health, Citizens for Health and the National Health Federation. If consumers remain vigilant and stay informed on the issues identified by these advocates, we will be able to tackle and defeat threats to Americans’ health freedoms as they emerge. 048 is a plan to prevent wars, eliminate poverty and create the conditions for global sustainability by the time we celebrate the centennial of the United Nations Universal Declaration of Human Rights, unanimously adopted in 1948 by all UN member countries. 2048 dispels myths, including a major misconception that peace and prosperity are hopelessly complicated and unattainable. In truth, both can be secured through the realization of five fundamental freedoms for everyone: freedom of speech, freedom of religion, freedom from want, freedom for the environment and

freedom from fear. These basic freedoms establish a framework within which other rights can flourish. The five fingers of our hand illustrate the possibilities, starting with the thumb. It looks different and stands out. It is strong. It represents freedom of speech, an idea that stands up to dishonesty and corruption. With our index finger, we point and indicate direction. It represents freedom of religion. Each of us is free to choose our own way. Those that decide God is their guide are free to live their own relationship with God. The middle finger, the longest, represents freedom from want—
the long road of existence and the certainty that there’ll be food, water, education and health care for every one of us as we go along. Next is the wedding ring finger for many of us, and a finger with a direct link to our nervous system for all of us. It represents freedom for the environment and for life. We all have a direct link to the Earth and the ecosystem of which we are a part. When the life of the Earth is spoiled, our lives are spoiled. Finally, there is our little finger, the least imposing. It represents freedom from fear. It’s the “finale” of our hand, our reward. All the others lead to this one. As we recount the five freedoms represented by our fingers, remember that we didn’t ask for that hand; we were born with it. Everyone was born with the right to all five freedoms. They are the essence of a good life for all, and in this way they are intertwined; the success of each bolsters the others. oth traditional Indian and Chinese healing systems have long put forth that different foods can have cooling or heating properties. By adding or changing a few foods in our diet, we can improve how we feel during the hot months of the year. One of the simplest additions to our diet is to add fresh lemon or lime juice to the water we drink. This is an easy solution, because drinking more fluids during the heat is also beneficial for our health. Other fruits that are cooling include apples, melons and grapes, as well as different kinds of berries. Cooling vegetables include asparagus, squash, cucumber, avocado and leafy, green vegetables. Consider making large salads with combinations of these ingredients. For dressings, use those with cooling spices such as dill, fennel, mint, coriander or cilantro. Smoothies are a great way to obtain many nutrients in a convenient form. To make smoothies, combine
protein, greens and fruits, including lemon juice, with a base such as coconut milk. Coconut has been found to have a number of medicinal qualities, and is cooling in either milk or coconut meat forms. To add a natural, cooling sweetener, use pitted dates. For protein, use chickpeas, butter or clarified butter (ghee), milk, egg whites and poultry. Try cooking them in coconut or olive oils. Cooling grains include oats and barley, as well as white rice. This is what a day of cooling foods could look like: oatmeal, egg whites and green smoothie for breakfast; a large chopped salad with chickpeas for lunch; vegetable or chicken
fajitas with avocado or guacamole for dinner; and water with lemon for sipping throughout the day. Some other foods to consider include psyllium, a gentle fiber supplement, and chamomile tea before sleeping. Aloe juice is also considered cooling. These are a few simple additions or substitutions we can make to our diet to gain a health benefit and obtain cooling for our body during the hot months. The key is to experiment and find what works best, because everyone’s body is different. ots of people believe it is worth the effort to try and eat a healthy diet and do just that; however, the cards are certainly stacked against the conscious eater. Trying to keep track of what is good for us and what is not is compounded by the fact that there are ever-changing ingredient lists. It’s not just the lists that change, but the names of the ingredients, as well. It’s almost as if the food industry is trying to make it difficult to know what’s healthy. As an example of the food industry’s attempts to lead us into a state of dis-ease there was an attempt to petition the U.S. Food and Drug Administration to change the labeling on school cafeteria chocolate milk. The reason for this label change? Current law mandates that milk tainted with artificial sweeteners must be labeled as “low-fat” or “reduced calorie”. Apparently, this isn’t a great idea because kids are averse to the idea of these items. If the label isn’t changed, then kids might not choose the chocolate milk that is fractionally better for them. So how about just getting rid of the chocolate milk option; wouldn’t that solve the problem? Why do we need to present a sweet option for every food out there? Oh, right, because it’s addictive. If they get a hook in early, then they’ve got a customer for life. If we’re clever enough to figure out that we need to read the labels printed on the foods we eat, we’re still not going to be out of the woods. Have you heard of AminoSweet? You might think, “It’s ‘amino’, maybe that’s related to that paleo thing and it’s good for me.” Nope, sorry, it’s not. It’s just aspartame, the same old artificial sweetener that has been linked to neurological disorders and cancer. It got a facelift (read: new pubic deception campaign). Maybe we do need artificial sweeteners these days. There was a recent projection that roughly 50 percent of Americans have either diabetes or pre-diabetes. That means half of us. Clearly, we’re eating too much sugar. Obviously, we can’t control ourselves, and making our foods taste sweet with something that won’t raise our blood sugar may prove to be a panacea (provided we
don’t melt our brain or get cancer). There are several options out there for those looking to lower their blood sugars without angering their sweet tooth. The sugar alcohols might be a good idea. Stevia or Truvia seem promising. Doctors often hear, “But I don’t like the stevia aftertaste!” Well, maybe the oral anti-diabetic drug Metformin will taste a little better. However, the health crisis that we are finding ourselves in is not due solely to our overconsumption of sugar. In all likelihood, our overconsumption is only just as problematic as our habit of under-consumption. The standard American diet is utterly void of many health-sustaining nutrients, and can even cause further depletion of the nutrient stores within our bodies. So, if we have a diet that is too rich in the bad stuff and too depleted of the good stuff, what do we get—a population with a 50 percent rate of blood sugar problems, a 35 percent rate of obesity and 49 percent of us have significant cardiovascular disease risk factors. On top of that, the rates of other serious diseases such as asthma, autoimmune disease and psychiatric disease are also skyrocketing. Considering the speed at which our society is developing serious dis-ease, we cannot afford to wait around for the next miracle drug or supplement. It isn’t coming. We also shouldn’t wait for the food industry to become worried about our collective health, either. What we should do to regain our health is to get serious about eating a nutritionally sound diet. Choose fresh, un-manipulated foods and eat them frequently. Making major dietary changes can be challenging, so consider enlisting the help of a qualified naturopathic physician to help eat our way to health. Social Sustainability and Homelessness in Phoenix by Kena Fedorschak
T
he challenges of environmental sustainability are real, pressing and urgent; militating against environmental degradation and anthropocentric belief structures is necessary to ensure the prosperity of future generations. However, sustainability is a broad philosophy that is inclusive of more than just environmental issues, (i.e., sustainability also seeks to address issues of social inequality and economic instability to ensure a continually thriving planet). According to the U.S. Department of Housing and Urban Development, persons identified as being homeless lack a “fixed, regular, and adequate night-time residence.” In Arizona, 27,877 individuals experienced homelessness at some point during the 2013 state fiscal year. Of these individuals, approximately 17,000 are located in the Phoenix metropolitan area. Further, an estimated 37 percent have physical or mental disabilities, 28 percent abuse drugs and/ or alcohol and 38 percent can be classified as chronically homeless. Efforts aimed at reducing the number of individuals who are chronically homeless are vital, as they are most likely to die on the streets and utilize 50 percent of related resources, (e.g., shelter beds, hospital services, etc.). Support, generosity and compassion can make a meaningful difference in the lives of people who are homeless. Phoenix Mayor Greg Stanton exemplifies these character traits through his tireless efforts to end homelessness among Arizona veterans. Initiatives implemented by the mayor’s office have resulted in a significant decrease in the population of veterans who find themselves homeless in Phoenix, from 220 a couple of years ago to virtually zero today. Furthermore, USA Today highlighted Stanton’s work in a recent article. We don’t have to be a mayor or politician to make a real difference within the lives of individuals experiencing homelessness. Leslie Todd is the executive director of the Real Gift Foundation, established by Valley native Conde Rogers in 2000 to work with local schools to provide food, clothing, school supplies, holiday assistance and health care services to children who are homeless and needy. According to Todd, “Providing children with basic necessities, such as school supplies and clean clothes, is a beautiful
and humbling experience. You quickly realize that your actions have an enormous impact.” Want to make a difference? Here are five actions we can take: Volunteer at a shelter or foundation. Central Arizona Shelter Services (CASS) may be Arizona’s largest shelter, but dozens of shelters exist statewide. Check Google or consult a phonebook. Donate to a food bank. Numerous food banks operate throughout the state. Just to name a few: St. Mary’s Food Bank, in Phoenix, United Food Bank, in Mesa, and the Community Food Bank, in Tucson. Donate food often and consider volunteering time, as well—these organizations will take all the extra support they can get. Tutor children who are experiencing homelessness. Many organizations exist locally and statewide to address the needs of youth who are homeless. Volunteering for StandUp for Kids in Phoenix, The Real Gift Foundation or the Valley of the Sun United Way could make a big difference in a young person’s life. Employ someone who is homeless. Own a small business and want to make a difference? Stanton’s Hire, Educate, Recruit, Organize (HERO) program creates job fairs to connect veteran job seekers with employers. Taking part in events like these is a step toward ending chronic homelessness. Reach out to local politicians. Arizona’s politicians are often preoccupied with other concerns. Remind them that the large population of people who are currently homeless still needs help and support. moothies offer big nutrition in a small package. Based on a vegan source of lean protein like coconut milk or yogurt, soy, chia seeds or a vegan protein powder made from dried beans or hemp, they can energize us for a full day of summer activities. Other ingredients follow the peak of summer crops. Berries, greens, melon, tomatoes, avocado, cucumber, celery, carrots and stone fruits like peaches and mangoes add antioxidants, fiber, vitamins and minerals. A tablespoon or two of milled flax seeds, hemp or nut butter adds richness to the flavor, while providing omega-3 fatty acids necessary for complete nutrition. For the finale, add a touch of sweetness from fruits, maple syrup, agave nectar or stevia. The best way to mix a smoothie is to start with either a liquid or an ingredient with a thicker consistency, like yogurt, placed in a standard or highspeed performance blender. Next, add
the desired fruits or vegetables and flavorings, followed by ice. Start on a slower speed, holding down the lid tightly, before increasing the speed to achieve a velvety texture. If the smoothie is too thin, add more frozen fruit or ice. Freezing the fruits first and then blending them into a smoothie can substitute for ice. Peeling bananas before freezing them makes smoothiemaking easier. Freezing the fruits in recipe-size portions also simplifies the process. Smooth-fleshed fruits like mangoes, papayas, bananas, ripe peaches and nectarines blend more easily to a silky finish than do fresh berries. Tender, baby greens such as spinach, kale or chard virtually disappear within a smoothie; if using mature, rather than baby greens, cut out the stems unless the blender is extremely powerful. Blending enough ingredients for two smoothies can yield a leftover serving to store in a reusable glass jar in the refrigerator. To reactivate the full taste
later, just turn over the jar and give it a good shake to re-blend the ingredients. Spirulina (made from a microsaltwater plant) and wheatgrass juice and powder are some popular smoothie additions. Milled flax seeds add healthy fat, but their water-soluble fiber also adds a little bulk; although the texture difference isn’t noticeable if the smoothie is enjoyed right away, it will be apparent if it sits for 20 min-

Compounding Crises
etable farmer in Orange County, New York, is among the leaders in the David versus Goliath battle pitting farmers and community members against the Millennium Pipeline Company and the Federal Energy Regulatory Commission. On May 1, oral arguments were heard in the U.S. Court of Appeals. According to Canalos, “Our case could set a national precedent, with all the attending legal precedent, that will either empower other farmers and communities like ours and Minisink or will do the opposite.” In January 2013, more then 150 New York chefs and food professionals sent a letter to Governor Mario Cuomo calling for a ban on fracking in their state. As of December 2013, more then 250 chefs have signed on to the Chefs for the Marcellus campaign, which created the petition. In April 2014, Connecticut chefs entered the fray by launching their own petition to ban the acceptance of fracking waste in Connecticut. In California this past February, farmers and chefs banded together to present Governor Jerry Brown with a petition calling for a moratorium on fracking, stating that fracking wastes huge amounts of water. The previous month, California had declared a statewide drought emergency, and by April Brown had issued an executive order to strengthen the state’s ability to manage water. Ironically, existing California regulations don’t restrict water use by industrial processes, including fracking, which uses and permanently removes tremendous amounts of water from the water cycle. To date, fracking in California operates with little state regulation. It’s past due for a “time out” on oil and gas production and infrastructure development. Every citizen needs to think carefully and thoughtfully about what’s at stake as outside interests rush to use extreme forms of energy extraction to squeeze the last drops of fossil fuels from our Mother Earth.
Harsh economic conditions, plus concerns over long-term climate changes, including extreme weather events, have pitted neighbors against one another as farmers consider leasing their lands to oil and gas companies. More, often the riches promised do not make their way to the farmers that need them the most as American policies continue to favor megalithic agribusinesses and push farming families into unsustainable choices. Standard drilling leases rarely provide broad protections for farmers and can even eliminate their input on where roads are created and fracking machinery is installed on their property, all of which can hamper normal farming. In Pennsylvania, where fracking is commonplace, thousands of diesel trucks drive by working farms daily, compounding problems already associated with 24/7 vibrations, noises, emissions and light pollution, stressing both humans and farm animals. In New York, Pennsylvania, North Carolina and Ohio, farmers that have or are near such leased land are finding it increasingly difficult to obtain mortgages, re-mortgage property and acquire or renew insurance policies. Caught up in a vicious cycle, some farmers feel forced to abandon their farms, thus opening up more land to oil and gas companies. “Fracking is turning many rural environments into industrial zones,” observes Jennifer Clark, owner of Eminence Road Farm Winery, in New York’s Delaware County. She notes that we often hear a lot about the jobs fracking might create, but we hear little about the agricultural jobs being lost or the destruction of a way of life that has been integral to America’s landscape for generations. ain is one of those broad-spectrum symptoms that could signify numerous problems within the body. Most are minor, but chronic pain could be an indicator of something more severe. For those that have unexplained pain, it is ill-advised to silence a message our body is sending us. Chronic or sharp pain may be evaluated by a naturopathic physician to rule out serious causes. I
n the late 1980s, nutritional authorities decided that dietary fat was to blame for obesity, heart disease and many other common maladies. It seemed so obvious that if fat on the body and fat in the blood vessels was the problem, that fat in the diet had to be the cause. Eventually, low fat was not enough, and fat-free became the new grail. The next belief that emerged was that all carbs must be good. At the peak of this way of thinking, foods that would not normally be thought of as healthy were eaten without restraint: jellybeans and pretzels were prime examples. In the 1980s, typical “healthy� fare was fruit and bagels, with perhaps a spread that was an equal blend of cream cheese and brown sugar. Nutritional beliefs shift partly because of new information but in no small part because of the very nature of trends, much like clothing fashions. If we decide fat is to blame, eventu-

ally, we will binge on jellybeans. It seems our minds can only focus on a finite number of concepts at once. Thankfully, we moved out of the fat-free craze and came to realize that there was such a thing as good fat. Fish, nuts, avocados and olive oil became okay foods to eat again. If we follow current books and some popular blogs and podcasts, we will see that we have now swung 180 degrees from the low-fat days. Many have gone far beyond saying that some fats are good and are saying that most of our calories should come from saturated fat. Let’s shorten the learning curve this time. Just as it was such a revolution to learn that some fats could be good for us, it is time we realize that carbs are also not always the villain, and some carbs are good for us. Just as Crisco and margarine are clearly unhealthy fats, high-fructose corn syrup and white flour are clearly unhealthy carbs. Yet good carbs, rich in fiber, are a critical part of our diet. As important as fiber is, we need different types, such as soluble fiber from fruits and vegetables and insoluble fiber from grains and beans. High-fiber carbs are the body’s best source of energy; they feed protective intestinal flora and allow our immune system to work better. As omnivores, we can subsist on many different types of diets. But beyond subsisting, we have the greatest chance of thriving when our diets contain nutrients from a variety of healthy, unprocessed foods. The global obesity crisis started in the 1980s, even though we consumed carbohydrates for decades and centuries before then. Some excellent carbs include pinto beans, black beans, buckwheat groats, lentils, quinoa and brown rice. According to the Children’s Health Environmental Coalition, in Los Angeles, traces of cleaning chemicals can be found throughout the human body within seconds of exposure, posing risks like asthma, allergies, cancer, reproductive toxicity, hormone disruption, neurotoxicity and death. Equally sobering is the decades of research suggesting a relationship between the overuse of powerful disinfectants and the rise of antibiotic-resistant super bacteria like methicillin-resistant Staphylococcus aureus (MRSA), as well as concerns

over these toxins entering water supplies and wildlife food chains. Cleaning product labels lack transparency, says Johanna Congleton, Ph.D., a senior scientist for the Environmental Working Group, because “manufacturers aren’t required to specify ingredients.” One approach to assure safe ingredients is do-it-yourself (DIY) products. For Matt and Betsy Jabs, the authors of DIY Natural Household Cleaners who blog at DIYNatural. com, creating homemade cleaners is a rewarding exercise in sustainability and simplicity. “We’re cutting through all the marketing and getting back to basics,” says Matt. Affordability is
Find these multitasking ingredients in local groceries and health stores or online. White vinegar effectively cleans, deodorizes, cuts grease and disinfects against bacteria, viruses and mold. Castile soap in liquid or bar form serves as a biodegradable, vegetablebased surfactant and all-around cleaner (avoid mixing with vinegar, which neutralizes its cleansing properties). Baking soda cleans, whitens, neutralizes odors and softens water. It’s an excellent scrubbing agent for bathrooms, refrigerators and ovens. Borax, a natural mineral, improves the effectiveness of laundry soap. Although classified (as is salt) as a low-level health hazard that should be kept away from children and animals, borax is non-carcinogenic and isn’t absorbed through skin. Washing soda, a caustic chemical cousin of baking soda, softens water and removes stains. Bond advises, “It’s a heavy-duty cleaner as powerful as any toxic solvent,” so wear gloves. Hydrogen peroxide is considered an

effective disinfectant and bleach alternative by the U.S. Environmental Protection Agency. Use it to whiten grout and remove stains.

Laundry detergent: Combine one cup of borax, one cup of washing soda and one 14-ounce bar of grated castile soap. Use one tablespoon per load, adding a half-cup of lemon juice to the rinse cycle. Prior to washing, use hydrogen peroxide as a stain remover (test first; it may lift color).

Bathroom soft scrub: Bond recommends creating a thick paste with liquid castile soap and a half-cup of baking soda. Scour tubs, showers and stainless steel surfaces with a sponge, and then rinse.
Carpet cleaner: Freshen rugs by sprinkling baking soda at night and vacuuming in the morning, suggests Bond. For deeper cleaning, combine one cup of vinegar and two-and-a-half gallons of water in a steam cleaner.

Dishwashing detergent: DIYNatural recommends mixing one cup of borax, one cup of washing soda, a half-cup of citric acid and a half-cup of coarse kosher salt. Cloth Tools Replace Paper by Lane Vail Americans, comprising less than 5 percent of the world’s population, use 30 percent of the world’s paper, according to the Worldwatch Institute. Some 13 billion pounds of this comes from paper towels, mostly landfilled because grime-soaked paper is non-recyclable. Ecological and economical alternatives include cloth dishrags, towels, napkins, wipes and handkerchiefs plus washable diapers and menstrual pads. Jean Calleja, co-owner of the Eco Laundry Company, in New York City, suggests customers buy recycled, organic, unbleached cloths and local products when possible. In the kitchen: Use washcloths or repurpose cotton T-shirts into 10-by10-inch squares to use regularly with a homemade all-purpose cleaner on surfaces. Replace paper towels with cloth towels for drying hands. At the table: Cloth napkins enhance mealtime. Buy or make plain napkins (by hemming cotton fabric squares) for everyday use and celebrate holidays with fancy-patterned fabric rolled into napkin rings.
In the bathroom: Substitute chlorineladen disinfecting wipes with homemade reusable ones. DIYNatural.com recommends mixing three-quarters of a cup of white vinegar, three-quarters of a cup of water and 25 drops of essential oil in a glass mason jar. Stuff five to seven washcloths into the jar, seal with a lid and shake, so the solution is absorbed into each wipe. Pull out a ready-made disinfecting wipe for a quick clean. Laundering linens: Change cleaning rags often, hang-drying them thoroughly before adding to the laundry basket. Wash kitchen and bathroom rags (added to the bathroom towel load) separately each week. According to Calleja, “Presoaking rags overnight in a non-toxic, chlorine-free, whitening solution can make a huge difference in getting them clean.” Combine a half-cup of hydrogen peroxide with two to three gallons of water, spottesting every fabric first for colorfastness. Calleja also likes using a white vinegar and eucalyptus oil rinse aid to dissolve soap residue, soften fabric and leave a fresh scent.
