Support for Ukraine
W
riting this seems a bit irrelevant when I
consider the devastation and suffering that the people of Ukraine are being subjected to at the moment. Fast Food Professional has supported the aid for Ukraine through the plea for food from suppliers across the industry to help people who have had to flee from Ukraine which was issued by Dean Atwell, Chief Executive, Oakland International Ltd. Encouraged by the Sausage Man, we sent out an eBlast to our digital database asking suppliers to support the plan to fill and take 50 trucks to the Polish Ukraine border – see the update on this on Page 49. With the price and wage rises that are happening at the moment, it is so important to be as efficient as you can and to make sure that your equipment is performing correctly. This could be filtering you oil regularly to prolong its life, peeling spuds just right so that you maximise the yield and making sure that you are checking the temperatures of your equipment to make sure that you are not wasting gas or electricity. One of the key topics on social media is meal prices, particularly for fish and chips. It has always been seen as a cheap meal which was an historical feature of the product. However, if it is done well a prime fillet of cod or haddock in a tasty batter, served with an ample portion of well-fried chips and a side is well worth around £10 of anybody’s money. Just make sure it is GOOD. If you are thinking of buying new equipment, there are some great deals around for leasing and this can make the best use of your available money.

time like this, but seafood is one of the most heavily traded commodities and the horrific events taking place in Ukraine will impact on businesses and consumers in the UK, Europe and beyond. We’re keeping a watching brief on how this might impact on the UK seafood supply chain. This article gives an overview of: • global whitefish supply and Russia’s contribution to that supply • the UK’s reliance on Russian raw material • implications from possible trade sanctions and inevitable trade disruption We will be updating information here as the situation develops. Please check back for updates. If you would like further information or if your business is seeing impacts and you would like to share intel with us, please contact seafish@seafish.co.uk.
Imports from Russia to the UK The UK is not self-sufficient when it comes to domestic landings of whitefish. In order to meet consumer demand, whether in fish fingers or in fish and chips, we need to rely on imports. Russia has been an important source of these imports for almost 30 years. Direct imports from Russia accounted for 48,000 tonnes in 2020 but a considerable proportion of Chinese whitefish imports into the UK (which totalled 143,000 tonnes in 2020) will also be of Russian origin. It is also likely that some Norwegian, Polish and German imports into the UK will include Russian product. An exact figure is difficult to calculate but we estimate that it will be more than 30%. However some businesses and some parts of the supply chain will be more affected. The challenge is that there is not an obvious or quick substitute for this product if it is no longer available to UK

The global whitefish supply chain has also been under significant pressure in recent years due to Covid (global impact) and EU Exit (UK impact). Recently there have been constraints on production in parts of China as some of the seafood processing hubs (Zhuanghe, Dalian) were put into lockdown in December and are only now reopening. This has constrained the volume of processed seafood available and ongoing logistic issues in the shipping and freight sector are further delaying supplies reaching the UK. It’s Not Just Fish Exports And it’s not just whitefish imports that are affected. Russia and Ukraine combined produce a quarter of the global wheat supplies, any disruption to this supply will affect the production of the batter and the breadcrumbs used by fish and chip shops, and frozen fish products sold in supermarkets and restaurants. Ukraine is also the main global producer of sunflower oil and while there are other vegetable oils available (rapeseed etc.) disruptions to market supply, price increases and production challenges will be inevitable as businesses seek to access and use alternative products. This will impact everything from fish
Grab & Go Opportunities According to Bartlett Mitchell, demand for quick and convenient lunches prior to the Pandemic was in growth, with grab and go sales estimated to be worth £20bn in 2018 and making up 70% of all lunchtime choices. And streetdots.co.uk, a business that finds street food pitches, is in agreement - according to them, the UK food-to-go market is worth £20bn annually and street food alone contributes £2bn.*

There has been limited export trade to Russia following the trade ban in 2014. However, there is a sizeable pelagic trade with the Ukraine. In 2020 the UK exported £25m worth of pelagic product. There are also some exports of salmon. This product will now need to find alternative markets.

The Class of ’22 The Class of ’22 number around 10,500 Fish and Chip shops in the UK. The last few years have proved difficult with increasing competition, Covid restrictions and inflation in energy and food prices. Nevertheless, many in the industry have proved resilient with new initiatives to increase access and distribution. Fish and Chips still remain the Nation’s favourite meal and exceptionally good value. Frymax remains the brand leading cooking oil in the UK, a title it has now held for over 65 years. Why ? Because we have been producing the same product without additions and modifications for all this time resulting in the same delicious results. Frymax is pure white premium palm which is additive free, contains no hydrogenated oil and less than one percent trans fats. As befits the brand leader, Frymax has recognised the need for economic fairness and is sourced from approved, certified production units and is 100% sustainable and traceable.

Customers may also choose from a wider range of colours, to match a company’s brand colours or product promotion, for example. Global Sales Director, Karl Hodgson: “We are really pleased to be able to launch today the new Bora opendisplay cabinet. The B energy class label rating is a concrete achievement and leads the way for UK retail refrigeration. I thank all of the team at Adande for their work to develop it into the best open-display cabinet on the market. It will undoubtedly save money for customers, in electricity, food waste, and maintenance costs, plus help increase revenue with its large display areas and openaccess for shoppers and buyers. I am thrilled that the HRC show is the first venue we can show it, given its suitability to hotels, and restaurants alike. We are taking orders at the show, so do come and see us on stand 419.” The Bora is available to order from today, and will now replace the Adande Sarma cabinet. The Bora range qualifies for the super deduction tax scheme introduced last year by the UK government. See www.gov.uk/guidance/super-deduction for details. The possibilities are endless with the latest Fri-Jado Auto-clean rotisserie range There are few appliances that catch the eye of a consumer, grasp the interest of a customer and ultimately drive impulse sales in the way that a fully loaded rotisserie does. Now, thanks to the new easy to use, Auto-clean rotisserie range from Fri-Jado, you can add a touch of theatre to your cooking process.

can be scheduled overnight or during quiet trading hours, saving valuable time. What’s more, safety and efficiency are enhanced. Using a new and improved ProteClean cleaning cartridge, the technology deep cleans both the rotor and the oven cavity, ensuring the unit is spotless and readyto-use. A remarkably low water consumption of less than 25 litres per cycle and a hygienic fat collection system, separating and collecting the fat to prevent blocked drains, supports efficiency and a lower total cost of ownership over the life of the appliance.

control recipe management remotely via a dashboard. “For those sites with a front of house food offering, whether that be an open kitchen or a hot food-to-go retail setup, a beautifully designed rotisserie full of gently rotating food is something to behold. Full of intrigue and interest, rotisseries add a unique and exciting theatre to the cooking process and have been shown to really push impulse sales. The biggest objection has always been the complexity and cleaning demand, however thanks to our new Fri-Jado Auto-clean range, operators can make the most of the benefits, while also saving time and energy too.” Gary Thacker, Sales Director at Fri-Jado UK In addition to a simple to use, intelligent controller and energy efficient cleaning system, the new Autoclean Rotisserie range also features unique new formats including a double-stacked model, capable of cooking up to 80 chickens (40+40) per cycle. Independently controlled, the TDR 8 s + 8 s auto-clean unit allows the operator to cook different products simultaneously, further saving time and money in a busy site. The option of a ventless hood makes the units in the Fri-Jado Auto-clean rotisserie range ideal for sites without dedicated extraction and ventilation.
