O
ur front cover for this issue features Central Foods of Collingtree, Northamptonshire, who are one of our key trading partners and contributors. Family run by Gordon and Alison Lauder, we caught up with Gordon recently to find out his views on a number of topics and you can read his thoughts later in the issue. They have recently been accredited by the Living Wage Foundation for fulfilling the process whereby all staff – whether employed directly or contracted – will receive a minimum hourly wage of £10.20 in London and £8.75 elsewhere in the UK. After the hot summer recess, we are now back into the expo season with a number of exhibitions around the UK during this month including Lunch 2018 and the Restaurant and Takeaway Expo 2018 including Street Food Live at ExCel in London. These events are great opportunities to network and meet new contacts and to get fresh ideas on what is now available and what others are doing to grow their businesses. We can all find reasons not to go, but we can all learn so much from what we see in the exhibitions or even by taking time to walk around cities and towns and see what others are doing. Just one fresh idea may be the big idea that changes the way that you go about your own business. You are never too old and should never be too proud to think that you cannot learn new tricks. One big change that you will notice in this issue is that we now only include our comprehensive Trade Directory in our digital issue which can be found on our website www.fastfoodpro.com. This allows us to include even more news in the print issue. Happy trading, Athol

R
un by Gordon and Alison Lauder, Central Foods supplies fast food professionals across the UK with a wide range of products, including the well-known Golden Valley Foods poultry range which this year celebrates its 20th anniversary.
Here, managing director Gordon Lauder tells us more
about the business and his personal likes. 1. Was there a light bulb moment that led you to the food industry? When I left school, I started working at a local supermarket, initially in the warehouse, then on the shop floor before becoming a manager and then regional manager. Later, I became a buyer and moved into product development…so you could say I’ve always been in the food industry in one form or another. Alison and I met at work, both working for the same food sector company. We have complementary skills and it has really helped us to develop Central Foods into the business it is today, along with the great team we have in place. 2. Biggest industry achievement/recognition to-date? Alison and I are very proud that Central Foods has Managing Director of Central Foods, Gordon Lauder.
Developing a taste for success Frozen food distributor Central Foods has just unveiled a new product development kitchen to help develop and showcase menu items for foodservice operators
achieved BRC accreditation – it’s a worldwide recognised accreditation and means a lot to us. It’s just been renewed, and we are delighted to say that we achieved accreditation at the highest grade – double AA. On a day to day basis, we’re also very proud to be helping so many fast food outlets and takeaways across the UK to serve great-tasting food. We love developing new products for menus and take immense satisfaction from hearing positive feedback from our customers, and indeed their customers! 3. What do you do to wind down outside of work? I’m pretty busy during the working week, but at weekends I like to run. It clears the mind and is the perfect time to think. 4. What has been the biggest change for your business over the last 5 years? The potential impact of Brexit has hung over us and has added to the uncertainty. It makes it very difficult to plan, when no-one seems to know what is happening. Technology has brought many positive changes for the business from the direct communication and marketing we can do via social media to the way we interact and support customers. There’s also been rapid growth in the development of new products for foodservice to take advantage of the latest food trends. For example, there are now many more gluten-free products available to make it easier for fast food professionals and takeaway outlets to serve really good quality items for those who need to

The Malt & Anchor uses Frymax in Winning National Award. Dan Afford knows a thing or two about the UK Fish and Chip market. The business entrepreneur spent four years studying and consulting before opening the Malt and Anchor a Fish Restaurant with a difference, in Cirencester in February 2017. The , restaurant is beautifully and lavishly decked out with a real nautical theme. And the food? Alongside traditional favourites such as cod and chips, Dan has introduced an extravaganza of fine eating with squid, monkfish, mackerel and crab also on the menu.
All these can be served with the accompaniment of a fine local beer or a glass of prosecco, creating a novel and different eating experience from the traditional fish and chip shop.
This is in the vital choice of cooking medium and from day one Dan has used Frymax. “It is additive free, contains no hydrogenated oil and less than 1%, so it is the perfect partner for the quality food we produce” says Dan. “Frymax is failsafe and guarantees great tasting, consistently good results with no deterioration in quality. No doubt, Frymax has been a major contributor to our prestigious award”
The Fryers’ Favourite For Over 60 Years.
Research, good training, hard work and a creative and innovative outlook are all quoted by Dan as to why the Malt and Anchor has performed so well. It has an excellent reputation amongst customers with an overall five star “excellent” rating. So much so that the Malt and Anchor was the worthy winner of the UK’s Best Newcomer award in the recent Seafish sponsored 2018 National Fish and Chip awards, for which Dan is suitably proud. The Malt and Anchor sources locally where appropriate in the search for high quality produce. Whilst the restaurant embraces modernity there is one area where tradition and only the best will do.

The UK’s “Best Newcomer” Fish & Chip Restaurant /Takeaway
always fries in Opened in February 2017 the Malt and Anchor is already a firm favourite with the residents of Cirencester. Why? Because it is much more than just a traditional fish and chip outlet. The brainchild of Dan Lafford an experienced restaurant entrepreneur and four years in the making, the restaurant boasts an innovative style both terms of décor and choice of high quality menu items. Initiatives such as infused salts, squid, calamari and crab dishes, fish and fizz prosecco combinations and healthy eating options, have caught the imagination and kept customers coming back for more. Research, training and dedication have been the architects of the Malt and Anchor’s title winning success. Says Dan Lafford “All our hard work has paid off. Winning Best UK Newcomer is special. I like to think we bring something different to the industry.” Local sourcing and attention to detail have resulted in food of the highest quality. Here, the Malt and Anchor had no hesitation in choosing Frymax as their frying medium. It is additive free, contains no hydrogenated oil and less than 1% trans - fat. Frymax guarantees consistently good, delicious results and long lasting performance without deterioration in quality. “Frymax has long been established as the best cooking oil in the market”says Dan “Top quality food needs a top quality frying medium and there is none better than Frymax. It certainly contributed to our winning this prestigious award” .

From the catering industry’s perspective, it would be wise to stay up-to-date with the progression of negotiations with the EU, so that individual businesses have time to get ready if a hike in certain costs will be implemented. Lack of preparation could lead to an avoidable slowing down in growth, or even a decline. Regarding footfall, those in catering must consider their menus and how these can be improved to tap into a new type of diner. Did you know that the number of vegans has risen to 3.5 million? More than any other in the Nisbets survey, the move towards healthy eating and veganism was classed as the top trend for 2018, so it may be beneficial for companies within this industry to monitor and act on emerging trends to ensure they keep up with demand and continue to innovate for optimum progression. What about staff issues? The government and catering

Food for the Future: How Cafés and Restaurants Can Lower Obesity Levels in the UK There’s a growing concern for the levels of people suffering from obesity in the UK. Across the country, there are countless initiatives to encourage healthy eating and activity. However, the problem remains one of the nation’s biggest issues for adults and children alike.
B
products cost £9.9 million in ingredients alone. Clearly, assistance is needed to create a new attitude to food, which is where catering companies can help — and boost popularity and profits along the way.
How cafés and restaurants can help lower obesity levels From tweaking recipes to reducing portion sizes, eateries across the UK can make small changes that can result in a great difference to obesity levels.

Restaurant and café owners can also give a member of staff the duty of sharing attractive photos of new dishes to show how good their health-conscious menu can look — enticing new customers and promoting healthy-eating at the same time.

Capitalising on emerging health trends According to Nisbets’ spring 2018 Pulse Survey, which involved 600 UK catering industry professionals including chefs, front-of-house employees and businesses owners; a quarter of those asked said that healthy eating, such as veganism and vegetarianism, was going to be greatest trend in the industry throughout 2018. So, make eating healthily as easy as possible for diners by stocking up on takeaway supplies and capitalising on the ‘onthe-go-food’ trend. With the number of people who claim to be vegans rising to 3.5 million in the UK, take advantage of the ‘plant-based-diet’ niche in the market — which has been found to lower BMI and be an effective tool for weight loss — to drive up profits. Eatery owners can even combine the two trends and offer healthy, plant-based dishes pre-packaged and ready for customers to pick up and take away. Use the surge in social media to enhance reach and influence when it comes to healthy eating. According to restaurant chain Zizzi, 18-35-year-olds spend five days
There’s plenty that the catering industry can do to help fight obesity levels in the UK. Not only will re-evaluating produce and menu help businesses develop, but employing health-conscious trends and reducing portion sizes will also help cafes and restaurants innovate and cut costs.

Employers choose to pay the real Living Wage on a voluntary basis. The Living Wage enjoys cross-party political support. The real Living Wage is an hourly rate set independently and updated annually. The Living Wage is calculated according to the real costs of living. Katherine Chapman, Director, Living Wage Foundation said: “We welcome Central Foods to the Living Wage movement as an accredited employer. “Responsible businesses across the UK are voluntarily signing up to pay the real Living Wage now. The real Living Wage rate is annually calculated to reflect the real costs of living. “We are a movement of over 3700 UK employers who together want to go further than the government minimum to make sure all their staff earn enough to live on. We have lots of small businesses as well as big household names like; IKEA, Aviva, Chelsea and Everton Football Clubs and many more. “These businesses recognise that the Living Wage accreditation is the mark of a responsible employer and they, like Central Foods join us, because they too believe that a hard day’s work deserves a fair day’s pay.” The firm, based at Collingtree near Northampton, supplies frozen food to more than 220 independent wholesalers, 49
