How Do You Plan a Wedding? Once upon a time, we crossed our fingers and worried over wedding day weather, outof-hand uncles and the occasional seating drama. But a couple years into the pandemic and we’ve got a whole other list of concerns to work around to make our celebrations happen as safely and joyfully as possible. Despite shifts and shake-ups in the rules, corny as it sounds, love finds a way. Lucky for us, Humboldt County is a wedding destination largely because of our gorgeous natural landscape and outdoor wedding spots. Trends come and go but beach weddings never get old. We’ll walk you through what you need to start planning nuptials with an ocean view the right way — with all the permits and tips to keep your event running smoothly and our beaches beautiful. Taking the party outside can be a glass-halffull situation, especially if you’ve got a mobile bar service with a little personality. We’ll introduce you to a trio of Humboldt businesses that roll up to serve your guests from charming trailers with sweet, photo-worthy details and personal service. cide on more than just the chicken or the steak. Twenty-two-year veteran caterer Julie Winburn of Moonlight Catering has words of wisdom for anyone planning a big party. That includes budgeting, what’s practical in a remote location and how to make everyone welcome at the feast, whatever their dietary needs. More sound advice is coming your way from Canary and the Vamp, a band of seasoned musicians who know how to set the mood at a wedding. How far in advance do you need to book? What about special requests? Deep breaths — a little planning and you can have live local music at your event, something we’ve all missed. You can have a legal wedding on the beach if you do it right. You will know the moment you find the perfect one to take your vows on, but how do you start the process?

Who Owns Your Special Beach? If you can’t tell from signposts, a quick internet search will reveal if the beach is managed by the Bureau of Land Management (BLM), Humboldt County Parks or the National/State Park Service (NPS). Some coastline is controlled by U.S. Fish and Wildlife and other entities, but these are mostly wild places unsuited for nuptials.

Red Tape Beaches available for weddings require applying for a permit. Be aware that application fees are nonrefundable. NPS charges a base rate of $200 but BLM asks that you speak with staff. Additional fees may be required for insurance, special conditions or a large guest list. Check your email for application updates and be patient. It can take NPS up to three weeks to process your application and BLM up to three months — both reserve the right to revoke permits due to changing conditions because nature’s gonna nature. Humboldt County beaches are low impact and not set up for full weddings. You are allowed to pop in and off the beach quickly to say your vows, but call for approval.

wedding on the beach you’ve chosen. However, your permit does not reserve the beach itself since it has to remain open to the public. If you must get married exactly where The Question was popped, have a cousin or somebody stake out the spot at sunrise. They can relax in a beach chair as a wedding present to you. You Can’t Out-Decorate Nature Here is your chance to rein in your out-of-control mother who wants to over-festoon your special day. A beach wedding can be eco-friendly, low impact and minimalist. Your choice of beach limits what decorations are allowed. BLM may allow an arbor but NPS won’t allow anything, not even a shepherd’s crook. Balloons are forbidden. Everywhere. Just no. Likewise tossing rice, birdseed or anything but air kisses at the newlyweds. You are getting married on the beach because of its natural beauty. Use your decorations budget on the honeymoon instead. Who’s Ready to Make Some Non-Invasive Noise? Whether you can strut down the aisle to “Real Love” by Beach House depends on the specific beach you choose. The NPS and BLM have strict decibel guidelines to protect wildlife, and your submitted plan needs to include mentioning singers, musicians or any noise-making equipment. Fireworks are not permitted. The Wedding Album Your photographer is considered part of the wedding party, but their drone is not permitted on national,
state or county beaches. The Bureau of Land Management may allow them but only under special conditions. The coast hosts breeding colonies for millions of birds, so there is real need to tightly control airspace. Family and Friends Your guest list must fit the beach you choose. Some can hold only an intimate ceremony of six people. Facilities can be a single portable toilet or none at all. Make sure guests know if they need to pay a day-use fee. Remote beaches will be out of cell phone range, and it is illegal to post signs or balloons for guests to follow. Give them personalized maps with directions just in case. Your beloved fur baby won’t be allowed at Agate Beach but can bear your rings tied to their collar at Ma-le’l Dunes. Don’t forget waste baggies for four-legged guests and observe leash regulations to avoid citations. Uninvited Guests Bear in mind that choosing a public setting for your wedding makes your wedding public, too. Permits will not stop a wandering, errant dog from sniffing the bridal party on your special day. A stranger photobombing the exchange of rings is not what you planned but it is possible. Also possible: Their photo goes viral making your wedding even more memorable. The Locals The wild nature of Humboldt’s beautiful beaches attracts wooing couples be they human, feathered or flippered. The NPS application includes a Threatened and Endan-

gered Species Addendum. Rangers take their conservation mission seriously. Make sure your happy day stays happy and stop crazy Uncle Harry from taking selfies with stressed-out seals. Have Your Cake and Eat It, Too Who wouldn’t like a little wedding cake topped by a plastic couple couched in soft buttercream? Well, NPS beaches do not allow alcohol or caterers and discourage any food. But you can still eat Great Aunt Sylvie’s traditional ham sandwiches in the day-use areas. BLM allows cake and a toast, but no receptions. You don’t want your guests to drive coastal roads while lit so book a reception hall. After the Vows Congratulations! As you and your guests leave the beach, you notice that everyone is carrying out everything you brought in. The last thing you need at your wedding is a hangry crowd — or worse, a hangry partner. To keep your tummies from grumbling after you say your “I dos,” consider hiring a reliable caterer to take the meal-planning burden off your plate. Julie Winburn, owner of Moonlight Catering in Fortuna, has prepared food at weddings across Humboldt County for the past 16 years. She offers insider tips on budgeting, creating menus for picky guests and forming a relationship with your caterer.

Planning your meal Winburn begins every wedding job by interviewing the couple to discuss location, dietary restrictions and timelines. This planning meeting should happen at least 10 months in advance, especially if you are a bit of a bridezilla/groomzilla. After the initial interview, Winburn follows up with clients about three to four weeks before the wedding to ensure there are no last-minute changes. Scheduling early also ensures you secure a reservation. Winburn said she is completely booked up for 2022 and 2023 because of how many weddings were postponed due to the pandemic. The sooner you get started, the better. This doesn’t mean Winburn isn’t open to planning wedding meals on the fly if she has room in her schedule. One couple she talked with recently is getting married in three weeks. As long as the couple is “chill,” a quick turnaround is no problem.

“You tell me what you want, I will get it, I will purchase it, I will make it, I will serve it, I will clean it and you will be happy,” Winburn said. Budgeting Couples should be prepared to budget at least $25-$30 per guest, according to Winburn. For $29 per person, you get your choice of three entrees (chicken, beef or vegetarian), two sides, three salad choices and three appetizers from Moonlight Catering. But keep in mind that costs can increase for those planning an outdoor wedding. “More and more brides are getting married in the middle of fields, where there’s no kitchen and there’s no running water,” Winburn said. “When those types of jobs happen, I have to be able to find a commercial kitchen to rent to be able to prepare everything.” Winburn charges an extra fee to cover kitchen rentals for remote weddings, so couples should factor that into their budgets if they plan to tie the knot and serve dinner outdoors. She said open-air weddings also affect the available menu options, which in turn affects the price. “In the middle of a cow field, you’re not getting twice-baked potatoes for 400 people because they don’t fall out of the sky, warm, on the table,” she said. While $25-$30 is the average charge, Winburn does her best to accommodate smaller budgets. She once planned a meal for $13 a person. “It was fabulous,” she said. Obviously, they
“This is about your day.” didn’t get filet mignon, said Winburn. “I told them it shouldn’t be about the food — well, I shouldn’t say that, because I’m a caterer — but this is about your day. The food is a bonus for your guests.” Consider dietary restrictions If you plan on hosting guests with dietary restrictions (gluten-free, vegan, vegetarian or lactose-intolerant, for example) make sure you discuss this with your caterer. For vegetarians, she recommends a manicotti. Moonlight Catering even offers a separate children’s menu, complete with kid-friendly favorites such as mac and cheese and chicken nuggets for picky little eaters. “The biggest challenge is trying to make sure that there’s something that every single person can eat,” she said. Have multiple types of proteins Moonlight Catering’s specialties include barbecued tri-tip, barbecued raspberry chipotle pork tenderloin and barbecued chicken. “We do a lot of barbecue,” Winburn said. “In our area, it really is the most popular.” This is Humboldt County, after all. Winburn always recommends the tri-tip but said it’s a good idea to have more than one type of meat on your menu — a beef and pork pairing or a beef and chicken pairing — to make sure there is something for all the carnivores. “I might be a tiny bit biased but my husband 19

does an amazing job at the barbecue,” she said. “You can almost cut the tri-tip with your fork. ... I guess after 20 years he’s got it down.” If you need to cancel The last thing any couple wants to think about when planning a wedding is the possibility of canceling but COVID-19 has made many people ultimately reconsider their timing, and sometimes life just throws you a curveball. Winburn caters about 18 to 20 weddings per year. But because of the virus, last year that number dropped to a mere seven weddings. Since the pandemic began, she has had over 42 cancellations. If you decide to cancel your catering services, Winburn suggests letting your caterer know at least two weeks in advance. “I start purchasing items two weeks before,” Winburn said, and couples will have to pay for supplies at that point. “Otherwise, I don’t charge anybody. I don’t keep any deposits. We just roll it over for when it does get to happen.” No matter the timing or budget of your wedding, Winburn gives all couples the same piece of advice that transcends the dinner table. “I tell each one of them, ‘This is your day. You enjoy it how you want to enjoy it, you plan it how you want to,’” she said. “The important thing they need to understand is, this day is about them, not about their mother, mothers-in-law, fathers-in-law, bridesmaids. Sweet, timeless wedding tunes By Collin Yeo • Photographs by Dave Woody Live music has been a dicey proposition for the last two years and nobody understands this more than the small population of diehards who make up Humboldt’s gigging musician scene. In an area where the live gig economy has always been tough to navigate, many groups found themselves high and dry as a result of the ongoing pandemic. Just ask Beverly Twist, formerly of torch song and jazz manouche group Belles of the Levee and currently serving in the Americana swing quartet Canary and the Vamp. “We started the group in 2019 and had a few gigs under our belts before the pandemic,” says Twist. “We took a hiatus for much of it, but have been able to play a few outdoor events and streaming shows here and there.” Canary and the Vamp is a local supergroup of sorts, featuring guitarist Ryan Roberts and upright bass player and vocalist John Ludington from the popular indie grass jam act The Absynth Quartet, 23

new member Aleister Paige from The Handshakers and Rooster McClintock on pedal steel, and Twist, who, in addition to vocal duty, plays guitar, banjolele and even some light trumpet. “I realized that there were some parts that needed a trumpet so I just kind of picked it up,” says Twist, smiling. “I figured it’s easier than hiring a trumpet player.” The original trio of Roberts, Ludington and Twist all came together with a shared vision of playing music that harkens back to the heyday of hot club jazz and the Tin Pan Alley songbook, a sound that Twist describes as, “If Ethel Merman and Django Reinhardt had a baby.” Her previous band Belles of the Levee drew inspiration from a similar aesthetic and was popular locally for its celebration of a lost era of music performed in a fashion that was as catchy as it was accessible. With Canary and the Vamp, the sound and vision has expanded. The recent addition of Paige on pedal steel allows the group to add a little country western swing to its wardrobe. Knowing that they needed a good name, Twist looked to a source that seemed like an obvious choice: The Cab Calloway Dictionary. “I was looking at all of these jazz slang terms from the 1930s and I just sort of landed on those two words. ‘Canary’ means a female singer, while ‘vamp’ was a word for a woman of questionable morals. A vamp is also a musical term for a passage of notes, so it works both ways as a name. When we came up with the name Belles of the Levee, it was from an old reference to prostitutes but we thought it sounded pretty. Canary and the Vamp is kind of similar.” The band’s repertoire is mostly built on covers from the early-to-mid 20th century like “Ain’t He Sweet” and “The Lady is a Tramp,” but there are some original tunes thrown in there as well, including a bossa nova and a tango. The band in general has a very dance-friendly sound, which is perhaps a little unusual for a group without a drummer. They have also incorporated some light-hearted crowd pleasers like “The Beer Barrel Polka” and “The Pennsylvania Polka.” Twist notes, “They’re sort of cheesy songs but

they are special songs. People still want to hear them so they have a lasting appeal.” Because of the timing of the group’s formation, they were only able to play one wedding before the era of shutdowns and postponements set in. However, they all have extensive experience playing weddings with their other respective groups and Twist enjoys the experience. “Weddings are fun, people are happy, you’re never the center of attention like at some other shows; instead you are adding to the general ambiance and good feeling, and they don’t go as late as club shows so you’re not totally wiped out afterward.” To any prospective clients looking to book a band for a wedding, she suggests (as with everything else involved in planning a big event) they book at least three months ahead. Any special requests for the setlist should be handled as early as possible, too. But with the right band, the process will be very stress free and easy. Talking about playing weddings and booking shows in advance brings up the subject of the future, specifically what Canary and the Vamp has had pinned to its vision board. “We’ve started to practice together again with an eye toward gigging more soon. We’re definitely going to record — Ryan owns a studio so we really should be recording soon. And we may be playing a celebration of life soon as well. Co-owners of this bar in a converted horse trailer Kara Bennett and Hailee Nolte had bartended together for a couple of years when the COVID lockdown came in March of 2020. Suddenly, they had a lot of time on their hands and family celebrations on the horizon to figure out. “We thought about what the climate was gonna be for get-togethers with COVID,” says Bennett. They rightly predicted many parties would be moving outdoors and decided a mobile bar business as the way to go. After considering cargo and travel trailers, they found a partially restored horse trailer on Craigslist they could customize into a bar. Nolte’s partner Shane and Bennett’s husband Dan converted the interior and installed the draft system. Now the small trailer that once moved a horse or two at a time has handwashing and dishwashing sinks, hot water and power sources, and can accommodate up to five taps. “Most of our weddings we’ll do one or two signature cocktails,” says Bennett. Popular options are the Pink Pony, which is a pink lemonade with herbs and local vodka, Spa Water with cucumber and St. Germain, and myriad variations on the Moscow mule. She and Nolte meet and customize drink menus with clients according to their tastes, but they try to promote local beer wine cider and liquor. The Pony Keg has set up mimosa bars, Bloody Mary bars and tequila bars. “We really are having fun doing it.” →

Paloma Celebrations www.palomacelebrations.com On Instagram @palomacelebrations On Facebook Paloma Celebrations (707) 572-5131 Simcha Mendle and Sierra Turner had been friends for years before they started their business and launched the Paloma, their compact, cheery bar in a caravan. Turner had worked in the wine industry in Napa and Southern California, and she and Mendle were seeing mobile bars growing in popularity in Australia and the U.K. It
seemed a perfect fit for Humboldt, according to Mendle, who notes, “Nature is our biggest draw to this area so why not have something we can tow and bring to the outdoors?” At their weekly prosecco happy hours, they developed a business plan and settled on a custom-built trailer. Mendle, who’s 6 feet tall, appreciates a workspace constructed for her, as well as the freedom she and Turner had to pick out everything from the solid wood counters to the oversize window to the wall of copper tin ceiling tiles that offsets the copper
barware and overall vintage aesthetic. “We put out rugs and chairs and ottomans, and create this whole little vibe,” says Mendle. The Paloma’s three taps can accommodate beer, sparkling wine and kombucha, and Mendle and Turner have done coffee bars and other nonalcoholic menus for proms, as well as the usual bar offerings at weddings. The Box Bar @thehumboldtboxbar datso@thebox-bar.com (707) 499-3247 www.thebox-bar.com As an event planner for more than a dozen years, Datso Perkins knew what she wanted when she put together the Box Bar in 2018. “I was always setting up freestanding bars. It’s a lot of work,” she says. She bought a box truck from neighbor, gutted and plumbed it, rebuilding with local hardwood, easily cleaned linoleum walls and stainless-steel cabinets. The seven-tap system, triple-basin sink and big window mean she can
handle big events with multiple bartenders working together. Remote locations are no problem, either. “It’s completely set up so it can be used off grid,” with its own generator, LED lights and water tanks. Compared to the hour it takes to put together a free-standing bar, the Box Bar is open for service in about 15 minutes. “We pull up, we have a whole lounge set up … a couch, a coffee table and side table,” all of which can be customized to suit the wedding’s décor, says Perkins. The Box Bar also caters to couples’ tastes with custom designed signature cocktails to suit their palates. She’s also proud of her bartending staff. “We make a really good whiskey sour,” she
says, and everything is made from scratch, down to the simple syrups and hand-crafted Margaritas. “I’m a gardener so I have a lot of herbs,” she says. “We like to use local ingredients, fresh ingredients.” The taps are even set up for nitro-brew coffee, if your guests are fueling up for marathon dancing. Perkins has enjoyed how seamlessly the Box Bar has fit in with her event-planning business D. Perkins Events, as well as the way it’s allowed her to connect with the community. She’s hauled the 20-foot trailer to all kinds of gatherings like her local fire department’s annual fundraiser. “It’s really fun, the interior and the décor … really adds a lot to events.” ÷
