Blueberry Coconut Oat Cookies
SERVES: 9-12 PREP: 15 MINUTES COOK TIME: 10-12 MIN BAKE
INGREDIENTS
100g oats 50g desiccated coconut 2 scoops vegan vanilla protein powder 70g Natvia 1 teaspoon baking powder 2 tablespoons coconut oil 4 tablespoons almond butter 2 tablespoons oat milk 1 teaspoon vanilla extract 50g frozen blueberries
1 Mix together the oats, coconut, protein, sweetener and baking powder in a bowl. 2 Melt the oil and almond butter then pour into the bowl along with the milk and vanilla, and mix to form a dough. 3 Divide into 9-12 balls then place on a baking tray lined with greaseproof paper. Place a few blueberries on top and press down gently on each. 4 Bake at 180C for 10-12 minutes until golden. Leave to cool completely and firm up - then enjoy!
