My Luxury Villa was absolutely beautiful and had a gorgeous bathroom with a free-standing bathtub, rain shower and outdoor shower area. The villas each have their own private plunge pools and I loved sunbathing in the hammock next to it. My garden felt so private and secluded like I was in the Maldives rather than Mexico. Viceroy Riviera Maya is all about being relaxed – lunch was taken at Coral Grill & Bar, a long and lazy affair that made me never want to leave. For dinner, La Marea restaurant really hits the right note for romantic dinners, perfect for couples and honeymooners.”
This resort really blew us away from the word go. We were allocated a stunning Ocean Front Villa complete with private plunge pool and magnificent views of the beach below and neighbouring islands. The service here was first class and even on the beach we were well looked after with frequent visits from the staff who offered fruit kebabs, iced lollies, drinks and a sunglasses cleaning service. We enjoyed several snorkelling trips in the crystal-clear sea where we saw a whole host of fascinating marine life. After one hard day, spent paddleboarding and sunbathing on the beach, we enjoyed a relaxing couples’ treatment in the hotel’s soothing spa. In the evening we were treated to
Praslin is a stunning island so I recommend to everyone that you leave your resort and explore. We cycled to Anse Lazio beach one day, which is cited as one of the best beaches in the world, and enjoyed a lovely picnic. We also visited the world-famous Vallée de Mai Nature Reserve. One day we took the ferry across to the beautiful, unspoilt island of La Digue, complete with traditional Creole houses, where it was fascinating to see everyone travelling by bicycle or ox. There were lots of local restaurants to choose from here, and we enjoyed a delicious lunch at Fish Trap Restaurant & Bar which had the best seafood. It was a shame to leave Raffles Seychelles but, soon enough, it was time to move on to another island. For me, the Seychelles offers something for everyone. The people are friendly and welcoming and the service in resorts is first class. The dining is imaginative and delicious and the resorts are unique and individual but equally seem to complement each other. JA Manafaru MALDIVES SALLY STILEMAN, RESERVATIONS MANAGER, CARIBTOURS “Having worked for Caribtours for 16 years, I like to think nothing can surprise me anymore. I was wrong when it came to JA Manafaru. Although I’ve been to the Maldives before, I was blown away by this resort. Once you arrive in Malé, there’s an amazing lounge at the seaplane terminal where you can relax on loungers, have a shower, eat, drink and catch up on emails if you want. Once your seaplane’s ready you’re given a travel bag for the 75-minute journey which includes an iPad with movies, music and games already downloaded, as well as binoculars for island-spotting on the way. It gives you a sense of the luxury you’re about to experience when you’re already being treated like royalty before even touching down! We were greeted by a friendly welcome party on the jetty who offered us cold towels and a refreshing cocktail, with the beat of traditional Maldivian music in the background, before we were taken to our rooms. I stayed in a Sunset Water Villa where you’re spoilt with a plunge pool and also direct access to the warm Indian Ocean. Amazingly, the living room has a glass floor so you can see tropical fish swimming below you while you’re having a cup of tea! There was a fantastic choice of food and drink in the six restaurants and my favourite by far was the over-water White Orchid which served up delicious Asian fusion cuisine. I also really liked the underground wine cellar where we spent an evening doing

a tasting. You can dine there privately by candlelight for a romantic evening or as a group for a night to remember. It does get chilly down there but they provide hessian sacks to put your feet in which keeps you cosy and warm. If you want to learn how to whip up quality cuisine like the chefs here, the resort offers cooking classes; I learnt how to make a traditional Maldivian curry which I’ll definitely be recreating for the whole family at home! One of the highlights of my stay was the luxury sunset dolphin cruise. After about 20 minutes of sailing, the dolphins arrived and we were served Champagne while watching them show off in the ocean! It was a breathtaking experience that I’ll never forget. Aside from the dolphins on the cruise and tropical fish swimming below my room, I saw a huge array of incredible marine life during my stay. I snorkelled with turtles and even spotted sharks! It was absolutely fascinating to see such a diverse range of marine life swimming in the crystal-clear lagoon. We also did some fun watersports including a ride on a chair which pulls you at high speed around the sea; very amusing! I’ll definitely be returning to JA Manafaru – I already miss the warm and friendly staff who remembered everyone by name, the jaw-dropping views I was greeted with when I awoke every morning and the warm, turquoise water teeming with tropical fish.” 7 nights from £3,189 per person sharing a Beach Bungalow including breakfast. I loved the design of the hotel – stylish and contemporary with little flavours of Greece thrown in. With the mountains in the background and olive trees dotted about it’s really idyllic and just what we were looking for. There were plenty of little areas around the hotel to simply unwind and take in the views with a drink. I was really impressed with the service; most of the staff have been there for years and they really can’t
do enough for you. Our suite was gorgeous and I loved the marble-lined bathroom and Jacuzzi-style bathtub. The views out to sea were spectacular and I loved spending time on the balcony sunbathing or reading a book when I wasn’t on the beach or in the spa! Speaking of the beach, it’s been awarded a Blue Flag for its high quality and the calm waters are perfect for snorkelling and other watersports; you can even hire pedalos and canoes or have a go at water skiing. There was a great atmosphere at The Greek Kafenion restaurant with live music in the background as we shared plates of meze and looked out at stunning views over the sea. There are five restaurants in total, and we loved the buzzy Bonatsa Jetty Bar for after-dinner drinks right on the edge of the ocean with a live DJ and fantastic cocktails.
We wanted to explore the local area too, so went to Aghios Nikolaos, a 15-minute drive away, for a wander around the quaint boutiques. It was really picturesque and we stopped off in an authentic Greek taverna for some sparkling wine and a bowl of olives while watching the fisherman in the harbour. There’s something for everyone here so I’d love to come back to St Nicolas Bay with the whole family. COSTA RICA Rican resorts are doing a wonderful job of this. The suites and villas at El Silencio all offer magnificent views of the mountainous cloud forest – it was so blissful enjoying the scenery from our private heated whirlpool, pointing out hummingbirds and other colourful varieties of bird that were new to us. We had so much fun at this resort and enjoyed al fresco yoga on the deck before setting off on a hike through the cloud forest trails where we came across the most jaw-dropping waterfalls. Again, dinner here was just sensational. The hotel is a member of Relais & Châteaux and most of the produce comes from their own on-site organic farm.

outdoor adventures. Even so, I was amazed by the quality of the food; it was fresh, wholesome, imaginative and presented beautifully on the plate. It was something to really look forward to after a day of hiking, kayaking or exploring the local village.
Hot Springs and Hammocks I was so excited about visiting the next hotel on our itinerary. Nayara Springs has been voted the 2017 Number One Luxury Hotel in the World by TripAdvisor, along with a string of other accolades from companies including Travel and Leisure, and Condé Nast.
Clouds and Conservation staggered by the biodiversity of the national park. From our rooms, we could hear the sounds of local wildlife (especially howler monkeys!) and it felt so natural with the leafy fronds of the rainforest enfolding us.
From the embracing warmth of the rainforest to the coolness of the clouds – next, we were off to El Silencio Lodge & Spa, an eco-retreat set in the mists of a 500-acre cloud forest reserve.
We went out on a three-hour boat trip along the myriad of canals, which felt like a safari with the sheer amount of wildlife we saw, including a group of caimans hiding in the reeds of the riverbank. We passed by colourful houses on the edge of the canal and tried to spot the elusive jaguar in the shadows of the forest. Tortuguero isn’t the kind of place you go for unbridled luxury as the experience here is so centred on wildlife and

The first thing you notice about El Silencio, testament to its name, is the silence. It was just heavenly. The team here are incredibly passionate about conservation and encourage you to reuse your water bottles and create as little waste as possible. Over a quarter of Costa Rica is protected land and you’ll find that ‘green’ tourism is a big thing there in general. I think people need to be reminded of the impact, both positive and negative, tourism can have on the earth and many Costa
least; I absolutely loved it but I can’t say Helen felt the same! To balance it out with something a little more relaxing, we went to bathe in the hot springs. Many people travel here to visit them for the health benefits they’re said to bring, being so rich in minerals. Costa Rica was one of the most unforgettable travel experiences of my life. Everywhere we went we saw quirky art, met friendly people and encountered fascinating wildlife. I left with a newfound appreciation of our natural world – along with a taste for Costa Rican coffee!
Pura Vida The staff here were super friendly and the eclectic décor, stunning. Each villa was fringed with gorgeously-green trees and plants, and had its own private garden which included an outdoor rain shower, hammock and plunge pool fed with water from the hot springs. The hotel is set near Arenal National Park, one of Costa Rica’s most popular sightseeing destinations. We learnt about the history of the looming Arenal Volcano – it last erupted in 1968 and completely destroyed three local villages which was devastating for the local area. Fortunately, it’s now entered a resting phase and visitors can enjoy soaking in the natural hot springs, white water rafting, canopy tours and visits to the beautiful Lake Arenal with the volcano providing a magnificent, if ominous, backdrop. We decided to go zip lining through the rainforest canopy while we were here, which was an experience to say the

Carlisle Bay recently appointed the acclaimed Executive Chef Anthony Dawodu whose career spans more than two decades at luxury hotels in the Caribbean and the USA. We couldn’t resist catching up with him to find out all about how things work behind the scenes at this Antiguan foodie haven. Why did you decide on Carlisle Bay? I’d been in Boston for two years and I love to travel and experience different cultures. When the opportunity came up at Carlisle Bay, I was excited to take it, it’s a beautiful place. Everyone here,
from the staff to the local vendors, have been really helpful. What can guests expect from the cuisine at Carlisle Bay? There are four different restaurants at Carlisle Bay, each with a different focus, so guests will be able to sample a few different types of cuisine during their stay. Ottimo! is focused on traditional Italian, like wood fired pizzas and cured meats and cheeses, while The Jetty Grill is more about Antiguan street food. At Indigo we’re quite focused on specials and inspired by local ideas and cuisine. We use a lot of local ingredients so it’s dependent on what we have that day – a nice example is conch croquettes with Spanish pepper coulis. I really enjoy the theme nights we hold at The Jetty Grill – Smoke and Roast Pig Night and Grilled Lobster Night are just two options. How do you source your food? Mostly through word of mouth. I’ll get my fruit off a certain vendor and ask them if they know anyone who sells something else. I’ve done lots of exploring since I arrived on the island in October, including visiting a local jam factory to see how that’s produced. I’ve also been to the farms
we source our vegetables from and around the local markets which sell a lot of fresh fruit. I talk to the local fisherman and one thing that’s very important to me is to make sure they’re treating the environment with care, they’re not using dragging nets and the fish they’re selling me are adults with no eggs. Explain Carlisle Bay’s ‘slow food’ philosophy. Take your time, cook it right and treat it with care – that’s my idea of the slow food philosophy. We use a lot of ingredients from our own garden and when cooking, we go through the recipe with diligence, not rushing the dish. What’s your favourite dish at Carlisle Bay? My lobster bisque is my favourite followed closely by conch croquettes. If there was any other dish I’d recommend for our guests it would be the goat meat roti which is a signature dish and big feature at many of our theme evenings.
