THE PRESIDENT’S MESSAGE

Here we are at the halfway point of winter, which is February 2nd, and the days are slowly getting longer with more sunlight. Midwinter activities keep us busy while others are looking ahead to warmer days as retail stores display early spring items to encourage wishful thinking.

We know that our local football fans have viewing party plans to enjoy the highly anticipated Super Bowl in New Orleans on the 9th between the Eagles and the Chiefs. The chamber reminds everyone to shop local when taking advantage of the great deals for catered platters from the many establishments around town to enjoy the big game or just an excuse to host a get-together.

Soon after football is over its NASCAR racing season again and then the endearing Galentine’s Day for gal-pals to celebrate friendships followed by Valentine’s Day, which falls on a Friday this year, for all our loved ones to be cherished whether they are near or far. It’s always great to take the time to do something wonderful for them. We hope you have a special day filled with chocolate and flower bouquets or go out to dine nearby. Reserve your seats early, especially if there’s an event promoted.

Looking ahead the chamber heard that the Bethpage St. Patrick’s Day Parade is March 2nd so be mindful of the extra preparations going on around town at the end of the month by the Bethpage Fire Department and roster of parade participants.

First Graders Take A Journey Through Space With Starlab

First graders across all Bethpage elementary schools have been blasting off into a world of wonder this month, exploring the Starlab with Mr. Chris Pollatos, Director of Science.

Bethpage Union Free School District is proud to own its very own Starlab system, a cutting-edge resource that transforms science education into an immersive and magical experience.

In addition to astronomy, the Starlab software offers educational content on geography, geology and meteorology, making it a versatile tool for teaching complex scientific concepts in a fun and accessible way.

The first graders were thrilled to take their virtual journey through space, with many calling it the highlight of their school day. Thanks to the Starlab system and Mr. Pollatos’s guidance, these young learners experienced the magic of the universe right from their school, inspiring them to reach for the stars!

The Starlab system consists of a portable dome, an advanced projection system and specialized software that delivers gradeappropriate lessons aligned with Next Generation Science Standards. During their visit, first graders explored the positions of the sun at different times of the day, visited planets like Mars and Saturn up close and discovered the stories behind a variety of constellations.

John F. Kennedy Middle School Hosts Thrilling Third Annual Spelling Bee

On Jan. 9, Bethpage’s John F. Kennedy Middle School held its third annual school-wide spelling bee, showcasing the linguistic talents of its 6th, 7th, and 8th grade students. The event took place in the JFK auditorium and was coordinated by Ms. Brittny Hayes, with Ms. Valerie Filbry serving as the emcee

for the competition.

This year’s spelling bee featured 33 competitors, each vying for the coveted title of school champion and the opportunity to advance to the regional competition. The stakes were high, as the winner of the regional competition will receive an all-expenses-paid trip

to Washington, D.C., to compete in the prestigious national spelling bee.

The competition was intense, with participants demonstrating exceptional poise and skill as they tackled increasingly challenging words. After many riveting rounds, 8th grader Maahira Kaur emerged as the champion,

earning first place with her

second place, rounding out the top three. The entire Bethpage community extends its

heartfelt congratulations to Maahira as she prepares for the regional competition.

Feed Your Game Day Crowd With Smoked Chicken Wings

Super Bowl Sunday has become an unofficial holiday in the United States, where fans ranging from the diehard to the casual to those simply tuning in for the commercials and halftime show gather to enjoy a few fun-filled hours. Seasoned party hosts know that food features as prominently as football and fun come Super Bowl Sunday. Guests may expect a few staples, including chicken wings. With that in mind, hosts can impress their guests by serving up this recipe for “Virgil’s Smoked Chicken Wings With Blue Cheese Dip” from Neal Corman’s “Virgil’s Barbecue Road Trip Cookbook” (St. Martin’s Press).

Directions:

1. To make the dip, combine 1 cup of the blue cheese, mayonnaise, buttermilk, hot sauce, Worcestershire sauce, and salt in the bowl of a food processor and blend on low until smooth.

2. Remove to a medium mixing bowl and fold in the rest of the blue cheese, scallions and celery, being sure to break up the larger blue cheese crumbles. Place in a covered container and refrigerate overnight.

3. Mix all the marinade ingredients in a large mixing bowl. Place the wings in a large container with a lid and pour the mixture over the wings. Toss until the wings are thoroughly coated. Cover and refrigerate for 2 days.

4. Preheat the grill or smoker to 245 F.

5. Spread out the wings on a sheet pan and wipe away any excess marinade. Sprinkle liberally with the dry rub, coating the wings all over.

6. Position the wings on the grill away from the direct heat of the coals or burners, and add hickory to the smoker or hickory chips on the coals or gas burners.

7. Cook the wings for about 3 hours, flipping every 30 minutes (their internal temperature should be about 165 F when cooked).

8. While the wings are cooking, cut the butter for the sauce into 1-inch cubes and refrigerate. Whisk the cornstarch into the white vinegar in a small bowl.

9. In a medium sauté pan over medium heat, bring the hot sauce to a simmer and whisk in the thickened vinegar. Return to a simmer, cook for 1 minute, and remove from the heat.

10. Add the cayenne and slowly whisk in the cold butter. Keep warm until serving.

11. Remove the wings from the smoker or grill and put half of them into a bowl, cover with the sauce, and toss. Repeat with the remaining wings and serve on a platter, with the blue cheese dip on the side.

Makes 4 servings

Blue Cheese Dip

2 cups blue cheese crumbles, divided

1 cup mayonnaise

1⁄2 cup buttermilk

2 teaspoons hot sauce

1 teaspoon Worcestershire sauce

1⁄2 teaspoon kosher salt

1⁄4 cup finely chopped scallions

1⁄4 cup finely chopped celery

Marinade

1⁄2 cup vegetable oil

1⁄2 cup hot sauce

4 tablespoons Virgil’s Dry Rub (see below)

4 tablespoons granulated garlic

4 tablespoons granulated onion

Juice of 1⁄2 lemon

Wings

8 large chicken wings

1⁄2 cup Virgil’s Dry Rub (see below)

Sauce

10 tablespoons unsalted butter

1 teaspoon cornstarch

4 tablespoons white vinegar

3⁄4 cup hot sauce

1⁄4 teaspoon cayenne pepper

Virgil’s Dry Rub

Makes 5 to 5 1⁄2 cups

2 1⁄2 cups sweet paprika

1 cup granulated sugar

1⁄2 cup Texas-style chili powder

1⁄2 cup minced onion

1⁄2 cup granulated garlic

1⁄4 cup dried parsley flakes

6 tablespoons kosher salt

Directions:

Combine all of the ingredients in a medium bowl and whisk together until completely incorporated. Transfer to a covered bowl with a tight-fitting lid. Store in a cool, dry place.

Getting The Lead OUT!

During the past few months, residents and commercial owners across Long Island may have received a letter from their local water service provider indicating if the water lines located in their homes or businesses are made of lead, galvanized steel, or non-lead materials. The initiative is part of a national ruling issued by the United States Environmental Protection Agency (EPA) for all water service providers across the country to take full inventory of water service lines and then remove any possible lead piping that may exist.

Here at the Bethpage Water District, our diligent staff was steadfast in coordinating our service line inventory ahead of the October 2024 national deadline that was imposed by the EPA. Thanks to our consumers, who widely responded to our calls for action to help us identify the service lines within their homes or businesses, we were able to establish a comprehensive inventory which included 99 percent of customer accounts. Just a few homes in our community potentially have lead, or unidenti ed service lines. Those customers have been noti ed and remediations will follow.

Thanks to our highly advanced and sophisticated treatment systems, I’m here to assure you that there are no traces of lead in our water distribution system. Weddings offer an opportunity for happy couples to express their love for one another while showcasing their own personalities. Couples can choose from an assortment of wedding styles when planning their nuptials, and the style they ultimately pick says something about who they are.

Traditional weddings are popular, and these types of ceremonies suggest couples value tradition and perhaps have a sentimental attachment to the style due to a parent, grandparent or another loved one. Couples considering a traditional wedding should know that such affairs typically include the following components.

• Processional: Most people who have attended a wedding are familiar with the processional, during which bridal party members walk down the aisle. Groomsmen typically accompany bridesmaids down the aisle in

For example, couples who may be going over budget with their guest lists can each agree to remove distant cousins from their prospective invitees.

Many couples face difficult decisions regarding their wedding day guest lists, so it can be helpful to speak to a recently married friend or relative to see how they handled paring down their guest lists. Some might have done it by category, while others might have limited guest lists to local friends and family. When taking this

• Upgrade your equipment. There’s no doubt about it, football is best watched on a big screen. Choose

a screen size of at least 65 inches and ensure the television has a high refresh rate, which helps to keep up with fast-moving action on the gridiron. A TV with good motion handling can help ensure that moving objects are clear.

• Tailgate at home. There’s something about football and the outdoors that works. Although watching the game indoors is perfectly acceptable, think about taking the action outside. Open the door to the garage and set up a viewing area there. Man a grill nearby in the driveway and prepare all of your favorite tailgate foods and beverages. Once the drinks are flowing you might not even notice chilly temperatures.

• Offer finger foods. Foods that can be grabbed and shared are ideal options for football watch parties. These include sliders, pizza, tacos, and wings. The game day menu does not need to be complicated. Just make the food readily accessible and guests will dig right in.

• Toss around the pigskin. Get some exercise and test your skills by throwing around the ball during commercial breaks or before and after the game. If you really want to go all out, play a game of touch or flag football

(leave the tackling to the professionals).

• Up the ante. Make watching the game a little more competitive by taking bets beforehand. Betting boxes (football squares) provide a simple way to collect and pay out during game play. Participants buy as many squares as they like for a set price and write their initials inside the squares they choose. Teams are assigned to the rows and columns which are numbered zero through nine. Those numbers will represent the final digit of the score for the corresponding team. Winners can be called each quarter as well as for the final score.

• Create a winning playlist. Compile a playlist of songs that can raise fans’ spirits. Include teams’ theme songs in the mix when possible; otherwise, incorporate upbeat options that span the last few generations.

4 Memorable Moments In The History Of The NFL’s Biggest Game

The National Football League offers no shortage of notable moments over the course of a typical season. Memorable plays and exciting moments begin when the NFL kicks off its season in early September, and the excitement only builds as the season inches closer to the Super Bowl, the league’s much-watched championship game.

The winner-takeall nature of the Super Bowl certainly adds to the gravity of the game, and that has laid the foundation for some unforgettable plays since the first Super Bowl was played in 1967. Any list of notable moments in Super Bowl history could be endless, but the following are four moments that fans of the game won’t soon forget.

1. The Seattle Seahawks decide to throw the ball. The Seahawks were trailing the New

England Patriots 2824 with 20 seconds left in Super Bowl XLIX in Arizona in 2015 but had the ball at the goal line. Most football fans fully expected Seahawks quarterback Russell Wilson to hand the ball off to running back Marshawn Lynch, who scored a rushing touchdown earlier in the game. But Seattle instead chose to pass, and Wilson was intercepted by undrafted rookie Malcolm Butler, a play that sealed the Patriots’ victory and prompted second-guessing from millions of fans.

2. David Tyree makes a catch for the ages. Acrobatic catches have become the norm in the modern NFL, but there may still be no more unlikely catch than New York Giant David Tyree’s “Helmet Catch” in Super Bowl XLII

in 2008. The Giants trailed the Patriots 1410 late in the fourth quarter when Tyree and

his teammates faced a third down. Tyree leapt in the air to catch an Eli Manning pass with

one hand, pinning the ball to his helmet and maintaining possession for a first down and 32yard gain. The Giants ultimately scored a touchdown on the drive to secure a 17-14 victory.

3. Joe Montana keeps his cool. When the Cincinnati Bengals kicked a go-ahead field goal with a little more than three minutes left in Super Bowl XXIII in Miami in 1989, things were looking bleak for quarterback Joe Montana and his San Francisco 49ers teammates. But Montana kept his cool, even pointing into the crowd as the Niners offense huddled on the field and asking, “Hey, isn’t that John Candy?” Montana’s cool demeanor undoubtedly helped the 49ers pull off a stunning comeback, which culminated when

he connected with wide receiver John Taylor on a 10-yard touchdown with 34 seconds to go to cap an incredible 11play, 92-yard drive.

4. Scott Norwood breaks hearts in Buffalo. Memorable plays leave some fans cheering and others lamenting what might have been. Super Bowl XXV in Tampa, Florida, between the Giants and the Buffalo Bills in 1991 certainly featured such a play. Trailing 20-19 with just four seconds to go, the Bills lined up to kick a 47-yard field goal that would have earned the franchise its first Super Bowl victory. But Buffalo placekicker Scott Norwood’s kick sailed wide right, handing the Giants the win and starting a string of four straight Super Bowl losses for the Bills.

On Jan. 3, Bethpage High School welcomed back alumni from the science research program for the Second Annual Science Research Alumni Panel, a special event organized by science research teacher Ms. Nicole Dulaney. The gathering celebrated the accomplishments of program graduates while offering current STEM and research students invaluable guidance for pursuing research-based studies and careers.

The science research program, established in 2011, has fostered a passion for inquiry and innovation among BHS students.

This year’s alumni panel featured six distinguished graduates who shared their academic and professional journeys. Moderated by Ms. Dulaney, the panel discussion covered topics such as each alum’s area of focus, their current roles

Bethpage High School Hosts Second Annual Science Research Alumni Panel

in their studies or careers and advice for students navigating similar paths.

In addition to the panelists, more than 30 alumni returned to participate in breakout sessions, representing a wide array of fields and affiliations at prestigious institutions such as Cornell University, MIT, Stony Brook University, Tufts University, Purdue University and the US Air Force Academy, among others.

Following the panel discussion, students engaged in a Q&A session, where they posed thoughtful questions about the alumni’s experiences, challenges and successes in the field of research. The open dialogue provided students with practical insights into what research entails at the college level and the various career directions it can lead to.

The event continued with breakout sessions, where alumni led smaller, focused discussions tailored to their areas of expertise. Topics included business, dance, engineering, environmental and physical sciences, health sciences, neuroscience, STEM, veterinary science, mathematics and psychology. These sessions gave students the opportunity to explore specific interests in greater depth, ask detailed questions and build connections with alumni who share their passions.

The Second Annual Science Research Alumni Panel was both informative and inspiring. Students gained valuable advice on how to prepare for researchfocused academic paths and careers while still in high school. Additionally, hearing about the diverse accomplishments of alumni and their affiliations with world-class institutions underscored the incredible opportunities available to those with a strong foundation in science research.

BRIGHTENING UP THE HOLIDAYS!

Once again this year the Bethpage Federal Credit Union sponsored and worked with the Bethpage Chamber of Commerce at the Annual Holiday Lighting on December 7, 2024. During this event, close to 100 Bethpage children and friends stopped by the BFCU Workshop located inside Century 21 Catapano Homes, where they took time out from the festivities, petting zoo and other Holiday activities to create and decorate Holiday cards for local Veterans. The cards were delivered by BCC Past President Teri Catapano Black in early December to the Veteran’s Administration Medical Center in East Northport, where they were delivered to Health Systems Specialist Joseph Sledge. Their loving cards were distributed to the veterans as they came for care in the Primary/Specialty Pavilion. Thanks again to the children of Bethpage and the Bethpage Federal Credit Union for helping to brighten up the holidays for our local Heroes!

Hometown Heroes Banner Recognition Applications Now Available

Residents & Businesses Invited To Sponsor Hometown Hero Banners To Recognize Veterans And Active Duty Personnel

Supervisor Joseph Saladino, Councilman Steve Labriola, and Councilman Louis Imbroto announce that the Town of Oyster Bay is now accepting applications for the 2025 Hometown Heroes Community Recognition Program. This cherished initiative honors the service and sacrifice of the brave men and women of the United States Armed Forces – both living and deceased – who are current or former residents of the Town of Oyster Bay.

Councilman Labriola stated, “This Hometown Heroes Banner Recognition Program allows us to show our deep gratitude to the men and women who have put their lives on the line for our nation. Their courage and dedication deserve our utmost respect, and this initiative provides a lasting tribute to their service.

We are proud to bring this important initiative back to our communities.”

The program features banners bearing the honorees’ names, ranks, photographs, and areas of service. These banners will be displayed at selected park facilities throughout the Town of Oyster Bay in the months leading up to Veterans Day in November. To participate, individuals or organizations may sponsor a banner for $75, covering the production cost. No profit is made from this program.

After Veterans Day, the banners will be taken down to prevent damage from winter weather and returned to the service member’s family or loved ones. Those who sponsored banners in the previous year must submit a new application to be included in the 2025 season. Applications are due

by March 14, 2025.

“I’m proud to commend retired U.S. Air Force Captain Warren Achenbaum for his distinguished service as a navigator bombardier and for joining us in promoting the Hometown Hero Banner Program. His dedication to our nation and his support of this important initiative to honor local heroes inspire us all. This program is a meaningful way to recognize the sacrifices and achievements of our veterans, and I thank Captain Achenbaum and his family for their commitment to preserving and celebrating their legacy in our community parks,” added Councilman Louis Imbroto.

Supervisor Saladino concluded, “This program is a meaningful way for our community to pay tribute to those who have bravely and selflessly served our nation.

It is an honor to recognize their sacrifices and their continued contributions to our local communities through advocacy and leadership.”

Councilman Lou Imbroto announced that the Distinguished Artists Concert Series will continue through May 2025 with free performances at local libraries throughout the Town.

“The Distinguished Artists Concert Series provides free musical and dance programs for the enjoyment of our residents,” said Councilman Imbroto. “I encourage residents to take advantage of these wonderful performances offered by the Town for free at local libraries.”

Nachos Make The Ideal Game Day Snack

Game watches with fellow fans, family and friends are a great way to make football even more enjoyable. Football fans would be wise to ready their culinary arsenal. Whether you’re hosting at home or going to a game watch at a fellow fan’s house, keep in mind that food and football are a great match. Certain dishes have long since staked their claim on the game watch dinner and snacking tables, and nachos certainly need no introduction to football fans. Football fans can try this recipe for “Loaded Beef Nachos” courtesy of AllRecipes.com.

Directions:

For taco seasoning: Stir paprika, garlic powder, cumin, onion powder, chili powder, oregano, and salt together in a small bowl; set aside.

Heat oil in a large skillet over medium-high heat; cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Stir in onion and green pepper; cook and stir with oil and juices from browned meat until much of the liquid has evaporated, about 2 minutes more.

Stir 1⁄2 can diced tomatoes with chilies and Mexican-style corn into skillet. Season beef mixture to taste with prepared taco seasoning mix.

Stir together the remaining 1⁄2 can diced tomatoes with chilies and refried beans in a microwave-safe bowl. Microwave on high until heated through, stirring every 30 seconds, 1 to 3 minutes.

To assemble nachos: Lay half of tortilla chips in a single layer on a microwave-safe plate, then drop teaspoons of refried beans onto chips, followed by meat mixture and shredded cheese. Repeat with remaining chips, beans, meat, and cheese to make a second layer.

Microwave on high until cheese is melted and nachos are warm, 2 to 3 minutes. Top with sour cream, salsa, olives, jalapeños, and green onion as desired.

Serves 4

Taco Seasoning:

5 teaspoons paprika

1 1⁄4 teaspoons garlic powder

1 1⁄4 teaspoons ground cumin

1 1⁄4 teaspoons onion powder

1 teaspoon chili powder

1 teaspoon oregano leaves

1 1⁄2 teaspoons salt

Nachos:

2 tablespoons vegetable oil

1 pound ground beef

1 cup diced onion

1 cup diced green bell pepper

1 10-ounce can diced tomatoes with green chiles (such as RO-TEL®)

1 15-ounce can Mexican-style corn (optional)

1 16-ounce can refried beans

1 cup shredded Cheddar cheese, or as needed

4 ounces tortilla chips, or as needed

Toppings (optional):

1⁄2 cup sour cream (optional)

1⁄2 cup salsa (optional)

1⁄4 cup sliced black olives (optional)

1⁄4 cup sliced jalapeños (optional)

1⁄4 cup green onion

Bethpage Union Free School District Students Selected For Prestigious All-County Music Festival

Bethpage Union Free School District is thrilled to celebrate the exceptional achievements of our students selected to participate in the prestigious AllCounty Music Festival, sponsored by the Nassau Music Educators Association (NMEA). This event showcases the finest student musicians from grades 4-12 in Nassau County, offering a platform to perform in ensembles of extraordinary caliber.

The All-County Music Festival is an esteemed event that recognizes students’ individual musical achievements. Selected participants join others at their age and skill level to perform in high-caliber ensembles. Selection is based on NYSSMA Solo adjudication scores from the previous school year, along with teacher recommendations, instrument balance and ensemble repertoire.

Students must be nominated by their school music teacher to be considered for All-County. Each nomination is reviewed by a committee that carefully evaluates candidates based on specific criteria, including NYSSMA scores and teacher recommendations. Not all nominees are selected, making the honor even more significant.
