Upcoming Programs

With the recent spotlight on bullying in Nelson County, I think it’s important to remember how easy it is to say a kind word. You don’t have to like a person’s personality to like their purse. So compliment their purse. It’s not going to hurt you and it’s only going to help them. Maybe they have a cranky personality because no one is nice to them. Maybe they don’t feel included or loved or appreciated by anyone. Remind people that they’re people just like you. We all put our boots on the same way and no grave is bigger than another. We all have our own talents. And contrary to popular belief, this doesn’t just apply to kids. Grown ups need to hear nice words too. Remember that. Say something nice to somebody this week. Really want to challenge yourself? Say something nice to somebody you don’t like. I promise you’ll survive. County Extension Agent for Family and Consumer Sciences

The Kentucky Cancer Program is offering its annual Adventure Weekends to women cancer survivors (all cancers) in the state. The event is also sponsored by First Lady Jane Beshear, Horses & Hope and the Kentucky State Parks. What: Adventure Weekend for women cancer survivors Where: Barren River Lake State Resort Park Carter Caves State Resort Park When: May 15-17, 2015 (Barren River) August 28-30, 2015 (Carter Caves) Cost: $50 for the entire weekend, room & board, all activities (Financial Scholarships are available) Deadline to apply: April 15, 2015 (Barren River) August 1, 2015 (Carter Caves) Eligibility: Open to women who have experienced any type of cancer. The activities are designed for women who are no longer in treatment and are able to participate in light to moderate physical activities. Previous participants will be put on a waiting list. No pets or families please. Must provide own transportation. 4


Put it in Your Recipe Box! Kentucky Onion Soup 1 cup bread cubes 2 cups Kentucky Proud onions 2 Tablespoons oil 4 cups beef broth or stock 1 tablespoon butter, melted 2 Tablespoons Parmesan or blue cheese, grated

Toast bread cubes in a 325 degree oven until they are completely dried our and lightly browned. Brown onions slightly in oil. Bring stock to a boil, reduce heat. Add onions and simmer, covered until onions are tender, about 15 minutes. Toss toasted bread crumbs with butter and cheese and sprinkle on top of soup just before serving.

Preparation Time: 20 minutes Cooking Time: 15 minutes

Selection: Look for hard, firm onions. Onions should be dry and have small necks. The skin around the onions should be shiny and crackly in feel. Storage: Store dried onions in a cool, dry place. Dry onions will last for 3-4 weeks. Store fresh onions in the refrigerator. Fresh onions will last about a week. Nutrition: Onions are a source of dietary fiber and vitamin C. Onions are low in fat and calories. Onions are rich sources of phytonutrients which have been found to act as antioxidants to lower blood pressure and prevent some kinds of cancer.

There are two types of onions: dried and fresh. Dried Onions: yellow, red, white, Vidalia, pearl onions, shallots, garlic Fresh Onions: spring onions, scallions

Why do onions make you cry? When onions are cut, sulfur-containing gas called the lachrymatory factor, is released. The gas spreads in the air and comes into contact with your eyes. The lachrymatory factor activates the nerves in the eyes. The nerves send signals to your brain. Your brain activates your gland that releases tears, causing you to cry. 6
