Will staycations boost your business?

W

hat a year it has been since March 23rd 2020. With

planned end of the current lock down in April, let’s hope that the people of the UK do the right things and avoid any more. The UK vaccination program appears to be removing the recent stresses on the NHS, but we cannot be complacent. With problems abroad, let’s hope that the British Fish and Chips, QSR and Takeaway markets have a Boom year with Staycations being on the agenda for many. We hear about many operators that have revolutionised their businesses and we hope that they get the full benefit for their time, bravery and inspiration for making these changes and investments. There are still lots of sources of help from the government and do not forget the many Facebook groups with people only too willing to pass on their advice and tips in answer to your questions. It’s great to see the expansion plans of businesses like German Doner Kebab and Popeyes® with new store openings, and these can only encourage operators to further develop their menus in what will be an increasingly competitive market. Various sources speak about the end of social distancing and the wearing of masks, but whatever happens, we have been learning to live with these and as the medical professions learn more about how to deal with next winter, maybe we will see a return to the good times. We would like to pass on our sincere thanks to everyone who has stood by Fast Food Professional and supported us in these difficult times. Athol

Seafood from Norway: Where quality and sustainability create trust

Norway is a country of wild nature, wild seas and wild fisheries. Our seas are perfectly balanced to produce fish of the highest quality. And Norway works hard to keep it that way. Long before sustainability became the buzzword it is today, Norway was taking steps to protect its fish stocks, becoming the first country in the world to introduce a quota system for important species such as cod. But fish are migratory, and populations can vary from year-to-year, which is why being a responsible seafood nation is much more than simple quota setting. As home to the largest cod stock in the world, plus many more key fish and shellfish species, we take our responsibility seriously: regulators, industry and science work together to ensure vulnerable areas are protected, seas are clean and fish stocks are sustainable. Scientists head out on marine research vessels, using sonar and catch research to estimate stock sizes - as well as joining trawlers to study the fish close up. At sea, the Norwegian Coast Guard spends around 70 percent of its resources making sure fishing activities are carried out at the right time, in the right areas and with the right equipment, while on land, the Norwegian Directorate of Fisheries carries out regular inspections of fishing vessels arriving in port and at sea. 10

Norwegian cod and haddock. The number one choice for your fish & chips.

Ice cold waters give Norwegian cod and haddock a delicate colour, flaky texture and superior flavour. Frozen at sea within a matter of hours, Arctic freshness is locked in right to your kitchen. Norwegian cod and haddock come from one of the world’s most sustainable fish stocks - one of the many reasons why they are used in kitchens across the globe.

Origin matters.

Frymax is Committed to and Supports Sustainability. SUSTAINABILITY For several years Frymax has been made only from fully segregated certified sustainable palm fruit oil. This means that both palm oil and palm kernel oil are produced by palm oil plantations which have been independently audited and certified. The certification is provided by the official body, RSPO which has developed a set of environmental and social criteria member companies must comply with. Fundamental to this, is that no primary forests which contain significant concentrations of biodiversity, fragile ecosystems, or areas which are vital in meeting basic or cultural needs, can be cleared. This seeks to eradicate the threat of unsustainable palm oil plantations which damage both the regional and global environment and that of indigenous wildlife. Both Olenex and ADM, manufacturers of Frymax, support the global sustainability movement and RSPO. They also have an additional supply chain policy which requires Frymax palm oil producers to respect the core sustainability principles of, no deforestation of high carbon stock forests, no development on peatland and no exploitation of communities.

PROJECT MARIPOSA Frymax sources some of its palm oil from Latin American countries and has undertaken to support producers by providing them with the tools and expertise to produce fully sustainable palm oil. The vehicle to do this is through a new initiative called Mariposa.

The aim is to support families with the means to develop, improve and maintain their sustainable production practices.

In the past three years Olenex has undertaken three very successful Smallholder programmes to support sustainability. Frymax carries the Mariposa logo on its packaging and it is hoped and expected that Mariposa will get increased exposure over time. Says Andrew Marriott, Brand and Marketing Manager of Frymax “We are determined to promote sustainability in any way we can and support those who produce the oils for our product. Our involvement in Project Mariposa demonstrates our commitment to achieve these aims.”

Mariposa is about enabling growers to manage their palm trees sustainably.

Frymax Champions Sustainability

You don’t become the Fryers’ favourite for over sixty five years without listening to the needs of your customers and adapting to changing market circumstances. That is why, for several years Frymax has been made only from fully traceable, certified sustainable palm oil. This devotion to sustainability is backed by the RSPO and conforms to the economic, social and environmental requirements laid down by this body. The Frymax commitment to sustainability is evidenced by an involvement in project Mariposa which supports smallholders in Latin America, providing them with the tools and expertise to produce fully sustainable palm oil. This in turn enables Frymax to maintain consistent colour, consistent quality, consistent frying time and consistent delicious end results. As befits a brand leader, Frymax is the first to recognise initiatives which will produce benefits all - round. The commitment to sustainability is clear evidence of this.

The High Performance & Practicality of a professional griddle For a fast food restaurant, a professional griddle is a key piece of equipment as it offers the versatility to quickly cook a wide variety of foods – from bacon and eggs for a breakfast service to chicken and burgers for peak trading periods. As so many menu items can be cooked on a griddle, performance and energy efficiency cannot be compromised and Keating’s Miraclean® Chrome Griddle excels in both these areas.

T

he key to the great griddle performance is in the Miraclean® surface. The Keating Miraclean® Griddle begins with a 3/4” thick, precision formed,

highly polished steel plate. A trivalent chrome surface is applied through an 8-step process. The thermal conductivity of the Miraclean plate assures controlled, even heat distribution to the cooking area. The surface locks in heat, releasing it only on contact, which reduces radiant waste heat by 90% to keep kitchens cooler and can save up to 30% on energy costs. The thermal conductivity of the Miraclean® plate assures controlled, uniform heat distribution throughout the cooking area allowing you to cook at lower temperatures, whilst reducing shrinkage of the product. Performance is supported by practicality as cleaning the surface only requires cold water, so a Miraclean® griddle can be cleaned in 44% less time than a standard steel griddle. Another important piece of equipment is a Salamander, which can be used to finish dishes before serving. The Moduline ultra rapid FlexyGrill is a game changing Salamander as it reaches its working temperature in just four seconds thanks to high performance heating elements. Constructed from stainless steel, the Flexygrill has an adjustable upper plate to get the heating surface closer to the food and a steel grill and drip tray to collect cooking juices. Electronic controls with a digital display including a warm function also make the FlexyGrill incredibly easy to use. www.jestic.co.uk

Deliverance!

During the Coronavirus lockdowns, operators have relied on home deliveries as an economic lifeline. Depsite the rapid roll out of vaccinations and easing of lockdown restrictions, it is clear is that home deliveries will continue to be a crucial revenue stream going forwards - especially as many customers will remain nervous about eating in, even when lockdown restrictions are lifted.

E

nsuring that enough of the most popular menu items are ready for home delivery presents a challenge - but the Henny Penny and Moduline range of advanced hot

holding appliances effortlessly solves this problem. Foods can by cooked in advance and held in the perfect conditions before they are ready for collection or delivery, improving food quality, efficiency and reducing wastage. Two of the newer additions to the Jestic portfolio – Carlisle Foodservice Products and Metro both have high performance insulated food carrier ranges which are proving very popular with operators running home delivery services. The Carlisle Cateraide™ IT Insulated Food Pan Carriers feature commercial foam insulation to keep food hot for up to 6 hours. Constructed from an ultra-strong plastic to endure the busiest of home delivery rounds, Cateraide™ IT insulated carriers are designed to stack and fit together for secure transportation and storing. The Mightylite™ range of ultra-light insulated top-load and front-load food carriers from Metro are 80% lighter than traditional urethane foam-filled carriers and feature an advanced polymer foam construction with a high strengthto-weight ratio, to withstand the inevitable bumps and knocks during transportation. Mightylite™ carriers will keep food safe for 5+ hours and their ergonomic design incorporates four convenient handles to make lifting and carrying easy. Metro products are also helping to improve the flow of home delivery and takeaway order staging. ‘Order Staging Units’, are the perfect solution for the preparation of home delivery orders and are also ideal for storing supplies – whilst ‘ToGo-Stations’ feature angled 18” x 36” shelves to improve visibility and accessibility, making it easy for delivery drivers or customers to pick up orders front of house. Great Tasting Chicken Needs Great Ingredients

T

he Southern Fried Chicken range of ingredients from Fast Food Systems is one of the most popular and well-known ingredients ranges in the industry. Created back in the 70s by our founder and improved and added to over time, the range includes the iconic Southern Fried Breading which is known for quality and flavour, and

with the addition of a little Southern Fried Chicken Lemon Pepper is simply a tasty treat found in takeaways and chippys up and down the country. Southern Fried ingredients are made from natural ingredients, our original lemon pepper is coarsely ground and infused with real lemon essence for a flavour that delights everybody. The fascinating back story to our brand sees our founder Arthur Withers travelling the southern states of the USA seeking out new tastes and ideas for what, back then, was the burgeoning concept of fast food. The USA was well ahead of us and fast food had yet to truly arrive in the UK so it made sense to visit its birthplace for inspiration. Arthur understood that this unique taste, coupled with its innovative cooking process was something that the UK market would embrace and he decided to introduce this to his already growing business. After a trip along the Mississippi in a paddle steamer, the brand was born. Over the years the range has grown, adding different flavours and styles of coatings. Fast Food Systems now offers over 25 standard products, as well as bespoke products for export and specific markets, but the core range remains the same offering a combination of great value and great taste as well as some flexibility for the independent operator. Never one to stand still the Southern Fried Chicken range has grown with the addition of twelve Piri Piri ingredients including the very popular Piri Piri Marinade, Piri Piri salt for seasoning fries, five different basting sauces and five finishing sauces in lemon and herb, mild, hot, extra hot and mango and lime, catering for the cautious to the daring. Over the years the Southern Fried Chicken brand has grown and can be found around the world supported by our great range of ingredients, purpose-built equipment and hard-won expertise. If you just want to pick up a bag of breading or design and install a whole new restaurant, Fast Food Systems have the talent and the skills to deliver.

Frontline systems can either be plumbed-in allowing for the fully automated top up of fresh oil and the removal of waste oil to a storage tank ready for collection – all without a single drop spilled. To empty used oil from fryers Frontline has a plumbed-in, pump station option which can move oil along to a storage tank at the push of a button or if plumbing isn’t feasible, wheeled caddies can be rolled under fryers to receive waste oil which can be pumped into the tank. A pumped caddy is also available. The used oil storage tanks are constructed from heavygauge stainless steel, are available in a variety of sizes for either internal or external use and incorporate heat pads to keep the oil liquid. They also feature anti-theft electronic locking mechanisms and are linked to a datafed web interface, so operators have full accounting of used cooking oil volumes and can maximise their used oil rebates. Unleash

Quiche! the

Pidy’s secret recipe creates the ultimate quiche case

F

ebruary 2021 - Belgian ready-to-fill pastry specialist Pidy has introduced the ultimate pastry case for creating quiches for every occasion. The individual quiche cases (8,5 x

h 2,1cm) have a crisp, flaky texture and neutral flavour which perfectly complements seasonal, savoury fillings of all-kinds, from fool-proof quiche Lorraine through to more adventurous creations. The secret to Pidy’s perfect quiche cases is the pressed puff pastry (rough-puff) which is made from a traditional Dutch method unique to Pidy. This achieves the perfect texture that ensures the pastry stays firm when cold with no unwanted sogginess due to excellent moisture resistance. This will undoubtfully provide peace of mind for foodservice professionals preparing ahead of time or offering a takeaway or delivery service. Operators continue to be met with many challenges due to Covid-19, such as running kitchens with reduced staff or closing temporarily at short notice, which is why versatile long-life products, like Pidy pastry, are so invaluable. The quiche cases can simply be re-baked with different fillings, topped with potato

or

pastry lids or even filled

and

then

frozen for preparing in advance. Fabien

Levet,

Commercial

Manager at Pidy UK, comments on the company’s signature rough-puff recipe: “What makes the pastry used for our quiche cases so special is the traditional rough-puff recipe which creates just the right amount of crisp flakiness and all-important crunch whilst still holding up well to all kinds of fillings. As we approach spring, quiches are a menu staple that are easily adaptable, and we’re delighted to make customers lives that little bit easier with our ready-to-fill quiche cases!” As a global leader in ready-to-fill pastry since 1967, Pidy continues to develop new products that provide exceptional quality, variety and trend-setting innovation in the exciting culinary art of pastry. The Pidy quiche range includes a selection of sizes and is available in a vegan, gluten-free and wholemeal pastry to offer customers even more flexibility. All Pidy products are ambient and the quiche cases have a 12-month shelf life. For more information on the Pidy range, please visit www.pidy.co.uk or call 01604 705666. 44

VFC The Vegan Fried Chick*n Start-Up with Global Ambitions

its products - bites and fillets in a crispy corn flake coating

The company, which began trading only in December

He says: “We have also been fielding large numbers of

enquiries from UK food service wholesalers and outlets. Feedback from early stockists has been exceptional with our

first partner in Cambridge telling us that VFC accounted for

75% of their total sales in the first week after launch. They saw a marked increase in traffic and orders following the

introduction of VFC and have expanded the range and order sizes in order to keep up with demand.”

The small team with huge ambition has already held

The Budget: What it means for SMEs and what to do next

O

n Wednesday, 3rd March, Chancellor Rishi Sunak

and leisure properties in England will pay no business

announced the Government’s latest Budget,

rates for three months from 1 April when combined with

perhaps the most significant

for businesses in recent times due to the events of the last 12 months. We’re breaking down the key policies affecting British small and medium enterprise (SME) businesses, how they trade, pay tax and the effect on jobs. In addition, we highlight how businesses can start to re-launch their recovery and invest, build and grow their businesses as a result of the measures featured in the budget and the recent road to recovery.

Job Retention (Furlough) Scheme The Coronavirus Job Retention Scheme has been extended until 30 September 2021. Employers can continue to claim 80% of wages up to £2,500 per month up until the end of June, reducing to 70% in July and 60% in August and September as employers will be expected to pay 10% towards the hours their staff do not work in July, increasing to 20% in August and September, as the economy reopens.

Restart Grants One off cash grants of up to £18,000 for hospitality, accommodation, leisure, personal care and gym businesses in England.

Small Business Rates Relief, with further relief available for the rest of the year.

VAT Reduction The temporary 5% reduced rate of VAT has been extended until 30 September 2021, supporting tourism and hospitality sectors. After this period, the rate will increase to 12.5% for a further six months until 31st March 2022, before returning to 20%.

Corporation Tax The rate of Corporation Tax will increase to 25%, but will not take effect until 2023, for businesses with profits of more than £50,000. For those companies below this figure, the figure will remain at 19%. Now that we know what the immediate future is for jobs, tax, grants and loans, with a speculative road map for the re-opening of gyms, restaurants, bars and retail, among other businesses and sectors, we are looking to support those businesses that want to re-launch and secure funding to improve their cash flow, and get their businesses back where they should be.
