Recipe Of The Week: No-Bake Cheesecake Eggs

No-Bake Cheesecake Eggs Serves 2

Base

1 medium chocolate Easter egg

35 grams unsalted butter

75 grams digestive biscuits

Filling

200 grams full-fat soft cheese (such as cream cheese or neufchâtel), at room temperature

1⁄2 teaspoon vanilla extract

2 tablespoons icing sugar

100 milliliters double cream

25 grams cocoa powder

Decoration

50 grams milk chocolate, melted Easter chocolates, Sprinkles

Directions:

Base

Carefully split the Easter egg into two halves.

Melt the butter in the microwave in short bursts or in a small pan over a medium heat. In a food processor, blitz the biscuits to a fine crumb, add the melted butter and pulse a few times until the mixture is well combined.

Divide the mixture equally between the two halves of the Easter egg, and very gently press down, without breaking the shell.

Filling

In a large bowl, whisk the cheese, vanilla extract and icing sugar until smooth. Add the double cream and cocoa powder and whisk again until smooth and thickened. Divide the mixture evenly between the two Easter egg halves and smooth over as carefully as possible. Chill in the fridge for an hour or so until set.

Decoration

Drizzle the melted milk chocolate over the two halves and decorate with some Easter chocolates and sprinkles.

Editor’s note: Icing sugar also is known as confectioner’s sugar or powdered sugar. In the United States and Canada, “double cream” may not be readily available. Double cream has a higher butterfat content and is primarily sold in the UK. If double cream is not available, try substituting with heavy cream with the highest fat content you can find, but note that the consistency of the finished product may be slightly different.

NOTICE IS HEREBY GIVEN, that a Public Hearing of the qualified voters of the Lindenhurst Union Free School District, Town of Babylon, Suffolk County, New York will be held at the McKenna Administration Building, 350 Daniel Street, Lindenhurst, New York, in said District on May 7, 2025, at 8:00 p.m., prevailing time, for the transaction of business as authorized by the Education Law, including the following items:

1. To present to the voters a detailed statement (proposed budget) of the amount of money which will be required for the 2025 - 26 fiscal year.

2. To discuss all the items hereinafter set forth to be voted upon by voting machines at the Budget Vote and Election to be held on Tuesday, May 20, 2025.

3. To transact such other business as may properly come before the meeting pursuant to Education Law of the State of New York and acts amendatory thereto.

Shall the Board of Education of the Lindenhurst Union Free School District be authorized, to expend from the Capital Reserve Fund, which was established on May 15, 2018 (“Reserve Fund”) pursuant to Section 3651 of the Education Law, for the following capital improvement project consisting of high school roofs and HVAC equipment, middle school gutter repairs and installation, district-wide plumbing repairs, repairs to the pool and pool facility, elementary school security vestibules, elementary school site work, districtwide electrical upgrades, and other district needed capital improvement work and materials required in connection therewith; and to expend from the Reserve Fund therefor, including preliminary costs and costs incidental thereto, in an amount not to exceed the estimated total cost of Two Million Two Hundred and Twenty Six Thousand Five Hundred and Sixty Nine Dollars ($2,226,569).

AND FURTHER NOTICE IS HEREBY GIVEN, that a copy of the detailed statement in writing of the amount of money which will be required for the 2025 – 26 school year for school purposes (the proposed budget), will be made available, upon request, to any resident of the District between the hours of 8:00 a.m. and 4:00 p.m. beginning April 30, 2025 except Saturday, Sunday or holidays, at the District Administration Office, 350 Daniel Street, Lindenhurst, New York, at each schoolhouse in the District, on the District’s website at www. lindenhurstschools.org, and at the Lindenhurst Memorial Library.

AND FURTHER NOTICE IS HEREBY GIVEN, that pursuant to Section 495 of the Real Property Tax Law, the School District is required to attach to its proposed budget an exemption report. Said exemption report, which will also become part of the final budget, will show how much of the total assessed value on the final assessment roll used in the budgetary process is exempt from taxation, list every type of exemption granted, identified by statutory authority, and show: (a) the cumulative impact of each type of exemption expressed either as a dollar amount of assessed value or

as a percentage of the total assessed value on the roll; (b) the cumulative amount expected to be received from recipients of each type of exemption as payments in lieu of taxes or other payments for municipal services; and (c) the cumulative impact of all exemptions granted. AND FURTHER NOTICE IS HEREBY GIVEN, that petitions nominating candidates for the office of member of the Board of Education shall be filed with the Clerk of said School District at her office at the District Administration Office, 350 Daniel Street, Lindenhurst, New York, not later than April 21, 2025, between 8:00 a.m. and 5:00 p.m., prevailing time. Each petition shall be directed to the Clerk of the District; must be signed by at least 25 qualified voters of the District (representing the greater of 25 qualified voters or 2% of the number of voters who voted in the previous annual election); must state the name and residence of each signer, and, must state the name and residence of the candidate and shall describe the specific vacancy for which the candidate is nominated. Each vacancy upon the Board of Education to be filled shall be considered separate specific vacancies. A separate nominating petition is required to nominate a candidate to each separate specific office. AND FURTHER NOTICE IS HEREBY GIVEN, that personal registration of voters is required either pursuant to §2014 of the Education Law or pursuant to Article 5 of the Election Law. Presiding Officer McCaffrey Recognizes Patricia Rattigan As Irish American Of Distinction

On Tuesday, March 26, 2025, the Suffolk County Legislature gathered for their Third Annual Irish American Heritage Celebration! Presiding Officer McCaffrey was proud to recognize Patricia Rattigan as the honoree for Legislative District 14!

Legislators each selected a distinguished Irish American from their local communities who has helped enhance our shared Irish Heritage here in Suffolk. This annual event is seen as a wonderful opportunity to celebrate Suffolk’s approximately 300,000 of the nearly 33 million Americans with Irish ancestry and all they add to the betterment of our county and nation.

The honorees, officials, families, and friends were treated to beautiful renditions of the national anthems of both Ireland and the United States,

as well as musical performances by the Suffolk County Police Emerald Society Pipes & Drums and the Hibernian Festival Singers.

“As a proud member of the Irish American community, I was pleased to honor Patricia Rattigan, the daughter of Irish American parents, with grandparents who immigrated from Ireland- County Clare, County Derry and County Donegal,” said Presiding Officer Kevin J. McCaffrey.

“Patricia has been a member of the Ladies Ancient Order of Hibernians for more than 50 years. In that time, she served on the Suffolk County Board for ten years. After being elected President, she served on the Suffolk County 1917 Committee – raising funds for the monument in Central Islip and partnered

with the Babylon Breast Cancer Coalition to raise $30,000. She also served the New York State Board for 10 years and was awarded Life Membership.”

“At Division Two in Babylon, Patricia has served as President and has chaired numerous events and committees, including the creation of an Outreach Dance to raise money for nine parish food pantries. The Dance has raised more than $200,000. Patricia has also been part of the Celtic Degree Team for 25 years, coordinating the initiation of new members and giving them an overview of how Ancient Ireland and its history is relevant to the present. She has also taken over leadership of the “Then and Now Club! “Further, Patricia and her husband, John, have been married for well over 50 years,” said McCaffrey.
