I

t’s a well-known fact (at least to those who know me) that although I hate to cook, I have an obsessive love of kitchenware. Shiny utensils, high-tech tools and pretty serving bowls are stacked and stored in spaces all over my kitchen and beyond. I collect milk glass, teapots and cream-and-sugar sets. And I own more cake pans, pie dishes and tart forms than would ever be considered necessary. (But in my defense, I do like to bake, and I actually use those.) So it’s always fun for me to discover what’s new in the world of kitchen products while scouting lovely and useful items for our annual Kitchen Issue. (See our roundup, starting on page 19.) Continuing the theme, we’re excited to catch up with chef and world traveler Michele Morris (page 29), who teaches cooking classes in her own kitchen and around the globe, writes cookbooks and devotes an impressive amount of time helping organizations that work to end childhood hunger. Then we get to the heart of the matter: a peek inside four wonderful residences that revolve around the culinary heart of the home. It was great to learn that every one of these kitchens was designed to be more than a showpiece. These spaces are functional and hardworking, made to be used by busy, hungry families. ity the graphic designer who has to squeeze Michele Morris’s many titles on her business card: Cookbook author. Gourmet travel planner. Blogger. Food photographer. Culinary teacher. Philanthropist. Morris launched her company, Cooking With Michele, eight years ago, initially hosting hands-on cooking parties. She was also an early adoptee of the blog form, and today CookingWithMichele.com attracts thousands of readers for her mouthwatering recipes, tips and photos. Michele Morris in her home library, which features more than 500 cookbooks.

Morris is also a prolific writer of food columns, and in 2013 she penned Tasting Colorado, a beautiful and practical cookbook of recipes from top working chefs around the state. The book recently won the Colorado Book Award for general nonfiction. Morris not only gathered and tested the 120 recipes, she also photographed all of the dishes. Her latest book, A Taste of Washington features recipes from Washington State’s best chefs. “I’ve been cooking since I was a little kid,” says Morris, who at fourteen prepared a complete Chinese feast from scratch for her mother’s birthday. “My mom always encouraged me, and that’s probably why I enjoy cooking with children so much today.” Based in Denver, Morris teaches adult and children’s cooking classes from her spacious home kitchen, which is outfitted with an oversized island to accommodate students, a professional Wolf range, a large Sub-Zero refrigerator and two farmhouse sinks. “I’d rather have a pair of sinks to stash pans than two dishwashers; you can always do dishes later,” she explains. And she recently started taking her show on the road. After Morris attended a class at a cooking school in Italy, the owner suggested Morris return with a group of her own students from Colorado. “I discovered I loved putting together culinary trips,” Morris says. “We just finished our fifth trip to Puglia, in southern Italy, where the food is classic Mediterranean. Next year we’re going to France, Germany and Italy.” Much of Michele Morris’s considerable energy is devoted to doing good in the culinary world. She’s a Hall of Fame Chef for Share Our Strength’s Cooking Matters program, which shows families how to stretch food budgets and prepare healthy, affordable meals, and she is also a contributing

I’ll never forget things like my first salade aux chèvre chaud in Paris, a true Belgian waffle in Bruges, a perfect thin-crust pizza with prosciutto and arugula in Italy, or a comforting bowl of chicken broth with noodles and vegetables served for breakfast in Beijing. Travel, for me, is as much about the food as it is anything else, and recalling those meals helps me remember the wonderful places I’ve been fortunate enough to visit. What are your feelings about trendy foods like kale, kimchi, cronuts and quinoa? Some hip ingredients—like kale and quinoa—serve a useful purpose by helping to educate our communities about eating healthy foods. Others, like kimchi, reflect our ever-expanding palates as we seek to experience new cuisines. But trends like cronuts just seem a little silly to me!

Morris also helps Denver Public Schools students cook with produce they’ve grown in school gardens, and rarely encounters picky eaters in those settings. “They make sandwiches from just-picked radishes, and ratatouille with garden vegetables,” Morris says. “I’ve discovered that if kids grow it, they will usually eat it.” Michele Morris may have too many titles to fit on a business card, but one common theme runs through all of her endeavors. “I want people to know how to cook and feed themselves good, healthy food,” Morris says. “To me that’s just a basic, very important necessity.”

What’s a good dish for a novice cook to prepare? I encourage people to learn to cook without recipes so they can have more flexibility based on the foods they have on hand. Pasta dishes are easy to play around with, because you can combine vegetables and protein with herbs and seasonings, toss it all together and create a fabulous, easy meal.

After writing Tasting Colorado and traveling all over the state, what food do you think most exemplifies Colorado cuisine? Ingredients like peaches, bison, chiles, and lamb certainly seem iconic for our state, but I think what really defines our cuisine is more of a commitment to locally grown, organic and sustainable foods. The farmers, restaurateurs and chefs I’ve met seem deeply committed to these principles. What’s it like teaching three-year-olds how to make sushi? They’re better at it than you might think! Children do tend to want to overstuff their rolls, so I work with them to help them make a smooth, tight wrap with just the right amount of filling.

This one says, ‘I’m shy.’ I often think it’s not so much about the jewelry; maybe the jewelry is just the vehicle the wearer wants to communicate about herself. Tell us about your selection of materials.

The sustainability aspect is important to us. We never buy diamonds that are coming out of a mine. We use recycled gold, and we get upcycled diamonds. We encourage people to reuse what they have: 68 percent of my work is custom, and I love when someone walks in with a broken pearl and a pear-shaped tanzanite from her great-grandmother and asks me to create something new. Why uncut diamonds?

They’re fantastic. They’re literally as they come out of the ground. We don’t alter them in any way. They’re brown or tequila or orange, bluish or pinkish. Grays are my favorite. All of these diamonds fall outside of what society calls a quality diamond. Everyone knows the four Cs of diamonds—color, clarity, cut and carat weight—but we believe there’s a fifth C: character. These diamonds tell a much more interesting story than the typical cut diamond, which is really just about communicating status. Let’s start at the beginning: How did you become a jewelry designer?

I started as a hand-stitcher at a leather clothing company. I loved making a living by making things with my hands. I was only 17, but that dialogue of craftsmen really inspired me. I was making the ornaments—the buttons, the clasps, the componentry of leather handbags or pants—and I discovered a passion there. People would ask me, ‘Could I just get those buttons made into a pair of earrings?’ And I would say, ‘Yes, I can do that.’ Eventually, I realized that I wanted to make jewelry, so I taught myself and honed this vocabulary—a clearer vision of what I wanted my jewelry to 38

communicate. My goal all along was to build a heritage brand, which is different than selling a product. Was there a moment when you realized you could make a living as a jewelry designer?

I knew it would be a process. Artists mostly flail and figure it out, over and over, so there’s not one ‘aha’ moment. There were many. I knew I could sell an item once or twice, but could I do it again and again? At the beginning, I had employees working at my studio while I was working at someone else’s studio for money. Like I said, if I was only trying to sell a thing, I could do that, but I knew I wanted to build a

business and a brand. I grew the business the old-school way, slowly and carefully, with a strong purpose and an eye on how we do everything. And when you look around your studio today, how do you describe your jewelry’s aesthetic?

That’s a tough question for me. I try not to define too much. I look at my work as object art: it’s jewelry and it’s wearable. Craftsmanship is the most important thing to me, and I love to play with texture, shadows, and shapes. And of course, it’s contemporary. We make 6,000 pieces a year, and each is unique. Each one is saying something. This one says, ‘I’m sexy.’

Speaking of telling a story, what do you think draws people to your work?

Let’s talk about your design process. Are you designing every day?

I don’t know. It’s a continuum. People use things for different reasons. People might be drawn to my work because they’ve been looking for something that fills the void of symbology. When they find us, they’re excited. There are people who want jewelry that has meaning past the object and price. For other people, they love our commitment to sustainability. My favorite is the romantic part. Women want to feel sexy and engaged; they want to rock something that is a means of self-expression. In other words, you can get a thing, or you can get a thing that makes you want to talk about it, or about your story. I think we’re all looking for connection, and I’m a living designer. That might appeal to people, and it’s certainly satisfying for me. I get to interact with people, fascinating people, and hear their stories, all the time.

Yes, every day. I’m always drawing, seeing if an idea is going to take root, but the designs I do every day aren’t necessarily pieces that will become jewelry. I have my own passions and desires that I have to express through art. As for the jewelry, there are two versions of what drives my design: there’s the romantic version, in which I design because it makes my heart race and I’m an artist. There’s the practical version, in which I design because we have 50 carats of diamonds that need to be used. I do them both, and I do them both with gusto. I’m young and I’m into it: I don’t feel like design is the issue. The issue is mostly production capacity. I’ve got enough design to sink ships.

And plenty of those people are celebrities. Why not work in LA or New York? Why do you choose to live here?

It’s my home. I like the landscape. I like the quiet energy. I travel a lot, so I get to go a lot of places, but this feels the best to me. My inspiration comes more from the natural world than the manmade world, and here, I’m closer to light and shadow and earth and tone. I’ve always kept a showroom in LA, and I have an apartment there. Here, I’m riding bikes with my 12-year-old daughter and playing golf, hanging out with people who have similar value structures. I feel good and open here.

You say publicly that you want to create jewelry that’s humble and powerful. What does that mean?

The humility part is restraint, especially when it comes to luxury. I prefer humility in the arts, which has been utterly missed. There’s this idea that bigger, better, glitzier is best. I don’t want to have to use every trick I know to create something that people respond to. The power part—I think there’s a ‘speak quietly and carry a big stick’ element to my work. Jewelry has some value beyond how it looks. It means something, and that’s powerful if the meaning is genuine and reflects something true about the person wearing it. ost empty nesters, when faced with the prospect of purchasing a 1965 Classic Ranch Revival with a tiny kitchen, low ceilings, and two unwanted swimming pools, would turn and run. While the property’s mature trees, breathtaking views, and surrounding golf course were certainly the lot’s best features, the owners also saw a glimmer of promise in the dated home—a place where they could entertain their large family and welcome their grandchildren for holidays and celebrations. “Our clients had great vision, and the fortitude to go through with it,” says Californiabased interior designer Jan Turner Hering. “They were very brave.” The couple assembled a team of talented professionals: architect Paul Mahony of KGA Studio Architects, Matt Bondarewicz of Bond General Contractors, and Hering of Jan Turner Hering Interior Design. The challenge, Bondarewicz says, was building a home “that was fitting for such a special piece of property while trying to utilize as much of the existing structure as possible.” The team, with their open-minded clients, Hering says, forged the best possible combination. “We all brought various pieces of the puzzle.”

Once an upper-level addition and the indoor and outdoor pools were removed, the team began reimagining what Hering called “the most classical 1960s house with pink toilets.” Mahony transformed the main and second floors, filled with many tiny, low-ceilinged rooms, into a voluminous, open-plan main level where the living room, kitchen, and family room congregate without division. “We applied a modern twist to a classic style so that it works for today’s lifestyle,” Mahony explains. (above) The lower level media room mixes the glamorous look the homeowners wanted, with an added note of comfort. “Here, we turned to textures and things that would give great serviceability with family,” designer Jan Turner Hering says. A showplace kitchen, centered around a large island, caters to the owners’ lifestyle and love of entertaining. It’s a grand space with furniture-like Christopher Peacock cabinetry in a mix of painted and wood finishes, honed Carrara marble countertops, and a backsplash of slate tiles. The luxurious design modifications continue in the main-floor master suite, where Mahony created a bedroom and bath with vaulted ceilings and a large closet. “The original master bath was actually in several rooms with the tub separated from the bath,” he recalls. Today’s version offers a single space with a curbless shower, his-and-her vanities, and a tub for soaking while also soaking in the mountain views. On the lower level, two new guest suites take the place of the indoor pool, welcoming visitors, while “the outdoor pool was replaced with an expansive entertainment patio,” according to Mahony. A recreation room paneled in sequenced quarter-sawn white oak is the media and gaming hub of the home, perfect for time with the grandkids. In the end, the home is not only welcoming; it also earned a Platinum rating for residential design excellence from the National Association of Home Builders’ Best in American Living Awards. It’s a space that will see a lot more happiness in years to come. “The homeowners were designing for themselves,” Mahony says, “but with the idea that the home should pass down through future generations.”

The one-of-a-kind dining table was made from an old maple tree that once graced the grounds of Boulder High School. The homeowner explains, “A guy named Billy worked with us to build the table, which is based on a classic Nakashima design. We call it our Billy Nakashima table.” It is surrounded by Niels Møller chairs from Design Within Reach and topped with Fungi vases from HW Home. n the foothills high above Boulder, on the crest of a ridge near Sunshine Canyon, there’s an elegant gem of a house tucked into the woods. While the land may be raw and undeveloped, this small home with great big views is an exercise in sophisticated simplicity. Architect Stephen Dynia, of Denver- and Jackson Hole, WY-based Dynia Architects, designed the house, and he was happy to help his clients realize their request for a restrained aesthetic: “This house has a monastic modesty to it,” he says. And that’s just what the homeowners had in mind. While the clean lines of modern design inspired them, they also felt drawn to the warmth of natural materials and time-honored Western motifs. So the home’s oxidized steel cladding is an elegant reference to the rusted sheds of the Old West, and the rough, corrugated exterior walls recall the weathered bark of ponderosa pines. Blending into the landscape was a priority from the start. The homeowners were adamant about respecting their natural surroundings, and they felt that having a well-integrated

house with a compact footprint was an important aspect of living lightly upon their 35-acre property. With eastern, southern and western exposure, the site offers views of the plains, the city of Boulder and the Front Range foothills, and even the frosty peaks of the Continental Divide. Inside, the home is filled with light. “We wanted light from every time of day to reach virtually every room in the house,” the homeowner says, explaining, “The simple geometry of the house—one large volume enclosing a smaller interior volume for private rooms and storage—allows light to pass through the house as if it were transparent.” The effect is magical, creating what the homeowner describes as “a lovely projection of sunlight and tree shadows on walls.” Dynia framed the spectacular views and welcomed the Colorado sunshine with generous rows of high-quality, energy-efficient windows. “You feel like you’re outside,” the architect notes. Since they live in the middle of a forest, the homeowners made some commonsense (and down-to-earth) decisions: the home is heated by a wood-burning boiler; the living room is warmed by a wood-burning stove; and the family—and friends—are often fed by a wood-burning oven. When a home is this unadorned, the choice of materials needs to be meticulous. Here, the floors are concrete, which is beautiful and functional at once, allowing radiant floor heating and providing a large thermal mass to maximize passive solar gain. The ceilings are finished with a handsome, clear-coated hemlock. As the homeowner explains, “Instead of putting beautiful wood on the floor, The airy and bright living room keeps cozy in winter thanks to a stylish Italian woodburning stove. Built-in bookshelves climb one wall, while huge windows open up the home’s interiors to the light and the forest. where it would get worn down and would interfere with the thermal functions of the underlying concrete, we put it on the ceiling.” Dynia designed the narrow, 2,300-square-foot home as a series of eight 12-foot bays, and that strict governing geometry lends a serene clarity to the open and airy interior spaces. “The order of the house is comforting compared to the disorder of nature,” Dynia observes. The home’s private areas 68

are divided into three modestlysized “chambers,” comprised of the master bedroom, study and child’s room, each measuring “barely 12-by-12.” The living room, kitchen and pantry flow together as a unified and functional space. The homeowners love to cook, and they had clear ideas about their work area, so the kitchen was the focus of intense design discussion. “They wanted simple functionality,” recalls Stephen Dynia, “to see

stuff and have it available.” Open shelves hold essential items that are frequently used, and an enormous island affords an expansive butcher block surface above and ample storage below, leaving room for a couple of stools as well. Unadorned maple cabinets and honed Carrara marble provide a fresh counterpoint to the rusted metal accent wall behind the cooking area. Though its sleek minimalism may look effortless, there’s a great

deal of calculation behind the home’s clean, contemporary design. “Simplicity gets there through a very busy process,” Dynia notes, praising the homeowners’ clarity of communication as an essential tool for building a fruitful collaboration. “The simplicity of the house highlights the eccentricities of nature,” he remarks. And with a Colorado landscape this extravagantly beautiful, it’s a worthy tribute.

Denver interior designer Amy Corrigan shows what it takes to turn an empty box into a modern family cottage

hen interior designer Amy Corrigan spotted a charming little cottage on a grand lot in Denver’s stately Cherry Hills neighborhood, she knew she had to have it. Washington, D.C. back to her hometown of Denver to start a family. “We wanted to bring the home up to par with the rest of neighborhood; to bring it back to its historic look with classic moldings and fill it with pieces I’ve been collecting since college.” And so they hired architect Steve Barsch and embarked on a year-long renovation, gutting the interior and creating large, open spaces that work for a young, modern family. “This project was great because we started with a clean state,” Corrigan explains. “We had an empty box, nothing to lead the design, and were able to start fresh.” And while she loves finding furnishings and collecting antiques and pottery, Corrigan admits that her first passion is trim work, moldings and hardware. “I think before you can fill the home with treasures, you have to start with the architecture.” Once the bones were set, Corrigan made a surprising choice in finishes. Although ebony-stained floors are the current trend, she went with a light hardwood as the foundation on which to arrange her collected furnishings. “I love French antiques and tapered legs; it’s nice to showcase them on a lighter floor.” That lightness, along with large windows, bright-white moldings and classic, neutral upholstery throughout the home, balances the darker furnishings and layers of collected treasures. that Corrigan, a business owner and mother of three small children, wanted. “We live a chaotic, busy life so I like to come home to this peacefulness.” But for all its quiet comfort, the home certainly isn’t lacking in personality. Corrigan’s fondness for the concept of “high-low” decorating—mixing heiroom-quality designer pieces with more wallet-friendly items—is apparent in virtually every room. A Dessin Fournir table surrounded by Ikea chairs in the formal dining room, and a Lamps Plus chandelier mixed with Brunschwig fabric-upholstered walls in the nursery, are just a few examples of the designer’s flair for matching the grand with the humble. A completely reconfigured upstairs made way for a large-yet-cozy master bedroom. Although the room is entirely new, the dormered ceiling and fireplace make the space appear as though it was original to the house. Corrigan designed the headboard and covered it with dark green fabric, then worked her high-low magic, filling the room with new and collected pieces. The vintage trunk sits on an Ikea table, while the leaf prints above it were found on eBay and framed. “I love my bedroom,” says Corrigan. “It’s not terribly neutral, but it’s soft and calming.” Corrigan says she’s ecstatic with the results and with the way the home works for her young family. “We’ve lived here for four years and we absolutely love it. It’s light, clean and classic, and really fits our lifestyle.”

hen architect Richard Mullen and his interior designer wife Barbara, principles of CarolineEdwards Interior Design in Aspen, decided to build a home on property they’d owned for five years, they discovered a level of personal and professional joy they’d not experienced before. “We love working with our clients,” says Barbara, ”but to do a project for ourselves was the best. We had a great time making decisions together, selecting pieces, fulfilling our wish lists.” Though the architecture of the house went through many permutations before its current incarnation, the 81

Mullens knew it was worth the process to arrive at just the right orientation for the narrow lot. “The home is two boxes—one is the garage, and the other is the living quarters, joined together by a mudroom,” explains Barbara. The goal was to maximize the square footage because the family of three entertains often and wanted the main level to flow from living room to dining room, through to the kitchen and outdoors. High on the must-have list was a great kitchen, where Richard is the chef. “I wanted to be able to prepare a meal while being part of the party,” he says, adding that although the kitchen is a stunning example of clean lines and minimalism, it was designed to be used, not to be a showpiece. The counters are Calcutta Gold marble and show the patina of five years of daily use. “We are not perfectionists,” explains Barbara. The star of this space is Richard’s Wolf range. “Once you cook on one of these,” he says, “you’ll never want to cook on anything else.” 83

One of Barbara’s great contributions—after living with the kitchen for a while—was to add a ten-foot sofa against a wall of windows that face the island. It makes for a great quiet corner or a gathering place for guests who want to sit and chat. White walls predominate throughout the first floor, but the home is anything but colorless. Barbara loves mixing up bright colors, nowhere more obviously than in the living room, where orange, chartreuse, yellow, blue and green all play well together. “I can’t exactly say how I knew they all went together,” she says. “It was more trial and error.” In lieu of elaborate architectural details, the Mullens opted for judiciously placed decorative touches. The stair railing near the dining room is one such example, as is the yellow trellis wallpaper in the guest bathroom. “We added these in places where they would surprise and delight,” says Barbara. As projects go, this was a dream, created by a dream team of two who just happened to be their own dream clients. Or, as Barbara simply concludes, “We did it right. We got exactly what we wanted.”

Two Boulder County communities that sprung up during the late 1800s as coal mining camps offer small-town charm at affordable prices.

Today 100-year-old wooden buildings line Main, Front and Pine streets in the community’s historic downtown. The area is home to more than 100 businesses, including restaurants, stores and a variety of professional services. The town also has a thriving art scene, with galleries studios and live music almost every night of the week.

Louisville and Superior are part of the Boulder Valley School District, which consistently ranks among the top three of Colorado’s large front range school districts. Founded in 1877 with the opening of the Welch Mine, Louisville is named for Louis Nawatny, who platted his farm into the town. Coal miners moved to the town to work in the new, safer mine. When the

Rock Creek also boasts approximately 27 miles of walking paths and about 594 acres of open space. The median price of homes sold during the first half of the year in Louisville and Superior was $473,500. This is more than $200,000 less than the median sale price of homes in Boulder at $675,000, and Boulder is just five miles away.

“With both towns being just outside of Boulder, you get the best of all worlds and a little bit more for your money,” Mygatt said.

Chef Rob Zack was drawn to the

Rocky Mountains as a young man, and has been cooking for hotel guests from Telluride to Snowmass ever since. Now he’s come full circle as the Executive Chef of Aspen’s Hotel Jerome, the place where he started his career as a line cook 20 years ago

hio native Rob Zack says that he started cooking by accident, but once he tells the story of his farmer grandfather who made his own wine and could whip up a mean linguini and clam sauce, it comes to seem that preparing good food is in Zack’s blood. “I love the creativity, discipline and process of cooking,” Zack explains. “And I enjoy bringing people together and creating an emotional experience. Few professions can do that.” When Zack was presented with the opportunity to take over as Executive Chef for the newly-renovated Hotel Jerome, he jumped at the chance to return to the place where he started as a line cook 20 years ago, and relished the opportunity to renovate the menu to match the freshened-up historic landmark. “We offer everything from great burgers to high-end steaks in Prospect restaurant, and the J-Bar is a hip place to have a cocktail and an appetizer.” Along with new food items, Zack has dug through the archives and brought back some old favorites that are once again popular with a new clientele. But Zack’s philosophy for all his dishes is the same: Use fresh ingredients and prepare them correctly. “Instinct is important to cooks,” Zack says. “The ultimate success is when people come back.” COLORADOHOMESMAG.COM

taste garlic, thyme, and peppercorns to a syrup and reduce by two-thirds. Strain the syrup and add to the blender with the liver and cream and puree until smooth. Add the salt, white pepper, and pink salt. Lightly warm duck fat and butter together. Slowly blend the fat mixture into the liver, cream and vermouth mixture. Blend until completely smooth. Fill small mason jars one-third of the way up with the liver mousse. Place jars in a cake pan. Pour hot water into pan to reach halfway up the jars. Cover the pan with aluminum foil. Place in the oven and bake for 15 minutes or until the mousse is set. Cool. Bloom the gelatin in a large container of cold water for five minutes. Drain. In a medium saucepan warm the marsala and water. Add the bloomed gelatin and stir until dissolved. Pour over the chicken mousse to form an 1/8-inch layer. Cover jar and store in refrigerator.

Tuna Confit with Pepperonata Jam Tuna Confit 2 quarts water 1½ cups salt 3 tablespoons granulated sugar 2½ pounds tuna, trimmed of skin and cut into 1-inch pieces Extra virgin olive oil Combine the water, salt, and sugar in a mixing bowl. Stir until the salt and sugar are dissolved. Place the tuna in the brine and refrigerate for 24 hours. Drain the tuna and rinse under cold water. Pat dry. Place the tuna in a glass dish and add enough olive oil to cover the tuna. Preheat a water bath to 124 degrees F. Submerge jar in water bath and cook sous vide until the core temperature of the tuna pieces reaches 122 degrees F, approximately one hour. Remove the jar and cool in an ice bath. Store in refrigerator until ready to use. Lasts up to three days. Pepperonata Jam 2 cups minced red onion 4 red peppers, roasted and diced 4 yellow peppers, roasted and diced 2 minced garlic cloves 2 teaspoons salt 4 tablespoons capers, rinsed of salt and minced 2 tablespoons granulated sugar 2 tablespoons pectin 1 cup red wine vinegar Saute red onion over medium heat in a bit of oil until soft, approximately one minute. 142 C O L O R A D O H O M E S M A G . Add peppers, garlic, and salt and cook an additional two minutes. Add the capers. Mix the sugar and pectin together in a small mixing bowl. Add sugar mixture and the vinegar and cook for two more minutes. Remove from heat and cool. To serve: Portion out chunks of the tuna into individual appetizer-sized dishes and spoon some of the tuna oil over top. Cover with a generous spoonful of the pepperonata jam and top with spicy sprouts. Serve with crispy flatbread.

Chicken Liver Mousse with Carrot Marmellata Chicken Liver Mousse 2 pounds chicken livers, trimmed Milk 2 cups heavy cream 2 cups sweet vermouth 4 shallots, minced 2 garlic cloves, minced 4 fresh thyme sprigs 10 black peppercorns 1 teaspoon salt 1 teaspoon ground white pepper 2 teaspoons pink salt 1 pound duck fat 1 pound butter 1 cup marsala wine 1 cup water 8 sheets gelatin Place chicken livers in bowl and cover with milk; let soak for two hours in refrigerator. Preheat oven to 250 degrees F with a low fan. Rinse soaked livers and put in a blender with the cream. In a pan over high heat, combine vermouth with shallots,

To serve: Quarter a fist-sized burratta and place pieces in individual appetizersized dishes. Top with a generous tablespoon of pistachio pesto. Garnish with fresh sage or mint leaves.

Carrot Marmellata 1 cup orange juice 1 cup carrot juice ⅓ cup lemon juice 2 cups grated carrots 1 teaspoon grated ginger 1 cup granulated sugar 1 teaspoon kosher salt 1½ teaspoons pectin Combine first three juices and 3/4 cup sugar in saucepan and heat to simmer. Add grated carrots and ginger and cook over medium heat for 20 minutes. Strain out liquid, reserving carrot. In separate bowl, mix pectin and salt with remaining sugar and slowly whisk in warm liquid to prevent lumps. Place carrots and liquid back into saucepan and simmer, stirring constantly until thick consistency. Cool completely. To serve: Place a generous spoonful of the Carrot Marmellata on top of each pot and sprinkle with just a pinch of fresh thyme leaves. Serve with crispy flatbread.

Burratta Cheese with Pistachio Pesto

Burrata is a fresh Italian cheese, made from mozzarella and cream. The outer shell is solid mozzarella while the inside contains both mozzarella and cream, giving it an unusual, soft texture. Pistachio Pesto 1 cup shelled pistachios 2 tablespoons minced parsley 1 tablespoon minced sage 2 tablespoons minced mint Zest of 2 lemons 2 minced garlic cloves 1 cup extra virgin olive oil 3 tablespoons grated parmesan cheese Pinch of chili flakes Salt and pepper to taste

Sweet Pea Hummus 2 cups fresh or frozen peas 1 cup heavy cream 1 sprig fresh oregano ½ cup canned chickpeas, drained and rinsed ½ cup spinach leaves ½ cup mint leaves ¼ cup sour cream 1 tablespoon lemon juice ½ cup extra virgin olive oil Salt, pepper and sugar to taste Combine peas, heavy cream and oregano sprig in a small saucepan. Heat to a boil and simmer until peas are tender. Drain the cream and remove the oregano sprig. Cool. Place peas in a food processor with chickpeas, spinach, mint, sour cream and lemon juice. Puree to a smooth paste, slowly adding olive oil. Remove from the food processor and season with salt, pepper, and sugar. To serve: Divide hummus into individual appetizer-sized dishes and spoon some Carrot Marmellata over top. Garnish with minced chives and serve with toasted ciabatta bread cut into ¾-inch sticks.

J-Bar Spicy Edamame 2 cups frozen edamame, thawed 3 whole shishito peppers 1 teaspoon garlic, minced and stored in oil 1 teaspoon sashimi togarishi ¼ teaspoon chili flakes 2 chilis arbol 2 teaspoons black and white sesame seeds, mixed 2 ounces water Salt to taste Place a 10” saute pan over high heat. Make sure the pan is very hot and add the shishito peppers. Char on all sides. Add the edamame and char on all sides. Add the garlic and oil, shashimi togarishi, chili flakes, chili arbol, and sesame seeds. Cook 1 minute and add the water. Cover to steam one minute. Serve in small serving bowl.

Aspen Crud

So easy, but so, so good. 3 scoops French Vanilla ice cream (such as Hotel Jerome’s freshly churned ice cream) 2 one-ounce shots bourbon Place ice cream in a blender and add shots of bourbon. n the same way the majestic mountain landscape of Ouray draws frequent comparison to the Swiss Alps, the 32,000 acres of sprawling vineyards centered around the Western Slope town of Palisade could be considered Colorado’s version of French wine country. But in fact, the Grand Valley American Viticultural Area (AVA)—as it is officially called—is a wine region unlike anywhere else in the world. What makes the Palisade area so suited to wine-grape growing? The high altitude, river influence, rich soil and mountain breezes create the region’s specific terroir, or the unique environmental conditions that one intrepid winemaker recognized as far back as 1890, when he planted the region’s first small vineyard in Grand Junction. The first winery license was issued to Palisade’s Plum Creek Winery in 1984; today, 21 tasting rooms in the area are open to the public. Wine country-proper stretches roughly twelve miles along the Colorado River, from the mouth of De Beque Canyon to Grand Junction. A surprising number of first-generation winemakers manage these vineyards. A cattle herder, investment banker and ski coach are among the diverse mix of individuals who left steady jobs to live out a dream in the Grand Valley. But

with a glass of red during “Waterfall Weekend.” Guests at this two-day event have front row seats when the winter’s snowmelt briefly transforms into more than a dozen beautiful waterfalls cascading over Grand Mesa, the largest flattop mountain in the world. In late summer, tickets to the “Feast in the Fields” harvest celebration are much coveted. As if dining smack in the middle of an orchard isn’t enough of an olfactory delight, attendees are treated to a mouth-watering four-course meal prepared with local produce and paired with local wines. Regardless of the season, it is worth carving out the time to swirl, sniff and sip at more than a few Grand Valley wineries—whether enjoying a glass of Cabernet Sauvignon at Maison la Belle Vie’s richly decorated piano bar or tasting Fumé Blanc in Garfield Estates’ renovated 1910 vintage barn. “Taste more than two,” Christiansen advises. “There is a wine for everyone here.”

HOW TO GET THERE: Fly into Grand Junction Regional Airport (GJT), or make the four-hour drive from Denver. Once in Palisade, visit wineries and local attractions by car, bicycle, private shuttle service, limousine or horse-drawn carriage. The easiest and best way to tour is by following signs for the Palisade Fruit and Wine Byway. There are three routes on this scenic drive, which highlight a wonderful array of wineries, fruit stands and orchards.

Colorado Chautauqua’s Higher Education Fresh air and big ideas have drawn crowds to Boulder since 1898, and they still come in droves today By Laura Beausire

ugging the base of Boulder’s iconic Flatirons, the Colorado Chautauqua is an old-style cultural and educational encampment and a revered National Historic Landmark. But perhaps just as importantly, it has been an uplifting touchstone for generations of visitors. “The most American thing in America,” is what Theodore Roosevelt called the Chautauqua Movement, which took the U.S. by storm in the late 1800s and early 1900s. Educators, musicians, politicians, philosophers and scientists spread out across rural areas, setting up tent camps and founding more permanent headquarters along the way. In the 1890s, when the Texas Board of Regents had the idea of building a summer school for teachers in cooler climes, they chose Boulder “for its spectacular mountain setting and its health-giving environment.” They opened the TexasColorado Chautauqua in 1898, to the applause of over 4,000 attendees. The initial six-week summer program was described at the time as “the most comprehensive intellectual retreat ever presented west of the Mississippi River.” A complex of buildings would eventually cover the 40-acre site, including a vast, barn-like auditorium, a popular dining hall with a lovely wraparound porch, an Academic Hall, Community House and 99 of the cutest little wooden cottages you could ever imagine, to accommodate visitors and guests. With popular hiking trails drawing an outdoorsy crowd, and concerts, theatre, dance and film events joining workshops and classes to fill the calendar, today’s Chautauqua is a busy place that still seems to exist in a gentler era. Maybe it has something to do with the vintage American quality of its Statement of Values: “The Chautauqua experience is based on lifelong learning, love of nature, voluntary simplicity, and music, oration and the arts.” May it never go out of style.
