Messages of holiday greetings Message from Robert Sopuck, Member of Parliament As your Member of Parliament, I wish everyone in the Dauphin-Swan River-Neepawa Constituency, “Best Wishes for the Christmas and Holiday Season”! Christmas is a time for us to reflect on what is truly important: our families, our friends and our communities. As you celebrate this wonderful time of year, take the opportunity to count your blessings and reflect on Canada’s good fortune, rejoice in the memories of the year past and look forward with hope to the days ahead. The holiday season reminds us to reach out to those who may be less fortunate and who may be living with hardships. It is important that we all make that extra effort to help our neighbours and those who may be in need. As we look back on this year, we can be thankful for the great prosperity we have as a country, even though the global economy remains fragile. Canada can be proud of being a model for other nations and being considered as one of the world’s best countries to live in! We can be proud of the key position our nation has filled in supporting the development of values of freedom, democracy and the rule of law in other countries who are facing important challenges. We are extremely proud of the men and women of our Canadian Armed Forces and other law enforcement personnel, who are instrumental in protecting us from the violence of terrible regimes and everyday crimes. Please keep them in your prayers, not just during this Christmas season,

Out of Helen’s kitchen: PB & J squares Make this square for your favorite child; small or big! Base: 1 cup flour 1/2 cup oatmeal 1/2 cup brown sugar 1/2 cup butter 1 egg yolk
Peanut butter and jelly squares Filling: 3/4 cup chopped peanuts 1/2 cup sugar 3/4 cup peanut butter 1 egg white 1/2 cup jelly or jam
In a bowl add the flour, oatmeal and brown sugar. Cut in the butter until it resembles coarse crumbs. Mix in the egg yolk. Set aside 3/4 cup of crumbs. Press remaining crumbs into an 8x8” ungreased pan. In the same bowl add the peanuts, sugar, peanut butter and egg white. Spread over the crust. Bake in 350° oven for 10 minutes. Remove and spread jelly over the peanut butter mixture; sprinkle with reserved crumbs. Return to oven and bake for 25-30 minutes more until golden brown. Cool and slice into squares.

Combine the base ingredients. Reserve 1/4 cup for topping and press remaining crumbs into a 9x9” pan. Put in the freezer while you make the topping. Let cream cheese get to room temperature. Mix it together with the sweetened condensed milk. Reserve 1 Tbsp. of the crushed candy for the garnish. Add the remaining candy and the peppermint extract to the cream cheese. Fold in the Cool Whip. Spread over base. Garnish with remaining candy and crumbs. Cover with plastic wrap and freeze until ready to use. Do not thaw before serving.

Out of Helen’s kitchen: Gingerbread cookies For your young ones and the young at heart, these are fun to make, fun to eat and fun to give. Gingerbread cookies 2 tsp. baking soda cup butter 2 tsp. cinnamon 1/2 cups sugar 1 1/2 tsp. ginger eggs 1/2 tsp. salt tsp. orange zest 1/2 tsp. cloves Tbsp. molasses cups flour In a large bowl, cream butter and sugar. Add the eggs, zest and molasses and mix until blended. Mix dry ingredients together until blended and add to the butter mixture. Mix well. Cover dough with plastic wrap and chill for 2 hours or overnight. On a lightly floured surface roll a portion of the dough to 1/4 inch thick. Cut out desired shapes and place on a lightly greased baking sheet. Bake at 375° for 8-10 minutes or until set and lightly browned. Because of the color of the dough to begin with, it is a bit hard to tell when they are baked. Place on racks to cool. Ice and decorate as desired. You can add sprinkles to the cut out cookies before baking and do not need to decorate after baking. 1 1 2 1 2 3

Out of Helen’s kitchen: Bubbly fruit salad For a light dessert to serve your guests after a big meal try this sparking apple juice fruit salad made fancy by sparkling rimmed glasses. You can use frozen cut up fruit but do not thaw fruit for a long time before using. Bubbly fruit salad 1 can mandarin oranges, drained pineapple, peeled, cored and cut into small pieces decorating sugar sparkles cups fresh strawberries, sliced 1 bottle sparkling apple juice cup fresh blueberries large kiwi, peeled and diced Dip the rim of your serving glasses in water and shake of the excess water. Put sugar sparkles into a saucer and dip wet glasses into the sugar to coat. Toss the fruit gently in a bowl. Carefully add the fruit to the glasses. Just before serving add the sparkling apple juice.

Perfect with a cup of tea and company. Eggnog loaves 2 eggs 1 cup white sugar 1/2 cup butter 1 cup eggnog 2 tsp. rum flavor 2 1/4 cups flour
2 tsp. baking powder 1 tsp. salt 1 tsp. nutmeg 1 tsp. cinnamon 3/4 cup raisins 1 cup glazed cherries
In a large bowl beat eggs. Add the sugar and butter and mix well. Stir in the eggnog and rum flavor. In another bowl combine the flour, baking powder, salt, nutmeg and cinnamon. Add to the first mix and stir until dry ingredients are moistened. Gently mix in the raisins and cherries. Put in a greased large loaf pan or 2 smaller loaf pans. Bake in preheated oven for 40-45 minutes or until toothpick inserted in center of loaf comes out clean. Cool 5 minutes and turn out unto wire rack.

Out of Helen’s kitchen: Whipped shortbread cookies As children we all loved Aunt Ora’s whipped shortbread. She always doubled the recipe because they disappeared quickly. These delightful morsels require no rolling, just drop from a spoon and decorate. Whipped shortbread 1 cup butter 1/2 cup icing sugar 1 1/2 cups flour 1/4 cup cornstarch
1/4 tsp. salt glaced cherries for decorating
Beat butter until light and fluffy. Sift dry ingredients together. Add to butter by thirds, beating 3-4 minutes between additions on medium/high. Beat for 3-4 minutes after last addition. Spoon onto baking sheets, decorate as desired or leave as is. Bake 8 to 10 minutes in 325° oven. Bottoms will be starting to turn golden when done. Cool and transfer to rack for full cooling.

Out of Helen’s kitchen: Tomato jellied salad When you are busy entertaining during the holidays, this jellied salad works great, as it can be made ahead.

Tomato jellied salad 3-4 green onions, thinly sliced 1 1/2 cups finely diced celery 1 cup cottage cheese 1/2 cup almonds 1/2 small box of a red Jello (if desired)
1 large package lemon Jello 2 cups boiling water 1 can of tomato soup 1 Tbsp. lemon juice 1/2 tsp. salt Dissolve lemon Jello in the boiling water. Stir well to dissolve the Jello. Add the tomato soup, lemon juice and salt and mix well. Pour into a glass bowl. Chill until almost set. Watch carefully! Add the onions, celery, cottage cheese and almonds. Chill in fridge. When set, make the 1/2 package of red Jello and pour over the salad in the bowl. This just makes a prettier presentation and can be omitted if desired.

Out of Helen’s Kitchen: Chocolate fudge Who doesn’t like chocolate fudge? This recipe is a snap to make. Packed in a decorative Christmas tin, this fudge makes a delicious gift.
Chocolate fudge 2 cups semi-sweet chocolate chips 1 can sweetened condensed milk 1 1/4 cup sifted icing sugar pinch of salt
2-4 Tbsp. of liqueur such as Bailey’s Irish cream, Amaretto, Crème de menthe or Kirsch Decorations such as cherries, almonds, crushed candy canes
In a heavy pot over low heat melt the chocolate chips with the milk. Remove from heat and add the icing sugar, salt and liqueur. Do not miss sifting the icing sugar or you will have small lumps! Spread in an 8x8” wax paper lined pan. Add decorations on top if desired. Chill for several hours until firm. Cut into desired size pieces and store in a closed container. Freezes well.

2/3 cup chopped mara2 eggs schino cherries 2/3 cup white sugar 2 Tbsp. maraschino cherry 1 cup shredded large flake coconut juice unbaked tart shells 1 Tbsp. flour 2 Tbsp. melted butter In a bowl combine the eggs, sugar, cherry juice, flour and melted butter. Add the cherries and coconut. Mix well and spoon into prepared shells. Bake at 350° for 18-25 minutes or until golden and set in the middle.

Exploring the colours of Christmas Decorations adorning homes and businesses in the familiar colours of red and green are popular come the holiday season. Even gift wrap, greeting cards and clothing tend to lean toward red and green as the holiday season hits full swing. It is difficult to think of Christmas without envisioning everything awash in these popular colours, broken up only by the inclusion of gold, white or silver accents. The colours of Christmas are often taken for granted, and many celebrants are unaware of how these colours became symbols of the holiday season and why they remain so to this day. Several theories exist as to why red and green became the hallmarks of Christmas. One such theory is that the colours evolved from pagan celebrations similar to the evolution of Christmas traditions. Prior to the arrival of Christianity, many cultures viewed the colour green as the symbol of life . It is believed that, during harsh winters, evergreen trees were cut down and brought indoors to symbolize that life still exists and thrives despite the cold and darkness of winter. Other pagan holidays featured the use of green, red and gold, including the festival of Yule. As Christianity spread across Europe and eventually other parts of the world, red and green were linked to Jesus Christ. Green still represented life, but now this was the eternal life offered by Christ. Red was said to symbolize sacrifice, namely the blood of Jesus when he died on the cross. Some Christians believe that Jesus

wore a crown of holly thorns whose berries were originally white. As Jesus' blood touched the berries, they turned red. Some theorize that the red of the holiday season represents the apples on the tree of paradise in the Garden of Eden. Around the 14th century, the faithful would put on Paradise Plays on December 24 to share the story of creation with those who could not read. It is nearly impossible to find a fruit-bearing apple tree in the winter, so a pine tree adorned with red apples was used instead. Bishops also wore red robes, further tying the colour red to religious masses and celebrations. Gold is frequently used in holiday decorations as well. Gold can represent the sun and light, both important ways to ward off the dark winter. In addition, gold was one of the gifts brought to baby Jesus, making it a colour of significance within the Christian faith. Red and green poinsettias also are a symbol of the holiday season, but they didn't start the colourful tradition. Poinsettias are a relatively recent addition to Christmas symbolism, as they were only first introduced to America in 1828, when they were brought back from Mexico by Joel Poinsett. The holiday season is filled with many different colours that brighten up homes and businesses. Lighting the tree started before electricity was invented. Many Christmas traditions are older than some celebrants might think. The tradition of lighting up a Christmas tree, for example, dates back to the days before Christmas lights. Before electric-powered twinkle lights were invented and even before electricity was discovered, people used actual candles to adorn the Christmas tree. As one can imagine, having an open flame next to a dried-out tree was risky, so it was customary to keep a bucket of water next to the tree in the case of fire. As if fire wasn’t enough, the tinsel used to decorate trees was made from strips of silver and even lead -- something that is now known to be a health hazard to adults and
