Message from Robert SopuckMP Dauphin-Swan River-Neepawa As your Member of Parliament, I wish everyone in the Dauphin-Swan River-Neepawa Constituency, "Best Wishes for the Christmas and Holiday Season!” Christmas is a time for us to reflect on what is truly important: our families, our friends and our communities. As you celebrate this wonderful time of year, take the opportunity to count your blessings and reflect on Canada’s good fortune, rejoice in the memories of the year past and look forward with hope to the days ahead. The holiday season reminds us to reach out to those who may be less
fortunate and who may be living with hardships. It is important that we all make that extra effort to help our neighbours and those who may be in need. As we look back on this year, we can be thankful for the great prosperity we have as a country, even though the global economy remains fragile. Canada can be proud of being a model for other nations and being considered as one of the world’s best countries to live in! We can be proud of the key position our nation has filled in supporting the development of values of freedom, democracy and the rule of law in other
countries who are facing important challenges. We are extremely proud of the men and women of our Canadian Armed Forces and other law enforcement personnel, who are instrumental in protecting us from the violence of terrible regimes and everyday crimes. Please keep them in your prayers, not just during this Christmas season, but throughout the New Year. On a personal note, I thank you for your support and confidence to represent our Constituency's values in the House of Commons. My goal, as your Member of Parliament, is to ensure that the
government recognizes the values of the towns, rural communities and farms that make up the riding of Dauphin-Swan RiverNeepawa. Whether it is by speaking in the House of Commons on your behalf, or putting forth your interests to the many Standing Committees, I have enjoyed working on your behalf. I will continue to defend our resource industries and the rural way of life as the “Critic for Wildlife, Conservation & Parks Canada”. My wife Caroline and I wish you and your family a truly blessed and peaceful Christmas season, and a healthy, happy 2017!
Message from Eileen ClarkeMLA Agassiz 2016 has opened many new doors for me. I was elected as Agassiz MLA on April 19 and appointed as the Minister of Indigenous and Municipal Relations on May 3, these are memorable dates in my life. Now, seven months have passed and the first winter blizzard has given me an opportunity to take a couple days to reflect on my journey and prepare for Christmas. I'm so grateful for all the new people in my life that work with me or for me, ensuring I can successfully fulfill the expectations of my new position and the mandate I received from the Premier the first day in office. I've met many new people, visited and met with many Chiefs and councils, municipal councils and the Manitoba Métis Federation. It has opened my eyes to a different world than I've lived in and worked in most of my life. It has also made me realize how much the media influences our lives,
our thoughts and ultimately, our decisions. I now understand there are a lot of important facts in most stories that would change our views in some cases. I've been in the company of many kind, caring and compassionate people who work tirelessly to help those less fortunate and others who quietly donate on a regular basis to ensure everyone can have a better life. These generous gifts of time, money and special gifts are even greater at Christmas. These are the stories we seldom hear about but these special people make such a positive difference in all our communities. I thank all those who give from the heart at Christmas and throughout the year and make a difference in the lives of others without prejudice or judgement. Manitoba is a great province and I appreciate the many great people that work quietly to spread happiness and comfort to those less fortunate or often forgotten. I'd like to wish everyone a safe and Merry Christmas.

Swedish Christmas bread
Ritual breads are featured at every important occasion around the world, especially at Christmas time. Lightly spiced, Swedish Vetebröd serves as Sweden’s favorite Christmas bread. Scandinavians hold claim to be the greatest coffee drinkers in the world and this Swedish bread is a perfect accompaniment to a morning cup of coffee. Cardamom wreath 4-5 cups flour 1 Tbsp. dry yeast 1 egg 1/2 cup warm water 1 Tbsp. water 1 tsp. sugar Glaze: 1 1/2 cup milk 1/2 cup icing sugar 1/3 cup butter 2 tsp. milk 1/3 cup honey 1/2 tsp. vanilla 2 eggs Garnish: 2 tsp. orange zest 1/2 cup slivered almonds 2 tsp. cardamom glazed cherries 1 tsp. salt Put yeast to proof with the warm water and sugar. Place milk, butter and honey in a small pot and warm up just enough to melt butter. Put the milk mixture into a mixing bowl adding the eggs, orange zest, cardamom and salt. Add the proofed yeast. Using a dough hook, stir in four cups of flour, one cup at a time. Beat the dough for 10 minutes with the dough hooks. Roll out on floured surface and shape into a ball; if dough is too soft, add more flour. Place in a greased bowl and turn once to grease the top. Cover and let rise until doubled, about one hour. Punch down, divide dough in two pieces. Rollout each piece into a long narrow strip and cut into three sections. Roll each section into a 15-18” rope. Braid the 3 pieces together on a greased cookie sheet. Leave as a rope or form into a ring and pinch ends together. Repeat with the second dough piece. Cover and let rise until almost double, about 45 minutes. Beat the Tbsp. water and egg together and brush over dough. Bake in a preheated 350° oven for 20-30 minutes or until golden brown. Place on wire racks to cool. When cool make glaze and brush over, sprinkle almond slivers and cherries over to decorate.

Cranberry oat scones
The Scots take credit for scones or “sgonnes” by their Gaelic name, but they are a favorite all over the British Isles. While these are baking for breakfast the aroma will draw everyone to the kitchen. Cranberry 2 cups flour 1 cup oatmeal 1/3 cup sugar 1 Tbsp. baking powder 1 tsp. salt 1/2 tsp. cinnamon 1/2 cup butter
oat scones 1 egg 1 cup buttermilk 1 tsp. fresh lemon zest 1 Tbsp. sugar 1/8 tsp. nutmeg 1 cup dried cranberries
In a bowl, add the flour, oatmeal, sugar, baking powder, salt and cinnamon. Cut the butter into flour using a pastry blender until the mixture is fine. Add the egg, buttermilk and lemon zest together and add to the flour mix. Do not over mix- just until dough forms a ball. Pat out onto floured surface and pat down to a large circle. Mix the table spoon of sugar with the nutmeg and sprinkle over dough. Cut in half. Cut each halve into 7-8 wedges. Place on ungreased cookie sheet. Bake in preheated oven at 400° for 14-16 minutes or until golden brown. If possible, serve warm. Honey cinnamon butter 1/2 cup butter, softened 1/2 tsp. cinnamon 1/3 cup liquid honey

Lemon poppy seed biscotti
These Italian twice baked cookies have a lovely crisp texture which makes them perfect for dipping. Biscotti freeze well so double the batch to have cookies on hand at Christmas. Lemon poppy seed biscotti 1/3 cup butter, at room temperature 3/4 cup white sugar 2 eggs 1 tsp. lemon extract
1 Tbsp. grated lemon zest 2 1/4 cups flour 1 1/2 tsp. baking powder 1/2 tsp. salt 3 Tbsp. poppy seeds
With a mixer, beat the butter, sugar and eggs on high, until pale and creamy. Beat in the lemon extract and lemon zest. In another bowl mix together the flour, baking powder, salt and poppy seeds. Add the flour mixture to the sugar mix and just stir to combine. With lightly greased hands halve the dough and roll into two 12x3” logs and place on greased cookie sheet. Bake at 350° for 20 to 25 minutes, or until lightly golden. Reduce oven heat to 300°. Cool for five to 10 minutes. On a cutting board with a serrated knife, cut the logs at a 45 degree angle. Place slices flat on the baking sheet and return to the oven for 15 to 25 minutes or until crisp and golden. Cool on wire rack and store in air tight container.

This traditional Christmas salad comes from Finland. Rosolli Salad, a colorful mix of root vegetables cut into cubes. It is not hard to make but does take time. The good news is all the veggies can be done the day ahead. Rosolli salad 3 medium potatoes, cooked and cubed 3 medium beets, cooked and cubed 3 carrots, cooked and cubed 1 onion, finely chopped 3 hardboiled eggs 1 large apple, diced 5 gherkin pickles, finely diced
3/4 -1 cup sour cream 2 Tbsp. finely chopped fresh parsley 2 Tbsp. apple cider vinegar 1 Tbsp. sugar 2 Tbsp. beet water salt and pepper to taste extra parsley for garnish

Cook the potatoes, beets and carrots in separate pots until just tender. Cool and cut the veggies into small, equal-sized cubes. Cook the eggs and chop two, save the other for garnish. Add the two chopped eggs and diced gherkins. Mix them together in a large bowl and season with salt and pepper to taste. To the sour cream, add the parsley, vinegar, sugar and beet water (for colour). When ready to serve, dice the apple and add to the veggies. Stir the dressing in to the veggies. Place in a pretty glass bowl. Garnish with parsley and remaining egg.

Whether you spell it pierogi, piroghi or perogie, Pat’s homemade deep fried perogies are the best! Great to use for appetizers, or with a meal, these tiny potato dumplings are delicious. In this recipe the perogies are smaller than the regular ones. Pat’s deep fried perogie Filling: 2 cups dry cottage cheese About 5 large potatoes 4 cups flour 2 medium onions, very 1 tsp. salt finely diced 1 tsp. baking powder 1/2 cup butter 1/4 cup oil salt and pepper to taste 1 egg, beaten 1 cup warm water Put cottage cheese into a food processor to make it smoother. Add the salt and baking powder to the flour and stir. Mix the cottage cheese into the flour. Beat the
oil, egg and water together and add to the dry ingredients. Knead the dough on a lightly floured surface until firm and smooth. Let stand for two or more hours. While dough is resting, cook the potatoes. Cool slightly and mash. Cook the onion in the butter until the onion is soft, about five minutes. Add into the mashed potatoes and season with salt and pepper. Divide out potions of dough and roll out to 1/8” thickness. Cut into two 1/2 inch circles. Place a small portion of mashed potato (about 1 tsp.) in center of dough. Fold dough over and pinch edge closed to seal in filling. When you are all finished, heat oil in a large pot or electric fry pan and fry the perogies, small batches at a time. Place fried perogies on wire rack to drain off any excess oil. Place on paper towel and cool completely if you are freezing for later. To use as an appetizer, sprinkle with garlic powder and warm in oven. To use as a meal, fry 1/2 onion in 1/4 cup butter. When onion is fried, add 1/2 cup whipping cream and fresh or dried dill and pour over perogies.

Not too sweet, these bars make a pleasant addition to a tray of dainties.
Base: 1/2 cup softened butter 1/4 cup brown sugar 1 cup flour
Top: 3 eggs ... and a round of thanks to all of you 3/4 cup brown sugar for making this holiday season a 1 tsp. lemon juice merry and bright one for us! 1/2 cup flour 1/2 tsp. baking powder 1 1/4 cups chopped dried apricots Icing sugar for dusting
In a small pot, cover apricots with water and bring to a boil. Reduce heat and simmer for 10 minutes: drain. In a bowl combine butter, sugar and flour until crumbly. Spread in a greased 9x9 pan. Bake in 350° oven for 15-20 minutes until set but not browned. In a bowl, add the eggs, sugar and lemon juice. When well mixed, stir in the flour and baking powder. Add the apricots and pour over base. Bake at 350° for 30-35 minutes or until golden and firm when lightly touched. If desired, dust with icing sugar.

Gather your little hands to help prepare this loaf recipe to share with someone special this holiday season. With the blend of spices and orange zest, your kitchen will smell like the holidays. Carrot pineapple ribbon loaf Filling: 1 250g package cream cheese, room temperature 1/3 cup sugar 1 1/2 Tbsp. flour 1 egg 2 tsp. fresh grated orange rind

Loaf: 1 cup raisins 3 eggs 1 1/2 cup sugar 1/2 cup oil 2 tsp. vanilla 1 cup drained crushed pineapple 2 cups grated carrots 3 cups flour 2 tsp. baking soda 1/2 tsp. baking powder 2 tsp. cinnamon 1/2 tsp. cloves 1/2 tsp. salt
First make your filling by beating cream cheese with the remaining filling ingredients. Set aside. Place raisins to soak in hot water to plump. Beat eggs well. Add the sugar, oil and vanilla and beat until light and foamy. Add the pineapple and carrots. Drain the raisins well and add to the batter. In another bowl, blend the flour with the baking soda and powder, the cinnamon, cloves and salt. Add to the batter and stir well. Pour batter 1/3 the way up two large greased pans (or use three smaller loaf pans). Make sure not to fill too much, as I did! Carefully spread the filling mixture over the batter. Add the remaining batter over the cream cheese. Bake at 350° for 45 to 60 minutes- it depends on your pan size. Test for doneness by inserting tooth pick, if it comes out clean it is done. Cool in pans for 10 minutes, then remove from pan and place on wire rack for more cooling. Wrap pretty and give to your favorite people.

In the Philippines, Leche Flan is a popular dessert during celebrations and the dining table won’t be complete without it. Traditionally, a llanera - an oval shaped aluminum pan - is used for this recipe, however, any shape of cake pan, round or square can be used. This recipe would fill a 9” round cake pan or use several smaller pans. Although it sounds fussy, the simplicity of the ingredients and the short prep time made it easy to prepare. Leche flan is delicate, heavenly and hugged by caramel; a perfect way to end your holiday meal. Leche flan 1 cup white sugar 3/4 cup water 10 raw egg yolks 1 354ml can evaporated milk
1 300ml can sweetened condensed milk 1 tsp. vanilla
In a saucepan, mix the sugar and water. Bring to a boil for a few minutes until the sugar caramelizes-about 5-6 minutes. It needs to be golden color. Very lightly grease pan. Immediately pour and spread the caramelized sugar into pan and set aside. Combine the egg yolks, evaporated milk, condensed milk and vanilla and mix well using hand or blender. Gently pour the mixture on top of the caramel in the pan. Fill the pan to about 2 inches thick. Cover the pan with aluminum foil. In a preheated oven of 325 °, place a large, deep baking pan (larger than the leche pan). Add enough hot water to fill up the large baking pan halfway full. Place the foil covered pan with the custard and caramel in the center of the larger baking pan. This is called a water bath or ‘bano maria’ way of cooking. Bake for 45 to 55 minutes. If using several smaller pans, less time is needed. Test the custard to see if it is done by inserting a thin knife. If the knife comes out clean, it’s done. Cool and refrigerate before serving. To serve, run a thin knife around the edges to loosen the sides: place a platter on top of the pan and quickly turn upside down to position the golden brown caramel on top. For a different flavor, instead of the vanilla extract use lime/lemon zest.

These chewy cookies come highly recommended by this grandma’s grandson. Gumdrop cookies 1/2 cup soft butter 1 cup white sugar 1 egg 1 Tbsp. water 1 tsp. coconut flavoring 1 cup flour 1/2 tsp. baking powder
1/2 tsp. baking soda 1/2 tsp. salt 1 1/2 cups oatmeal 1 1/2 cups shredded coconut 1 cup baking gumdrops
Add the butter and sugar to the mixer. Beat until well mixed, then add the egg, water and flavoring. In another bowl, mix the flour, baking powder, baking soda and salt together. Stir into the creamed mix. Add the oatmeal, coconut and gumdrops. Shape into balls. Place on lightly greased cookie sheet and slightly flatten (not too flat). Bake in preheated oven at 350° for 12-15 minutes or until golden brown. Cool on wire rack.

Cookies for Santa Leaving cookies and milk for Santa Claus is a Christmas Eve tradition. Children regularly place a dish of cookies and a glass of milk by the tree on Christmas Eve so that Santa has enough energy to complete all of his gift-giving before kids wake up on Christmas morning. The tradition of leaving cookies out on Christmas Eve may trace its origins to Saint Nicholas. On the feast of St. Nicholas on Dec. 6, children would leave food and drink for the saint and any attendants. The treats would be exchanged for gifts. While that’s one theory behind the tradition, others think it is linked to the history of the Christmas tree and the edible decorations that adorn it. Santa would snack on the ornaments. Even after edible decorations gave way to inedible ornaments, the tradition of leaving a snack for Santa remained. Melt the butter and mix the brown sugar and flavoring in. Stir in the eggs, then add the coffee mix. Mix in the walnuts and chocolate chips. Put the filling into prepared tart shells. Bake in preheated 350° oven for 20-25 minutes so the crust is golden brown and the middle is “set”. Makes about 12-14 three inch tarts.

Revisit lesser-known Christmas traditions Christmas celebrants participate in many different traditions year after year, but some may not fully understand the meaning behind such activities. People who hang mistletoe in doorways may be surprised to learn that this tradition dates back to the ancient Druids. The Druids believed mistletoe possessed mystical powers that brought good luck to the household and warded off evil spirits. Evergreen trees are now associated with Christmas trees, but evergreen boughs were once used to decorate homes during the winter solstice to help people envision the spring to come. Christians often look at evergreen trees as a sign of everlasting life and their relationship with God. However, while many Christmas traditions continue to be an integral part of annual celebrations, there are some customs that have fallen out of favor. Although these traditions may no longer be widely practiced, anyone can revive them and make them part of their holiday
tradition as much as those from other countries. However, with the right recipe and an open mind, it may be possible to resurrect the fruit cake tradition once again. Mummers plays are another British tradition that arrived in North America with settlers but has largely fallen by the wayside. Mummers plays involved miming folk dramas and the plays were commonplace around the holiday season. Celebrants

The history behind some beloved Christmas songs Holiday traditions vary from family to family, but one component of the holidays that seems to be universally enjoyed is a good Christmas song. Music is piped throughout malls and stores to entertain shoppers and favorite tunes may be on the radio or streamed through a digital music service as families decorate their homes. Many people may love Christmas songs and carols, but not everyone shares the same favorites. Thankfully, there’s no shortage of material when it comes to Christmas songs, ensuring there’s something for everyone. In 2014, Time magazine researched records at the U.S. Copyright Office to determine the most popular and most recorded Christmas songs since 1978. when copyright registrations were digitized. The following are some of the more beloved holiday tunes and a bit of history about each song. • Silent Night: One of the most rerecorded songs in history (733 versions since 1978), Silent Night, was composed in 1818 by Franz Xaver Gruber and put to lyrics by Joseph Mohr. It was first performed on Christmas Eve at St. Nicholas parish church in Oberndorf, a village in
Austria. Today’s version is a slow lullaby, but it’s believed the original was a dance-like tune in 6/8 time. • O Holy Night: This popular song was composed by Adolphe Adam in 1847 to a French poem titled, Minuit, chrétiens (Midnight, Christians). Many notable performers, including Perry Como, Céline Dion, Josh Groban, Michael Crawford and Lea Michele, have performed O Holy Night. • Silver Bells: Now a Christmas classic, Silver Bells was originally written for the Bob Hope film, The Lemon Drop Kid. Songwriter Jay Livingston wanted to title the song Tinkle Bell, but his wife dissuaded him from using the word “tinkle.” • White Christmas: Irving Berlin believed his song White Christmas would be an instant hit. His prediction was correct, especially after singer Bing Crosby recorded it. • Jingle Bells: Although it has become one of the more popular Christmas songs, Jingle Bells really was written for Thanksgiving. It’s also one of the oldest holiday songs of American origin. James Lord Pierpont, the song’s author, was inspired by the famous sleigh races of Medford, Massachusetts. • Do You Hear What I Hear: Noel Regney wrote this song as a call to peace

during the Cuban Missile Crisis. The original context has long been forgotten, and Do You Hear What I Hear is now a staple of holiday celebrations. • Santa Claus is Coming to Town: James Gillespie wrote this tune while riding a subway and reminiscing about his childhood with his brother. It became a hit after being performed at the famed Macy’s Thanksgiving Day Parade. • The Christmas Song: This classic Christmas song was written in 1944 by Bob Wells and Mel Tormé. It’s usually subtitled Chestnuts Roasting on an Open Fire. The song was written during a heat wave as a way to think cool thoughts. It only took 40 minutes to write the music and some of the lyrics. Nat King Cole’s rendition of the song is among the more popular versions. Christmas songs are enjoyed and performed year after year. Simple ways to dress up your home for the holidays The holiday season is rife with traditions that focus on fun and family. One such testament to the festive spirit of the holiday season is the many homes and businesses decorated with the lights and colors that have become synonymous with the season. Decorating for the holiday season can be time-consuming. While decking the halls may not consume as much time as holiday shopping and wrapping presents, according to data from a 2013 American Time Use Survey, interior and exterior decorating for the holidays may consume anywhere from 2.5 to 3 hours per session. Holiday decorating includes things as simple as setting up a menorah or as complex as stringing lights on the exterior of a home. Though elaborate displays can take hours to erect, time-crunched holiday celebrants can still create festive, welcoming displays. • Hang holiday wreaths: Holiday enthusiasts without much time to decorate can invest in a couple of holiday wreaths, which can be dressed up as much or as little as celebrants prefer. If you do not have the time to string lights on the house, wrap them around wreaths hung in windows or hang the wreaths on a home’s main entrance. Celebrants who want to go a less traditional route can hang wreaths made of holly, citrus fruits, ribbons, or any other greenery instead of the more customary evergreen wreaths. • Decorate with ornaments: Ornaments are not exclusive to Christmas trees. Fill a
vase or bowl with metallic ornaments and place it in a prominent location, such as a busy hallway or the foyer of your home. Hang ornaments on clear filament from the mantle or within the main window of the house, where they can reflect tree lights and add sparkle. • Bring in more greenery: Drape evergreen boughs on staircase hand railings or on the mantle, or use greenery to frame doorways. The scent will be inviting and things instantly will look more festive. • Use throws and decorative pillows: Change the look of a room with holidaycolored decor if you do not want to clutter the space with knickknacks. A red and green blanket draped over the sofa can give off a comforting holiday vibe. • Focus on the front door and entryway: Celebrants who do not have the time to decorate their entire homes can create a warm, inviting space by decorating their front doors and entryways. Place greenery, bows, tinsel, lights, and winter-inspired accessories by the front door so friends and family visiting for the season catch the holiday spirit the moment they walk through the door. • Place LED candles in windows: Rather than contending with twinkle lights and electric cords, homeowners can employ battery-operated faux candles to create a homey appeal in windows and hallways throughout their homes.
