SIrish Guinness Stew With Lamb
Makes 6 servings
8 cups lamb or beef stock; divided 1 cup pearl barley
3 lbs. lamb shoulder, cubed Salt, to taste
Freshly ground black pepper, to taste 3 tablespoons oil 1⁄2 cup unbleached all-purpose flour 4 stalks of celery, washed, trimmed and chopped 2 large yellow onions, peeled and chopped 3 cloves of garlic, minced 3 large carrots, peeled and roughly chopped 12 fluid ounces Guinness stout
bunch fresh parsley
bunch fresh thyme
bunch fresh rosemary 3 large potatoes, peeled and cubed 2 teaspoons cornstarch 4 teaspoons water
t. Patrick’s Day is known for revelry. A festive atmosphere prevails each March 17, and people from all walks of life and genealogical backgrounds take part in festivities that have become celebrations of Irish culture. Cuisine is a big part of Irish culture, even if it’s not the first thing people think of when pondering the Emerald Isle. This St. Patrick’s Day, celebrants can bring a touch of Irish cuisine to their celebrations by preparing the following recipe for “Irish Guinness Stew with Lamb” courtesy of Lines+Angles.
Directions:
1. In a medium saucepan set over medium heat, bring 3 cups of stock to a boil; add barley. Reduce heat to low and gently simmer for 20 minutes. Set aside.
2. Meanwhile, pat the meat dry with paper towels. Season the meat with salt and pepper. Heat the oil in a 6 quart Dutch oven. Brown the meat on all sides over medium high heat. Using a slotted spoon, remove the meat from the pot. Sprinkle flour over the meat, shaking off any excess; set aside.
3. Add the celery, onions, garlic and carrots to the pot and saute until onions are soft and translucent. Add Guinness and deglaze the pot, scraping up all the caramelized bits on the bottom and sides of the pan.
4. Chop the leaves of the parsley, reserving the stems. Tie the parsley stems and several sprigs of thyme and rosemary into a bundle; drop the bundle into the pot. Chop the remaining thyme and rosemary; set chopped herbs aside.
5. Return the meat to the pot. Add the potatoes, barley and enough stock to cover the meat and vegetables. Bring to a boil over medium heat. Reduce heat to very low and simmer for 2 to 3 hours, or until meat is fork tender. Stir occasionally, adding remaining stock as necessary.
6. Check seasoning; adjust to taste. Stir in chopped parsley, thyme and rosemary. Mix cornstarch in water and stir. Add to stew, stirring to incorporate. Cook over low heat for 5 to 10 minutes or until stew thickens. Ladle into bowls. Serve with crusty bread and of course more Guinness if desired.

What Is A Quiet Room? (And Why You Should Create One At Home)
Homefor most people is a sanctuary that offers comfort, familiarity and a place to gather with family and friends. Although home can be a welcoming place, with so many people in the average household humming along from day to day, it may not always be the most serene setting.
From teenagers playing video games to video meetings in a home office to dogs barking at the postal worker doing daily rounds, there are plenty of potentially distracting sounds in and around a home. A dedicated quiet room can be beneficial for anyone, and most especially for people who experience sensory issues.
What is a quiet room?
A quiet room is a space where a person can enjoy peace and quiet in a distraction-free environment. According to designer Rachel Cannon, "a quiet room is a sanctuary from the stimulation and overwhelm that we encounter every day." A quiet room may go by various names, including a mindfulness room or cozy cove, but the common goal is to remove as many sensory distractions as possible so that an individual can disconnect from the outside world and reap some calming benefits. According to School Specialty, LLC, an education resource provider, schools are now providing quiet rooms for over stimulated students, and homeowners can take similar cues to create these relaxing retreats at home.
How to create a quiet room
The first step in establishing a quiet room is to identify a location that is far away from the main action of the household. A bedroom, basement, nook in the garage, or even an attic can be a good spot for a quiet room.
Soundproofing the space can make it even more inviting. Sounds will bounce off of walls and floors, but acoustic panels can help muffle noises. If acoustic panels are not in the design plan, thicker draperies, wallpaper, carpeting, and wall art can help counteract echoes and noise infiltration. Soft furniture also can absorb sound.
Small rooms work better as quiet spaces, as such areas can feel more cozy. Less is needed to decorate the space if it is on the smaller side. Bring in warm, soft lighting and soft decor. A sound machine playing favorite ocean or natural sounds also can mask outside noises even more.
Establish rules that govern how the quiet space is to be used. When someone is inside the area, they should not be disturbed. If possible, use the quiet room during naturally quiet times of the day. Keep the room stocked with books, journals, crafting items, or whatever it is you need to unwind and relax.

PSEG Long Island commends Cold Spring Harbor Laboratory (CSHL) for its commitment to the environment. The lab completed several projects that qualified for rebates of nearly $280,000 through PSEG Long Island’s energy efficiency programs. The renovations include replacing 5,700 lights with energy saving LEDs, heating and cooling upgrades, and a sub-metering project, which will allow the lab to more effectively monitor and manage its energy usage. CSHL is expected to realize nearly $300,000 in annual savings with the 1.7 million kWh of electricity these projects will save per year.
