This week... From the editor I’m assuming you all immediately turned to page 24 to find out exactly how to make the delicious Triple Chocolate Fudge gateau featured on this week’s cover. I can confirm it tastes every bit as good as it looks and we thank Euro Patisserie at New Lambton and Darby Street, Newcastle for sharing their delicious recipe. After you’ve made and eaten the cake, you may need to sign up for parkrun (page 4) to burn off some of the calories. We were very impressed by the professionalism and dedication of the volunteers who run the parkrun events across the Hunter. Full credit to anyone who can manage to get themselves out of bed for a five-kilometre run on a cold Saturday morning. It’s such a simple concept and the only person you are really racing against is yourself. We’ve also got a complete rundown of this year’s Wallsend Winter Fair which will take place on Sunday, August 9. Speaking to the organisers, Wallsend Town Business Association, you get an appreciation of how much behind-thescenes work goes into ensuring the day runs smoothly. Get fit, have fun and make new friends

E

very Saturday morning, a flock of people from across the Hunter gather to participate in parkrun - a leisurely race against the clock for people of all ages and abilities. Operating worldwide, parkrun is a free, fivekilometre run, or walk, where people can get together to improve their fitness and have fun. The circuits are safe and easy to take part in with the course timed so participants race against their own clock and try to beat their personal bests each week. “It’s great both physically and mentally,” Blackbutt parkrun event director, Jodie Tersteeg, told Newcastle Weekly. “People may have weight to lose or just want to get a bit fitter. With parkrun, they can start off in a very encouraging environment. First they may want to walk, then they can begin running a little bit, next minute they are running the whole five kilometres, it’s a great little community event.” Increasing interest regularly sees more than

1000 participants in the Newcastle area alone, spread out over eight courses including: Blackbutt, Newcastle, Lake Macquarie, Lakeview, Stockton, Blue Gum Hills, Maitland and The Beaches parkrun which is a course entirely on sand. “I started running and someone suggested I try this ‘parkrun’, they said it was free and on every Saturday,” Ms Tersteeg said. “The minute I went there I was addicted, I thought it was such a great concept and everyone was so encouraging - no one cares how fast or slow you are, I made friends straight away. “Now, every Saturday, I’m at parkrun. It’s an amazing thing, the people are so positive and that makes it a great atmosphere to be involved in.” All parkrun events are completely organised by volunteers. Participants are encouraged to volunteer at least three times a year but many go above and beyond that. Spectators, who aren’t sure whether to participate, can volunteer, become part of the action and enjoy the morning as much as the runners.

“We need a group of volunteers every Saturday because we need someone who is going to use the stopwatch, someone who is going to hand out the finishing tokens, a marshal, and a photographer to capture the runners experiences, so we may need about 10 volunteers each Saturday,” Ms Tersteeg said. “It’s really about people enjoying themselves and making friends, becoming involved in the community and it promotes a healthy and fit lifestyle. “This is why I really love the side of organising parkrun as I feel that helps people have a great Saturday morning and achieve their fitness goals.” The parkruns are open to all fitness types and even dogs. It’s all about having a good time, becoming a part of the community and working on reaching personal goals. Held every Saturday, parkruns start at 8am. Children’s Hospital visits a little less complicated Patients and visitors to John Hunter Children’s Hospital will find the experience a little easier following the launch of a free app to help guide them around the facility. The app provides information on wards, units and outpatient areas, with advice on what to do if your child appears to be in pain, admission and discharge, along with pictures to guide families through the journey. For families not from the 4

area, maps have also been imbedded showing accommodation, dining and transport options. The app was the result of an idea from the newly-established Children, Young People and Families Advisory Council. Co-chair Liz Geddes said, for the tech-savvy generation, the app was easily accessible and in preference to previous paper-based guides. “Working alongside Hunter New England

Health, we have developed a practical guide for parents to support them through what can be a difficult time,” Ms Geddes said. Users of the app will also receive health notifications from Hunter New England Health, such as information on upcoming immunisation clinics. The app is available from the App Store and on Google Play.

Initiative welcomes international students to the Hunter project, backed by the state government, to increase the number of international students studying in NSW was launched in Newcastle by Minister for Regional Development, John Barilaro last week. Study Hunter, developed by the federal government’s, Regional

Development Australia (RDA) initiative, incorporates a range of ideas focused on raising the region’s profile internationally. It provides comprehensive, up-to-date information through websites and social media platforms, along with guidance from student ambassadors about

the Hunter and the opportunities for international students and their families looking to relocate, study and work. “Since the end of March 2011, the NSW Government has invested more than $18 million to support projects in the Hunter through the Regional Industries Investment Fund,” Mr Barilaro said. “This has helped to attract more than $356 million for the region and to generate and support more than 1765 jobs.” CEO of Regional Development Australia Hunter, Todd Williams said the organisation was pleased to have the support of the NSW government in promoting the Hunter’s advantages internationally. “Showcasing the region to a young and motivated international audience will help

boost international student enrolments in the short-term and grow and diversify our workforce and economy for the future,” Mr Williams said. The initiative also features an International Student Ambassador Program which will be comprised of students from both Hunter TAFE and the University of Newcastle. The role of an ambassador is to welcome new students to the region and to provide them with a friendly face around campus.The ambassadors will also help promote the new initiative through various activities in and around the Hunter. Study Hunter’s on-line resource will provide information in multiple languages about where to live, work, transport, and support services. Brown tipped to take over from dropped Stone ormer St George Illawarra coach Nathan Brown has emerged as the early favourite to take over the reins at the Knights following the

termination of Rick Stone’s contract earlier this week. The Knights decided on Monday to dismiss Stone immediately, with club legend Danny Buderus acting

in a caretaking role until the end of the season. The board’s decision follows a dramaticloss of form from the Knights which has seen them win only two of their past 14 matches, culminating in a 52-6 drubbing at the hands of South Sydney last weekend. Knights CEO Matt Gidley said the coaching role would form part of a wide-ranging review. “The club will now undertake a formal review process of our entire football operations, of which the playing group are a key part, and all have the opportunity to demonstrate over the next seven weeks why they should retain their position,” Gidley said. While the Knights are not expected to rush into a decision on Stone’s replacement, bookmaking firm William Hill quickly released a betting market declaring Brown the

favourite to take over. The market also suggested Buderus, Geoff Toovey, Kevin Walters and Garth Brennan were also strong chances of securing the job. In on-field action, the Knights head back down to Sydney this weekend to take on St George Illawarra at WIN Jubilee Oval on Sunday afternoon at 2pm. The under 20s will be in action beforehand at 11.45am, while the NSW Cup team has a bye. The Knights have also announced back-rower Todd Lowrie will be returning to the club in 2016 after signing a oneyear contract. The BellRays will give Newcastle a healthy dose of rock 'n' soul next weekend.

A QUARTER CENTURY OF BLUES

When it comes to pure, unadulterated rock and roll, few can bring it as well as US four-piece The BellRays and they’re about to give Newcastle a taste of their inimitable sound.

F

or almost 25 years, Riverside, California four-piece The BellRays have been causing jaws to drop around the world with their uncompromising blend of rock/soul/punk. Since releasing their incendiary, self-titled debut in 1991, the fiercely independent band, fronted by the formidable, aggressive Franklin-esque vocals of Lisa Kekaula, have been widely regarded as one of the best rock and roll bands currently doing their thing. “You know, I only realised the other day that it had been almost 25 years,” Kekaula told Newcastle Weekly. “I was shocked when I looked at the calendar, but I guess it never feels as long when you’re having so much fun.” While they may have gone through their fair share of line-up changes over the years, the core of Kekaula and co-conspirator and husband Bob Vennum (bass) has remained the same, and Kekaula said she knew from the moment the band struck it’s first chord that this is where she wanted to be. 18

“I always felt, right from the beginning that this band could accomplish anything,” she said. “I found that I was able to identify with the songs on a very personal level and, in terms of longevity – it becomes pretty easy doing something you love with people you love.” While there’s no denying that The BellRays are well-and-truly in their element in the live arena, they are one of those rare bands that are able to capture that immediacy and urgency in the studio – a feat that Kekaula said was more difficult than it sounds. “It’s so very hard – I’d love to say it’s easy, but it really isn’t,” she said. “We try to do everything as live as possible with no overdubs and to pull that off, you’ve really got to know the material - practice practice practice,” she said. Definitely no stranger to the road, Kekaula said that while it may not be for everybody,

there’s no place she’d rather be. “It’s about keeping your mind supple and flexible on those long stretches - you can’t fall into a routine,” she said. “There are some great musicians who, when you put them out there just can’t hack it - it’s definitely not for everybody.” With their last album, the blistering Black Lightning, dropping in 2010, Kekaula promised BellRays fans that they wouldn’t have to wait too long for the follow up. “Oh yeah, it’s definitely happening,” Kekaula enethused. As soon as we finish up in Australia, we’ll be heading into the studio so, hopefully, next time we’re down in Australia, it will be with a new record.” - The BellRays – Small Ballroom – Saturday, August 8. - Stephen Bisset

time out - meet the artist TRICIA FLANAGAN When did you first know you wanted to be a professional artist? People call me promethean, because I have always been busy making things, ever since childhood, but I first knew I was an artist when my high school art teacher took us to the Art Gallery of NSW to see the Pop Art exhibition, and I felt a strong affiliation with the work. Describe your work. Cybernetics underlies my practice, although that is a term that is misleading in its contemporary use, it does not have to relate just to computing but more generically it underpins systems thinking. My career has evolved through phases from fashion to costume design, to sculpture and installation through to public art and recently wearables - always 3D and always situated in context or site. I regularly engage audiences through interactive tactics

or invite them to consider processes. I am passionate about craftsmanship and my work is renowned for combining traditional techniques with contemporary materials and technologies. What inspires you? Life, if you understand that everything is fluid, in a constant process of change, then stuff is just constellations of energy temporarily brought together. I find that wilderness and nature are where I am most energised and then that energy dissipates through my work. For this reason I am drawn to working with raw materials and actively seek regular retreats and adventures in beautiful places in the world. I can touch that energy through contact with others, through conversation and literature and through collaboration with others, such as my students, I remain open.

What has been your greatest achievement? I am sure that my greatest achievements lie ahead, but along the way I am proud to have established the Wearables Lab at the Academy of Visual Arts at Hong Kong Baptist University; published in Germany’s leading arts journal Kunst Forum; been selected to represent Oceania at the Tornai Textiles Triennial in Brussels; awarded a visiting fellowship at Lancaster University.

200g butter, chopped 300g good-quality dark chocolate 1/4 cup hot water 1/4 cup cocoa powder 1 teaspoon vanilla extract 1 cup caster sugar 3 eggs, lightly beaten 3/4 cup self-raising flour

Pre-heat oven to 160°C. Grease a 6cm deep, 20cm (base) round cake pan. Line with baking paper.

Grease a 20cm round cake tin and line base with baking paper. Sift flour and 1/4 teaspoon salt together three times to aerate.

Boil 500ml cream and pour over chocolate, set aside to cool. Whip 1 litre of cream with cooled chocolate mixture, whip together till smooth.

Vanilla sponge layer 1/3 cup (50g) cornflour 1/3 cup (50g) plain flour 1/3 cup (50g) self-raising flour 4 x 60g eggs, at room temperature 2/3 cup (150g) caster sugar Chocolate mousse 500g dark chocolate 1.5 litre cream Ganache 1kg dark chocolate 500ml cream Decoration Chocolate shards/curls for decoration Construction 500ml pouring cream, whipped 24

Place butter, 200g chopped chocolate and hot water in a heatproof, microwave-safe bowl. Microwave, uncovered, on HIGH (100%) for 2 to 3 minutes, stirring every minute with a metal spoon, or until smooth.

Preheat oven to 180C. Using an electric mixer, beat eggs and sugar in a large bowl on medium-high speed for 6 minutes, or until mixture is thick, pale and tripled in volume.

Ganache Boil cream pour over chocolate and stir until the chocolate has melted. Allow to cool slightly, ganache will thicken slightly.

Pour half the batter into cake pan. Chop remaining chocolate and sprinkle half over batter. Top with remaining batter and chopped chocolate.

Gradually sift flour mixture over egg mixture while simultaneously folding in with a large metal spoon until just combined. Divide mixture between prepared tins. To level batter, gently spin tins on kitchen counter. Bake for 20 minutes (or as directed in individual recipes), or until cakes have shrunk away from the sides slightly and spring back when gently touched.

Bake cake for 55 to 60 minutes or until a skewer inserted into the centre has moist crumbs clinging.

Turn out on to baking paper-lined wire racks. Carefully peel away baking paper, then leave to cool.

Place in freezer until frozen solid.

Once mud has cooled slice the uneven top of the cake off and place into a 7” stainless ring ready to build gateaux.

Once sponge has cooled cut into quarters horizontally, approximately 1-2cm thick. Set aside one of the quarters for the gateaux.

Completely cover cake with ganache, once set place chocolate shards around sides and top with chocolate curls.

Add cocoa to warm chocolate mixture. Stir until smooth. Stir in vanilla, caster sugar and egg. Sift flour over chocolate mixture. Stir gently to combine.

Construction of gateaux Place choc mud into stainless ring or cake tin 7”. Add chocolate mousse and level out about an inch from top of ring. Add sponge layer. Top with whipped fresh cream and level out with a palette knife. Once set remove from ring by gently heating the side.

BAMBOO “I believe bamboo is definitely part of the future. It’s a proven fact that with regard to carbon sequestration, bamboo leaves everything for dead. There are a number of Asian scholars who argue that, along with the stone age and the iron age, there was also a bamboo age where a large percentage of the world’s population, when it was centered around Asia, was totally dependent on bamboo.

My favourite things COFFEE “I love the fact that, in the past, Australian blokes would get together for a couple of beers, whereas now it’s over a cup of coffee, which is a big change – not that I don’t like having a beer. Seeing new coffee shops opening up all the time is terrific. My local is Uprising Bakery and Kitchen, which is just down the road. I first encountered Alice Lees’ wonderful tarts and cakes at the Farmers Markets on Sundays. Uprising’s coffee is very good.”

LIVE MUSIC “I live in Maryville and I’m not far from the Wickham Park Hotel. I’m a regular visitor there for the music – I’m a big blues fan and also a jazz fan. I just love live music – even bad live music is good sometimes, simply because it’s live. I’m gregarious, like most people in the media, so watching live music is a good way for me to get out and socialise.”

NEWCASTLE KNIGHTS “I’ve been a fan of the Knights since they started in 1988. I was working at another radio station and employed Michael Hagan when he came up to join the Knights in 1989. Some listeners complain that is all Knights, Knights, Knights on the program, but I make no apology for that. I think the board they have in place are doing the right thing - people like Brian McGuigan, John Quayle and Katie Brassil. I think the future looks bright for the Knights.”
