SIrish Guinness Stew With Lamb
Makes 6 servings
8 cups lamb or beef stock; divided 1 cup pearl barley
3 lbs. lamb shoulder, cubed Salt, to taste
Freshly ground black pepper, to taste 3 tablespoons oil 1⁄2 cup unbleached all-purpose flour 4 stalks of celery, washed, trimmed and chopped 2 large yellow onions, peeled and chopped 3 cloves of garlic, minced 3 large carrots, peeled and roughly chopped 12 fluid ounces Guinness stout
bunch fresh parsley
bunch fresh thyme
bunch fresh rosemary 3 large potatoes, peeled and cubed 2 teaspoons cornstarch 4 teaspoons water
t. Patrick’s Day is known for revelry. A festive atmosphere prevails each March 17, and people from all walks of life and genealogical backgrounds take part in festivities that have become celebrations of Irish culture. Cuisine is a big part of Irish culture, even if it’s not the first thing people think of when pondering the Emerald Isle. This St. Patrick’s Day, celebrants can bring a touch of Irish cuisine to their celebrations by preparing the following recipe for “Irish Guinness Stew with Lamb” courtesy of Lines+Angles.
Directions:
1. In a medium saucepan set over medium heat, bring 3 cups of stock to a boil; add barley. Reduce heat to low and gently simmer for 20 minutes. Set aside.
2. Meanwhile, pat the meat dry with paper towels. Season the meat with salt and pepper. Heat the oil in a 6 quart Dutch oven. Brown the meat on all sides over medium high heat. Using a slotted spoon, remove the meat from the pot. Sprinkle flour over the meat, shaking off any excess; set aside.
3. Add the celery, onions, garlic and carrots to the pot and saute until onions are soft and translucent. Add Guinness and deglaze the pot, scraping up all the caramelized bits on the bottom and sides of the pan.
4. Chop the leaves of the parsley, reserving the stems. Tie the parsley stems and several sprigs of thyme and rosemary into a bundle; drop the bundle into the pot. Chop the remaining thyme and rosemary; set chopped herbs aside.
5. Return the meat to the pot. Add the potatoes, barley and enough stock to cover the meat and vegetables. Bring to a boil over medium heat. Reduce heat to very low and simmer for 2 to 3 hours, or until meat is fork tender. Stir occasionally, adding remaining stock as necessary.
6. Check seasoning; adjust to taste. Stir in chopped parsley, thyme and rosemary. Mix cornstarch in water and stir. Add to stew, stirring to incorporate. Cook over low heat for 5 to 10 minutes or until stew thickens. Ladle into bowls. Serve with crusty bread and of course more Guinness if desired.

much to celebrate on the Spring Equinox, which is also referred to as the “Vernal Equinox” or the “March Equinox” and marks the official beginning of spring, a season many people associate with rejuvenation and longer hours of daylight. One unusual aspect of the equinoxes (the Autumnal Equinox in September ushers in the beginning of fall) is these days feature the fastest sunsets and sunrises of the year. According to Earthsky.org, this phenomenon occurs because the sun rises due east and sets due west on the equinoxes, which means the setting sun hits the horizon at its steepest possible angle. That steep angle leads to a very short sunrise and sunset on the equinoxes. Traditionally, we celebrate the first day of spring on March 21, but astronomers and calendar manufacturers alike now say that the spring season starts on March 20 in all time zones in North America.
Preserve in Smithtown and one on Saturday, April 5 at Connetquot River State Park Preserve in Oakdale. The clinics will be held rain or shine from 10:00AM – 1:00PM and are open to everyone 16 years and older. If you own fly fishing equipment you are welcome to bring it with you, but it is not required to attend. Clinic topics will include basic casting instructions, equipment needs and selection, conservation, and safety techniques.
Reservations are required and will be accepted beginning two weeks prior to each clinic. There is no registration fee. There will be an $8.00 vehicle use fee in effect at the Connetquot River event on April 5, 2025.

Governor Makes $150 Million Infrastructure Announcement
GovernorKathy Hochul recently announced a transformational $150 million investment to connect the Long Island Rail Road’s (LIRR) Ronkonkoma Station with the proposed North Terminal at MacArthur Airport, significantly improving accessibility and enhancing the region’s transportation infrastructure. St. Patrick’s Day is a time to pay homage to Ireland’s patron saint and celebrate Irish culture and cuisine. Even though corned beef and cabbage is ubiquitous on this holiday, that meal really isn’t the most authentic Irish cuisine. There are plenty of other foods to dress the St. Patrick’s table if a person wants to dabble in Irish cooking. Many cultures have a variation on the potato pancake, and the Irish are no different. Boxty is a traditional Irish potato pancake. Individuals who want to include boxty in their celebrations can try this recipe, courtesy of Chef Pádraic Óg Gallagher of Gallagher’s Boxty House in Dublin.
Irish Boxty
Makes about 10
300 grams (approx. 10 1⁄2 ounces) raw potatoes, peeled
1. Grate the raw potatoes into a muslin cloth and squeeze as much liquid as possible into a bowl. Let liquid stand for 20 minutes.
2. Gently pour off the liquid and keep the starch that settled in the bottom of the bowl.
3. Add grated potatoes to mashed potatoes and flour. Add starch and salt to mix.
4. Slowly add 3⁄4 of the milk to form a batter of pouring consistency. Depending on the potato, you may not need to use all the milk. If the batter is too heavy, add more milk.
5. Leave batter resting for 30 minutes.
6. Drop a ladle full onto an oiled nonstick pan over medium heat and cook on the first side for 2 minutes (this depends on how heavy the batter is and how much you use). Check color (it should be a nice golden color) on the bottom. Adjust heat if necessary.
7. Turn and cook on the other side for 2 to 3 minutes more.
8. Boxty pancakes are best left overnight in a fridge and reheated in a pan in good butter.

Adventureland Announces Price Freeze On Tickets For 2025 Season
Adventureland announced it will be freezing its prices— without freezing the fun! Long Island’s most popular amusement park, offering family fun for everyone since 1962, is offering more value this year, and for the same ticket prices as last year. The park is freezing its admission rates, group rates, season pass rates, and birthday party rates at the same prices from the 2024 season.
“At a time when everything around us is going up, we are proud and excited to be able to provide our
guests this price freeze on admission,” said Jeanine Gentile, Adventureland Park Manager. “We are still making additions to the park, so you will definitely see some great changes for this upcoming season. But one thing that will not be changing is the admission prices for the 2025 season!”
The price freeze is not the only exciting news from Adventureland. For the first time, the amusement park is offering payment plans through FlexPay for online orders of $100 or more. This brand-new
‘Jungle Run.’ Additionally, plans are in place to install three new concession stands and a third restroom facility. Especially exciting is the highly anticipated new family ride, ‘Wave Twister,’ scheduled to open this spring.

Fish And Chips Is An Ideal Meal Throughout Lent
Lent is an important time of year for Christians across the globe. Lent is a season of sacrifice, and many practicing Christians abstain from consuming flesh meat on Fridays in the weeks preceding Easter. Abstaining from meat on Fridays throughout Lent does not require devoted Christians to avoid flavor. In fact, there are many flavorful non-meat dishes for Christians to choose from each Friday during Lent. One particularly flavorful option is this recipe for "Gourmet Fish and Chips" from Lines+Angles.
Directions:
1. For the mushy peas: Combine the peas with the baking soda in a large saucepan. Cover with 8" water. Cover and chill overnight.
2. The next day, drain and rinse thoroughly with cold water.
3. Return the peas to a large saucepan and cover with about 0.5" water. Bring to a boil over a high heat before reducing to a simmer until tender to the bite, about 30 to 40 minutes; skim away any froth that rises to the surface and edges.
Gourmet Fish And Chips
Makes 4 servings
For the mushy peas:
12 ounces green dried peas, split
1 tablespoon baking soda
2 tablespoons butter, softened
Salt
Freshly ground black peppercorns
For the fries:
2 1/4 lbs. white potatoes, peeled
8 cups vegetable oil, for deep frying
4 tablespoons cornstarch
1 teaspoon onion powder or onion salt
For the fish:
4 large white fish fillets, approximately 2 lbs., such as cod or haddock, skinless, pin-boned
1 cup flour
1 large egg, beaten
12 fluid ounces beer, chilled
Salt to taste
Pepper to taste
To serve:
2 gherkins pickles, sliced lengthwise
2 lemons
Sprig curly parsley
4. Remove from the heat and stir in the butter. Season to taste with salt and pepper. Cover and set aside until ready to serve.
5. For the chips/fries: Cut the potatoes into fries. Submerge in a large bowl of water as you heat the oil.
6. Heat the oil in a large, heavy-based saucepan to 285 F; use a thermometer to accurately measure the temperature.

paper towel. Place in a large mixing bowl and sprinkle over the corn starch, onion powder and some salt, tossing well to combine.
8. Deep-fry the potatoes until soft and starting to color, about 10 minutes. Drain on paper towel and cover loosely with aluminum foil to keep warm.
9. Increase the temperature of the oil to 355 F. Working in two batches, return the fries to the oil and fry until goldenbrown and crisp all over.

11. For the fish: Return the frying oil to 355 F; use a kitchen thermometer to accurately gauge the temperature.
12. In the meantime, season the fish with salt and pepper.
13. Combine the flour, egg, 1 teaspoon salt, and some freshly ground black pepper in a large mixing bowl. Whisk briefly to combine before slowly whisking in enough of the beer to make a thick, smooth batter.
14. Working one by one, drop the fish fillets into the batter, turning to coat evenly.
15. Let the excess batter drip off the fish before carefully lowering into the hot oil. Deep-fry until golden-brown and crisp, about 4 minutes. Remove from the hot oil and drain on paper towel, covering loosely with aluminum foil.
16. Repeat steps 14 and 15 for the remaining fish.
17. Reheat the fries in the hot oil if needed, draining well.
18. To serve: Divide the mushy peas between ramekins and place on plates. Divide the fries into individual serving baskets and arrange next to the fish on the plates.
19. Cut the lemons in half, scoring a zig-zag pattern into them with a paring knife. Serve alongside the fish and fries, garnishing the fish with gherkin slices and some parsley sprigs

PSEG Long Island is launching Senior Connections, a new program focused on helping seniors in the community navigate through a range
of important topics. Under the program, PSEG Long Island is providing subjectmatter experts to address groups of seniors about storm preparation, scam prevention, electric safety, energy efficiency and financial assistance.
“We created this Senior Connections program to enhance our commitment
to older adults in the community,” said Michael Presti, PSEG Long Island’s director of Customer Experience and Marketing. “This free program will provide important information to help seniors stay safe and save money at locations that are convenient for them to attend.”

Homefor most people is a sanctuary that offers comfort, familiarity and a place to gather with family and friends. Although home can be a welcoming place, with so many people in the average household humming along from day to day, it may not always be the most serene setting.

A dedicated quiet room can be beneficial for anyone, and most especially for people who experience sensory issues.
What is a quiet room?
A quiet room is a space where a person can enjoy peace and quiet in a distraction-free environment. According to designer Rachel Cannon, "a quiet room is a sanctuary from the stimulation and overwhelm that we encounter every day." A quiet room may go by various names, including a mindfulness room or cozy cove, but the common goal is to remove as many sensory distractions as possible so that an individual can disconnect from the outside world and reap some calming benefits. According to School Specialty, LLC, an education resource provider, schools are now providing quiet rooms for over stimulated students, and homeowners can take similar cues to create these relaxing retreats at home.
How to create a quiet room
The first step in establishing a quiet room is to identify a location that is far away from the main action of the household. A bedroom, basement, nook in the garage, or even an attic can be a good spot for a quiet room.
Soundproofing the space can make it even more inviting. Sounds will bounce off of walls and floors, but acoustic panels can help muffle noises. If acoustic panels are not in the design plan, thicker draperies, wallpaper, carpeting, and wall art can help counteract echoes and noise infiltration. Soft furniture also can absorb sound.
Small rooms work better as quiet spaces, as such areas can feel more cozy. Less is needed to decorate the space if it is on the smaller side. Bring in warm, soft lighting and soft decor. A sound machine playing favorite ocean or natural sounds also can mask outside noises even more.
Establish rules that govern how the quiet space is to be used. When someone is inside the area, they should not be disturbed. If possible, use the quiet room during naturally quiet times of the day. Keep the room stocked with books, journals, crafting items, or whatever it is you need to unwind and relax.
