From our headquarters in Wiltshire, our team of 25 multi-skilled catering and electrical engineers, undertake 10,000+ jobs each year at almost 1,700 sites across Great Britain.

With continual talk of price and wage rises, it is imperative that operators sharpen their pencils and focus on optimising their sales and controlling their costs, so it was pleasing to speak recently with Jordan Cavalli of the Select Sundries Company who sell an alternative Potato Whitener product by mail order, or they can deliver within a 50 mile radius of their base in Bridlington. We have a lot of refurbishment, repair and decoration work to do to bring the property back up to standard. “Once this is completed the Elite will begin fitting out, and we look forward to seeing them open for business later in the year.” The recent news follows a successful start to the year for the company, which earlier this year featured in The Book of Amazing People. The company also celebrated a double-award win at this month’s East Midlands Federation of Small Businesses (FSB) Celebrating Small Business Awards 2019; the company scooped the Family Business of the Year award for the second year running as well as the Community Business of the Year award (area only). In 2018, the Elite Fish & Chip Company celebrated 30 years in business in Lincolnshire and during its 30-year history the company has expanded to three restaurants and takeaways in Ruskington, Sleaford and Lincoln. In that time, it has also welcomed a third generation of family members to the business and has become a national award-winning fish and chip establishment. In honour of last year’s 30th anniversary, The Elite Fish & Chip Company committed to a year-long £30,000 fundraising campaign to be divided equally between The RAF Association, the RNLI and Sleaford Dementia Support. SAICA Pack collaborates with Q-Partnership to re-design fish & chip box The innovative new pack is set to be used by fish and chip shops across the UK this summer The Q-Partnership includes three partner companies, Friars Pride, V.A Whitley and Henry Colbeck. Together, the partnership supplies the fish and chip and catering industry across the UK The design allows customers to collapse the box after use, creating space in seaside bins and avoiding overloading

to the effective partnership between Saica and the Q-Partnership. Together, we have used our expertise to produce a packaging solution which will deliver for consumers, suppliers and local councils. “Local authorities were very clear, the issue of overloaded bins attracting seagulls had to be dealt with. This new fish and chip pack will allow customers to simply collapse the box after use, creating more space in bins and avoiding overloading.” The innovative design has also been entered in to this year’s Starpack Awards, the results of which will be announced in June 2019.

ovens, the Alfa Pro Quick offers the solution. Available as a countertop version for mobile trucks, or on a stand with castors for static sites, the Quick brings an impressive capacity of 110 pizzas per hour, and a cook time of as little as two minutes. Both the Quattro Pro and the Quick feature an 8cm thick refectory floor, which retains and evenly distributes the heat throughout the cooking chamber. The unique design of the ovens allows for a superfast heat up time, reaching 450°c in just 35 minutes. Consuming an average of 4.5kg and 7kg of wood per hour respectively, the Quattro Pro and the Quick are designed to achieve a consistent cook and authentic, wood-fired taste. “Alfresco dining is what the summer is all about. Enjoying a chilled beverage and a delicious meal with friends and family on a warm evening is somewhat of a British pastime. To really make the most of this opportunity, many businesses have turned their outdoor space into extensions of their restaurant, with dedicated seating and prep kitchens. The re-launched wood-fired Quattro Pro and Quick from Alfa Pro offer chefs all the great benefits of an artisan pizza oven typically found in a kitchen, in mobile design that is suitable for use outside. Both the ovens also feature a unique honeycomb stainless steel structure to the chamber, making them lightweight, yet robust and capable of withstanding frequent use.” Steve Morris, Sales Director at Jestic To maintain output during peak trading hours, both ovens offer an enhanced chamber size, which is capable of cooking up to six pizzas simultaneously.

Better Food Textures and Tastes

Richard Ebbs, Commercial & Marketing Director at Synergy Grill

“The grill has always been central to the commercial kitchen. However, with the face of the kitchen changing, and with operators now looking for more versatile pieces of equipment, the traditional commercial grill has started to take a back seat, making way for a new essential within the commercial kitchen – the Synergy Grill...

A

t Synergy Grill Technology, the objective is simple – to help operators and chefs deliver a better quality of food, using less gas, in a cleaner manner. Synergy

Grill’s

innovative,

patented

technology ensures that chefs can deliver better food textures and tastes. This is achieved by Synergy’s unique process whereby fat molecules are atomised to ensure a more succulent food product. Due to this atomisation, there is no cross-flavouring through smoke contamination, therefore fish, meat and vegetables can all be cooked at the same time. Once the fat has atomised, all other moisture penetrates back into the food to ensure a perfect texture and taste. Even chicken or well-done steaks, which can be notoriously dry, retain their moisture and flavour, so there is no restriction on what chefs can offer their customers. This unique process of fat atomisation turns fat into carbon dust, thus eradicating the need for a fat tray and the need to dispose of fat waste altogether. The carbon dust can then simply be vacuumed or brushed away the morning after service which eliminates the need to purchase harsh kitchen chemicals. Not only does this remove the need for caterers to spend hours cleaning kitchen equipment, it also reduces their contributions to environmental damage caused by fat and grease disposal such as sewage blockages and fatbergs. Existing commercial gas grills tend to produce oily, fatty, black smoke which plays havoc with kitchen ventilation systems, which not only causes them to break down and require frequent maintenance, but also increases the risk of kitchen fires. The Synergy Grill atomises fat molecules into dust and produces white smoke as opposed to black, which takes the strain off of kitchen ventilation systems and reduces the risk of kitchen fires.”. Remarkable New Label for Foodservice A revolutionary new reusable label for the catering industry, which can eliminate the need for at least 500 single-use labels, has been unveiled by Pro Foodservice Reps Ltd. PuraCycle labels help food service operators save money, eliminate waste, meet health standards and go green.

P

Their

durability,

even

through industrial dishwashers, helps prevent the

accumulation of paper and tape waste entering the waste system. These innovative labels come with ‘foodservice’ PuraCycle markers, which are non-toxic, odourless and cost effective. The pens contain resistant “wash-erase” ink that stays legible on PuraCycle labels even when exposed to either boiling or freezing water, steam or condensation. Once used, ink can be simply erased with friction before washing the container and reusing. Therefore, there is no need to invest in a dedicated label printer. PFR managing director Andy Piggin said: “Peeling, picking, scratching or scrubbing ordinary labels can leave a nasty residue that builds up over time. In contrast, our PuraCycle labels are an award winning, sustainable, costeffective solution for every aspect of food service. They will change the way operators go about labelling prepared food” “They are at least 10 times less expensive than dissolvable labels per use, having been engineered to sustain 500 dishwasher cycles. We believe outlets can start seeing savings in as little as 15 uses.” PuraCycle Remarkable labels come in packs of 50 for containers and 25 for bottles with 3 pens. PuraCycle encourages customers to customize their labels with company logos, corporate colours, specific text, and sizing to suit their requirements. PuraCycle is committed to designing eco-friendly and cost-effective solutions for all aspects of foodservice and will be launching new products to the range later in the year. PuraCycle will be exhibiting at the Craft Guild of Chefs Universal Cookery and Food Festival in June. For further information, visit www.Puracycle.co.uk.
