The nights may be getting cooler, but outlet owners’ sales are about to heat up as Pukka, the nation’s number one pie brand , is bringing a new, limitededition recipe to chip shop counters from October. Blending traditional takeaway favourites – The People’s Pie and Doner Kebab – Pukka’s new first-to-market Doner Kebab Pie is set to tempt a new generation of pie eaters to their local chippy. Fast Food Professional Director, Athol Dipple, takes a closer look.
Pukka and the Great British Chippy have long gone hand in hand – after all, it’s where the brand first started selling its pies over 60 years ago. And, much like the institution, Pukka is steeped in British culture and tradition – but this has never held it back when it comes to innovation. In fact, Pukka’s new Doner Kebab pie is the latest link in a successful chain of modern, full-on flavour recipes which it has launched in recent years.
Last autumn, Pukka celebrated its deep-rooted connection to the nation’s fish and chip shops with the launch of its Chip Shop Chicken Curry pie which topped the ranks as one of the brand’s fastest-selling NPD launches. Now, taking things a step further, the team is hoping to tantalise the tastebuds of a new wave of takeaway enthusiasts – all at a time when peak pie-eating season will be in full swing. Pukka’s Managing Director, Isaac Fisher, dishes out the detail.
“We’ve been nailing the classics, like chip-shop favourite Steak & Kidney, since we first started making and baking our pies for chip shops back in 1963,” says Fisher. “And today, our diverse range of pies – including Veggie Cheese, Leek & Potato and our vegan duo – is helping chip shop owners cater to the evolving dietary and taste preferences of modern customers.
“Our new limited-edition Doner Kebab pie is a prime example of this. A spicier option for those who fancy trying something fresh and exciting, it’s geared towards driving younger customers into the chippy and making them fall in love with their local. And we already know it’s set up to do exactly that, with over half (57%) of customers already saying this latest flavour fusion would appeal to them .”
Not only is Pukka bringing some extra excitement to chip shop counters, but the brand has also introduced bespoke POS to help chippy owners boost pie profits.
Fisher concludes: “We’ve updated our foodservice Social Media Toolkit with a bank of ready-to-post Doner Kebab pierelated social content to help our customers drive excitement for, and sales of, this latest NPD. A Big Year for Blakemans 2
With Autumn here already, the Staffordshire based sausage manufacturers reflect upon their rollercoaster year so far.
2023 was always going to be a big year for Blakemans as the family and their workforce would celebrate 70 years in business, but it has been a year of highs and lows so far.
The milestone birthday started out triumphantly with the completion of an extension, dubbed phase 5. A fully self-contained production area built to service their on-site cooking plant, phase 5 was completed in record time and was up and running smoothly by the end of May.
The new addition to the site has granted the factory the agility to produce more products simultaneously whilst retaining segregation and increasing production capacity, meaning that Blakemans can continue to guarantee continuity of supply to their customers.
Unfortunately, June was not so kind to the Blakeman family when the founder of the business, James Thomas Blakeman passed away suddenly at the age of 93 having paid witness to his businesses 70th anniversary. A beautiful service was held in celebration of James’ life which saw him visit his factory one last time, the cortege guided by his beloved lorries.
Jim’s son Phil and daughter Sue became directors of the Business in 2000, when he took up the mantle of Chairman. James remained very involved in the business right to the end, offering support, knowledge and advice with each of his regular visits to site. Phil said
“Sue and I are incredibly proud of the business that our dad built. It is a testament to the importance of family values that we continue to run the Blakeman business according to Dad’s ethics and guidance.”
The pork market has faced testing times over the course of the last few years and unfortunately, this is set to continue for the moment. Having made continual re-investments back into the company and having worked hard to become an established and trusted name in so many markets, the Blakeman team are confident that the company will continue to go from strength to strength, despite the issues faced by the industry as a whole. Sue said
“We have faced some testing times of late but we are in a stable position in the market. We have an excellent team who have helped us to manage all of the issues we’ve come across over the last few years whilst still maintaining the growth and development of the company. It is a challenging journey in business but I enjoy it immensely”
Next on the list for the siblings and the Blakeman team is an investment into their frozen packing lines which will revolutionise the department and peak the efficiency of the plant.

1) What are Papa Johns’ expansion plans for the future?
Papa Johns has well over 500 stores in the UK, mainly on the high street. Our goal is to be in every town in the UK so our customers can enjoy our fabulous, fresh pizza with friends and family wherever they live. However, we are also ‘breaking with tradition’ to offer our pizza when customers are not at home too. We currently have over 40 Papa Johns located in holiday parks, stadiums and leisure venues across the UK and we see this as an area of further expansion.
2) How does this non-traditional space work for operators?
Just like our high street stores, our ‘non-traditional’ sites are franchised. This means operators use our proven, successful franchised model to set up and run the store. Teams take advantage of our training, processes and support to create an additional revenue stream for the venue.
3) What non-traditional locations have Papa Johns currently?

Frozen food distributor Central Foods switches to 100% green energy
The company, which is based at Collingtree near Northampton and operates nationally, has made the move to use 100% green energy from Scottish Power.
The energy used by Central Foods will be from renewable sources in the UK that do not harm the environment and is backed by green energy certificates known as Renewable Energy Guarantee of Origin (REGOs).
As well as powering the office and the company’s development kitchen, the green energy will also power two onsite cold stores.

Blakemans honour their founder and chairman
Mr James Thomas Blakeman M.Inst.M passed peacefully at his home at the grand age of 93. Having recently celebrated his businesses’ 70th anniversary, James was still paying regular visits to the factory. His loss has been felt by Phil, Sue, their families and everyone on site, who dearly miss him; his gentlemanly demeanour, his wisdom and his humour. By any definition, he was a towering figure in his industry, a man who commanded respect and admiration and someone who could hold the attention of anyone with stories of a life well lived; his time serving in the RAF and playing football with Luton town against Sir Stanley Matthews being amongst his favourites to reminisce upon.
James spent a short time as a manufacturing supervisor with a pork butcher in Leek, Staffordshire, learning the ropes whilst becoming a master butcher and an elected member of the Meat Institute. In 1953 he decided to start his own enterprise, a mobile refreshment bar with his brother-in-law, whilst simultaneously working as a freelance sausage meat manufacturer. His tireless work ethic, ethos for producing quality products and charisma enabled him to establish his fledgling business.
Production of the Blakemans sausage that we all know and love started in earnest in 1955 after his marriage to Ann. The couple bought a farm in Caverswall near Stokeon-Trent, converting the cow sheds and stables into a small production unit for the manufacture of sausage and cooked meats. Through the years, Jim and Ann grew their company,
boosted in the 70’s with the creation of the chip shop sausage. The fish shortages of the cod wars inspired Jim to create a sausage that could be deep fried. It took him and a synthetic skin supplier 2 years of trial and error to master it, but his tenacity brought us the Supreme sausage which is still the market leading catering sausage today.
The turn of the millennium saw James step into his role as chairman, handing over the daily running of the business to his children, Phil and Sue. He often mentioned how proud he was of them, their successes and how they upheld his core values in business.
The Blakeman business and its 300 plus employees owes James a debt of gratitude for the foundations that he laid, his dedication, hard work and integrity leading them to the thriving enterprise that they operate today 70 years on. Many of the workforce knew him well due to his regular visits and will miss him, his humour, his character, knowledge and guidance greatly.
A beautiful service was held in celebration of James’ life on the 12th July which saw him visit his factory one last time, his cortege guided by his beloved lorries. In addition to his entire workforce lining the yard to say their goodbyes, neighbouring businesses downed tools to line the street and pay their respects in a fitting tribute to the life of a much admired, self-made man.

Bridge Cheese scoops six prizes at the International Cheese Awards 2023
A Shropshire company supplying cheese and dairy products to the food manufacturing, wholesale and food service sectors has been awarded six trophies at this year’s International Cheese Awards 2023 – the Oscars of the dairy industry.
Telford-based Bridge Cheese won three gold awards, two silvers and one bronze at the renowned annual awards, which champion world class producers of cheese and dairy products. Every year, more than 5,000 entries are received by organisers.
Bridge Cheese took the top two awards in both the grated cheese (non-UK cheese) and processed cheese sticks/strings/ropes categories, as well as a gold award for its mild white cheddar, a silver for its garlic and chives ropes and a bronze for its mature white cheddar.
This is the first time Bridge Cheese has entered the annual industry awards, and commercial manager Monica Chauhan was delighted to win so many accolades.
Monica said: “We are absolutely over the moon to be presented with six awards at our first International Cheese Awards. We’ve attended the trade fair for a number of years, but this is the first time we’ve taken the plunge and entered the awards and we couldn’t be happier.
“The quality and consistency of our product is something we are really proud of, so for a panel of judges to validate
that is an amazing feeling. We are also really chuffed to have both the gold and silver awards for our cheese ropes, as these are bespoke products we’ve developed specifically for our pizza customers – both in the food manufacturing and food service sectors.

We are now in a position to do a bespoke CAD file of the Cover designed for their most popular wheel used in hospitality equipment, for them to evaluate. We hold UK and EU patents and we’re looking to license the Cover Project to a global manufacturer to service a huge market.
“At trade shows, every time I showed the prototypes to people their response was positive, from medical facilities, materials handling firms to cleanroom suppliers. There are many more markets out there for the Cover than just hospitality. Just imagine how many castors there are within the UK and EU, as well as countries that base their food safety regulations
“What we really need is an investor. As the Project is being self-funded we are working on a shoe string. We need an Investor who sees the potential profits, to come in and put things on an even keel. The regulators want to mandate them, chefs want them in their kitchen, auditors want them used because it prevents a possible breach of the regulations. They will become as ubiquitous as color-coded utensils.”

Panasonic UK has enhanced its range of professional cooking appliances and extended its rice cooker series with the addition of a new Electronic Rice Cooker. The SR-UH36F Electronic Rice Cooker is the latest model in its range of commercial rice cookers, now available in UK foodservice
Featuring 1400w power and a 20-cup/3.6-litre cooking capacity, the professional design of the new unit incorporates wrap-around heaters to offer improved heat retention, holding rice at the correct temperature for up to twelve hours – making the SR-UH36F a reliable, durable piece of equipment for commercial kitchens looking to cook perfect rice for a wide range of menu choices; delivering consistency without the fear of over-cooking.
Offering 360-degree triple heat, the SR-UH36F incorporates a heater housed within its lid, dual heaters in its base (a pair of completely circular heating coils which ensure uniform, even heating) and side heating, to give consistent warmth. KTC Edibles launches partnership with The Natasha Allergy Research Foundation
KTC Edibles Ltd (KTC), the UK’s largest supplier of edible oils, has entered into a 3-year strategic partnership with The Natasha Allergy Research Foundation, to support the organisation’s goal of preventing and eradicating food allergies.
As part of the partnership, KTC will raise significant funds for Natasha’s foundation through a series of charity events and fundraisers starting in 2023.

The official partnership follows on from some initial fundraising earlier in the year. In June 2023, CEO Paresh climbed Ben Nevis, raising £4,236 for the charity in the process.
Natasha’s Foundation was set up by Tanya and Nadim Ednan-Laperouse following the death of their daughter Natasha in 2016. They successfully campaigned for ‘Natasha’s Law’ which requires all food outlets to provide full ingredients lists with clear allergen labelling on food prepacked for direct sale.
The Natasha Allergy Research Foundation is dedicated to understanding the causes of allergic disease, and developing ways to prevent, treat and ultimately eradicate allergic disease, starting with food allergy, creating a world that is safe for everyone.

Lolly Launches New Charity Functionality
Hospitality software house responds to industry demand
In response to customer demand, Lolly, the hospitality technology specialist, has launched a new charity payment functionality. The new system, which runs across all Lolly PoS, self-serve and app functions enables hospitality providers to support multiple charities, as opposed to being restricted to only one.
The hospitality provider is able to create multiple charities for the customer to choose from, providing the charity’s title, logo and description. The parameters include roundup, open donation and percentage, where retailers can select one or all of them.
At the end of the sale, the customer is prompted to donate to the nearest value or to select how much they would like to pay. Within the Lolly app there is a direct donation feature, where customers are able to donate their selected amount, without performing a sale.
All charity donations and payments are then reported in the Lolly back office, for hospitality providers to gauge how popular the functionality is, and which charities are performing particularly well.

Electrolux Professional Group has now also a target to reduce indirect use phase emissions of sold products by 27.5% by 2030. This target, together with the target to reduce greenhouse gas emissions from our industrial operations by 70% by 2030, has now been validated by the Science Based Targets initiative (SBTi*).

Bisto launches its Love British Food Fortnight Guide to inspire chefs and spotlight uk suppliers
Bisto has launched a Love British Food Guide to help publicans and pub chefs celebrate UK suppliers and drive profits from the national celebration, which takes place from 16th September to 1st October.
