1 ¼ cups Israeli Couscous 2 cups Chicken Stock 1 cup diced Bacon 4 Boneless Chicken Thighs 2 Tablespoons Olive Oil 2 stalks minced Celery ¼ Onion, minced 1 cup Parmesan Cheese 1 cup Panko Bread Crumbs 1 egg

Season Chicken thighs with salt and pepper and bake at 350 degrees until fully cooked (165 degrees).

Cool and shred the meat. Boil chicken stock and add couscous. Cook stirring regularly.

Cook Bacon in small fry pan: pat off excess fat Add Parmesan cheese until it has firm texture. Add in celery and onion. Roll the mixture into balls, coat in egg and panko.

Fry in olive oil for 3 – 4 minutes or until golden brown all around.

Sautéed Julienne Vegetables

2 large Carrots 1 Celery Root ½ to 1 Onion 1 Green Pepper

Julienne celery root, carrots, onion, and green pepper. Mince garlic.

Add olive oil to pan on medium heat and sauté remaining ingredients until tender.

Sweet Chili Sauce

1 cup Rice Vinegar 1 cup + 1 Tablespoon Water 1 up + 2 Tablespoon Cane Sugar 1 – 2 teaspoons Red Chili Flakes 1 ½ teaspoons minced Garlic 1 teaspoon minced Ginger 1 teaspoon Soy Sauce 2 teaspoon Corn Starch 2 drops red food coloring

Mix cornstarch and 1 Tablespoon of water in a small bowl, set aside

Mix all other ingredients in a small saucepan, and bring to boil

Add cornstarch slurry, stir until slightly thickened. Cool completely

To plate; Arrange sautéed vegetables on plate, place 1 or two fritters on top and drizzle with Chili Sauce.

In a recent telephone interview, I asked Dr. Nelson if sleep disorders can be dangerous. His answer surprised me. Many medical experts believe Supreme Court Justice Anthony Scalia died from complications related to sleep apnea. His CPAP was on his nightstandunplugged and not turned on.

Signs of sleep apnea include: loud snoring, waking out of breath or gasping for air, morning headaches, sore throat, or dry mouth, excessive daytime sleepiness, exhaustion, or fatigue, lack of concentration, memory loss, mood swings, changes in behavior, and sexual disfunction, according to Dr. Nelson’s website.

If you aren’t sure if you are suffering from sleep apnea, Dr. Nelson suggests you take the simple STOP-BANG assessment. It is a simple diagnostic tool developed to determine if you are at risk of having sleep apnea and need to be tested.

The most common treatment for sleep apnea is CPAP (Continuous Positive Airway Pressure), a machine that supplies a steady flow of air through a mask during sleep. However, many patients cannot tolerate the mask and abandon using it, like Justice Scalia. What Dr. Nelson offers is a proven alternative to CPAP: an oral device. One customer complimented the delicious menu stating “San Jose is very delicious! The burritos [were] made with the finest ingredients and the meat was cooked perfectly. There was no wait, and the staff is extremely friendly. They will always put a smile on your face!”

The family-owned restaurant is known for their top-notch tacos that bring the taste of San Jose to the Lutz area. Tacos represent one of the standard dishes of Mexican cuisine, so San Jose takes great pride in making them the best tacos that you have tasted! known for their amazing house lime, skinny and organic margaritas. Happy hour is every day from 2-7 pm, for the house lime margaritas. You can get two twelve-ounce margaritas for only $10, or a large thirtytwo-ounce margarita for only $10 as well!

Some other delicious menu items include freshly made salads and steaming hot fajitas. From shrimp salads, to taco salads and anything in between, San Jose makes all their salads fresh after order. Any salad can be customized to accommodate any dietary needs or restrictions! All fajitas are served hot and fresh! You have your choice of protein between chicken, steak, shrimp, or a combination between all three. Grilled tomatoes, onions and peppers are also mixed in! Fajitas are served with rice, fired beans, lettuce, guacamole, sour cream and flour tortillas.

“We have been going here for years and it’s excellent every time! The margaritas are perfect, and the food is some of the best Mexican food I have ever had! Don’t hesitate to eat here,” said customer Matt B.

COVID-19 Safety Procedures and Protocols

With the continuous spread of COVID-19, San Jose is taking extra precautions to ensure the safety of everyone who walks through the doors. “Our first rule has always been safety. We always want to provide a safe environment for not only our customers, but for our employees, so we are really trying our best to do that,” said the manager.

San Jose takes cleaning procedures seriously, so everything is always sanitized! Before a party arrives and after a party leaves, the tables and chairs are always sprayed down and sanitized for the next family. Menus are also sprayed down after every use and there are stations with hand sanitizer at the entrance and around the restaurant. Employees come in early before the restaurant opens to clean and sanitize every aspect of the restaurant so customers can have peace of mind knowing they are entering a clean and safe establishment.

Although the restaurant is back at full capacity, face masks are still a requirement to enter, and cannot be taken off until sitting down at a table.
