This week... From the editor I made my last macadamia and mango Moroccan couscous salad for the summer on Sunday. I know it was the last because I had to resort to Keitt mangoes. No more Kensington Prides. No summer family get-together is complete without my couscous salad, nor my sister’s pavlova. She has handed down her pav-making skills to her daughters, but I’ve been loathe to share the couscous – especially the secret ingredient that adds a twist at the end. It’s a big hit, my salad, but you have to get the balance right – sweet and spicy, moist and crunchy. Even my partner, who is highly suspicious of couscous, hoes in. The occasion for the final couscous of the season (but maybe not the final pavlova) was our dad’s 90th birthday. “Pop”, resplendent in silver necktie and OBN badge (the Order of Over Bloomin' Ninety), seemed to enjoy the spread, more than a beer or two, and the mob of great-grandkids under foot. What he seemed to enjoy most was his sister playing the piano. Now with dementia, she struggles with memory, but not with music. I swear she can play every piece she ever learned. I imagine it’s the same for the choir, on page 6. It’s great to hear that, as the number of people living with Alzheimer’s increases, so do the programs to try to help them live well. - Alysson Watson

Finalising the program for the Newcastle Writers Festival is a bit like giving birth, according to its driving force, Rosemarie Milsom. ou think: I can’t do this, I can’t do it, I just can’t do it, a sleep-deprived Rosemarie said of months of wrangling writers and marrying program content with logistics. “But then
you do it, and you get to the launch, and everyone is so excited, and you remember that it’s worth it.” The program for the 2016 Newcastle Writers Festival will be launched on Saturday and tickets

John Hunter Hospital has appointed the region’s first care co-ordination nurse for people with brain cancer under a three-year funding arrangement with the Mark Hughes Foundation, to provide a vital link between health staff, patients and researchers. 4
Nurse Jane Morison, a neurosurgical case manager at John Hunter Hospital, will work in the role for six months while a fulltime applicant is recruited. She will provide support to people receiving care at John Hunter and Calvary Mater Newcastle hospitals. The foundation was started by former Newcastle Knights player Mark Hughes and his wife Kirralee. Jane met Mark the day he was admitted to her ward for an operation to remove a brain tumour and is excited to now be working for his fundraising group. “We’ve never had someone delegated to purely look after people with brain cancer. The Foundation has made it possible,” she said.

Rosemarie said the fourth festival was the most ambitious yet – 140 writers in 67 sessions over three days at six venues from 1-3 April. A $50,000 Arts NSW grant and a growing reputation has boosted awareness, with inquiries from Brisbane, Sydney, the Central Coast and the Mid North Coast. Previously working as a volunteer, Rosemarie has held a paid position one day a week since October, and there has been funding for administrative support. But, clearly, more hours are put in by Rosemarie, her all-female board, and a band of volunteers. “For me the buzz is when I invite a writer that I really want to be there, and they say ‘yes’,” Rosemarie said. “About 90% do say yes, and when they say no, it’s for a very good reason.” Her personal highlight this year is climate change advocate Tim Flannery, who will be interviewed by his friend, actor John Doyle, in a session called “Tim Flannery’s Excellent Adventures”.
Trinity Point begins Work began last week on the $380 million Trinity Point marina development at Morisset Park. On 23 lakefront hectares, Trinity Point will comprise a 188-berth marina, residential blocks, apartments, a hotel, a restaurant, a function centre and day-spa. The first 32 building blocks went on sale in November, ranging from 450 to 678 square metres, and $398,000 to $578,888. A spokesman said 10 had sold. Construction on the first eight terrace houses, priced from $1.08 to $1.28 million, will begin next month. One has already sold to Test cricketer and Trinity Point ambassador Michael Clarke for $1.38 million.
Although the festival doesn’t have a theme – it is a response to the books Rosemarie has been reading and “what is in the ether” – this year what seems pivotal is climate change and family history; “where we are going, and where we have been”. “I really wanted Tim Flannery to be there. He’s a paleontologist, environmentalist, scientist, and so interesting. And my son Isaac is one of his biggest fans. So I thought, yes, he should come,” Rosemarie said. The festival is a family affair, with Rosemarie’s husband, mother and older son joining friends to lend a hand in the most frantic times. “I feel their support,” she said. Although it’s taken a back seat to the festival, Rosemarie is working on a memoir of her own. “I’ve got fiction in me as well, but I do love non-fiction. As a journalist, I’m interested in real life,” Rosemarie said. “I like to use my own experiences as a springboard to talk about other things.” For information on the festival visit newcastlewritersfestival.org.au - Alysson Watson
New court opens Sittings at the state-of-the-art Newcastle Courthouse begin on Monday 22 February after it was officially opened by NSW Attorney General Gabrielle Upton. “This new $90 million, sevenstorey complex is the most secure and technologically advanced courthouse in the state,” Ms Upton said. The court, with airport-style security, has 10 courtrooms, two tribunal rooms, areas for juries, interview rooms, facilities for victims of crime and support groups, a modern registry and holding cells. The old courthouse in Newcastle East will go on sale this year and is covered by a State Government heritage masterplan to ensure its history is preserved.

Dementia is the second-leading cause of death in Australia, after heart disease, and it has no cure. The Hunter is particularly affected because of its ageing population.

While dementia can be isolating, confusing and confronting, there are programs that make life more manageable for sufferers and their families. “We know we can’t stop the process, but you don’t have to sit at home by yourself,” Sally said. “The brain can still make new connections, and we know that being active, social and well is helpful.” Sally likens living with dementia to traffic chaos. “One day, the transport system is working well, the buses are on time and it takes no time to get where you’re going. The next day everything goes wrong: the traffic lights are out, there’s water on the road, and it takes forever. “Families say: yesterday mum was fine, today she is being stubborn. But it’s not

stubbornness; the cells in the brain are not connecting properly.” Dementia also carries a stigma. “If you say my father has a brain disease, the reaction can be quite different to if you say he has Alzheimer’s,” Sally said. Being with others with similar experiences was helpful and was the basis for programs offered by the Hamilton resource centre such as “Living Well with Dementia”, “Recently Diagnosed”, and “Recharge Your Batteries” for male carers. Resources such as the “Safely Home” identity bracelet, home help, respite care, counselling, and financial and legal help, were available, in addition to “Community Café”, Men’s Shed “shed buddies” support programs and a weekly choir, The Percy Street Singers. “We try to be innovative, to normalise the experience of the person and the carer, and to promote the idea that people can live well with dementia and continue stimulating their brains,” Sally said. Making money making honey elly Lees remembers her dad tending beehives in the bush when she was a toddler, but didn’t imagine it would be her calling. The former visual arts teacher from Mayfield set up Urban Hum seven years ago as a way to help the besieged European honey bee, but now makes a living from the honey she extracts from 78 hives in
21 suburbs in Newcastle. With 10 hives of her own, Kelly also has 68 host families who each have a hive in their garden. And she has a long waiting list. “Most people do it because they are interested in the plight of the honey bee, which is affected by disease and pesticides, but they do also get honey,” Kelly said.
Hosts pay a $45 registration fee, and Kelly builds and maintains the hives, visiting each about 10 times a year to inspect the health of the colony and food stores, and remove honey surplus to the bees’ requirements. In return, hosts get 2kg to 4kg of honey a year, and Kelly sells the rest online and through selected outlets and markets. A big colony of 100,000 bees can produce 20kg to 30kg a year, but most are about half that size, and honey production varies depending on local conditions and the genes of the queen bee. It’s not only the honey bee that interests Kelly. Together with Feedback Organic Recovery, Urban Hum will hold a workshop on Sunday 20 February at The Edwards in support of native bees. Canberra raid leaves Knights playing catch-up
The question now is whether the Knights want to spend another season
developing Tapine for the Raiders or grant him immediate release. At the time of writing that had not been decided, but Tapine’s absence from the Knights team photo shoot on Monday suggests he’s out of here. You’d think the Knights would be filthy at their plans being rent asunder so close to season kick-off. Not so, according to new coach Nathan Brown. “Joe knows where he’s at and he’s quite comfortable and I know where he’s at and I’m comfortable and the club’s comfortable,” Brown said. CEO Matt Gidley concurred: “Our club made Joseph a significant offer that took into consideration his career to date, potential and the current player market, and while disappointed with the outcome, we are comfortable with our process.”
Knights’ fans, though, could be forgiven for feeling a degree of discomfort. Watching your club get its pants pulled down off the field before a ball has been kicked on it doesn’t bode well. “On the other hand,” says Brown, “We’re happy the club has played a part in helping a kid move forward in his life.” There’s cold comfort in that, I guess. • Lest the cynical among us should think that Tapine’s move was all about the money, here’s a word from the young man himself. “I’ve been a fan of how Canberra play and Ricky coaches, I’ve done a lot of homework and watch a lot of their games,” he said. He made his NRL debut in 2014 and has played 20 games since, but the biggest headlines he’s made have been over a blue outside a Merewether hotel that left another man with a broken jaw. That was until last week when he signed a three-year deal with Canberra worth a reported $1.5m from 2017 after knocking back a contract extension from the Knights worth $1.1m. WE ALL SCREAM FOR ICE CREAM hat began as a desire to cut down the sugar content of his favourite confection has turned into a consuming passion for Lyndon Sar. “He consumed a lot of ice cream – I mean a lot,” Lyndon’s wife Tracee told Newcastle Weekly. “We looked at our eating patterns and realised we needed to reduce some of the rubbish and he said ‘I can’t give up ice cream‘ and I said ‘you're going to have to find another way to eat ice cream that doesn’t have all the junk in it,‘ so he started playing around with it at home. He stared out with a little double-barrel Delonghi ice cream maker which got quite a work out, then we ended up with one that was too big to fit in the house. “Friends and family started buying it off him and they kept saying ‘open a shop, open a shop’ and everything just kind of escalated.” Those early experiments proved

Offering up a dizzying array of flavours in both gelato and traditional Danish-style ice cream – all made in-house, Talby’s also keeps those with special dietary requirements in mind with many flavours being gluten, dairy and nut free. “I believe in ice cream-ism,” Lyndon said. “I believe that everyone should eat it, no matter what – there should be no reason that they can’t.” “If you’ve got kids who are anaphylactic, we’re happy to talk through the process of how everything is made,” Tracee added. “We had one little girl in last week who was severely anaphylactic and I gave her one of the flavours to try on a stick and she had tears in her eyes – it’s wonderful to see.”

While you’re always going to find the quintessential flavours – chocolate, vanilla, caramel – Lyndon said that, with more than 200 flavours in his recipe book, there are also more than a few surprises on offer. “I’ve stopped counting. I think I stopped after about 200,” he said. “We’ve done a smoky maple bacon, with actual pieces of bacon in it, we’ve done wasabi, we’ve done black pepper,” he said, “One I’m working on at the moment is rosemary, cayenne pepper and brown sugar. I also like barbecuing, and rosemary, cayenne pepper and brown sugar is part of the rub that I use for my brisket. Because I don’t get much time to do that anymore, I thought ‘I wonder how that would go as an ice cream’ and I reckon it’s going to be pretty awesome.” “Strawberry, mint and licorice was another one that surprised people,” Tracee added. With a cornucopia of flavours at his fingertips and with more popping up every day, Lyndon

SHE’S STILL GOT THE BEAT ack in the late 1970s, if you had’ve told erstwhile punk rocker Dottie Danger, onetime drummer for seminal LA upstarts the Germs, that she would be part of one of the most successful girl groups of all time and have a hugely successful solo career, she probably would’ve laughed in your face. Thankfully for us, she chose not to laugh too hard and reverted to her original name, Belinda Carlisle. The rest is history. “I guess I always thought that I shouldn’t be making a living out of this,” the affable chanteuse told Newcastle Weekly. “Back then, I never thought I’d be doing anything like this. I had a really hard time for quite a while accepting that this is what I’m supposed to be doing because it really is a dream job and not many people get to say that.” Carlisle’s star first shot into the stratosphere was with all-girl band the Go Gos. Carlisle, along with Jane Wiedlin, Margot Olavarria (and later Kathy Valentine) and Elissa Bello made history as the first all-girl group to top the Billboard 16
charts with their incendiary slice of pure pop heaven, Beauty and the Beat. The album spawned such memorable cuts as Our Lips Are Sealed and We Got the Beat and sits in Rolling Stone magazine’s top 500 albums of all time. In fact, before the band parted ways in 1985 (reunions in the ’90s and noughties notwithstanding), they had sold an incredible seven million albums in just three years. So strong was their hold on the public’s musical consciousness that, in 2011, they got their own star on the Hollywood Walk of Fame – an achievement that held special resonance for the Hollywood-born Carlisle. “That was a really emotional day,” she said. “It was also really weird, because everybody dreams of having their name on the walk of fame, especially when you live in Hollywood.” Carlisle’s Hollywood dream did not end with the Go Gos, with her debut solo record, Belinda, released just after the break-up. That album, helped by the hit Mad About You, was propelled to gold status in the US. Carlisle said going solo was a refreshing change.

“I always had an opportunity for a solo career, so I wouldn’t say I was daunted by it,” she said. “Although it was a big transition for me. I think I finally realised how big when I played my first live show. You know, no security blanket. Although it did feel really good breaking out on my own.” Her follow-up, Heaven on Earth, was an even bigger success with three US top 10s (Heaven is a Place on Earth, I Get Weak and Circle in the Sand) – helped, no doubt, by an indisputable vocal talent, all-American-girl-next-door charm, and rallying such heavy hitters as Thomas Dolby, Michelle Phillips from Mamas and the Papas, Academy Award-winning songwriter Dianne Warren and screen icon Diane Keaton, who directed the video for Heaven is a Place on Earth. Now, with seven studio albums and another in the pipeline, stints on the West End (as Velma Von Tussle in Hairspray) and reality television (such as Dancing with the Stars and Hell’s Kitchen), as well as a tell-all book and cofounding the non-profit, Calcutta-based charity Animal People Alliance, Carlisle said she couldn’t imagine a life without performing. “It’s just what I do, I just love it,” she said. “In fact, I’m probably loving it even more now because I’m just doing it for the love of it. I don’t want to be involved in that hamster wheel where you’re putting out albums because you have to. “I just love travelling and I really can’t get enough of performing so I’m just going to keep doing it while it’s still fun for me. I especially love coming to Australia – I’ve been there countless times now and it’s always a blast – I can’t wait.” - Stephen Bisset
