Wheat. This has become a topic of annoyance, passion and confusion for many people. So what’s the deal? Is wheat the devil or is this all some marketing scam to upsell “gluten-free” products? Wheat is made of the protein gluten which is the Latin word for “glue.” Gluten is comprised of two protein groups: glutenin and gliadin. Glutenin contributes to the elastic character and gliadin to the extensibility; together, they are the perfect combination! This is what makes baked goods so chewy and squishy and wonderful. When mixed with yeast while baking, wheat with high gluten content traps more carbon dioxide, which gives the dough more volume (Canadian Grains Commission, 2016). Additionally, it is a vital component in the germination of the plant. I’m going to step out of our current food system and take us back. It is, say, 1920, before the overuse of pesticides, KD, Twinkies and genetically-modified foods. To make a loaf of bread, it was likely soaked, fermented and prepared properly, and took about two days to make.

Fast forward to 1970, when glyphosate (also known as “Round Up”) was introduced by Monsanto and quickly became one of the most popular herbicides in agriculture (among many others). This product is marketed to be safe for humans, as it “only affects plants and bacteria.” Hold on: you are more bacteria than you are human cells. How will this affect humans? Gut flora is made up of bacteria needed for the digestion, absorption and elimination of food, and many other processes like making neurotransmitters and sending signals to the brain. Without these amazing bacteria in your gut, you would not exist as you do now, and your body wouldn’t be able to operate optimally. Glyphosate is now known to be a soil and groundwater contaminant and has been linked to digestive and endocrine disruption in both animals and humans (Myers, et al., 2016).

Today, modern wheat can get up to ten different rounds of chemicals before it reaches your mouth. Within about an hour, a commercial factory will have a loaf of bread baked, sealed in a plastic bag, in a box, on a truck, on its way to a supermarket. Slightly different picture.

So, now we are overproducing wheat and putting it in everything: supplements, additives, flavourings, cosmetics, medications, etc. It is, say, 1989, where TV dinners are cool, and humans are pretty far from the traditional ways that they used to eat and produce food. Obesity is becoming more common, people start developing more food sensitivities and chronic disease, and have become more sedentary.

At the end of WWII, the companies that created warfare were now creating chemicals for our agriculture. As monocultures increase, the need for chemicals increase as well. Hybridization of the wheat grain also continues. Hybridization

But thank goodness (please note sarcasm), in Canada, you have the food pyramid. It was originally designed for the Canadian people with fruits and vegetables as the base (what you should eat the most of) but was overturned by the wheat,

dairy and meat industries as a marketing strategy to include more of their products. The current nutritional guidelines are not based on nutritional science. They are not made for your health. They are made to make money. To sum things up, humans have destroyed this beautiful ancient grain, destroyed its traditional methods of being grown, over-produced it, and are currently destroying your ability to digest it. Wheat isn’t the problem. It’s what people have done to it that is the problem. Sadly, this will continue to happen to different products in the food system unless humans reconnect with their bodies, with their food, and with how their food is produced. So, what do you do now? Well, if you’re celiac*, continue doing your GF thing (that’s not up for debate). If you’re not, develop some awareness of how you feel before and after you eat (we call this intuitive eating). When you eat gluten do you feel bloated, tired, itchy, gassy, or have a change in your bowel movements, etc.? No, but still curious? Try eliminating gluten for a month or so to experiment. Add it back in and feel no difference? You’re probably alright and should eat a bagel in my honour because they are delicious. Add gluten back into your diet and have the symptoms flare up again? It’s likely time to adopt a GF diet. Now, the easy thing to do is just reach for the GF products in the store. Aside from being GF, these products usually don’t offer any other health benefits. Packaged food is packaged food. This can be a daunting change if you’ve always lived a gluten-loving life, but it is possible and can be very delicious. Try adding in more whole foods that are naturally without gluten. (This transition, however, is for a whole other article.) In summary: don’t be a robot in this corporate world. Do your research. Listen to your body. Take personal responsibility for your health and the environment around you. If you feel symptoms, investigate and find out the cause. You only get one body. Eat real, whole foods, move it every day as much as you can, and respect that beautiful vessel that carries you through life.

My favorite roots to roast for a coffee substitute are burdock, dandelion, and chicory. Depending on your taste and wellness needs, you can also add other ingredients, like maca or ashwagandha. To these base ingredients, I tend to add other herbs for flavoring, like cacao nibs, cinnamon bark, or vanilla beans. I’ve also tasted some beautiful herbal coffee substitute blends that include orange peel and cardamom.

- by Ayo Ngozi, M.S. - article courtesy of The Herbal Academy If you’re anything like the majority of people in the North America, you drink coffee on a regular basis—maybe even every day. This isn’t always a bad thing, especially when coffee is consumed in moderation, as it is known to have some health benefits (Liang & Kitts, 2015). But according to the Harvard University Chan School of Public Health, coffee drinkers consume an average of 3 cups per day which can add up to a lot of caffeine, along with some potential downsides, like nervousness and sleep disruption (Harvard University Chan School of Public Health, n.d.). An over-dependence on caffeine is even classified as a DSM-5 disorder (Meredith et al., 2013). If you’re looking for an alternative to a caffeinated brew, the world of herbs offers some great options. There are several commercially-available herbal coffee substitutes, but for the price and the taste, nothing beats roasting your own herbs to make your own personalized herbal coffee substitute. And it’s easier than you might think!

HERBS USED FOR AN HERBAL COFFEE SUBSTITUTE

The herbs most commonly used for an herbal coffee substitute share some of the same characteristics. 1. First, they’re generally roots. 2. Second, most ingredients are slightly bitter, which not only mimics a key taste in coffee, but also gives the liver a boost. 3. Third, when decocted these herbs actually look a lot like rich, dark coffee—and adding milk or cream to them works beautifully!

3 StEPs To AN HERbAl CoFFEE SubstitUtE

An herbal coffee substitute tastes best when roasted twice before brewing—but don’t roast your aromatic flavoring herbs along with the base roots or else you’ll lose the volatile oils that give them their flavor!

StEp 1: ROASTING HERBS (THE 1ST ROAST)

For the first roast, you can use an oven or stovetop. How To Roast Herbs In The Oven • Preheat oven to 375° F. • Spread equal parts of burdock, dandelion, and chicory root on a baking sheet and bake for 20-25 minutes. The roots should turn a darker brown and be a little “crunchy.” • Allow to cool. How To Dry Roast Herbs On The Stovetop My favorite method is to dry-roast my roots on the stovetop in a large cast-iron skillet, but you can use stainless steel or another kind of pan as well (avoid non-stick surfaces, because these will not roast your herbs as effectively and the flavor just isn’t the same). • Warm the skillet over medium heat. • Add herbs to the dry pan, stirring them occasionally to avoid burning. • Once the roots have darkened in color to a rich brown (about 30 minutes), remove them from the heat and allow to cool.

StEP 2: GRINDING HERBS

Once your roasted roots have cooled, grind them finely in a coffee grinder (or if you have the stamina, with a mortar and pestle).

StEp 3: RoASTINg HERbs (ThE 2Nd RoAst)

• Spread the ground roots on a baking sheet and bake at 325° F for five minutes. • Grind any aromatic additions in a coffee grinder and blend with the roasted herbal “grounds” before storing in an airtight container. • You can brew this coffee substitute in the same way that you would ordinary coffee, using a French press or coffee maker, or you can decoct for 7-10 minutes and strain. Sweeten or add creamer if you like, and enjoy!


Rinse After brushing, to refresh and support healthy pH, use a simple salt and oil-based mouth rinse. Essential oils like frankincense, clove, myrrh, cinnamon and peppermint help to block quorum sensing. Quorum sensing is one of the ways the bacteria that form plaque communicate.

- by Maddie Elise, R.H.N. Oral health is about so much more than appearance and kissable breath: it’s the gateway to good health. Yet, when it comes to oral healthcare, we’re taught to outsource. Thankfully, unlike the complicated insides of a car engine, oral health is fairly simple. With a few tips, you’ll be well on your way to feeling confident and empowered in caring for your mouth. The first and most important thing to keep in mind is that teeth are alive. Like any internal organ, they respond to the environment of the body. In stress and disease, your teeth become vulnerable to decay. In vibrant health, they grow back. To improve overall health, polish your grin and save a few coins at your next dentist visit, it helps to get familiar with your mouth. Here are some things you can start doing right away to improve and better understand your mouth.

Brush Start with a toothpaste (or gel, or powder) made from food ingredients like bentonite clay, calcium carbonate, xylitol, natural salts and essential oils. Anything that goes into your mouth is absorbed through the epithelial layers in your mouth and circulates through your entire body. Check out your local health food store for these, or find a great recipe online to play with. Use a dental mirror (available at most drugstores) to look around at the back of your mouth. Take note of discolored or black spots so you can keep track of weather they’re growing, remaining the same or are healing. Also, pay attention to sensitive spots, plaque build-up and breath. All of these things are alive and responsive to environment, so they can improve with small changes.

To make a rinse, drop 1-2 drops of oil directly into your choice of unrefined salt, then add salt to a large jar of filtered water. Use this rinse after acidic beverages (like lemon water, coffee or alcohol) if you have sensitive teeth. Adding the extra minerals helps to feed healthy bacteria and create an environment that is inhospitable to pathogenic bacteria. It also super charges saliva to protect the teeth throughout the day.

Floss Floss gently between teeth. Avoid digging into gums; aggressive flossing can cause inflammation in the gums. If there are areas that aren’t being reached by floss or brushing, like the gum pockets or the very back molars, use a soft plastic dental probe to wipe away build up.

Scrape Ayurveda teaches tongue scraping first thing in the morning as a way of stimulating the gastrointestinal tract to “wake up” and getting rid of halitosis-causing (bad breath) bacteria. Using a copper tongue scraper is antibacterial for many types of bad bacteria but provides enzymes that feed probiotics in the mouth.

Feed Feeding a healthy mouth is feeding a healthy body. Your teeth are especially hungry for fat soluble vitamins like E, D3, A and K2. These are most commonly found in pasture-raised animal fats, organ meats and eggs. Quality fish and fish oils are another rich source of these critical nutrients. Although teeth can be slower to grow back, you can be sure that caring for them with the same respect you treat your stomach or heart health will create significant change over time. This holistic approach to oral healthcare will give your mouth something to smile about!

Vegan Cashew Beet Dip

Ingredients: 2/3 cups raw unsalted cashews soaked in 2 cups of water 2+ hours or overnight 2 large or 3 medium beets roasted until soft, cooled and peeled 2 tbsp nutritional yeast 1 tbsp apple cider vinegar the juice of 1 large lemon a pinch of sea salt optional: 1-2 minced fresh garlic cloves

To prepare beets ahead of time: I recommend the day or night before to give plenty of time to cool. Preheat oven to 350-400 degrees. Keep beets whole with the skin on, wash them well and cover each tightly with tin foil. Bake until tender/ until you can stab them easily with a fork (roughly 45 minutes to 1 hour). Cool completely before peeling the skin off. Soak cashews in water for at least 2 hours, I recommend soaking them overnight before the day of preparation. After soaking, drain and rinse the cashews To Assemble: Place drained cashews in a food processor and puree until smooth, add beets and all remaining ingredients, puree everything until very well combined and smooth. Do a little taste test before spooning the dip into a sealable container. Season to taste. Allow the flavours to mingle while the dip chills in the refrigerator before serving. Serve dip with fresh sourdough, sliced cucumbers, celery, crackers, on toast or a sandwich, dollop on top of a green salad, the possibilities go on. Keeps well in the refrigerator up to 5 days.
