Dear Neighbour, Christmas is a time to give generously and cherish blessings with those closest to you.
It is also a time to reflect on the year that is soon to pass – for all our community achieved – and to recharge for a new year upon us.
During this time, I also want to extend my wishes
to our men and women serving in uniform – we will be forever grateful for your service to our nation, defending our cherished freedoms.
It is because of them we can celebrate the most wonderful time of the year, and relish in excitement for 2025.

As the festive season approaches, let us take the time to appreciate what we have as Manitobans.
On a daily basis, we hear stories of severe weather events, natural disasters, political strife and the horrors of war in other regions of the world. Too often, we tend to dwell on negativity rather than rejoicing about the positive things in our lives right here in the Province of Manitoba.
The Christmas message speaks of faith, peace,
hope and love, which brings with it the anticipation of all things new, a brighter future, and hope for a better tomorrow.
The holiday season isn’t easy for everyone. I urge you to take the time to call or visit your loved ones, your elderly neighbours and be kind to each other. I urge you to take the time to slow down and enjoy all that life offers.
I am proud to continue to represent the residents of the Riding Mountain constituency in the Manitoba Legislature, where I take seriously the role I play in passing legislation to enrich the lives of all Manitobans, not just for today, but for future generations.

As the Mayor of our great community, I extend my warmest greetings to all of you this festive season. It has been an exciting year filled with progress on projects such as the Park Lake reconstruction, the Regional Health Care Centre and the purchase of land to expand the community. Together we have faced challenges and celebrated huge wins that will strengthen our community for years to come.
As we gather with family and friends to celebrate the joy of the season, let us take time to consider those who have struggled over the past year whether it was through the loss of a loved one, loss of a job, wildfires such as Jasper, floods, or war. Let
us reflect on the spirit of compassion and generosity to those less fortunate and extend a helping hand to our neighbours who may be facing their own challenges. This peanut brittle should be kept hidden until you are ready to serve it!
Melt peanut butter in a small double boiler. Once melted, leave in the hot water to remain liquefied. Mix the baking soda and vanilla together. Set aside. Put the sugar, corn syrup and water in a heavy bottomed pot and bring to a boil, stirring constantly, using a wooden spoon. Add the nuts and butter and return to a boil stirring constantly. Insert a candy thermometer that has been placed in hot water before putting it in the candy mixture. Boil until temperature reaches 280⁰. If you do not have a candy thermometer use a cold water test. Into a glass of cold water drop about 1/2 tsp. of the candy mix. It is at the right temperature if it separates into threads that are hard but not brittle. It is so much easier to use a thermometer! To reach this temp, it will take 18-20 minutes or more. When temperature registers 280⁰ remove from heat and stir in the peanut butter. Add the baking soda mix. Quickly roll out peanut brittle with greased rolling pin on a greased cookie sheet. Cool for one hour or more and break into pieces. Store in a tightly covered container. Hide the container.
This classic chocolate crinkle cookies recipe is fun to make, has a rich fudgy center and perfect for the holidays!
1/2 cup oil
4 squares unsweetened chocolate, melted 1 1/2 cups sugar
Do not skip the chilling with these cookies. Chilling is mandatory for this sticky cookie dough. When you chill cookie dough before baking, you help the fat in the recipe solidify. This is good because when you bake it, the cookies will not spread really thin. Mix oil, chocolate and sugar. Blend in eggs and vanilla and mix really well. In a small bowl blend the flour, baking cocoa, salt and baking powder. Mix the flour into the creamed mixture. Chill dough for several hours or overnight. Preheat oven to 350°F. Drop teaspoonful of dough into the icing sugar. Roll and shape into a balls. Space about two inches apart on lightly greased cookie sheet. Don’t flatten the dough as you put it on your cookie sheet. Bake 9-14 minutes. (depends on the size) They are hard to tell when they are baked. Look for the crackly top! You want to bake the cookies until they’ve cracked on top and the edges look set, but the center is still soft. Let cool for several minutes on sheet and remove to wire rack to finish cooling.
Giving does not need to be connected with lots of purchased gifts. It is the thought that counts. To help keep the kids away from the electronics, get them busy in the kitchen and create some new traditions and memories. It is nice to have homemade “gifts” to give over the holidays. Let the kids help make everyone’s favourite sliceable snack: banana bread. This recipe doubles easily.
1/2 cup softened butter 3/4 cup sugar
eggs 1 tsp. vanilla
1 cup mashed bananas
1/3 cup maraschino cherry juice or milk 1/3 cup cocoa 1 3/4 cup flour
tsp. cinnamon 2/3 cup chocolate chips or more 2/3 cup maraschino cherries 1/3 cup walnuts if desired
Cream butter and sugar together. Mix in the eggs and vanilla. Stir in the bananas and maraschino juice. In a small bowl mix the cocoa, flour, baking soda, baking powder, salt and cinnamon. Stir into the creamed mixture. Do not over stir. Add the chocolate chips, cherries and if desired nuts. Pour into one large or two small greased loaf pans. Bake at 350°F for 45-55 minutes or until toothpick inserted comes out clean.

No matter how you slice them, bars are a quick and easy way to fill a party plate.
Mix the flour, graham crumbs, brown sugar, coconut and salt together; add the butter and mix until well blended. Reserve one cup. Press the remaining crumbs into an ungreased 9x9 inch square pan. Bake at 350°F (180°C) for 10 minutes. While the bottom is baking add the eggs to a bowl and beat until eggs are frothy. Mix in the lemon juice, corn syrup and sugar. Add the craisins and coconut. Add this over the base and sprinkle the reserved crumbs over the top. Bake for 30 minutes longer or until set in the middle. Cool and cut into squares.

Bread is a staple in most of the world. It brings people together and the fresh aroma of baking bread is a pure pleasure. It has been said one only needs time, warmth and love to bake good bread. These cheese buns are filled with cheddar both inside and out, making them soft and delicious. They will win extra points with your family.
1 1/4 cup lukewarm water
1/4 cup oil
1 egg
2 Tbsp. sugar
2 tsp. salt
2 tsp. instant yeast
3 1/2-4 cups flour
2 Tbsp. LITEHOUSE Italian herb
1 tsp. onion powder
1/2 tsp. garlic powder
2 Tbsp. melted butter
1/4 cup of parmesan cheese
2 cups shredded cheddar cheese
Extra Italian herb if desired for the tops
Allow the cheese to be at room temperature when you add it to the dough so it will not delay your yeast from rising. In the mixing bowl add the water, oil, egg, sugar, and salt. Mix well. In another bowl add 3 cups of the flour, yeast, Italian herb, onion and garlic powder. With the stand mixer mix the dough until smooth and elastic about 5-7 minutes. Add more flour as needed. Add 1 1/2 cup of the shredded cheese at the end of the kneading. Place the dough in a greased bowl, turning once to grease the surface of the dough. Cover with a tea towel, and let it rise in a warm place for about 1 hour or until it rises to double. After that punch down the dough and make equal balls. Place on a lightly greased baking sheet keeping a 1-2 inch distance between each ball. Butter the tops of the buns and then sprinkle the Parmesan cheese and then grated cheddar cheese on top of each bun. You can also use some herb topping to give extra flavor to these buns. Bake in preheated oven at 375° F for 15-20 minutes or until golden on the top. When the buns are ready, take them out of the oven and serve.
If a family member or special guest has food sensitivities or allergies it can take extra time and thought for the host to prepare for gatherings. To keep the holiday jolly and spread cheer without fear try this apple muffin recipe for the people who have milk or eggs allergies. These flavourful apple muffins will delight the whole family.
1 cup apple juice
1/2 cup vegetable oil
3/4 cup brown sugar
2 tsp. orange zest
1 tsp. vanilla
1 1/2 cup apples diced very small
2 1/2 cup flour
2 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinnamon 1 tsp. nutmeg
1/2 tsp. each salt and cloves
1 cup raisins or dried cranberries or a combo of both 3 Tbsp. Demerara sugar (coarse sugar) for sprinkling
Preheat oven to 375°F. In a bowl mix together the apple juice, oil, brown sugar, zest and vanilla. Stir in the diced apple. In another bowl mix the flour, baking powder, baking soda, the spices and the salt together. Add the raisins to this and pour over the wet ingredients. Stir gently and just until the dry ingredients are moistened. Do not over stir! Spoon into prepared muffin tins. Sprinkle the Demerara sugar over the muffins. Bake in the center of the oven for 20-25 minutes until tooth pick inserted in the oven comes out clean. Transfer to a wire rack to cool. Makes about 15 muffins.

The use of whole wheat and oatmeal give a nice nutty complimentary flavour to the sweet fruit filling. A fresh batch of these delicious rolls can be made in short order for your breakfast quests.
Dough:
1 cup whole wheat flour
1 1/2 cup white flour
1 cup oatmeal
1 Tbsp. baking powder
1 tsp. salt
1/2 tsp. cinnamon
2/3 cup cold butter, cut in cubes
1 cup milk or buttermilk
Filling: 1/4 cup melted butter 2/3 cup brown sugar
1 tsp. cinnamon
1 1/2-2 cups diced dried fruits such as raisins, cherries, apricots, currants, apples, prunes etc.
Preheat oven to 400°F. Prepare the dried diced fruit and set aside. In a large bowl add the flours, oatmeal, baking powder, salt and cinnamon. Using a pastry blender cut the butter into the flour until crumbly. Add the milk and gently stir until a soft dough forms. Roll out onto a floured surface and shape into a ball. Gently roll out a large 24x12” rectangle. Spread the melted butter over the top; then the brown sugar and cinnamon that has been mixed together. Sprinkle fruit over top. Starting at the long side, roll up jelly roll style. Cut into 2-2 1/2” strips, about 12 to 14 and place on a lightly greased cookie sheet. Bake 25-30 minutes or until golden brown.

This recipe came from a late 1950s cookbook. In the 1950s, this cookie gained popularity after it became the winning recipe for a national Pillsbury baking contest. Cherry Winks are an old-fashioned holiday cookie that’s rich with nostalgia for us older folk and hopefully will become a cookie jar favourite for the younger ones as well.
2 1/4 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla
1 cup chopped nuts, pecans or walnuts
1 cup pitted chopped dates
1/3 cup maraschino cherries drained and chopped
2 1/2 cups corn flakes, slightly crushed maraschino cherries drained and cut into quarters for garnish
Stir together the flour, baking powder, baking soda, and salt, set aside. Measure butter and sugar into a large mixing bowl. Beat until very light and fluffy. Add eggs and vanilla to the sugar and butter mixture. Beat well. Add the flour ingredients and mix until combined. Stir in nuts, dates, and cherries. If you find it challenging to roll the dough, chill it for 30 minutes for easier handling. Shape level tablespoons into balls and roll in the cornflakes. Place cookies onto greased or lined cookie sheet. Top each cookie with a cherry quarter. Bake at 375°F for about 12 minutes or until lightly browned. Remove from baking sheet and cool on a wire rack.
