College is several years away for my daughter, and yet I’m already experiencing tuition sticker shock. (Don’t even talk to me about the fact that my baby will be leaving home.) So my ears perked up when Neapolitan Family co-publisher Stacy Nicolau told me that her daughter, Bella (a high school junior), opted to participate in the Accelerated Collegiate Experience at FGCU. This dual enrollment program allows high school students to get a jump on college and score up to two years of a FREE college education (and even free text books and student health services). If you think it sounds too good to be true, head to page 23, where our former intern (and now copy editor) Rebecca Barton shares her own dual enrollment experience. Rebecca will graduate from Florida State University this May, and spent her junior and senior years of high school studying full time at FGCU. For those of you with younger children at home, our expanded education guide continues to provide details on the area’s best preschools, but we’ve added in the top private and charter schools, as well as homeschool, special needs, and tutoring services. The directory starts on page 37. Did you get an Instant Pot for Christmas? I hope you didn’t decide to bring yours back to Florida in checked luggage, like I did. Mine may not be pretty anymore, but it functions. I’m still working out the kinks, and while I’m not sure it will ever achieve the “life-changing” status that I’ve been promised on Facebook, my Instant Pot has produced some delicious meals. Fort Myers Reading Festival Attracts Best-Selling Authors

ore than a dozen acclaimed and best-selling authors are coming to Fort Myers to meet fans and talk about their books at the 19th annual Southwest Florida Reading Festival on Saturday, March 3 at the Fort Myers Regional Library, located at 2450 First St. in downtown Fort Myers. Notable children’s writers include Michael Hall and Jennifer Ward. Scott Turow and J.T. Ellison headline the adult authors’ list, which also includes Patti Callahan Henry and Jessica Shattuck. Advice on Discipline, Activities Q: I can’t get my husband to agree with me about discipline. We have an eightmonth-old baby together, and he’s been the only dad my four-year-old and sevenyear-old boys have ever known. Where should I draw the line?
should draw the line, I’m not entirely sure what sort of discipline is on the table here. I pretty much draw the line at corporal punishment. To me, hitting seems like a last resort, and I’d rather not raise a hand to my children.
Amy: Okay, so here’s the thing. Kids are a lot more perceptive than we give them credit for. They can spot weakness from a mile away. If you and your husband don’t present a united front when it comes to discipline, they will exploit that vulnerability and use it to their advantage. I recommend that you and your husband sit down and come to some sort of compromise on what is and is not appropriate for the offense committed. Then the kids won’t have a weaker parent to commiserate with, and you both will be on the same page. As far as where you
Q: What are some fun activities you do with your kids at home? I’m running out of ideas for crafts. Amy: Eek. If you’re looking for craft ideas, you’ve come to the wrong place. I’m not really a crafty mom. Might I suggest Pinterest? When we’re at home, the older kids read, watch TV, play on their computers or Xbox, chat with friends, or go outside to play. As for my three-year-old, he enjoys imaginative play, puzzles, Play-Doh (Lord help me), coloring, painting, snacking, and watching TV. Sometimes the boys
like helping me cook dinner or assisting me with sorting socks (aka the bane of my existence). I try to keep their at-home schedule less structured because they have so many structured activities after school. Besides all three being in soccer, they also attend religious school, and each has music lessons. I hope that helps. The Lion’s Paw by Robb White
T
he Lion’s Paw is about a runaway boat, the search for a mysterious seashell, and one boy’s loyalty. What if you could sail away from your regular life straight into an adventure? In The Lion’s Paw, by Robb White, two South Florida kids escape an orphanage and sneak down to a harbor. They had always dreamed about being sailors, so they slip quietly through the dark onto a beautiful sailboat. There they fall asleep. In the morning, they find themselves in the middle of an action-packed journey with 16-year-old Ben, who is on a mission to protect the boat that belongs to his military father. Before his dad left for the Navy, he told Ben to find a rare Lion’s Paw seashell. After hearing the news that his father is “Missing in Action,” Ben casts off for Captiva Island, away from his mean uncle, who wants to sell the boat. With his new friends, Nick and Penny, he sets sail with the Coast Guard chasing them. Will they escape to find the Lion’s Paw and to rescue Ben’s missing dad? This is one of the best historical fiction novels I have ever read. I loved reading about local places in a book, like Boca Grande and Fort Myers. It also includes information about shells and local animals. It was written a long time ago, but The Lion’s Paw feels new, like it could have happened in 2018, except there are no iPhones. I recommend this book to readers who like adventure. I really enjoyed the characters. Ben was strong, confident, and loyal, but Nick was
re-released it because so many people wrote to them asking for it. In fact, Bookfinder. com ranked it as the most requested out-ofprint children’s book. On Amazon, 161 out of 167 reviewers gave it five stars. Robb White was also a screen writer for films. He wrote 27 books. Many of his adventure novels are about young heroes working as a team. I was sad to read that Robb White died in 1990. He was an author I would have really liked to meet. I’m planning to read all of his other books. I don’t recommend actually running away from normal life to go on a crazy sea adventure, but you can do it over the weekend when you read The Lion’s Paw. my favorite because I could relate to him. He was 9. He never gave up, no matter what, like when he wrestled an alligator. At age 12, Penny was a good sailor and a cook. She was also strong and tough and she took care of her younger brother. It was an interesting read because they were always on the move, being chased. It was fast paced. It is a classic, my mom says. Which I think means a lot of grown-ups read it when they were young. It has been out of print for a long time, but the family of the author has

HLE is Lighting the Way in Collier
A
lighthouse is seen as a welcoming structure, a reassuring sign of steady ground ahead, and an optimistic symbol of hope for all looking to move forward safely. Highlands Elementary School (HLE) recently was recognized as a Leader in Me Lighthouse School – the first in Collier County. With this designation, HLE is an example for other Leader in Me schools across the country and world. “This is an achievement that we didn’t think would happen until later this year, but because we have such stellar leaders, they jumped on the bandwagon and they wanted this more than anything,” said HLE Principal Laura Mendicino. As part of the Leader in Me program, students participate in leadership teams and classroom roles throughout the year. HLE’s goal is to give students the opportunity to meet others, work together on community projects, and strengthen their natural leadership skills in an area of passion. As Mendicino explained, there are more than 3,500 Leader in Me schools in the world, but only 350 are Lighthouse schools – 22 of those are in Florida, and now one in Collier County. HLE hosted a school-wide celebration to share the news with students, staff, and guests. “The fact that our students can light the path for Collier
County is extremely profound,” Mendicino stated. “Many times at a Title I school, people don’t think that’s going to happen, but our students have risen to the occasion. Our students are capable of amazing things, and they are leading the way for excellence not only in themselves but in the school and the community of Immokalee. It has really been empowering for the students and, in turn, that’s positively impacted our staff as well.” HLE has more than 47 student leadership teams for students of all grade levels. They meet once or twice a month for about 30 minutes. Mendicino said each group has a giveback goal, either to the school, the community, or the nation. This year, HLE has a student Lighthouse team made up of 33 student leaders who meet with the parent and staff Lighthouse team to plan events, boost school culture and morale, and plan celebrations. They even were part of the creation of the school calendar. “We know that with student leadership, our students are setting goals for success. They’re developing the habits they need to be successful,” Mendicino said. “The Lighthouse pinnacle is a cherry on top. Who Pays the Attorney?
n every divorce, each spouse (or party) will eventually ask themselves if they can afford to hire an attorney. In some cases, the answer is plain. Perhaps there are simply no assets to argue over and the divorce is a simple matter of paperwork, or perhaps both spouses have set money aside to hire counsel. The hiring of an attorney in a dissolution of marriage action is most often a personal decision that everyone should be able to make on their own. An implicit unfairness exists, however, when one spouse wields the financial power and controls all the family’s money, and the other spouse has no access to money. This is where the law may have to intervene to level the playing field. The Florida Dissolution of Marriage Act contains a provision for the recovery of attorney’s fees to assist in these imbalanced situations. The purpose of the law is to ensure that both parties have equal access to legal counsel. The law does this by placing the

burden of paying attorney’s fees on the spouse that is more capable of paying from their financial resources. This law exists to avoid situations where someone is shortchanged in exercising their rights simply because they could not afford an attorney. A request for attorney’s fees is the last of the financial claims to be addressed when these items are presented to a court to determine. This falls last in line because the decision-maker must know the post-divorce financial situation of both parties to determine if an award of fees is necessary. This means looking at each party’s debts, income (including alimony), and expenses (including support obligations). The closer the parties are to being equal in this situation, the more likely each party has to pay their own attorney’s fees; conversely, the more disparate the parties’ respective assets and income is going to be post-divorce, the more likely it is that one party has to pay all of the attorneys’ fees.
While this law holds true for consideration at the end of the case, parties in a divorce require access to funds early on to hire an attorney to represent them. Most often, the attorney retainers for both parties are paid from whatever marital funds to which the parties have access. If one party is cut-off from the marital assets, then the court can grant “temporary relief” including attorney’s fees from the other. Again, the goal and intent of the law is to allow for fairness and for both parties to have equal access to hiring counsel. Nothing can make someone feel more helpless than being thrust into a divorce without the means to secure an attorney to advise them and advocate for them. Especially when their spouse has hired an attorney and cut off their access to funds. If you find yourself in a situation like this, reach out to an attorney to assist you in exercising your rights permitted under the law to level the playing field in your divorce.

Deputies Keeping Schools Safe
ach day, families throughout Collier County send their children off to school, entrusting their education and wellbeing to the dedicated employees of our school district. The Collier County Sheriff’s Office (CCSO) also is looking out for students and their safety. The CCSO stations a Youth Relations Deputy (YRD) at each of the schools throughout the Collier County Public Schools system. Partnerships also are in place with private schools and charter schools that request a law enforcement presence. These deputies report to the same building on a daily basis and are ready for duty bright and early as school buses roll in and sleepy students head to class. When they aren’t patrolling the hallways or taking reports based on concerns
and crimes reported within the school, these deputies are building relationships with students. They know your children by name and they are there to help. Our YRDs oversee school events and also are leading educational programs for students and parents addressing social
media and substance abuse. In the summers when school is out, those same deputies run free programs for kids. These include our Summerfest events, which range from building a boat with deputies and fishing on the Naples Pier to open gyms and our Hot Summer Nights series with family-friendly entertainment. The CCSO has been ahead of the curve on this front, having stationed deputies in schools long before it became the norm. We want to take this opportunity to remind parents of this invaluable resource. By Heather McDermott terling Sigmond always knew that she wanted to be a veterinarian. There was never a Plan B. She recounts a story her mom tells from when she was around five years old and rescued an injured grasshopper from her home in Golden Gate Estates. From then on she was hooked. That began a lifetime of owning unusual pets, including a baby crocodile, birds, hermit crabs, goats, ponies, chickens, rabbits, pigs (Pinkie Pig, to be specific), mice, turtles, and, of course, dogs and cats. (She currently owns a hedgehog which she says is more of a night owl, so not the most interesting pet.) Sterling, clearly an animal lover, has lived and cared for animals in the Naples area her entire life. Her parents hail from Connecticut but, searching for a warmer climate, drove as far south as they could. Born in Lee Memorial hospital in 1978, Sterling is a proud product of Collier County Public Schools. Her sister Monet, also of Naples, chaperoned Sterling’s first date at

the tender age of 16 with her high school sweetheart (now husband), Scott. She met him when she was 14 but was too young to date, so she claims he endured endless board games with her family. Fast forward to 2017, and with 14 years experience as a veterinarian under her belt, she decided to take on the challenge of opening her own practice, Naples Coastal Animal Hospital, located at 956 2nd Avenue North. Tell me about your decision to open your new business. After completing my undergraduate degree at the University of Florida in three years, I graduated from [UF] vet school with a degree in Animal Sciences. I worked for a newly opened animal hospital in the area for two years, and then for 11 years at another wonderful local animal hospital. I always knew I wanted to work on domestic animals and be part of the family atmosphere of Naples, and even raise my own family here. I have always wanted to provide more personalized medicine and care, allowing more time for my clients, and even home
visits. Down the line, we plan to provide concierge care, which would allow clients access to my cell phone, after-hours visits, and in time-sensitive cases [I would] meet clients at the emergency hospital and act as a liaison and facilitate for them. We currently don’t have these types of services in animal medicine here. Also, we will provide specialized individual needs regarding vaccinations or titers (blood test to gauge the level of vaccine still in an animal’s body). This is extremely personalized medicine. What was your family’s take on your decision to open your own business? My entire family was extremely supportive. The kids even drew pictures that they brought to school of what the new practice would look like! In January 2017, I started the process. I met the wonderful ladies at Wholesome Hound and became aware that there was space available next door on 2nd Street North. I went to the city council for lengthy discussions, received approval (they voted unanimously for me as they, too, saw the need), and now the mayor brings his pet to me. He even cut the ribbon on our opening day. How do you balance being a mom with your professional and charitable obligations? I really just try to live in the moment. My mom always nudges me to take time now to ensure that I’m a part of my kids’ lives when they are older. I want them to know that I always have time for them. I am lucky because I’m able to have my husband and family join me in my charitable endeavors so they can experience giving back, which is a great lesson for the kids. We participate in the local “Bark For Life” event, which is supported by the American Cancer Society and raises money and awareness for pets with cancer. I also work with local rescue groups on difficult situations they encounter. We recently fostered four puppies whose mother could no longer care for them as her milk had dried up. care, bottle feeding them day and night and house training them until we could adopt them out to good homes. We were really happy as they probably would not have survived without our care. I strongly believe in giving back to the local public schools, so I frequently support school and PTO fundraisers and offer a “Vet for the Day” raffle prize, which allows the winning child to shadow me all day, seeing patients and even viewing x-rays and surgery. I also go into many public schools in the area to talk about age-appropriate topics like pet handling and medical issues. I really love to be able to do this. What is a typical week night like for your family? We are constantly running from one extracurricular activity to another! My kids love swim, book club, drama, and Mathletes. On a rare quiet night at home, we all get into our PJs and eat pizza, play games, and watch a movie. My husband is a great cook so he loves to get us all around the table for family meals and to recap our day. Do you have any favorite local spots you like to go as a family? We love Brooks Burgers! The kids love the Popsicles they give out after dinner. And Peace, Love and Little Donuts is a favorite. Every morning my son Vanden begs to go there for breakfast. We also love to hang out at Cambier Park every Sunday to regroup with family, relax, enjoy church in the park, as well as taking the dogs and kids biking on the Gordon River Greenway. What’s the best parenting advice you’ve received? Bob Marino, my best friend’s dad, always says to divide your responsibilities into four quarters: urgent and important, urgent and not important, not urgent but important, not urgent and

not important. Prioritize your day based on that formula. I try to do this. Best and worst part of your kid’s current ages? With Catalina (11) and Vanden (9) being so close in age, often they are in the same clubs as they have similar interests, so that can create clashes between them. They love being together but, as all siblings do, they also need time apart. Also, I sometimes find it sad that they don’t need me as much as they did when they were little. But on the flip side, we now have great conversations. They want to learn so much, about everything! And when we don’t know the answers, we say to them “Oh, that’s a great thing for YOU to research.” Your proudest moments as a mother?
When they show kindness. They’ve both been recognized for it at school, which makes me so happy. Recently, Catalina asked to sit next to an ESL [English as a Second Language] student displaced by the hurricane to help her adjust to a new environment, and now they are really good friends. What are your hopes and goals for 2018? Once things are fully up and running at the practice, I want to get out into the community even more to hold educational talks on pet care or on specific topics like wildlife hazards to pets. I want the practice to be a place we hold drop-in sessions and a place that all pet owners in the community feel comfortable visiting. People are already loving it as much as we are, and we want to see that continue.

STEAM Education in the Garden
W
hether or not children realize it when their hands are dirty with soil, gardening is an organic opportunity for learning. Not just any kind of learning, but buzz-worthy STEAM (Science, Technology, Engineering, Art, and Math) learning. “The children are engaged in all of those aspects and don’t realize it. There is a tremendous amount of free learning through gardening,” said Brenda Gibbon, Lower School Spanish and gardening teacher at Seacrest Country Day School in Naples. Gibbon and Dr. Caron Staples, sustainability and AP Environmental Science instructor at Seacrest, provided a breakdown on what STEAM concepts kids are digging into while gardening. Science. It’s hard to believe, but that 4-year-old prekindergarten student introducing worms into the garden is getting up close with chemistry, life cycles, genetics, botany, and biology. “Life cycles of plants lead to replenishing nutrients in the depleted soil. Recharging the soil organically creates an opportunity for vermiculture (using worms to decompose organic food waste) and animal husbandry, experiencing everything full cycle,” said Staples. Technology and Engineering. Students explore these interlocking concepts by figuring out how to construct the garden and determine what materials are needed. Students use software and apps to inquire about elevation, weather conditions, and what location is suitable for certain types of plants. “A firm grasp of measurement (with fraction expertise) and construction power tools becomes useful as does requesting accurate supplies and building materials,” said Staples. “These structures are constantly needing repair and upgrades, and require constant troubleshooting to solve the multitude of problems that arise in the world of agriculture.” Art. “Choosing a seed or picking a plant is like making the first stroke on a canvas,” said Gibbon. A garden is full of aesthetics, textures, colors, and smells that make it come alive in children’s eyes. Gardening is also a therapeutic outlet where children practice mindfulness and experience stress-relief through the physical and repetitive act of putting their hands in dirt. Math. Imagine constructing a grid or table literally from the
ground up, without the confines of technology or a spreadsheet. That’s how Lower School students at Seacrest are introduced to these concepts that will impact their understanding of number sense throughout their academic lives. “Counting, measurement, discussions about shapes and geometry, even ratios and percentages – all of these things organically come up when we explore our garden with our students,” said Gibbon. Oh, wait, there is one more “S” we’d like to introduce. Spanish. The garden is a perfect place to introduce young students to a foreign language. “That’s an added bonus,” said Gibbon. “They’re picking up Spanish vocabulary while their hands are occupied with something else.” PATRICIA O’CONNOR CARLSON is the communications manager at Seacrest Country Day School.

My Dual Enrollment Experience
M
y high school experience was different than most. While many teenagers take AP and some dual enrollment classes to potentially earn college credit while in high school, I had the opportunity to take this to another level. My junior and senior years, I was exclusively attending classes at Florida Gulf Coast University (FGCU) through the Accelerated Collegiate Experience. While this program definitely isn’t for everyone, it was exactly what I needed at the time. But that’s not to say it was completely without its drawbacks. The Pros Exploration of interests. While I was a traditional student in many ways, my educational interests were not. I was fascinated with areas of history and English that are not possible to teach at a high school where students with similar interests are few and far between. For example, a creative writing class at my high school had to be cancelled because only a few students had signed up, but classes at FGCU in even more niche subjects were filled to capacity. At FGCU, I was able to take courses such as literature with a focus on fairy tale and folklore, Medieval European history, an interdisciplinary approach to the Crusades, and Stellar Astronomy. While I did still take traditional classes like Economics, Calculus, and Government, I was able to cater my educational experience to my interests and gain a better understanding of what I should be doing after I graduated.
Clubs at college and high school. While doing dual enrollment, I had the best of both worlds. I served as secretary of my Mu Alpha Theta math team in high school and I was also able to participate in the Theater Club at FGCU, where I was able to pursue my passion for theater at the collegiate level. Easier transition. Change isn’t the easiest thing for me. The thought of leaving home and everything I knew at the end of senior year was daunting. However, participating in this program made me much more confident, as I proved I could succeed at a university and learned how college worked while still having my support network at home. Up to two years of free tuition. At FGCU, my tuition, text books and materials, and student health services all were free. But only students enrolled at public high schools receive the benefit of free books – private, charter, and home school students do not. The Cons Missed my friends. Because I did full-time dual enrollment, I was not at high school, and some of my classes were at very odd hours. This, naturally, made it difficult to see my friends who were still on the traditional schedule of school, extracurriculars, and homework. However, I did have the opportunity to make many new friends at college, and my best friends and I made plans to ensure we didn’t drift apart. I could also
come to high school lunches to visit, which I did when my schedule permitted. Drive to school. Instead of taking 15 minutes with traffic to get to school on time, I was now driving an average of 45 minutes to get to class.

Interview With a Dentist Dr. Reinaldo Lasanta is the acting dental director for the Healthcare Network of Southwest Florida and a practicing dentist at the company’s Dental Care Central location in Naples. For National Dental Health Month, Dr. Lasanta answers questions about your family’s dental health. How can I improve the whiteness of my teeth? Dr. Lasanta: There are several things we can do, with the primary method being diet control. Avoid sodas and other sugary or acidic drinks and dark-colored drinks like coffee. Coffee is one of the worst culprits for teeth discoloration because it is both dark in color and acidic. When altering your diet, moderation is key. If you still are not seeing improved results, you can visit a dental professional to assess your dental health and see why your teeth may be discolored. Some stains can be intrinsic and point to a deeper issue that needs to be addressed by your dental professional. What is tooth sensitivity and why do I have it? In most cases, tooth sensitivity is due to a hyper reaction to a stimulus, such as something hot or cold. Because there are many reasons why you may be experiencing hypersensitivity, I would recommend that you see a dentist to determine the cause. How often should I or my child get a dental checkup? Generally speaking, children and adults should plan on getting a dental cleaning twice a year. At least once a year, the cleaning should also include an exam with a dentist. One of the most important parts of your dental care is ensuring continuity of care. Regular visits with your dentist ensure that he or she can be proactive in the treatment of any issues affecting your oral health. Prevention is always better than treatment. What are the best ways to practice good oral hygiene at home? The most important way to practice good oral hygiene at home is to set healthy habits by brushing teeth 2-3 times a day for two minutes, and flossing once a day followed by the use of an anti-cavity mouthwash.
At what age should my child first see a dentist? We recommend your child first see a dentist when the first tooth appears or before the child’s first birthday. It is incredibly important to see children at a young age to familiarize them with the dental environment. Additionally, baby teeth have very important functions, such as allowing the child to eat properly and maintaining the space for the adult teeth to come in later. Poor dental health in children can cause other problems later. When do baby teeth typically fall out? Typically, baby teeth fall out when children are around six years old, as that is the time when the permanent teeth start emerging and baby teeth cease to function. This may vary. Do you have any advice on how to get my child to brush their teeth? Brush your teeth together: not only will your child will learn from your example, but it will make the time go faster. Also, find ways to make it a little more fun, such as singing a song.

Instant Pot: Instant Good
O
ne of the hottest topics on social media isn’t politics or religion. Discussion, ideas, and points of view abound when talking about the latest and greatest in kitchen appliances: the Instant Pot. A day isn’t complete unless one friend or another – or a member of the Naples Moms Facebook group – asks a question or seeks advice about the Instant Pot. What, exactly, is the Instant Pot? It’s an all-in-one, high-quality, programmable pressure cooker that is all the rage with busy
families everywhere. The Instant Pot can cut cooking time by up to 70%, can be used as a slow cooker, and can even sauté food prior to cooking (i.e., browning meat, sautéing onions and garlic, etc.). When I look at Instant Pot discussions, I notice that those who love the Instant Pot LOVE it; they are obsessed and cook just about everything in it. Others claim they don’t really use it, that it’s still in the box, and by their actions say the Instant Pot is “meh.” So, which is it? Is the Instant Pot worth the approximately $100 price tag, or perhaps more importantly, the storage space in your kitchen cabinet? The answer to that question is completely dependent upon your family’s lifestyle and food preferences. The Instant Pot does take some getting used to. The apparatus cuts cooking times significantly and does – as promised – maintain flavors and prevent meat from drying out. Cooking dried beans is a cinch, as well as whole chickens, soups, hard boiled eggs, and even popcorn! However, using the Instant Pot does require planning and preparation. Parents cannot arrive at home at 5:30 p.m. and have a crowd pleasing dinner on the table
WHITE BEAN CHILI My friend Ashley uses her Instant Pot almost daily. She has five children and she finds the Instant Pot an efficient way to prepare food for her crew. She created and perfected this recipe herself. She’s an Instant Pot guru! 2 tablespoons olive oil 1 medium onion, chopped ½ jalapeno pepper, deseeded and chopped 4 cloves of garlic, minced 2 tablespoons dried oregano 1 teaspoon cumin ½ teaspoon crushed red pepper flakes 3-4 cups chicken broth (can be prepared in the Instant Pot) 3 cups pre-cooked chicken (see instructions below on cooking it yourself in the Instant Pot) 2 cans or 4 cups cooked white beans (see instructions below on cooking the beans in the Instant Pot) Black pepper, to taste Sea salt, to taste
Press the sauté button. Sauté peppers and onions in the olive oil for 3 minutes. Add garlic and stir for 1 minute. Turn the sauté 34

in 15 minutes. (With my own limited skills and imagination, I’ve found the 15 minute dinner is only possible with frozen pizza.) I didn’t understand the pressurized system until I began to use the Instant Pot. The recipes typically require dishes to cook for 30-60 minutes at high pressure. Cooking times increase by about 10-15 minutes because it takes some time for the Instant Pot to reach this level of pressure, and THEN the cooking times begin. When the cooking time ends, quick release of the pressure takes a bit of time (with a valve, maybe five minutes), while natural pressure release takes longer (which is recommended for tender, moist meat). When you’re attempting to feed little ones, the additional 15-30 minutes makes quite a difference. A bit of research, watching some YouTube videos, and asking your friends will help you make a wise decision as to whether to invest in an Instant Pot. Top with avocado, Greek yogurt, and/or tortilla chips. To cook a whole chicken in the Instant Pot: Place a whole chicken in the Instant Pot. Add chopped celery, chopped carrots, 2 chopped onions, 4 cloves of garlic, and 2 teaspoons of apple cider vinegar. Cover with water to the fill line on your Instant Pot. Cook on the soup setting for 120 minutes. Let the pressure release naturally. Let the contents cool, and then pick the meat off the chicken. Strain chicken broth and store for future use. To cook white beans in the Instant Pot: Rinse 2 cups dried white beans. Put beans along with 3 cups water and a pinch of salt into the Instant Pot. Turn to bean setting and cook for 40 minutes. MEATLOAF AND MASHED POTATOES (iwashyoudry.com) Did you know that you can cook meatloaf and mashed potatoes at the same time in the Instant Pot? It’s true! My friend Kelly has done it, and she said both dishes turned out beautifully.
TIKKA MASALA (Recipe from www.savorytooth.com) Another friend uses her Instant Pot about once a week and has a few recipes she rotates. One of her family’s favorites is this popular Indian dish. For marinating the chicken: 1 pound boneless skinless chicken breasts, chopped into bite-sized pieces 1 cup plain 2% Greek yogurt 1 tablespoon garam masala 1 tablespoon lemon juice (about half a lemon) 1 teaspoon black pepper ¼ teaspoon ground ginger For the sauce: 15 ounce can tomato sauce 5 cloves garlic, minced 4 teaspoons garam masala ½ teaspoon paprika ½ teaspoon turmeric ½ teaspoon salt ¼ teaspoon cayenne 1 cup heavy whipping cream (added last)
For the meatloaf: 2 pounds ground beef 1 cup bread crumbs 2 eggs ½ cup onion, diced 2 teaspoons garlic powder 2 teaspoons dried parsley ½ teaspoon salt ½ teaspoon pepper ½ cup barbecue sauce For the meatloaf topping: 2 tablespoons brown sugar 2 tablespoons mustard 1 ⁄3 cup ketchup For the potatoes: 3 pounds yellow potatoes, washed and quartered 1 cup chicken broth 1 cup half and half 4 tablespoons butter ¾ cup sour cream 1 teaspoon garlic powder Salt and pepper, to taste
Evenly layer the quartered potatoes in the bottom of the Instant Pot. Pour the chicken broth over the top. Place the rack that came with the Instant Pot over the top so it lays flat. Combine the ingredients for the meatloaf (minus the topping) in a large bowl. Shape the meat mixture into a loaf and place it on a piece of tin foil. Shape the foil up and around the edges of the meatloaf, creating a pocket for it. Place the meatloaf on top of the rack in the Instant Pot and secure the lid. Cook on high pressure for 25 minutes. Use the quick release method, and check the meatloaf for an internal temperature of 155 degrees. Carefully lift the meatloaf out of the Instant Pot and place it on a baking sheet. Mix the ingredients for the topping and brush all over the meatloaf. Place the meatloaf under the broiler for 3-4 minutes. Meanwhile, add the remaining ingredients to the Instant Pot and mash the potatoes until smooth and creamy. Slice the meatloaf and serve with the mashed potatoes.
Combine all marinade ingredients in a bowl (minus the chicken). Add chicken chunks and stir so that the chicken is covered. Let sit in the refrigerator for at least an hour. Press the sauté button on the Instant Pot. Remove chicken from marinade and sauté until the chicken is cooked on all sides – about five minutes. Add all of the sauce ingredients (except for the cream) over the chicken and stir. Cover and lock the lid. Cook at high pressure for 10 minutes. Use the quick release valve to release pressure. Press the sauté button (low heat). Add cream to the pot and stir. Simmer until the sauce is thickened to your liking (a few minutes). Serve over basmati rice or with naan. Garnish with cilantro.
