a new take on an old classic
Couple bring unique and fresh dining experience with a curated mix of nostalgic and modern touches.
Despite its distinct cultural foundations, the founding story behind Moo Dang, one of the most popular Thai food spots in the area, is as classically American as it gets.
Moo Dang was founded in 2015 when married couple John and Opal, both college graduates working in food service at the time, found a golden opportunity in the form of a struggling restaurant in the Reno area.
The couple bought the business and briefly took over operations before closing it down. From that point, the couple took their time scrubbing the interior from top to bottom and reopened under a new name with a revamped dining space. The menu and atmosphere of this new venture was directly influenced by Opal’s upbringing in Thailand.
The couple wanted to breathe new life into the local Thai food scene, which they saw was somewhat lacking in variety at the time. They worked to deliver a fun, upscale but still casual atmosphere that balanced modern and vintage charm.
One of the major stars of the show is the spot’s namesake Moo Dang soup, a savory Thai-Chinese noodle soup
made with a stock of chicken and pork bone, fresh seasonings, vegetables, and Thai-Chinese-style roast pork. The dish even has with a variation – a spicy, sweet, and sour version called Sukothai Soup.
Even down to classic pad Thai, the restaurant seeks to go above and beyond the standard.
“Every place has this, but we do not cut any corners,” the couple said.
The precise balance of ingredients and seasonings took much experimentation and research to get just right, but, drawing on some of Opal’s background in scientific research, the couple eventually settled on a recipe that seems perfect.
John, who has a degree in fine arts, contributed much to the aesthetic of the restaurant’s interior.
“I ended up buying a bunch of Thai movie posters from the ‘70s and ‘80s, hand painted during that era, and décor that was distinctly Thai but fresh and different,” he said.
The pair also imported a real, custombuilt food cart directly from Thailand, which serves as the host area right at its entryway. Lucky thing, too, as the transport ship carrying it suffered a serious cargo spill,
very nearly losing the cart in the ocean before it finally arrived to be delivered to the restaurant five months later.
Over its existence, Moo Dang has weathered an uneventful first few days in business as well as the eventual COVID-19 pandemic and fluctuating economy.
“We just try to ride the wave and adjust our prices and processes to remain affordable and profitable and pay our employees well,” the couple said. “Happy staff = good product = happy customers. We want to be a place you can visit often for good food at a good price.”
Above all, Opal and John are in the restaurant business for the benefit of their customers. Together, they deliver a dining experience that, depending on one’s background, feels fresh and new and so authentically Thai that it evokes old nostalgia.
